Dinner Tonight: Cajun Shrimp w/ Garlic Parmesan Mac & Cheese and Sour Dough Mini Boule Bread
Wow, we've really been getting the rain and thunderstorms around here. One right after another for
the past few of days. The morning, it wasn't raining so i took advantage of it and went to Walmart and Kroger for a few items. It started raining as I left Kroger on my way home. Walmart is getting rid of more and more national brand grocery items and replacing it with their own brands, even worse than Kroger now. Got back home and put all the vittles away and went out to some shed cleaning, just needed straightened up from stuff being piled up from the Winter. Spent the rest of the afternoon watching some Baseball, Reds Game! For dinner tonight it was Comfort Food, Cajun Shrimp w/ Garlic Parmesan Mac & Cheese and Sour Dough Mini Boule Bread.
To make tonight's dinner; I had a bag of Kroger Brand Jumbo Shrimp in the freezer which I let thaw
in the fridge overnight. To prepare the Shrimp all I'll need is a 1/2 tablespoon of Extra Virgin Olive Oil, 1 pat of Blue Bonnet Light Stick Butter, Zatarains Creole Seasoning, and the Shrimp. I preheated a medium size skillet on medium heat, added the Oil and Butter. As the skillet was heating I drained and rinsed the Shrimp in cold water. Patted dry with a ;paper towel and seasoned them with the Zatarain's Creole Seasoning. Added the Shrimp to the skillet and cooked them for 3 minutes per side until the Shrimp turned Opaque. Removed the Shrimp from the skillet and set aside.
As the Shrimp was cooking I prepared my Mac and Cheese and Baked the Bread. I used a new Mac
and Cheese I came across at our local Kroger, Stouffer's Garlic Parmesan Mac & Cheese. I love mac and Cheese but with Diabetes 2 I very rarely have it due to the carbs. But I came across this at Kroger and had to try it. Garlic Parmesan Mac & Cheese, what is not to like! I immediately thought of Cajun Shrimp and the Garlic Parmesan Mac & Cheese. Pairing the mac and Cheese with the Shrimp keeps the calories and carbs in check, Shrimp is only 120 calories and 1 carb. The Garlic Parmesan Mac & Cheese is 340 calories and 34 net carbs. To prepare it I microwaved it a total of 8 minutes. Stouffer's has another winner in this! Mac and Cheese is good anytime but adding the Garlic Parmesan kicks it up another notch! Nice and Cheesy with incredible flavor. I topped the Mac and Cheese with Shrimp. As I said i also Baked the California Sour Dough Mini Boule as everything else was cooking. Perfect Bread to go with everything. For dessert later a Jello Sugar Free Dark Chocolate Pudding
Stouffer's Garlic Parmesan Mac & Cheese
SINGLE SERVING, FAMILY SIZE, SIDE DISH
Freshly made pasta in a creamy garlic parmesan cheese sauce, topped with garlic seasoned bread crumbs.
Directions
Keep frozen. Cook thoroughly. For food safety and quality, follow these cooking instructions. Microwave Oven (1100 Watts): Prep: Leave film on tray. Cook: 3 minutes on high. Remove cover. Cook Again: 5 minutes on high. Let stand 1 minute. Conventional Oven (Preheat 350 degrees F). Cut film to vent. Place tray on baking sheet, center rack. Cook 42 minutes. Let stand 1 minute. Will be hot! Ensure product reaches an internal temperature of 160 degrees F. Directions developed using 1100 watt microwave oven. Ovens vary; cooking time may need adjusting. Do not prepare in toaster oven. Do not reheat tray.
