Kitchen Hint of the Day!

When making Rice......

Use a heavy bottomed pot to prevent burning or scorching. It’s harder to control a heated surface that is thin. Also sauté the rice in a little olive oil until lightly toasted. Love that Rice!

Smoked Salmon w/ Whole Grain Medley - Brown and Wild Rice and Baked Garlic Loaf Bread

Dinner Tonight: Smoked Salmon w/ Whole Grain Medley - Brown and Wild Rice and Baked Garlic Loaf Bread

Just a cup of Bigelow Decaf Green Tea for Breakfast. I had to be at my family Doctor to discuss the results of my test that showed I have severe Diabetic Neuropathy. I think I may have the test redone. I'm just not showing the signs that the tests says I should be showing, or at least not showing right now. Either way it's just something new I have to deal with if I do have the damage. More to come. Anyway after I left the doctor's I picked up Breakfast for Mom at McDonald's. Then I went and got her car washed and filled up with gas. Next I went to Meijer for a few items. It's a beautiful Spring Day out there today! 74 degrees and Sunny! For Dinner tonight I prepared Smoked Salmon w/ Whole Grain Medley - Brown and Wild Rice and Baked Garlic Bread Loaf.

I came across a new item while at Meijer, Latitude 45 Smoke Roasted Atlantic Salmon. So I'll be using this for the first time along with a packet of Uncle Ben's Ready Whole Grain Medley - Brown and Wild Rice.

The Salmon comes in a sealed plastic container. I sampled it at Meijer and it was Love after one
taste! I bought a couple of containers of it, with more to come! It's all ready, just open and serve. Has such a delicious and fresh taste to it, huge fan already!

For my Rice I'm using Uncle Ben's Ready Whole Grain Medley - Brown and Wild Rice. It comes in a
micowavable package. I microwaved it for 90 seconds and done! I guess one my favorites from the Uncle Ben’s Ready Rice, all though I love using them all. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs perfectly with the Smoked Salmon.

To serve I made a bed of the Rice and topped it with the Smoked Salmon. I love this dish! Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. For Dessert later Jello Sugar Free Dark Chocolate Pudding topped with Coll Whip Free.

UNCLE BEN'S® WHOLE GRAIN MEDLEY™ Brown and Wild Rice

Turkey Enchilada Poblano Peppers
In this healthy take on a turkey enchilada recipe, we stuff everything into a roasted poblano pepper shell rather than tortillas to pack an extra serving of veggies into this meal. If you can't find poblano peppers, you can substitute green bell peppers instead.................

Squash-Stuffed Roasted Poblano Peppers
When fresh, poblanos have a wonderful, somewhat sweet heat that makes a terrific vessel for rich-tasting butternut squash stuffing. Accompanied by corn tortillas or rice and beans, this makes a special vegetarian entree. Most of the preparation can be done in advance and the recipe can easily be doubled. Look for dark green poblanos about 5 inches long, with broad shoulders at the stem, tapering to a pointy tip. Wash your hands thoroughly after removing the seeds or wear rubber gloves; most of the chile oils are found in the seeds and connective membranes....................

Crispy Pan Fried Tilapia w/ Long Grain and Wild Rice

Dinner Tonight: Crispy Pan Fried Tilapia w/ Long Grain and Wild Rice

To start this Tuesday off I had one of favorites, French Toast and Turkey Sausage Links. For the
French Toast I used Aunt Millie's Light Whole Grain Bread, 1/2 cup of 2% Milk, 1 medium Egg,
Ground Nut Meg, Ground Cinnamon, and Blue Bonnet Light Butter. Mix the Milk, Egg and Spices together in a bowl and dip the Bread in mixture. Fry until each side is golden brown. For the Sausage I used Johnsonville Turkey Breakfast sausage Links. Just fry for 8 minutes and done. For the Syrup topping I used Log Cabin Sugar Free Maple Syrup. Oh how I love French Toast! It's 50 degrees and partly sunny out today. Ran a couple of errands and stopped by Meijer for a few items. Back home I was all caught up on everything and just took it easy. For Dinner tonight its Crispy Pan Fried Tilapia w/ Long Grain and Wild Rice.

I purchased the Tilapia while at Meijer earlier. I purchased 2 big and beautiful fillets of the Tilapia,
having 1 for Dinner and froze the other one. I also bought a Red Snapper Fillet. So I had already rinsed the fillet in cold water and had it in plastic bag the fridge. To prepare it I’ll need; the Tilapia, McCormick Grinder Sea Salt and Peppercorn Medley, and Zatarain’s Crispy Southern Fish Fri. To start I heated Extra Light Olive Oil in a skillet over medium-high heat. When the skillet was ready I cooked the Tilapia until Golden Brown, about 3 minutes per side. I had not had Tilapia in a while and it tasted great! Moist with that excellent Zatarain's Seasoning.

I also prepared a packet of Uncle Ben’s Ready Rice Long Grain and Wild. It comes in a microwavable bag. I microwaved it for 90 seconds and done! I guess my favorite among the Uncle Ben’s Ready Rice, all though I love using them all. An easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs with Fish perfect. Also had a slice of Aunt Millie’s Light Whole Grain Bread that I lightly buttered with I Can’t Believe It’s Butter.

One of America's Favorites - Country Captain

Country Captain is a curried chicken and rice dish, which is popular in the Southern United States. It was introduced to the U.S. through Charleston, Savannah, New York and Philadelphia, but has origins in India. The dish was once included in the United States military Meal, Ready-to-Eat packs, in honor of it being a favorite dish of George S. Patton.

It has also appeared on television shows in both the United States and in the United Kingdom, with chefs Bobby Flay, Atul Kochhar and Cyrus Todiwala all cooking the dish. Todiwala served his version to Queen Elizabeth II as part of her Diamond Jubilee celebrations.
Country Captain

In its basic form, country captain is a mild stew made with browned chicken pieces, onions, and curry powder. Almonds and golden raisins or zante currants are usually added. Many versions also call for tomatoes, garlic, and bell peppers. The dish is served over white rice. With the exception of the rice, it is meant to be cooked all in the same pot. Chef Mamrej Khan has referred to the dish as one of the first fusion dishes to be developed, making it part of the Anglo-Indian cuisine.

Country captain originated in India as a simple spatchcock poultry or game recipe involving onions and curry and possibly enjoyed by British officers. One theory is that an early 19th-century British sea captain, possibly from the East India Company, working in the spice trade introduced it to the American South via the port of Savannah. The dish remains popular amongst the communities in Mumbai, India. The "country" part of the dish's name dates from when the term referred to things of Indian origin instead of British, and so the term "country captain" would have meant a captain of Indian origin, a trader along the coasts of India. Others claim that the word "captain" in the title is simply a corruption of the word "capon".

In 1991, New York Times columnist Molly O’Neill researched the origin of the dish known as country captain, which had been a steady feature in southern cookbooks since the 1950s. Working with Cecily Brownstone, they discovered that the dish originally published in the United States in the pages of Miss Leslie’s New Cookery Book published in Philadelphia in 1857.[8] The recipe required a "fine full-grown fowl". It also appeared in the kitchens of Alessandro Filippini, who was a chef with a restaurant on Wall Street in the 18th century.

Fans of the dish have included Franklin D. Roosevelt, who introduced it to George S. Patton. It was Patton's love for the dish which subsequently resulted in it being added in his honor to the U.S. Army's Meal, Ready-to-Eat field rations in 2000. A variety of Southern chefs have recipes for the dish, including Paul Prudhomme, Paula Deen and Emeril Lagasse. The dish was featured on an episode of Throwdown! with Bobby Flay in season 6 guest-starring Matt and Ted Lee. It also appeared on the BBC One cooking show, Saturday Kitchen, with chef Atul Kochhar cooking the regular chicken and rice version of the dish.

Chef Cyrus Todiwala cooked a variation of country captain on Saturday Kitchen. His version was similar to Shepherd's Pie, in that the meat was baked under a layer of potato. He had previously cooked the dish for Queen Elizabeth II and the Duke of Edinburgh at Kirishna Avanti school in Harrow as part of the Queen's Diamond Jubilee celebrations in 2012. That version of the dish used rare breed lamb from the Orkney Islands which had been fed on seaweed. The dish is also now on the menu of Todiwala's London restaurant, Café Spice Namasté.

One of America's Favorites - Stuffing

Stuffing a turkey

Stuffing or filling is an edible substance or mixture, normally consisting primarily of small cut-up pieces of bread or a similar starch and served as a side dish or used to fill a cavity in another food item while cooking. Many foods may be stuffed, including eggs, poultry, seafood, mammals, and vegetables, but chickens and turkey are the most common. Stuffing serves the dual purpose of helping to keep the meat moist while also adding to the mix of flavors of both the stuffing and the thing it is stuffed in.

Poultry stuffing often consists of dried breadcrumbs, onion, celery, salt, pepper, and other spices and herbs, a popular herb being sage. Giblets are often used. Popular additions in the United Kingdom include dried fruits and nuts (notably apricots and flaked almonds), and chestnuts.

It is not known when stuffings were first used. The earliest documentary evidence is the Roman
Stuffed turkey
cookbook, Apicius De Re Coquinaria, which contains recipes for stuffed chicken, dormouse, hare, and pig. Most of the stuffings described consist of vegetables, herbs and spices, nuts, and spelt (an old cereal), and frequently contain chopped liver, brains, and other organ meat.

Names for stuffing include "farce" (~1390), "stuffing" (1538), "forcemeat" (1688), and relatively more recently in the United States; "dressing" (1850).

In addition to stuffing the body cavity of animals, including birds, fish, and mammals, various cuts of meat may be stuffed after they have been deboned or a pouch has been cut into them. Popular recipes include stuffed chicken legs, stuffed pork chops, stuffed breast of veal, as well as the traditional holiday stuffed turkey or goose.

Many types of vegetables are also suitable for stuffing, after their seeds or flesh has been removed.
Stuffed Parasol mushroom
Tomatoes, capsicums (sweet or hot peppers), vegetable marrows (e.g., zucchini) may be prepared in this way. Cabbages and similar vegetables can also be stuffed or wrapped around a filling. They are usually blanched first, in order to make their leaves more pliable. Then, the interior may be replaced by stuffing, or small amounts of stuffing may be inserted between the individual leaves.

It is sometimes claimed that ancient Roman and medieval cooks stuffed animals with other animals. An anonymous Andalusian cookbook from the 13th century includes a recipe for a ram stuffed with small birds. A similar recipe for a camel stuffed with sheep stuffed with bustards stuffed with carp stuffed with eggs is mentioned in T.C. Boyle's book Water Music.

British celebrity chef Hugh Fearnley-Whittingstall has championed the ten-bird roast, calling it "one of the most spectacular and delicious roasts you can lay before your loved ones at Yuletide". A large turkey is stuffed with a goose, duck, mallard, guinea fowl, chicken, pheasant, partridge, pigeon, and woodcock. The roast feeds approximately 30 people and, as well as the ten birds, includes stuffing made from two pounds of sausage meat and half a pound of streaky bacon, along with sage, and port and red wine.

In the United States and eastern Canada, multi-bird dishes are sometimes served on special occasions.

Almost anything can serve as a stuffing. Many popular Anglo-American stuffings contain bread or cereals, usually together with vegetables, herbs and spices, and eggs. Middle Eastern vegetable
Stuffed orange pepper
stuffings may be based on seasoned rice, on minced meat, or a combination thereof. Other stuffings may contain only vegetables and herbs. Some types of stuffing contain sausage meat, or forcemeat, while vegetarian stuffings sometimes contain tofu. Roast pork is often accompanied by sage and onion stuffing in England; roast poultry in a Christmas dinner may be stuffed with sweet chestnuts. Oysters are used in one traditional stuffing for Thanksgiving. These may also be combined with mashed potatoes, for a heavy stuffing. Fruits and dried fruits can be added to stuffing including apples, apricots, dried prunes, and raisins. In England, a stuffing is sometimes made of minced pork shoulder seasoned with various ingredients, sage, onion, bread, chestnuts, dried apricots, dried cranberries etc. The stuffing mixture may be cooked separately and served as a side dish. This may still be called stuffing or it may be called dressing.

The United States Department of Agriculture (USDA) states that cooking animals with a body cavity filled with stuffing can present potential food safety issues. These can occur because when the meat reaches a safe temperature, the stuffing inside can still harbor bacteria (and if the meat is cooked until the stuffing reaches a safe temperature, the meat may be overcooked). For turkeys, for instance, the USDA recommends cooking stuffing/dressing separately from the bird and not buying pre-stuffed birds. (Stuffing is never recommended for turkeys to be fried, grilled, microwaved, or smoked).
