Turkey and Refried Bean Tostadas

Dinner Tonight: Turkey and Refried Bean Tostadas




Started the day with a light Breakfast and worked out. Then off to the Grocery Stores. First stopped at Walmart, made sure I got some more of the Jennie - O Turkey Pastrami while there! I also purchased some Kahn's Deluxe Bologna from the Deli, it's $1.00 a pound cheaper at Walmart than Kroger! From there I did go on to Kroger to grab a few items for Mom mainly. On back to the house and went outside for a bit, partly sunny and the low 40's. Temperatures will be dropping later in the day though, with highs in the teens. For Dinner tonight Turkey and Refried Bean Tostadas.




I had not had a Tostadas in many of year, I used to stop by Taco Bell and grab a couple on my way work. So it's been quite some time! I came across the ORTEGA Tostada Shells while at Kroger the other day and couldn't pass them by! To prepare it I'll need the following; 1 - 1lb. package Jennie - O Extra Lean Ground Turkey, 1 can (16-oz.) Old El Paso Fat free Refried Beans, 1 package (1.25-oz.) Old El Paso Reduced Sodium Taco Seasoning Mix, 1 package ORTEGA Tostada Shells, 1 cups Shredded Lettuce, 1/2 cup Sargento Reduced Calorie Shredded Sharp Cheddar Cheese, Sliced Black Olives, Sliced Green Olives, and Old El Paso Taco Sauce - Medium.




Then to prepare them was very easy. I preheated the oven to 350 degrees. And when making Turkey Taco Mix I always use Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Extra Virgin Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes to thicken the mixture up. As the Turkey was finishing up I lined the Tostadas up on a baking sheet and baked the for 7 minutes. To assemble the Tostadas, I started with a layer of the Refried Beans, followed by the Turkey Taco Mixture, Sliced Black and Green Olives, Taco Sauce, Shredded Cheese, and finally the Shredded Lettuce! It all comes together to make one terrific Tostadas! It won't be so long in between Tostadas from now on, really enjoyed them! For dessert later a Healthy Choice Vanilla Bean Frozen Greek Yogurt.
