Kitchen Hint of the Day!
I watched our neighbor use this hint just last week......
When cutting corn off the cob, do it in a large, stainless steel bowl. This will keep the splatters inside the bowl so you get all the cream possible and it cuts down on the mess.

One of America's Favorites - Corn on the Cob
Corn on the cob (known regionally as "pole corn", "cornstick", "sweet pole", "butter-pop" or "long
maize") is a culinary term used for a cooked ear of freshly picked maize from a cultivar of sweet corn. Sweet corn is the most common variety of maize eaten directly off the cob. The ear is picked while the endosperm is in the "milk stage" so that the kernels are still tender. Ears of corn are steamed or boiled, usually without their green husks, or roasted with them. The husk leaves are in any case removed before serving.
Corn on the cob is normally eaten while still warm. It is boiled or grilled. It is then often seasoned with salt and buttered before serving. Some diners use specialized skewers, thrust into the ends of the cob, to hold the ear while eating without touching the hot and sticky kernels.
The most common methods for cooking corn on the cob are frying, boiling, roasting, and grilling.
Corn on the cob can be grilled directly in its husk, or it can be husked first and then wrapped in aluminum foil. When oven roasting, cooking the corn in the husk directly on the rack is recommended. When roasting or grilling corn on the cob, the cook can first peel the husk back to rub the corn with oil or melted butter, then re-secure the husk around the corn with a string.
Common condiments and seasonings for corn on the cob include butter, salt, and black pepper.
Lillian Eichler Watson, in a 1921 etiquette book, described corn on the cob as "without a doubt one of the most difficult foods to eat gracefully." She added that "it is entirely permissible to use the fingers in eating corn, holding it lightly at each end; sometimes a napkin is used in holding it." Sometimes, however, a short sharp knife would be provided that each diner could use to cut or scrape the kernels from the cob for later eating. She described this as "by far the most satisfactory method" of eating corn on the cob.
Some etiquette books recommend salting and buttering the corn a section at a time just before eating that section, which helps to minimize the mess on the diner's face and hands. Butter dripping down the diner's chin and kernels getting stuck in-between teeth may be a source of embarrassment for the diner.
Corn skewers (also called corncob holders) are eating utensils used to hold corn on the cob.
A number of inventive designs can be found through Google. Skewers have been used since ancient times, ranging from articles made of wood found in ethnographic museums to precious tableware made of silver.
Corn was eaten by Native American tribes before European settlers arrived in the Americas. The Maya ate corn as a staple food crop and ate it off the cob, either roasting or boiling it.

Butter dripping down the diner's chin and kernels getting stuck in-between teeth may be a source of embarrassment for the diner.
Corn skewers (also called corncob holders) are eating utensils used to hold corn on the cob.

| Skewers for eating corn on the cob |
A number of inventive designs can be found through Google. Skewers have been used since ancient times, ranging from articles made of wood found in ethnographic museums to precious tableware made of silver.
Corn was eaten by Native American tribes before European settlers arrived in the Americas. The Maya ate corn as a staple food crop and ate it off the cob, either roasting or boiling it.

Kitchen Hint of the Day!
When buying Corn on the Cob....
* The most important thing to remember when buying fresh corn on the cob is that it starts converting sweet tasting sugars to starches immediately after it is picked. So ideally you want to buy it, cook it and consume it the same day it is picked or as close to then as possible.
* Look for tassels (those things sticking up out of the top) that are brown and sticky to the touch. If they're dry or black, then it's an old ear of corn.
* Check out the color of the husk. If it's a bright green and tightly wrapped against the cob, then the corn is fresh. (In some cases, it will even feel slightly damp.)

Kitchen Hint of the Day!
Thank you to Joyce for sending me this one to share!
Corn should never be husked [that is prior to preparation] -- it should be put in the microwave for 4-5 minutes with the husks intact. The results are fantastic. And no pots of water to boil and clean up afterward.

Pan - Fried Oysters w/ Sliced New Potatoes, Corn on the Cob, and...
Dinner Tonight: Pan - Fried Oysters w/ Sliced New Potatoes, Corn on the Cob, and Wheat Bread
Well got the driveway clear of snow and ice and the streets are all clear and now it snowed again and then freezing rain on top of it. From what I seen on the weather forecast earlier it's going to be in the 20's all week with lows in the single digits. Sure miss my beautiful Fall weather! For dinner tonight it''s Pan - Fried Oysters w/ Sliced New Potatoes, Corn on the Cob, and Wheat Bread.
I had a small container of Willapoint Shucked Oysters, that I had picked up at Kroger the other day, that I've been wanting to use. I just love all Seafood and Oysters are no exception! I almost always use Willapoint Oysters, always fresh with an incredible taste. I pan fried these in Canola Oil. To prepare them I needed; 1 container Hilton's Willapoint Oysters, 1/2 cup corm meal, 1 egg, beaten with 1 teaspoon water, and 2 tablespoons Canola Oil. To fry them I drained the oysters. Then dipped prepared oysters in the egg, then in corm meal, coating thoroughly. Set aside to dry. Heat Canola Oil in frying pan to 370 degrees Fahrenheit (or until quite hot). Then fry the oysters until golden brown on one side, then turn carefully to brown the other (about 4 minutes on each side). They fried up a beautiful golden brown with a fresh taste, love Seafood!
For one side dish I heated up a can of Del Monte Sliced New Potatoes. I use a lot of Del Monte Vegetable Products, always delicious and store a lot longer than fresh Vegetables. I always use fresh though when I have any. I also boiled some Green Giant Mini Ears of Sweet Corn along with a slice of Klosterman Wheat Bread. For dessert/snack later some sliced Cracker Barrel 2% Sharp Cheddar Cheese with Ritz Whole Grain Crackers.
Pan-Fried Oysters
Ingredients
1 8-ounce or 16-ounce container Hilton's Willapoint Oysters
1 cup corm meal
2 eggs, beaten with 1 teaspoon water
2 tablespoons vegetable oil or cooking fat
Drain oysters. Dip prepared oysters in egg, then in corm meal, coating thoroughly. Set aside to dry. Heat oil or fat in frying pan to 370 degrees Fahrenheit (or until quite hot). Fry oysters until golden brown on one side, then turn carefully to brown the other (about 4 minutes on each side) Serve immediately. Serves 3-5.

Buffalo Tri Tip in Pineapple Jerk Marinade w/ Pineapple and Jalapeño Salsa, Brown Jasmine Rice and Corn on the Cob
Dinner Tonight: Buffalo Tri Tip in Pineapple Jerk Marinade w/ Pineapple & Jalapeño Salsa
Brown Jasmine Rice and Corn on the Cob
It's been a very muggy and humid day out today! They say there is a cold front moving through overnight and it will take the humidity with it as it moves through, hope they are right! I received my latest order from Wild Idea Buffalo late yesterday and couldn't wait to try the Buffalo Tri Tip in Pineapple Jerk Marinade! For dinner I prepared a Buffalo Tri Tip in Pineapple Jerk Marinade w/ Pineapple & Jalapeño Salsa, Brown Jasmine Rice and Corn on the Cob.
The Wild Idea Buffalo Buffalo Tri Tip in Pineapple Jerk Marinade comes in a sealed package already marinated. It's a Pineapple Jerk Marinade that's made with; Pineapple Juice, Brown Sugar, Soy Sauce, Soy Beans, Jerk Seasoning, and Garlic Powder. To prepare it I preheated the oven to 450*. Removed roast from marinade, shaking off excess. Rubbed with a teaspoon of Jerk seasoning (This will cause the roast to blacken a bit more.) Placed a cast iron skillet over high heat to heat through. Then placed roast in the hot pan and seared all sides of it, about 4 minutes. Placed the hot pan with roast in the preheated oven and roasted for 8 minutes, medium rare. Removed the roast from the oven and let it rest for 5 minutes before slicing. This is toooo good! A perfect marinade, tender, and well seasoned and full of flavor! Once again using the Buffalo over Beef saves those calories also.
For sides I made up some Pineapple & Jalapeño Salsa. A real simple and flavorful salsa. Perfect for any meat and tacos. I left the full recipe at the end of the post. I also, for the first time, made Jasmine Rice. I used Village Harvest Brown Jasmine Rice. I like easy made microwavable rice but this was worth the extra time and effort! Came out real good. I am now a Jasmine Rice Fan! I also boiled 2 Mini Ears of Green Giant Mini Ears of Sweet Corn. Everything came together to make a really delicious meal. For dessert later a Jello No Sugar Double Chocolate Pudding topped with Cool Whip Free.

Grilled Turkey Franks and Bratwurst w/ Boiled Corn on the Cob and....
Dinner Tonight: Grilled Turkey Franks and Bratwursts w/ Boiled Corn on the Cob and Honey Smokehouse BBQ Chili Beans
Solved a neighborhood mystery last night around 8:00 pm. I was in the kitchen fixing a cup of Green Tea
when something caught my attention out of the corner of my eye, a Doe Deer! We have a small strip of woods that runs parallel with the backs of all the homes along our street so apparently the Deer had been coming out and feasting on every one's gardens and flowers! Something had eaten my Mom's flowers and a few of her Cucumber plants that she had growing, and the neighbors had said something had been eating various plants and flowers of theirs. Mystery solved! As I watched her she headed straight for our next door neighbors Petunia's. As I opened the door she turned back into the woods. She was a good size Doe. That's the first one spotted in our part of neighborhood. For dinner I was able to fire the grill up in between showers. I prepared Grilled Turkey Franks and Bratwursts w/ Boiled Corn on the Cob and Honey Smokehouse BBQ Chili Beans.
As usual I used Ball Park Smoked White Turkey Franks, 45 calories and 5 carbs per Frank. Their Turkey, low cal, low carb, and taste great! They grill up nice too. I also grilled up some Bratwursts, Blue Grass Lean Bratwursts which are 100 calories and 4 carbs per Brat. Served them all on Healthy Life Whole Grain Buns, 70 calories and 18 carbs per bun.
I also boiled some Mini Corn Ears. I used Green Giant Mini Ears of Sweet Corn. They come frozen and all you do is boil them in water for about 12 minutes. Their 50 calories and and 9 calories per mini ear. My Mom made some Deviled Eggs, which are the best I ever had! Plus Mom wanted some BBQ Beans so I prepared some Honey Smokehouse BBQ Chili Beans. I used Jack Daniel's Honey Smokehouse BBQ Sauce, Joan of Arc Spicy Chili Beans, 1 teaspoon Ground Mustard, and a couple of pinches of Splenda Brown Sugar. Mix it all together and heat it in a medium sauce pan. We had all the ingredients for a picnic, in this case an indoor picnic as it started raining just as the Brats and Hot Dogs were ready. For dessert later tonight a slice of Pillsbury Nut Quick Bread topped with a scoop of Breyer's carb Smart Vanilla Ice Cream.
