Chili Rubbed Pork with Mango Salsa w/ New Potatoes
Dinner Tonight: Chili Rubbed Pork with Mango Salsa w/ New Potatoes
For Breakfast I had an Egg Beater's Egg White Scrambled Egg, 2 Jennie - O Turkey Breakfast
Sausage Links, 2 slices of Toasted Aunt Millie's Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Love a good Breakfast! After my morning workout it was house cleaning day. Ran the vacuum and dusted. Swept up and cleaned outside on the deck and driveway, getting a lot of leaves this year. After cleaning got the cart out for a while to enjoy another beautiful Fall Day, sunny and 70 degrees! Clouds and rain moving in though overnight and Saturday, much needed rain. For dinner tonight anew recipe, I prepare a Chili Rubbed Pork with Mango Salsa w/ New Potatoes.
I had come across this recipe from a McCormick Recipe email and had been wanting to try for some
time, like dinner tonight! To make this I'll need the following; 1 package McCormick® Chili Seasoning Mix, 1 tablespoon packed Splenda Brown Sugar, 1 large ripe Mango (peeled) - seeded and finely chopped (1 cup), 1/3 cup finely chopped Red Onion, 2 tablespoons Orange Juice, 1 tablespoon chopped Cilantro, 2 Pork Tenderloins (about 1 pound each), and 1 tablespoon Extra Virgin Olive Oil. The ingredients of one delicious Pork Tenderloin! I used Splenda Brown Sugar instead of the regular Brown Sugar and I also used the McCormick® Chili Seasoning Mix instead of the Gluten-Free McCormick® Chili Seasoning Mix (Kroger was out of stock of it). The original recipe and web link is at the end of the post.
To prepare the dish I mixed the Seasoning Mix and Sugar in small bowl. For the Mango Salsa, mixed
the Mango, Onion, Orange Juice, Cilantro and 1 teaspoon of the Seasoning Mixture in medium bowl. Covered and refrigerated until ready to serve.
I then brushed the Pork Tenderloins with Oil. Coated evenly with remaining seasoning mixture. Refrigerated for 1 hour, for extra flavor.
To prepare it preheat the oven to 375°. Add Pork to pan; cook 4 minutes, browning on all sides. Bake at 375° for 15 minutes or until a thermometer registers 145° (slightly pink), turning after 7 minutes. Let stand 5 minutes before slicing. I use this cooking method when I prepare my Cumin Spiced Pork Tenderloin and it always comes out perfect. The Tenderloin came moist and delicious! Love the McCormick® Chili Seasoning Mix along with Brown Sugar, nice crust and perfect flavor. A definite "Keeper Recipe".
For a side I heated up a can of Del Monte Whole New Potatoes, just emptied the contents of the can
into a sauce pan and heated on medium heat until heated through. I also had a slice of Aunt Millie's Whole Grain Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Beans and Smoked Turkey Sausage (Beans and Weenies)
Dinner Tonight: Beans and Smoked Turkey Sausage (Beans and Weenies)
Brrr, it was downright cold this morning! About 3:00 this morning I had to get up and turn the heat up. It was in the 30's. it looks as though it's going to be another Chilly and Rainy Night for all the Trick or Treaters around here. The last 3 Halloweens have been this way. Possible snow flurries coming Saturday morning, our first sign of snow of this season. Spent the day cleaning the spare room back where my computer is at, much needed cleaning! Well to counter the cool day I made a pot of Beans and Smoked Turkey Sausage (Beans and Weenies).
Growing up who didn’t like the old-fashioned Campbell’s Beans and Weenies! I hadn't made it in a while and sounded perfect for dinner tonight. So it's Beans and Weenies but I jazzed it up a bit. I used 1 Butterball Hardwood Smoked Turkey Sausage (sliced into bite size pieces), 3 slices of Jennie - O Turkey Bacon, 1 can of Joan of Arc Spicy Chili Beans, 1 can of Bush’s Reduced Sodium Black Beans (drained and rinsed), 1/4 of a medium-sized White Onion (Chopped), 1 teaspoon Ground Cinnamon, 1 tablespoon Ground Mustard, 1 tablespoon Splenda Brown Sugar, Liquid Smoke (Optional and to taste), a couple of shakes (or more) of Frank’s Red Hot Sauce, and a 1 cup of Jack Daniel’s Honey Smokehouse BBQ Sauce (or to taste).
Another one of those delicious and easily prepared meals. I used a small size Dutch Oven that I had sprayed with Pam Cooking Spray. Added all the ingredients except for the Turkey Smoked Sausage to the Dutch Oven, and stirred until well mixed. I turned the stove on medium low, covered the pot and just let simmer. Another set it and forget recipe! After I got the Beans started I fried up 3 slices of Jennie - O Turkey Bacon. I fried it up nice and crisp and when done crumbled it up into small pieces and added it to the Beans. You could make this in a crock pot on low and let it go all day or by using a medium size sauce pan and get done even quicker. I love dishes that you can set low and let them simmer. After a couple of hours I sliced up one of the Butterball Hardwood Smoked Turkey Sausages and added it to the Beans. I then increased the heat to medium for about another 1/2 hour and then reduced it back down to medium low until it was time for dinner. A good Hearty Meal tonight. You have the smokiness of the Bacon and Liquid Smoke, the Sweetness and Tang of the BBQ Sauce, the Spices, along with the Smoked Turkey Sausage and Beans. I just love all the flavors, a real comfort food! For dessert/snack tonight I heated up some Hormel Snackers Chili and Cheese Dip along with some Tostios Multi Grain Scoops. Love the Dip, a good way to end the day!

BBQ Turkey Sliders w/ Jalapeno Cheddar Fried Potatoes
Dinner Tonight: BBQ Turkey Sliders w/ Jalapeno Cheddar Fried Potatoes
Another beautiful day out again! We set a record low for the morning, 51 degrees. For Breakfast I got the Goetta out, Glier's Turkey Goetta. I had a Sunny Side Up Egg, Turkey Goetta, and Whole Wheat Toast. Nice start to any day. Got the cart out and went fishing today. Didn't catch a whole lot but caught some fantastic Sun all day. For dinner tonight I prepared BBQ Turkey Sliders w/ Jalapeno Cheddar Fried Potatoes.
If you’re having Sliders they might as well be healthy Sliders. The Jennie – O Turkey is only 120 calories with the Buns being 100 calories. To prepare them I formed the Ground Turkey into Slider Bun size patties. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn with just a pinch of Sage in each. I pan fried them in Canola Oil. Served them on the Pepperidge Farm Wheat Slider Buns and topped with JB's Fat Boy Sticky Stuff BBQ Sauce. Now this a slider, the Sauce just sets everything off. I could eat a plate full of these.
For a side dish for the Sliders I prepared Jalapeno Cheddar Fried Potatoes. Came across this a while back in an issue of Cuisine at Home Magazine. Made some changes from the original recipe. I used Simply Potatoes Steakhouse Seasoned Diced Potatoes, Canola Oil instead of Peanut Oil, Scallions, 1 Jalapeno (sliced), Sea Salt and Ground Pepper, Sargento Reduced Fat Mexican Style Shredded Cheese, and I also added some diced Red Onion. To prepare it; Add the Canola Oil to a Cast Iron Skillet and heat on medium. Prepare the Diced potatoes according to the package instructions. About midway through the cooking process add the Diced Red Onion and continue cooking. Then Scallions and Jalapeno; saute 2 more minutes, then season with Sea Salt & Pepper. Off the heat sprinkle with the Sargento Reduced Fat Mexican Style Shredded Cheese. And another keeper Potato Dish! This has turned out to be one of my favorite Potato Side Dishes. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.
Jalapeno Cheddar Fried Potatoes

2 T. Canola Oil
1/4 cup chopped Scallions
1 Jalapeno, sliced
1/2 Medium sized Red Onion, diced
Sea Salt & Pepper to taste
1/2 cup Sargento Reduced Fat Mexican Style Shredded Cheese
Directions:

Sweet Pepper, Cilatro and Green Chile Shrimp Fajitas
Dinner Tonight: Sweet Pepper, Cilantro and Green Chile Shrimp Fajitas
Finally a day without the high humidity! It was about 72 for a high today. Ran some errands early and then back home. Got the cart out and did a little fishing and then just rode around enjoying the day. For dinner tonight; Sweet Pepper, Cilantro and Green Chile Shrimp Fajitas.
I used a packet of the Ortega Cilantro and Green Chile Skillet Sauce. If you like Shrimp Fajitas you have to give this sauce a try! To prepare it I used a bag of Kroger Seafood Jumbo Shrimp along with the packet of Ortega Cilantro and Green Chile Skillet Sauce, Delallo Tri-Color Pepperazzi Spicy Sweet Peppers, Chopped Jalapeno slices, Chopped Red Onion, fresh Shredded Asiago Cheese, and Ole Fajita Flour Tortillas.
I rinsed and drained my Shrimp off in a colander. I then heated up a tablespoon of Extra Virgin Olive Oil in a medium size skillet over medium heat. I started by slicing the Sweet Peppers into strips and adding them to the skillet along with the Chopped Red Onion, stirring them and cooking until tender (about 4 minutes). Stirred in the Shrimp and sliced Jalapenos, stirred this until the Shrimp just started turning pink. Then added the Ortega Cilantro and Green Chile Skillet Sauce, cooking another 4 minutes till everything was heated through. What an aroma coming from the skillet! Heated up the tortillas in the microwave for 20 seconds and topped them with Guacamole and the Shrimp Taco Mixture. I also topped it some fresh grated Asiago Cheese, and served. I keep packets of the Ortega Cilantro and Green Chile Skillet Sauce in stock, it makes on delicious Fajita! It's a nice heat to it but not overpowering with a fantastic medley of flavors. Winner, Winner, Shrimp Fajitas! For dessert/snack later a Jello Sugarless Dark Chocolate Mousse.
