Turkey, Pesto and Sun-Dried Tomato Pastries
Savory pastries are a great way to snack. Bake up these tasty, flaky cups of turkey, egg and pesto in just under 60 minutes that’s just 100 calories per serving!

INGREDIENTS
1 (17.3-ounce) package frozen puff pastry, thawed
⅔ cup finely chopped JENNIE-O® Tender Browned Turkey Breast
⅓ cup sun-dried tomatoes in oil, drained and chopped
2 tablespoons basil pesto
¾ cup egg substitute or 3 eggs
⅔ cup milk
⅓ cup finely grated fresh Parmesan cheese

DIRECTIONS
1) Grease mini-muffin pans (32 cups). Heat oven to 375°F.
2) Roll out half the pastry on lightly flour surface to 12-inch square. Using 3-inch round cutter, cut 16 pastry rounds. Press into prepared pans. Repeat with remaining pastry.
3) Divide turkey and tomato between pastry.
4) Whisk pesto, eggs and milk in a liquid measure. Carefully pour mixture into each pastry cup.
5) Sprinkle with cheese. Bake 25 minutes or until golden brown. Let stand 5 minutes before removing to a wire rack. Serve warm.

Flatbread Turkey Sausage Pizza

Looking for a quick and easy dinner?  Ready in just 30 minutes, these turkey pizzas are exactly what you need.  Get your kids in the kitchen to choose their own toppings!

INGREDIENTS

6-ounces JENNIE-O® All Natural Turkey Sausage
½ cup refrigerated pesto
4 mini naan bread pieces
2 cups shredded Mozzarella cheese
1 cup cherry tomatoes, cut in half
½ medium red onion, thinly sliced
1 cup baby arugula
DIRECTIONS

1) Cook turkey sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Set aside.
2) Spread pesto evenly over naan bread. Layer with sausage, cheese, tomatoes and onions.
3) Place on baking sheet and bake 20 minutes or until bubbly.
4)  Top with arugula.
* Always cook to an internal temperature of 165°F.

INGREDIENTS

1 tablespoon olive oil reduced-fat mayonnaise
4 slices Italian bread
4 ounces thinly sliced JENNIE-O® All Natural Oven Browned Turkey Breast, from the service deli
2 slice mozzarella cheese
¼ cup basil pesto
6 sun-dried tomatoes in oil, drained
DIRECTIONS

1) Heat panini grill. Spread mayonnaise on bread slices. Add turkey, cheese, basil pesto and tomato. Top with second slice of bread.
2) Grill 3 minutes or until golden brown.

Baked Cod with Tomato Pesto and Baked Potato

Dinner Tonight: Baked Cod with Tomato Pesto and Baked Potato





Wow, one humid morning out there today. I went out to get the morning paper and walking out felt
like opening an oven door! For Breakfast this morning I prepared a Poached Egg and a toasted Healthy Life Whole Grain English Muffin. Along with my morning cup of Bigelow Decaf Green Tea. Not much to do outside, too humid and rain on and of today. So inside repaired some base board molding around the house, I'm banging into it all the time in my Hoveround Chair. Then on to the Kitchen and cleaned the Fridge, Stove, and Microwave. For dinner tonight I prepared a Baked Cod with Tomato Pesto and Baked Potato.






I actually got tonight's Dinner recipe, Baked Cod with Tomato Pesto, from a Kroger Coupon and Ad we got in the mail. They used Halibut where I'm using Cod. Halibut is okay but not my favorite. Plus Cod is less calories and, at to me, cooks up better. 



First to make the Tomato Pesto I'll need; 1 Pint Cherry Tomatoes (halved), Extra Virgin Olive Oil for seasoning + 1/4 cup, Salt and Pepper (to taste), 1 Cup fresh Basil Leaves, 2 Tablespoons toasted Pine Nuts, and 1 Clove Garlic (minced). 











To prepare the Pesto; preheat the oven to 250 degrees. Toss the halved Tomatoes lightly with Olive Oil, and arrange on a rimmed foil lined baking sheet, and season with Salt. Roast the Tomatoes for about 2 hours, until shriveled. Let cool. Keep the oven and increase the heat to 400 degrees, for baking the Cod. Place the Tomatoes, Basil, Pine Nuts, and Garlic in a food processor; pulse to chop. Add 1/4 cup Olive Oil; pulse to combine well. Season with Salt and Pepper.






To prepare the Cod I'll need; 2-4 Cod Pieces (I used 2), Extra Virgin Olive Oil, Salt and Pepper (to
taste).  Use a rimmed foil lined baking sheet. Brush the Cod Fillets with the Olive Oil, season well with salt and Pepper (to taste) and place the sheet in the oven. Bake until the Cod flakes with a fork, about 11 minutes. To serve spoon the Pesto over each Fillet. Love this Pesto Sauce! Works perfect with Fish, the Tomatoes and Pine Nuts work great together. 









For a side I prepared a Baked Potato. I seasoned it with McCormick Grinder Sea Salt and Peppercorn Medley, topped it with I Can’t Believe It’s Not Butter. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.











Tomato Pesto Sauce
Ingredients

Condiment of the Week - Pesto

Pesto (Italian pronunciation: [ˈpesto]) or, in extenso, pesto alla genovese (Italian pronunciation:
Basil pesto
[ˈpesto ˈaːlla genoˈveːse]), is a sauce originating in Genoa, the capital city of Liguria, Northern Italy. It traditionally consists of crushed garlic, European pine nuts, coarse salt, basil, Parmigiano-Reggiano (Parmesan cheese) and pecorino sardo (cheese made from sheep's milk), all blended with olive oil.








Pesto is traditionally prepared in a marble mortar with a wooden pestle. First, garlic and pine nuts are placed in the mortar and reduced to a cream, then the washed and dried basil leaves are added with coarse salt and ground to a creamy consistency. Only then is a mix of Parmigiano-Reggiano and Pecorino added. To help incorporate the cheese a little extra-virgin olive oil is added. In a tight jar (or simply in an air-tight plastic container), covered by a layer of extra-virgin olive oil, pesto can last in the refrigerator up to a week, and can be frozen for later use.




Pesto is commonly used on pasta, traditionally with mandilli de sæa ("silk handkerchiefs" in the
Linguine with basil pesto
Genoese dialect), trofie or trenette. Potatoes and string beans are also traditionally added to the dish, boiled in the same pot in which the pasta has been cooked.

It is sometimes used in minestrone. Pesto is sometimes served with sliced beef tomatoes and sliced boiled potatoes.








Pesto comes in a variety of recipes, some traditional and some modern, as the very noun pesto is a generic term for anything that is made by pounding.

Pesto alla genovese, the quintessential pesto recipe, is made with Genovese basil, coarse salt, garlic, Ligurian extra virgin olive oil (Taggiasco), European pine nuts (sometimes toasted) and a grated cheese like Parmigiano Reggiano or Grana Padano and pecorino sardo or pecorino romano.

A slightly different version of this sauce exists in Provence, where it is known as pistou. In contrast with pesto alla genovese, pistou is generally made with olive oil, basil and garlic only: while cheese may be added, usually no nuts are included in a traditional pistou because no pine trees grow there to provide the nuts. Pistou is used in the typical soupe au pistou, a hearty vegetable soup with pistou flavour. The sauce did not originally contain basil, however; instead, cheese and olive oil were the main constituents.

Sometimes almonds are used instead of pine nuts, and sometimes mint leaves are mixed in with the

basil leaves. It has been pointed out that pesto is essentially a combination of flavourful leaves, oily nuts, hard cheese, olive oil, garlic, salt and lemon juice; any ingredients meeting this description can produce a pesto-like condiment.

Pesto alla siciliana, sometimes called pesto rosso (red pesto), is a sauce from Sicily similar to pesto alla genovese but with the addition of tomato, almonds instead of pine nuts, and much less basil. Pesto alla calabrese is a sauce from Calabria consisting of (grilled) bell peppers, black pepper and more; these ingredients give it a distinctively spicy taste.

Outside Italy, the household name pesto has been used for all sorts of cold sauces or dips, mostly without any of the original ingredients: arugula (instead of or in addition to basil), black olives, lemon peel, coriander, or mushrooms. In more northern countries, ramson leaves are sometimes used instead of basil. In the 19th century, Genovese immigrants to Argentina brought pesto recipes with them. A Peruvian variety, known as "tallarines verdes" (meaning green noodles, from Italian tagliarini), is slightly creamier, lacks pine nuts (because of their rarity and prohibitive cost in Peru), may use spinach and vegetable oil (in place of olive oil), and is sometimes served with roasted potatoes and sirloin steak.

Vegan variations of pesto can include mixes of fresh basil, nuts such as walnut or pine nut, olive oil, and the addition of miso paste and nutritional yeast to provide additional flavor enhancement to the dish.

Chicken Pesto Pizza

Busy day? Fix the family this fast and tasty pizza using convenient, ready-to-use ingredients—throw
in a green salad tossed with Italian dressing and supper is served!
A Family-Favorites Recipe.

Recipe Ingredients:

1 (12-inch) pre-baked pizza crust
1/2 of a (7-ounce) container refrigerated pesto*
1 (10-ounce) package Italian flavored, fully cooked, carved chicken breast or other cooked chicken breast
1 (6-ounce) jar marinated artichoke hearts, drained and chopped
1 cup grated mozzarella, provolone or fontina cheese

Cooking Directions:

1 - Preheat oven to 450°F (230°C).
2 - Spread the pizza crust with the pesto. Sprinkle with chicken, artichoke hearts and grated cheese. Season with freshly ground pepper, if desired.
3 - Bake on a pizza stone or baking sheet for 8 to 10 minutes, until the cheese begins to brown.
Serve hot.
Makes 4 (2 slice) servings.

*If desired, freeze remaining pesto for use at another time.

Cooking Tips:

* Two grilled chicken breasts from your local deli will yield 10 to 12 ounces.
* If shredded chicken is dry, toss with about 2 tablespoons of your favorite Italian dressing before placing on pizza.

Asparagus Spinach Pistachio Pesto Pasta

Research has shown that pistachios can raise the level of antioxidants in your blood, reducing the risk of heart disease by lowering the level of oxidized-LDL (bad) cholesterol.

Recipe Ingredients:

1 pound asparagus, steamed
1/4 cup pistachios
1/4 cup fresh spinach, packed
1 clove garlic
1/4 cup freshly grated Parmesan cheese
2 tablespoons olive oil
1 teaspoon lemon juice
1 (12-ounce) package whole wheat pasta

Cooking Directions:

1 - Bring a large pot of salted water to a boil. When ready, add asparagus and cook for 3 minutes. Remove from the water and shock in a bowl of ice water. Drain and then place on a cutting board. Slice off the tips and set aside. Roughly chop the rest.
2 - Add a cup of the chopped asparagus to a food processor along with the spinach, garlic, 2 tablespoons of the pistachios, Parmesan cheese, olive oil, lemon juice, and a pinch of salt. Blend until it is a paste; this is your pesto.
3 - Add the pasta to the pot of boiling water. Cook according to the directions on the box. Save a 1/4 cup of the pasta water. Drain the pasta when done, and return to the still hot pot. Add 1 cup of the pesto and half of the pasta water. Stir well. If it is too dry, add some more water.
4 - Chop the remaining pistachios. Serve the pasta and garnish with the pistachios, and more grated Parmesan cheese. Season with salt and pepper to taste.
Makes 4 servings.

Buffalo Antipasto Pasta Salad

A great summertime meal! Vegetables can be substituted according to what you have on hand or what you like.

Ingredients:

1 12 ounce pkg. Wild Idea Buffalo Salami, cut into pieces
1 cup, fresh mozzarella, shredded or cubed
1 each red, yellow and orange bell peppers, diced
1 bunch green onions, chopped
1 can artichoke hearts, drained & chopped
1 cup pepperoncini, sliced
½ cup olives, sliced (prefer Kalamata)
¾ cup sundried tomatoes, julienned
½ lb. pasta, cooked el dente and drained
¼ cup basil pesto
¼ cup olive oil
¼ cup rice or cider vinegar
2 tsp. ground fennel
salt & pepper to taste.
* Put all ingredients in large bowl and toss! Can be refrigerated for up to a week, however you may need to add a bit more olive oil or dressing before serving.

Basil Pesto
My recipe for Basil Pesto does not include pine-nuts, as I am not a fan. They could easily be added though, for a more traditional recipe.

Ingredients:

2 cups fresh basil leaves, packed
2 cups shredded parmesan cheese
3 garlic cloves, chopped
1 tsp. salt
1 tsp. pepper (*I like a little more)
1 Tb. lemon juice (*I like a little more)
1 cup olive oil
Place all ingredients in blender and puree until smooth. Refrigerate.

The Sunday Pizza - Grilled Goat Cheese and Pesto Pizza

Grilled Goat Cheese and Pesto Pizza

Yield: one 12” pizza

Ingredients
For Pesto
3 cups lightly packed basil leaves
2 tsp minced garlic
2 tbsp toasted pine nuts (toast pine nuts in a dry skillet over medium/high until toasty)
1/3 cup olive oil
juice of ½ lemon
½ tsp sea salt
¼ tsp pepper
¼ cup freshly grated Parmesan cheese
For Pizza
Pizza dough for one pizza (make your own or grab some prepared dough from your favorite pizza place!)
5 oz fresh goat cheese
Toppings of choice: I used sliced tomato and sautéed cremini mushrooms


Directions
1 - First, make your pesto. Combine basil leaves, garlic, pine nuts and two tablespoons of the olive oil in a food processor and process until just slightly chunky. With the motor running, slowly drizzle in the remaining olive oil in a steady stream. Add lemon juice, Parmesan cheese, sea salt and pepper and continue processing until smooth.
2 - To prepare your pizza, heat up your grill (either gas or charcoal is fine) and spray the grates well with non-stick spray. Also, spray the BACK of a cookie sheet well with non-stick cooking spray. Set aside.
3 - Roll out your dough on a lightly floured surface to roughly about 12” in diameter. It doesn’t have to be perfect! Carefully transfer the pizza dough to the back of the greased cookie sheet and carry outside to the grill.
4 - Gently, lift the dough off the back of the cookie sheet and onto the grill. Close the grill and cook for about 5 minutes, checking occasionally. The dough should be starting to bubble up and if you check the bottom, it should be looking a little charred.
5 - Slide the dough off the grill and back onto the back of the cookie sheet. Flip pizza so the charred side is on top then spread pesto all over the top. Add toppings of your choice (I used sautéed mushrooms and thin tomato slices and it was great) followed by soft mounds of goat cheese.
6 - Carefully slide dough back onto the grill, close top and cook for another 5-6 minutes, checking often. When done, the crust should be puffy, the bottom slightly charred and the cheese melted.
7 - Slide your finished pizza back onto your cookie sheet, let cool and slice up!

Wild Idea Buffalo Recipe of the Week - Buffalo Italian Sausage & Mushroom Pizza

I love Pizza! And this week's Wild Idea Buffalo Recipe of the Week is Buffalo Italian Sausage & Mushroom Pizza. It's made with Wild Idea Buffalo Italian Sausage. It's another great recipe from Jill O'Brien of Wild Idea Buffalo.




Italian Buffalo Sausage & Mushroom Pizza (3 medium or 6 small pizza)

Who doesn’t love pizza? And good pizza is well – irresistible. This will require a little bit of time, but all the steps are super easy.  Although I attempted my own pizza sauce, it just was not as good (and I tried many) as my favorite purchased brand, Mezzetti, which has a deep richness that I could not duplicate. For best results apply your toppings evenly and not too heavily. Baking the pizza can be done in a variety of ovens and the timelines for those are noted at the end of the recipe



Ingredients:

* 1 – 1 lb. Wild Idea Buffalo Italian Sausage
* 1 – recipe, pizza crust
* ½ – cup basil pesto
* 1 – cup pizza sauce *Mezzetti
* 1 ½ – cups mushrooms, sliced
* ¾ – cup caramelized onions
* 12 – ounces fresh mozzarella or substitute chevre with fennel pollen
* 9 – ounces Parmesan, grated
* salt, pepper & chili flake to taste
* flour & cornmeal


Preparation:

1 -Prepare pizza dough per instructions below. Lightly flour work surface and your hands. Stretch and hold dough with one hand and form a fist with the other and place under the dough. Place on peel, baking sheet, or pizza stone that has been generously covered with flour or corn meal. Adjust shape with hands by stretching or scrunching dough into place.
 2 - In a large saucepan over medium high heat, add the olive oil and crumble Buffalo Italian Sausage into pan. Lightly brown and stir occasionally breaking up sausage to desired pieces, about 4 minutes.
3 - Spread pizzas with basil pesto, followed by the pizza sauce.
4 - Top each pizza with desired amount of sliced mushrooms, caramelized onions, Buffalo Italian Sausage, mozzarella or chèvre, and parmesan cheese.
5 - Baking:
Outdoor Brick Ovens: Have heat at about 700°. Slide pizza off peel and bake in oven for about 4 minutes, rotating once or twice while baking.
* Indoor convection ovens: Place oven rack to lower level and preheat oven to as high as heat will go, 500° to 550°.  Bake on pizza stone or baking sheet for 8 to 12 minutes depending on your heat.
* Gas Grill: Line gas grill rack low to flames with bricks and place bricks on upper grill rack if you have one. Place pizza stone on top of bricks (good old fashioned red bricks work great). Turn all burners to high heat and allow the grill to get very hot, so bricks are heated through, about 30 minutes. The bricks will help in retaining the heat and offer a more even cooking distribution. Slide pizza off of peel onto pizza stone and close grill lid.  Bake, turning once for about 6 minutes.
* Remove pizza from oven or grill and place on a cutting board. Allow the pizza to rest for a few minutes before cutting. Season with chili flake as desired.



Pizza Dough (makes 3 medium or 6 large crusts) *Credit to Peter Reinhart.
This is fabulous dough! If not used for pizza it makes a great flatbread, brushed with a little pesto prior to baking.

Ingredients:

* 4½ – cups high protein flour (I used half Kernza whole grain flour & half organic bread flour)
* 1¾   – teaspoon salt
* 1 – teaspoon quick yeast
* 2 – tablespoons olive oil
* 1¾ – cup water, very cold
Preparation: In mixing bowl using a dough hook, sift flour, salt and yeast together. Add olive oil and water, scraping down sides as needed. Continue to mix for 6 minutes, stopping every two minutes to remove dough from the hook. Dust hands with flour and remove dough from mixer and place on flour dusted work surface. Knead dough for 1 to 2 minutes. Dough should spring back from touch. Divide into desired sizes and form into balls. Brush dough lightly with oil, place on lightly oiled baking sheet and cover loosely with saran or a plastic bag. Refrigerate for 8 hours or up to 3 days. Remove from refrigeration and allow to rest at room temperature for 4 hours. Proceed to Pizza instructions. *Dough can also be frozen for up to 3 months.



Basil Pesto
*I am not a ground pine nut fan, but if you are, add ¼ cup to ingredients.

Ingredients:

* 2 – cups fresh basil leaves, packed
* 2 – cups shredded parmesan cheese
* 3 – garlic cloves, chopped
* 1 – tsp. salt
* 1 – tsp. pepper (I like a little more)
* 2 – Tb. lemon juice
* 1 – cup olive oil
Preparation: Place all ingredients in blender and puree until smooth. Refrigerate.



Caramelized Onions

Ingredients:

* 1 – tablespoon butter
* 1 – tablespoon olive oil
* 2 – cups onions, diced
* 1 – tablespoons sugar+
* 1 – teaspoon balsamic vinegar
* season with salt and pepper
Preparation: Heat butter and oil in sauté pan over medium high heat. Add onions and sauté for 3 minutes. Add remaining ingredients and stir to incorporate. Reduce heat to low and stir occasionally. Cook for 25 minutes or until golden brown.

Jennie - O Turkey recipe of the Week - Pesto Turkey Meatballs with Roasted Pepper Sauce


Ingredients

MEATBALLS
1 (20-ounce) package JENNIE-O® Lean Ground Turkey
¼ cup egg substitute or 1 egg, lightly beaten
1½ cups panko breadcrumbs
½ cup grated onion
½ cup finely grated fresh Parmesan cheese
3 tablespoons basil pesto
2 cloves garlic, minced
salt and freshly ground pepper, if desired

RED PEPPER SAUCE
1½ cups roasted red peppers, drained
1 tablespoon balsamic vinegar
1 teaspoon crushed red pepper flakes
½ teaspoon granulated sugar
1 clove garlic


Directions
Heat oven to 350°F. Grease wire rack and place on baking tray.

To make the meatballs, in mixing bowl combine turkey, egg, breadcrumbs, onion, cheese, basil pesto, garlic and salt and pepper, if desired. Cover and refrigerate 10 minutes. Shape into 1¼-inch balls.

Place meatballs on prepared rack. Bake 35 minutes or until brown and cooked thoroughly. Always cook until well-done, 165°F. as measured by a meat thermometer.

To make red pepper sauce, put red peppers, balsamic vinegar, red pepper flakes, sugar and garlic in a blender or processor. Blend or process until smooth. Pour into saucepan. Heat until warm. Dip meatballs in red pepper sauce.


Always cook to an internal temperature of 165°F.

Smoked Mozzarella Chicken with Pasta

Dinner Tonight: Smoked Mozzarella Chicken with Pasta








A gorgeous Spring Day out today. Sunny and 70 degrees! Had to go to Kroger to pick up a couple of items for tonight's dinner and then back home. Got the cart out and went to the lake and did some fishing, How relaxing! Caught some sun and 4 small fish, 2 Blue Gill and 2 Bass. A nice peaceful day. For dinner tonight a new recipe; Smoked Mozzarella Chicken with Pasta. You're going to love this dish!








Came across the recipe for tonight's dinner in an issue of Simply Delicious/Taste of Home Magazine and it looked and sounded too good not to try, Smoked Mozzarella Chicken with Pasta. To prepare it I needed the following; 4 ounces thin spaghetti, 2 boneless skinless chicken breast halves (6 ounces each), sea salt and pepper (to taste), 1/3 cup Whole Grain bread crumbs, 2 tablespoons extra virgin olive oil, 2 thin slices smoked deli ham, 2 slices smoked mozzarella cheese, 1/2 teaspoon dried sage leaves, 1/2 cup prepared pesto, and Grated Parmesan cheese. I only used half amounts of the original recipe, I only prepared 2 Chicken Breasts. I also made my own Bread Crumbs by putting 2 slices in the food processor. For my Pasta I used Ronzoni Healthy Harvest Whole Grain Thin Spaghetti. I also used Perdue Chicken Breasts. I like using these, they store in the freezer and are individually wrapped.








To prepare it I cooked pasta according to package directions. When done drained and transferred to a large bowl. Got my Chicken Breasts and sprinkled with salt and pepper. Placed the bread crumbs in a shallow bowl. Dipped Chicken in bread crumbs to coat both sides; shaking off excess. Then in a large skillet, heated oil over medium-high heat. Added Chicken; cooked 5 minutes. Turned and cooked 2 minutes longer. Topped with Ham and Mozzarella Cheese; sprinkled with Sage. Cook 1-2 minutes longer or until the thermometer inserted in chicken reads 165°. Removed from heat. Added pesto to Pasta and tossed to coat. Served the  Chicken with the Pasta and sprinkled with Parmesan Cheese. Another one of those keeper recipes! You can't go wrong with Chicken and Pasta, the added Ham and Smoked Mozzarella worked great. The original recipe along with the web link is at the bottom of the post. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.







Smoked Mozzarella Chicken with Pasta

Ingredients
  8 ounces uncooked angel hair pasta or thin spaghetti
  4 boneless skinless chicken breast halves (6 ounces each)
  1/2 teaspoon salt
  1/4 teaspoon pepper
  2/3 cup seasoned bread crumbs
  2 tablespoons olive oil
  4 thin slices smoked deli ham
  4 slices smoked mozzarella cheese
  1/2 teaspoon dried sage leaves
  1/2 cup prepared pesto
  Grated Parmesan cheese, optional




Directions
Cook pasta according to package directions. Drain; transfer to a large bowl.
Meanwhile, pound chicken breasts with a meat mallet to 1/2-in. thickness; sprinkle with salt and pepper. Place bread crumbs in a shallow bowl. Dip chicken in bread crumbs to coat both sides; shake off excess.
In a large skillet, heat oil over medium-high heat. Add chicken; cook 4 minutes. Turn; cook 2 minutes longer. Top with ham and mozzarella cheese; sprinkle with sage. Cook 1-2 minutes longer or until a thermometer inserted in chicken reads 165°. Remove from heat.
Add pesto to pasta and toss to coat. Serve chicken with pasta. If desired, sprinkle with Parmesan cheese. Yield: 4 servings.

One of America's Favorites - Pesto

Pesto alla genovese is made from basil leaves..


Pesto (Italian pronunciation: [ˈpesto], Genoese: [ˈpestu]) is a sauce originating in Genoa in the Liguria region of northern Italy (pesto genovese), and traditionally consists of crushed garlic, basil, and European pine nuts blended with olive oil, Parmigiano Reggiano (Parmesan cheese), and Fiore Sardo (cheese made from sheep's milk). The name is the contracted past participle of the Genoese word pestâ (Italian: pestare), which means to pound, to crush, in reference to the original method of preparation, with marble mortar and wooden pestle. The ingredients in a traditionally made pesto are ground with a circular motion of the pestle in the mortar. This same Latin root through Old French also gave rise to the English word pestle.


...and pine nuts...

The ancient Romans ate a paste called moretum, which was made by crushing cheese, garlic and herbs together. Basil, the main ingredient of modern pesto, likely originated in India and was first domesticated there.  Basil took the firmest root in the regions of Liguria, Italy and Provence, France. The Ligurians around Genoa took the dish and adapted it, using a combination of basil, crushed garlic, grated hard cheese (a mix of parmigiano-reggiano and pecorino or just one of the two), and pine nuts with a little olive oil to form pesto. The first mention of recipe for pesto as it is known today, is from the book La Cuciniera Genovese written in 1863 by Giovanni Battista Ratto. In French Provence, the dish evolved into the modern pistou, a combination of basil, parsley, crushed garlic, and grated cheese (optional). Pine nuts are not included.
In 1944, The New York Times mentioned an imported canned pesto paste. In 1946, Sunset magazine published a pesto recipe by Angelo Pellegrini. Pesto did not become popular in North America until the 1980s and 1990s.

Pesto is traditionally prepared in a marble mortar with a wooden pestle. First, garlic and pine nuts are placed in the mortar and reduced to a cream, then the washed and dried basil leaves are added with coarse salt and ground to a creamy consistency. Only then is a mix of Parmigiano-Reggiano and Pecorino added. To help incorporate the cheese a little extra-virgin olive oil is added. In a tight jar (or simply in an air-tight plastic container), covered by a layer of extra-virgin olive oil, pesto can last in the refrigerator up to a week, and can be frozen for later use.






Pesto is commonly used on pasta, traditionally with Mandilli de Sæa (Genovese dialect - literally "silk handkerchiefs"), trofie or trenette. Potatoes and little green beans are also traditionally added to the dish, boiled in the same pot in which the pasta has been cooked. It is sometimes used in minestrone. Pesto is sometimes served on sliced beef tomatoes and sliced boiled potatoes.

Because pesto is a generic term for anything that is made by pounding, there are various other pestos, some traditional, some modern. Pesto alla genovese is made with Genovese basil, salt, garlic, Ligurian extra virgin olive oil (Taggiasco), European pine nuts (sometimes toasted) and a grated cheese like Parmigiano Reggiano or Grana Padano and pecorino Sardo or pecorino romano.
A slightly different version of the sauce exists in Provence, where it is known as pistou. In contrast with pesto genovese, pistou is, in general, made with olive oil, basil, and garlic only: While cheese may be added, usually in a traditional pesto no nuts are included because no pine trees grow in there to provide the nuts. Pistou is used in the typical soupe au pistou, a hearty vegetable soup with pistou flavour. The sauce did not originally contain basil, however. Instead, cheese and olive oil were the main constituents.
Sometimes almonds are used instead of pine nuts, and sometimes mint leaves are mixed in with the basil leaves.
Pesto alla siciliana, sometimes called pesto rosso (red pesto), is a sauce from Sicily similar to pesto genovese but with the addition of tomato, almonds instead of pine nuts, and much less basil. Pesto alla calabrese is a sauce from Calabria consisting of (grilled) bell peppers, black pepper and more; these ingredients give it a distinctively spicy taste.
Outside Italy, the household name "pesto" has been used for all sorts of cold sauces or dips, mostly without any of the original ingredients: arugula (instead of or in addition to basil), black olives, lemon peel, coriander, or mushrooms. A German variety uses ramson leaves instead of basil. In the 19th century, Genovese immigrants to Argentina brought pesto recipes with them. A Peruvian variety, known as "tallarines verdes" (meaning green noodles, from Italian tagliarini), is slightly creamier, lacks pine nuts (because of their rarity and prohibitive cost in Peru), may use spinach and vegetable oil (in place of olive oil), and is sometimes served with roasted potatoes and sirloin steak.
In Singapore, an Italian-Peranakan fusion version called laksa pesto is popular. The recipe has the flavour of the local curry noodle soup, laksa but is made using the pesto method.
Vegan variations of pesto can include mixes of fresh basil, nuts such as walnut or pine nut, olive oil, and the addition of miso paste and nutritional yeast to provide additional flavor enhancement to the dish.
