If making a Salad.....
1 - When at all possible, try to use young, fresh greens. Young salad greens have a more tender and delicate flavor, where as older, “over-grown,” salad greens tend to be more fibrous, giving off a somewhat rubbery texture.
2 - Dressing a salad before you're ready to eat it is just begging for a soggy mess, even if you don't use much. Use smaller containers (we like the kinds meant for toddlers snacks) to hold just the right amount of dressing, be it homemade or premade.
You can always keep a bottle of store-bought dressing in the fridge at work as backup, but by taking your own dressings each day, you can mix and match, especially if they're already filled and chilling in the fridge, ready to go.
3 - You have to wash even pre-washed lettuce. But you might not know that you should also get that lettuce super dry before you start making your salad. Why? "The dressing will stick to it much better. A salad spinner will get your veggies way dryer than rinsing them off and laying them out on a paper towel ever will.
