One of America's Favorites - Pork Tenderloin Sandwich

Pork tenderloin sandwich (large)

The pork tenderloin sandwich contains a breaded and fried cutlet similar to the Wiener Schnitzel and is popular in the Midwest region of the United States, especially in the state of Indiana. The sandwich can first be traced back to the Nick's Kitchen restaurant in Huntington, Indiana (near Fort Wayne).

The primary differences between a Pork Tenderloin sandwich and a Wiener Schnitzel are that the Pork Tenderloin sandwich is made exclusively using pork loin and it is deep fried instead of pan fried. The Pork Tenderloin sandwich is also usually served on a bun. There is a grilled variant of the Pork Tenderloin that omits the breading and grills the tenderloin instead of deep frying it.

A Pork Tenderloin sandwich is traditionally prepared from a thinly sliced piece of pork tenderloin, hammered thin with a meat mallet. The meat is then dipped in flour, eggs and breadcrumbs or crushed saltine crackers before being deep fried in oil. After cooking, the prepared Pork Tenderloin is then served on a hamburger bun, with the meat overlapping the bun considerably. The sandwich can be served with condiments such as mustard, lettuce, onions, pickles, and mayonnaise.

The sandwich is usually served with a side of french fries, though onion rings are often provided instead.

The primary variant of the prepared pork tenderloin is a grilled prepared pork tenderloin. This is a healthier variation as the pork is grilled instead of fried. The meat is seasoned or marinated and then placed on a grill. After cooking, the meat is placed on a hamburger bun and topped with condiments.

A Full Harvest: Stuffed Vegetable Recipes for Fall
To celebrate Autumn, turn fall’s best vegetables into cornucopias of plenty. Try stuffing luscious roasted eggplant with curried pork and shrimp. Tuck briny oysters, nutty Parmesan and fresh herbs between tender artichoke leaves. Fall vegetables take center stage in these delicious stuffed vegetable recipes.

Roasted Stuffed Pumpkin with Spiced Pumpkin Seeds
This roast pumpkin with a mushroom-and-bread stuffing is a beautiful vegetarian entree for the holidays. Use a small pumpkin if you can find one, but a winter squash like kabocha or buttercup also works. For a special garnish, save the seeds from the pumpkin, toss them with spices and roast them. If you use a squash, opt for store-bought pepitas; the squash seeds are too woody to eat....

Stuffed Eggplant
In this Italian stuffed eggplant recipe, fresh breadcrumbs, Parmesan cheese and parsley make a simple, yet delicious filling for an “inside-out” eggplant Parmesan. Serve these stuffed eggplants as a light dinner along with a big salad.......

Polenta-Stuffed Kabocha Squash
The cheesy polenta filling in this healthy stuffed squash recipe makes a great alternative to mashed potatoes, as well as a hearty vegetarian entree. If you can't find kobocha squash, try using a buttercup squash or pie pumpkin--or skip serving it in the hollowed-out vegetable altogether and use 2 cups of your favorite pureed winter squash in Step 5.........

One of America's Favorites - Bread Crumbs

Bread crumbs or breadcrumbs (regional variants: breading, crispies) are small particles of dry bread,
Breadcrumbs from a box on a plate
used for breading or crumbing foods, topping casseroles, stuffing poultry, thickening stews, adding inexpensive bulk to meatloaves and similar foods, and making a crisp and crunchy coating for fried foods, especially breaded cutlets like tonkatsu and schnitzel. The Japanese variety of bread crumbs is called panko.

Dry breadcrumbs
Dry breadcrumbs are made from dry breads which have been baked or toasted to remove most remaining moisture, and may even have a sandy or even powdery texture. Bread crumbs are most easily produced by pulverizing slices of bread in a food processor, using a steel blade to make coarse crumbs, or a grating blade to make fine crumbs. A grater or similar tool will also do.

Fresh breadcrumbs
The breads used to make soft or fresh bread crumbs are not quite as dry, so the crumbs are larger and produce a softer coating, crust, or stuffing. The crumb of bread crumb is also a term that refers to the texture of the soft, inner part of a bread loaf, as distinguished from the crust, or "skin".

Panko
Panko is a variety of flaky bread crumb used in Japanese cuisine as a crunchy coating for fried foods,
Baked panko crusted pork
such as tonkatsu. Panko is made from bread baked by grinding the dough to create fine slivers of crumb, yielding bread without crusts. It has a crisper, airier texture than most types of breading found in Western cuisine and resists absorbing oil or grease when fried, resulting in a lighter coating. Outside Japan, its use is becoming more popular in both Asian and non-Asian dishes: It is often used on fish and seafood and is often available in Asian markets, speciality stores, and, increasingly, in many large supermarkets.

Panko is produced worldwide, particularly in Asian countries, including Japan, Korea, Thailand, China, and Vietnam.

Breading (also known as crumbing) is a dry grain-derived food coating for a piece of food made from
Cornmeal breading
bread crumbs or a breading mixture with seasonings. Breading can also refer to the process of applying a bread-like coating to a food. Breading is well suited for frying as it lends itself to creating a crisp coating around the food. Breading mixtures can be made of breadcrumb, flour, cornmeal, and seasoning that the item to be breaded is dredged in before cooking. If the item to be breaded is too dry for the coating to stick, the item may first be moistened with buttermilk, raw egg, or other liquid.

Breading contrasts with batter, which is a grain-based liquid coating for food that produces a smoother and finer texture, but which can be softer overall.

Kitchen Hint of the Day!

Save the Bread Crumbs....

If your making your own bread crumbs you can freeze them for later use. Just transfer them to a sealable plastic bag. Label, date and freeze for up to three months. Place the frozen breadcrumbs in the fridge until thawed, then use instead of bought breadcrumbs in recipes.

Kitchen Hint of the Day!

Save that leftover Bread....

Save all kinds of leftover bread, bagels, baguettes, sandwich loaves, rolls, crackers, biscuits, and buzz to very fine crumbs in the food processor. Freeze in self-sealing plastic bags and use for stuffing and toppings.

Mini Turkey Meat Loaves w/ Green Beans and New Potatoes

Dinner Tonight: Mini Turkey Meat Loaves w/ Green Beans and New Potatoes

Well they were right, the heat and humidity returned! Started the day off with Jennie - O Turkey Bacon, a Scrambled Egg, and a couple of slices of Healthy Life Whole Grain Bread. Love that Turkey Bacon to start the day! Went and spent time with my Dad at the rehab center, a couple of hours or so, got the car washed, and back home for the day. I made an early dinner tonight Mom had to be somewhere at 7:00 this evening. It was comfort food heaven tonight for dinner. I prepared Mini Turkey Meatloaves w/ Green Beans and New Potatoes.

Instead of making Mini Turkey Meat Loaves all in tin pans I made one Mini Turkey Meat Loaf Pan and 3 Patties. I got the idea from the current issue of EatingWell Magazine. The Patties looked and sounded so good I had to try them. For the Turkey I used Jennie – O Extra Lean Ground Turkey Breast. To make the Sauce topping I'll need Ketchup, Worcestershire Sauce, and Heinz 57 Sauce. For the Meat Loaf you just combine your spices, (Roasted Ground Cumin, Onion Powder, Parsley, Ground Thyme, Sea Salt, Pepper) melted Butter, and Minced Garlic with the Ground Turkey, Ketchup, and Bread Crumbs. Put equal amounts in your pans or pan, top with sauce, and bake at 375 degrees for 30 – 35 minutes, inner temperature of 165 degrees. To make the Patties just take the meat mixture and form it into Patties and top with sauce. They both came out delicious Turkey Meatloaf and Turkey Meat Loaf Patties! And as all recipes you can add your own Choice of ingredients. I left the full recipe at the end of the post. We ate the Patties for dinner and saved the Mini Loaf to make sandwiches with for lunch or snacks.

For my side dishes it all by Del Monte. I heated up a can of Del Monte Low Sodium Cut Green Beans and a can of Del Monte Whole New Potatoes. Del Monte Products are always fresh and easy to prepare. Then for dessert later tonight a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

One of America's Favorites - Onion Rings

A basket of onion rings

Onion rings are a form of hors d'oeuvre or side dish commonly found in the United States, Canada, United Kingdom, Ireland, Australia, and some parts of Asia. They generally consist of a cross-sectional "ring" of onion (the circular structure of which lends itself well to this method of preparation) dipped in batter or bread crumbs and then deep fried; a variant is made with onion paste. Whole onion rings make for better presentation through a variety of sizes, while those made from a paste offer quantity through consistent size. Consumers of whole onion rings run the risk of pulling the onion out of the batter if they fail to cut it all the way through with their teeth; onion rings made of onion paste break apart easily, while oil absorbency diminishes the onion taste. Onion rings are sometimes dipped into ketchup or spicy sauces.

The exact origins of the onion ring are unknown, but in 1933 a recipe for deep-fried onion rings that are dipped in milk then dredged in flour appeared in a Crisco advertisement in The New York Times Magazine.

A recipe for French Fried Onions may have appeared in the Middletown, NY Daily Times on 13 January 1910. It does not claim to be the originator of the recipe.

One claimant to the invention of the onion ring is the Pig Stand restaurant chain, founded in Oak Cliff, Texas, in the early 1920s. The once-thriving chain, whose heyday in the 1940s saw over 100 locations across the United States, also claims to be the originator of Texas toast.

The restaurant A&W is credited with popularizing the onion rings in fast food restaurants, introducing it to its menu in the 1960s.

John Mollard's 1802 cookbook "The Art of Cookery Made Easy and Refined" (page 152) includes a recipe called "Fried Onions with Parmezan Cheese." The recipe suggests cutting onions into 1/2" rings, dipping them into a batter made of flour, cream, salt and pepper, and Parmesan cheese, and then deep frying them in "boiling" lard. It further suggests serving them with a sauce made of melted butter and mustard.

The web is full of recipes for Old Fashioned Onion Rings and here's one from the allrecipes.com web site along with a healthier version Oven-Baked Onion Rings from the same site!

Old Fashioned Onion Rings

INGREDIENTS:
1 large onion, cut into 1/4-inch slices
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup milk, or as needed
3/4 cup dry bread crumbs
seasoned salt to taste
1 quart oil for frying, or as needed

DIRECTIONS:
1. Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
2. Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
3. Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
4. Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

Walnut-Crusted Salmon w/ Baked Potato and Green Beans & Potatoes

Dinner Tonight: Walnut-Crusted Salmon w/ Baked Potato and Green Beans & Potatoes

Been a cloudy, rainy, muggy day out today. Mom is still suffering from poison ivy, but it's somewhat better than yesterday. Trying to decide on a type of a much needed Kitchen Splash Guard. We've always needed it but just never did anything about it, till now. Nothing expensive just one that will get the job done. For dinner tonight it's Walnut-Crusted Salmon w/ Baked Potato and Green Beans & Potatoes.

I had come across the Walnut-Crusted Salmon recipe from an issue of Taste of Home Magazine a while back. Now it's my favorite Salmon recipe! I had purchased the Salmon from Kroger, they had the Atlantic Salmon on sale so I had loaded up on it. I had it froze so I laid it in the fridge to thaw overnight. To prepare the Salmon I needed; salmon fillets, Dijon mustard, honey, whole wheat bread (torn into pieces), finely chopped walnuts, canola oil, and dried thyme. Then I preheated the oven to 400°. Placed the Salmon on a baking sheet coated with cooking spray. Mixed the mustard and honey and brushed it over the salmon. Placed the bread in a food processor and pulsed until coarse crumbs formed, transferred to a small bowl. Stirred in the walnuts, oil and thyme and pressed it onto the salmon. Baked 12 minutes until the topping was lightly browned and the fish just begins to flake easily with a fork. I’ve left the original recipe along with the web link at the bottom of the post. If you’re a Salmon lover you have to try this recipe! The sweetness of the Honey and sharpness of the Dijon Mustard are perfect together. I love regular Baked Salmon but with the combo of all the ingredients it just makes the Salmon pop with flavor.

Having the Holy Trinity of Vegetable Side Dishes tonight Carrots, Green Beans, and Potatoes! One side I prepared was a small can of Sliced Carrots. Then I also heated up a can of Del Monte New Potatoes and Cut Green Beans. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Walnut-Crusted Salmon Recipe

Ingredients:

4 salmon fillets (4 ounces each)
4 teaspoons Dijon mustard
4 teaspoons honey
2 slices whole wheat bread, torn into pieces
3 tablespoons finely chopped walnuts
2 teaspoons canola oil
1/2 teaspoon dried thyme

Directions:

Preheat oven to 400°. Place salmon on a baking sheet coated with cooking spray. Mix mustard and honey; brush over salmon. Place bread in a food processor; pulse until coarse crumbs form. Transfer to a small bowl. Stir in walnuts, oil and thyme; press onto salmon.
Bake 12-15 minutes or topping is lightly browned and fish just begins to flake easily with a fork. Yield: 4 servings.

Kitchen Hint of the Day!

You can replace the bread crumbs in pasta dishes with finely chopped nuts for extra flavor and a shot of protein. Try almonds on top of bechamel-based mac 'n' cheese.

Smoked Mozzarella Chicken with Pasta

Dinner Tonight: Smoked Mozzarella Chicken with Pasta

A gorgeous Spring Day out today. Sunny and 70 degrees! Had to go to Kroger to pick up a couple of items for tonight's dinner and then back home. Got the cart out and went to the lake and did some fishing, How relaxing! Caught some sun and 4 small fish, 2 Blue Gill and 2 Bass. A nice peaceful day. For dinner tonight a new recipe; Smoked Mozzarella Chicken with Pasta. You're going to love this dish!

Came across the recipe for tonight's dinner in an issue of Simply Delicious/Taste of Home Magazine and it looked and sounded too good not to try, Smoked Mozzarella Chicken with Pasta. To prepare it I needed the following; 4 ounces thin spaghetti, 2 boneless skinless chicken breast halves (6 ounces each), sea salt and pepper (to taste), 1/3 cup Whole Grain bread crumbs, 2 tablespoons extra virgin olive oil, 2 thin slices smoked deli ham, 2 slices smoked mozzarella cheese, 1/2 teaspoon dried sage leaves, 1/2 cup prepared pesto, and Grated Parmesan cheese. I only used half amounts of the original recipe, I only prepared 2 Chicken Breasts. I also made my own Bread Crumbs by putting 2 slices in the food processor. For my Pasta I used Ronzoni Healthy Harvest Whole Grain Thin Spaghetti. I also used Perdue Chicken Breasts. I like using these, they store in the freezer and are individually wrapped.

To prepare it I cooked pasta according to package directions. When done drained and transferred to a large bowl. Got my Chicken Breasts and sprinkled with salt and pepper. Placed the bread crumbs in a shallow bowl. Dipped Chicken in bread crumbs to coat both sides; shaking off excess. Then in a large skillet, heated oil over medium-high heat. Added Chicken; cooked 5 minutes. Turned and cooked 2 minutes longer. Topped with Ham and Mozzarella Cheese; sprinkled with Sage. Cook 1-2 minutes longer or until the thermometer inserted in chicken reads 165°. Removed from heat. Added pesto to Pasta and tossed to coat. Served the  Chicken with the Pasta and sprinkled with Parmesan Cheese. Another one of those keeper recipes! You can't go wrong with Chicken and Pasta, the added Ham and Smoked Mozzarella worked great. The original recipe along with the web link is at the bottom of the post. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.
