"Meatless Monday" Recipe of the Week - ZUCCHINI PARMESAN FRITTERS

ZUCCHINI PARMESAN FRITTERS

Ingredients

4 large eggs, separated
2 medium zucchini, trimmed and grated
1/2 cup grated Parmesan cheese
1/2 cup shredded whole-milk mozzarella cheese
1/4 cup parsley, chopped
1/4 cup fresh basil, chopped
1/4 cup coconut-flax flour blend (To make, mix equal parts coconut flour with ground flaxseed and refrigerate in an airtight container)
1/2 teaspoon baking powder
1/8 teaspoon ground nutmeg
1/4 teaspoon salt
Canola or olive oil cooking spray
3 teaspoons canola or virgin olive oil

Directions

1 - Place egg whites in large mixing bowl. Using electric mixer, beat on high speed until stiff peaks form and whites cling to sides of bowl when tilted. Set aside.
2 - Place egg yolks, zucchini, Parmesan, mozzarella, parsley, basil, coconut-flax flour blend, baking powder, nutmeg and salt in another large bowl. Stir well until zucchini is coated with flour. Using rubber spatula, gently fold in egg whites until just combined. There will be streaks of egg whites.
3 - Coat large skillet with cooking spray. Warm skillet over medium-high heat and add one 1 teaspoon of oil. Using 1/4-cup measure, pour out 4 fritters. Cook 2-3 minutes on each side, until lightly browned. Transfer to plate. Repeat twice, using 1 teaspoon of oil and four 1/4 measures of batter each time.
4 - Serve immediately or refrigerate, covered in aluminum foil and reheat when ready to serve.

Recipe Yield: Yield: 6 (2-fritter) servings

Cheesy Spinach Pasta Pie
Serve this meatless cheese, spinach and pasta casserole for brunch with fresh fruit and warm muffins.

Recipe Ingredients:
1 (9-ounce) package STOUFFER'S Creamed Spinach, defrosted according to package directions
6 ounces dry spaghetti, prepared according to package directions
1 tablespoon vegetable oil
6 large eggs - divided use
1 cup ricotta cheese
1 cup shredded mozzarella cheese - divided use
1/2 cup half-and-half
1/3 cup chopped onion
2/3 cup freshly grated Parmesan cheese
1/4 cup chopped fresh flat-leaf parsley
1 teaspoon crushed dried basil leaves

Cooking Directions:
1 - Preheat oven to 375°F (175°C).
2 - Combine pasta, oil and 2 lightly beaten eggs in large bowl; press onto bottom and up side of 10-inch pie plate.
3 - Bake for 7 to 10 minutes or until set.
4 - Combine creamed spinach, remaining eggs, ricotta cheese, 1/2 cup mozzarella cheese, half-and-half, onion, Parmesan, parsley and basil; spoon into pasta shell. Top with remaining mozzarella.
5 - Bake for 30 to 35 minutes or until knife inserted near center comes out clean; cool for 10 minutes before serving.

Makes 6 servings.

FRESH ASPARAGUS TOPPED WITH SUNNY-SIDE UP EGGS

Ingredients

1 bunch asparagus, woody ends trimmed
Cooking spray
2 Eggland's Best large eggs
1 tablespoon olive oil (optional)
1 teaspoon Parmesan cheese (optional)
1 teaspoon breadcrumbs (optional)
1/4 cup chopped red peppers (optional)

Directions

1 - Fill medium saucepan with water and bring to a boil. Submerge asparagus and cook for approximately 2 minutes, maintaining a bright green color and slight crunch. Immediately remove asparagus and shock it in a bowl of ice water. Reserve.
2 - Coat medium size skillet with cooking spray. Crack two Eggland's Best eggs into pan and cook over medium heat until the whites set and the edges of the eggs are cooked.
3 - Place asparagus on plate, making an even layer. Remove eggs from the pan using a slotted spatula and place on top of asparagus. Top with a drizzle of olive oil and garnish with Parmesan cheese, bread crumbs or red peppers, if desired. Can also be served on two pieces of whole wheat toast.

Recipe Yield: Yield: 2 servings

Warm Shrimp, Artichoke, and Parmesan Salad

Ingredients
1 can (14 ounces) water-packed quartered artichoke hearts
20 frozen cooked tail-on premium shrimp (12 ounces)
1/2 cup fat-free Italian salad dressing
1 bag (12 ounces) salad blend
1/4 cup (1 ounce) shredded Parmesan cheese

Directions
1 - Drain and rinse artichoke hearts. Combine with shrimp and dressing in large, deep skillet. Cover and cook over medium heat 10 minutes, stirring occasionally.

2 - Divide salad blend among 4 dinner plates. Top salad with shrimp-artichoke mixture. Sprinkle with cheese.

Yield: 4 servings.

Garlic-Herb Linguine w/ Argentinean Red Shrimp

Dinner Tonight: Garlic-Herb Linguine w/ Argentinean Red Shrimp





To start my Sunday Morning off I had Glier's Turkey Goetta and Hash Browns. It had been a while since I've had Turkey Goetta. I picked up a roll of it at Kroger the other day. I sat it in the freezer after I got up for 30 minutes. Reason being is that it slices a lot better and stays together when sliced as a
patty. I fried a couple of slices up in a small skillet that I sprayed with Pam Non Stick Spray, fried until both sides were golden brown. Then I also prepared some Simply Potatoes Shredded Hash Browns. When  done I sprinkled it with Sargento Off the Block Sharp Cheddar. The Goetta goes great with Hash Browns! Cloudy, windy, and 48 degrees out today. After Breakfast I went to McDonald's and picked up Breakfast for Mom. She loves those Golden Arches Breakfasts! Mom went on to Church afterward. I did a couple of loads of laundry and cleaned the house today. For Dinner tonight I tried Argentinean Red Shrimp for the first time. I prepared Garlic-Herb Linguine w/ Argentinean Red Shrimp.


I purchased a frozen bag of Private Selection Antarctic Wild Caught Argentinean Red Shrimp at Kroger last week and couldn't wait to try it! They come peeled and deveined. The description for Red Shrimp reads; Private Selection Antarctic Wild Caught Argentinean Red Shrimp are native to the antarctic waters off the coast of Argentinian and are prized for their succulent and buttery lobster-like taste and texture. There's 90 calories in a serving of 6 Shrimp.





To prepare the Shrimp I got a large skillet, sprayed it with Pam and added 1 table spoon of Extra Light Olive Oil and a pat of Blue Bonnet Light Butter. Heated the skillet on medium heat. I seasoned the Shrimp with Old Bay Seasoning. Old Bay is perfect for all Seafood and Chicken. When the Skillet was heated and ready I added the Shrimp. Cooked them for 4 minutes, turning them over after 2 minutes. And done! They fried up easy and they have an excellent flavor to them. And they are a lot like Lobster! I'll be using these again.



As the Shrimp was cooking I prepared the Barilla Whole Grain Linguine. I brought a large pot of lightly salted water to a boil. Cooked the Linguine at a boil until tender, about 11 minutes; drain and transferred pasta to a large bowl.Then I mixed melted Butter, minced Garlic, and Parsley in a small bowl;  and drizzled over the Linguine and toss to coat. Season Pasta with seasoned Sea Salt.






 To make the Dish I made a bed of the Linguine in a bowl. Topped it with the Red Shrimp with a
sprinkle of Kraft Grated Reduced Fat Parmesan Cheese. The Red Shrimp is so good and works perfect with Linguine! I had also baked a loaf of La Baguetterie Roasted Garlic Oval Bread that I got from Meijer. I love Shrimp and Pasta! For Dessert later a bowl of Skinny Pop - Pop Corn and a Diet Peach Snapple to drink.

To make that grilled cheese sandwich extra special, sprinkle a little freshly grated parmesan cheese on the outside of the bread while it’s cooking then flip it over in the pan so the cheese will cook and stick to the bread. Love those Grilled Cheese!

Creamy Turkey and White Bean Soup
Cooked turkey breast with onion, celery, garlic, tomatoes, white beans, fresh basil, garnished with Parmesan cheese and parsley.

Recipe Ingredients:
4 tablespoon olive oil
1 pound Honeysuckle White Turkey Breast, chopped, cooked (great for leftover turkey)
1 medium onion, finely chopped
1 medium celery rib, sliced fine
2 cloves garlic, minced
3 Roma tomatoes, peeled, seeded and chopped
2 cups chicken broth
1 cup cannellini beans, puréed or use 1 cup white beans
2 tablespoon fresh basil, chopped
Salt and ground black pepper to taste
Parmesan cheese for garnish
Chopped parsley for garnish

Cooking Directions:
1 - Sauté onion, garlic and celery in olive oil over medium high heat until onions are transparent. Add tomatoes and broth and simmer 10 minutes.
2 - Add beans, mix well and continue to cook an additional 5 minutes.
3 - Next finely chop basil and add to soup along with the turkey.
4 - Garnish with Parmesan cheese and chopped parsley.
Makes 4 servings.

Polenta Lasagna with Spinach

 Traditional lasagna noodles are replaced with slices of firm polenta layered with a spinach-ricotta cheese mixture and an Italian tomato sauce.

Recipe Ingredients:
Polenta:
1 tablespoon olive oil
1 small onion, very finely chopped
1 garlic clove, minced
1/2 teaspoon salt
7 cups vegetable stock
2 cups instant polenta (13.2 ounce box)
3 tablespoons freshly grated Parmesan cheese

Tomato Sauce:
2 tablespoons olive or vegetable oil
1 large onion, chopped
1 (15-ounce) can tomato sauce
1 (6-ounce) can tomato paste
1/2 cup dry red wine
1 teaspoon dry oregano leaves
1 teaspoon dry basil leaves
Salt to taste

Spinach-Ricotta Filling:
2 (10-ounce) packages frozen chopped spinach, thawed and squeezed dry
2 (15-ounce) containers low-fat ricotta cheese
2 large eggs
2 tablespoons freshly grated Parmesan cheese
Salt and freshly ground pepper
Pinch of nutmeg

4 tablespoons freshly grated Parmesan cheese - divided use
2 cups shredded mozzarella cheese - divided use

Cooking Directions:
1 - Lightly spray a 13x9x2-inch baking dish with non-stick cooking spray.
2 - For Polenta: In a large saucepan, warm the olive oil over medium heat. Add the onion and sauté for 3 to 5 minutes or until softened. Add the garlic and sauté 1 minute more, making sure it doesn't brown. Add salt and stock and bring to a rolling boil over medium heat.
3 - In a thin stream very slowly add the polenta stirring constantly with a wooden spoon. Reduce the heat to low and continue cooking for 3 to 5 minutes, stirring constantly to be sure it doesn't stick, until it's thick and creamy. Stir in 3 tablespoons of the Parmesan cheese.
4 - Pour polenta into the prepared baking dish, smoothing the top with a rubber spatula if necessary. Let polenta rest for at least 2 hours. (Can be made up to 3 days ahead however.)
5 - For Tomato Sauce: Heat oil in a wide frying pan over medium heat; add onion and cook, stirring often, until softened, about 5 minutes. Stir in tomato sauce, tomato paste, wine, oregano and basil. Bring to a simmer; then simmer, uncovered, for 10 minutes. Season to taste with salt. Makes about 4 cups sauce.
6 - For Spinach-Ricotta Filling: In a medium bowl combine spinach, ricotta, egg and Parmesan, mixing well. Season to taste with salt, pepper and nutmeg.
7 - Preheat oven to 375°F (190°C).
8 - Invert the polenta onto a cutting surface. Set the dish aside to use again. Cut the polenta rectangle in half to make 2 rectangles each measuring 9x6 1/2-inches. Slice each rectangle lengthwise in half again, using a long piece of dental floss or a serrated knife to make the job easiest, creating 4 layers (each 9x6 1/2-inches).
9 - Spoon prepared tomato sauce evenly on the bottom of the 13 x 9 x 2-inch baking dish. Place two of the polenta pieces in the dish to cover the bottom. Spoon half of the spinach ricotta mixture over the polenta, using the back of a spoon to spread it out, and then sprinkle with 1 cup mozzarella and 2 tablespoons Parmesan. Spoon 2 cups of sauce over cheese.
10 - Top with remaining polenta pieces and finish with remaining cheese.
11 - Place the lasagna dish on a baking sheet to catch any drips. Bake uncovered for 30 minutes. Remove from the oven and let sit for 10 minutes.
Makes 8 servings.

Tip: To prepare in advance the lasagna can be assembled and held up to 24 hours before baking. To cook, remove lasagna from refrigerator 1 hour before baking then cook as recipe directs.

PARMESAN HERB ENCRUSTED FISH

Ingredients

1/3 cup sliced almonds, finely chopped
1/4 cup plain dry bread crumbs
3 tablespoons grated Parmesan cheese
1/2 teaspoon McCormick Garlic Powder
1/2 teaspoon McCormick Paprika
1/2 teaspoon McCormick Parsley Flakes
1/4 teaspoon McCormick Black Pepper, Ground
1 pound tilapia fillets
Olive oil

Directions

Preheat oven to 450F. Mix almonds, bread crumbs, Parmesan cheese and seasonings in shallow dish.
Brush fish lightly with oil. Coat evenly with almond mixture. Place fish on greased foil-lined shallow baking pan.
Bake 10 to 12 minutes or until fish flakes easily with a fork.
NOTES:
Adding an herb crust to tilapia is a great way to complement its mild flavor. Combine spices like garlic, paprika and black pepper with chopped almonds, bread crumbs and Parmesan cheese for an easy dinner. You can substitute red snapper, striped bass, flounder or sole for the tilapia..

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. Had another bout with Phantom Pains. It made for a sleepless and very long night! The Phantom Pains finally let up around 11:00 this
morning. Oh how I wish there was a cure for these. Here's a little on Phantom Pains - Phantom pain is pain that feels like it's coming from a body part that's no longer there. Doctors once believed this post-amputation phenomenon was a psychological problem, but experts now recognize that these real sensations originate in the spinal cord and brain. And I can tell you the pain is as if my left leg was really there, very painful. So anyway I didn't do much of anything today. Outside its showers and thunderstorms on and off through out the day and 88 degrees. Good day to catch up on some rest and sleep, and that was my day. For Dinner tonight Chef Boyardee Cheese Ravioli in Tomato Sauce w/ Baked Garlic Oval Loaf Bread.


I wanted a hot meal but one that was easy to prepare. The Chef Boyardee Cheese Ravioli doesn't get
much easier and at the same time a very tasty meal. It comes in a can and to prepare it; just empty contents into medium saucepan. Heat over medium heat, stirring occasionally until hot. And it’s done! Doesn’t get much easier than that. Delicious, easy to prepare, and 1 sauce pan to clean. I topped it with a sprinkle of Basil and Shaved Parmesan Cheese. It's 210 calories and 36 net carbs per serving.

BUFFALO CARBONARA

BUFFALO CARBONARA
This dish can often be overwhelmed with garlic and the fatty smokiness of traditional bacon. I have held a light hand on the garlic and the lean, meaty flavor of the Bison Bacon will compliment this dish instead of overpower. A perfect dish for springtime celebrations or casual dinners! (Serves 4)

Ingredients:

Wild Idea Buffalo 10 oz. Uncured Smoked Buffalo Bacon, chopped
1 tablespoon olive oil
2 cloves garlic, minced
2 eggs + 1 yolk, room temperature
½ lemon, juiced & warmed
1½ to 2 cups Parmesan or Pecorino Romano, grated
1 teaspoon black pepper +
1 pound spaghetti, cooked al dente
1 to 2 cups reserved pasta water
*optional: asparagus tips or frozen peas, cooked al dente
salt to taste

Preparation:

1)   Prepare pasta al dente, reserving 2 cups pasta liquid. Rinse pasta and allow to drain.
2)   In heavy, large sauté pan over medium high heat, heat oil. Add bacon and brown until crispy, tossing occasionally about 5minutes. Add garlic to bacon a couple of minutes before bacon is done.
3)   Remove bacon/garlic from pan and set aside.
4)   Place the two eggs in their shell in a cup of boiling water that is removed from heat source. Allow
eggs to rest in water for one minute. Remove eggs and crack into blender along with other egg yolk. Coddled eggs may be a little cloudy, which is ok. Whip eggs in blender.
5)   Add the warmed lemon juice and 1½ cups grated cheese and pepper to blender and pulse. Add more cheese if desired.
6)   In sauté pan that bacon was browned in add 1 cup of the reserved pasta water and bring to a boil.  Add pasta to the water and cover for 1 minute or until pasta is hot.  Check pasta occasionally, adding more water if needed. Toss pasta gently. Remove pan from heat and drain excess water from pan.
7)   Drizzle egg and cheese mixture over hot pasta tossing as you drizzle. Add bacon and hot vegetables and toss again.
8)   Season to taste and garnish with shaved Parmesan or Pecorino.

Baked Rice Primavera
A hearty, Italian-style baked rice and vegetable casserole.

Recipe Ingredients:
10 large mushrooms, cleaned and quartered
2 medium zucchini, cut into 1 inch cubes
2 red bell peppers, seeded and cut into 1 inch cubes
1 medium onion, coarsely chopped
5 teaspoons olive oil
4 cups cooked rice
1 (15-ounce) can chunky Italian-style tomato sauce, or 2 cups homemade sauce
1 1/2 cups (6 ounces) shredded Wisconsin Swiss cheese
1/3 cup chopped fresh Italian parsley (flat-leaf)
1/2 teaspoon freshly ground black pepper
2 tablespoons grated Wisconsin Parmesan cheese

Cooking Directions:
1 - Lightly butter a 13 x 9 inch baking dish; set aside.
2 - In large roasting pan, toss vegetables and oil until ingredients are lightly coated. Roast at 425°F (220°C) for about 35 minutes, or until vegetables are nicely browned, stirring occasionally.
3 - Reduce oven temperature to 325°F (160°C).
4 - In large mixing bowl, combine roasted vegetables and remaining ingredients, except Parmesan cheese.
5 - Spoon mixture into reserved baking dish; smooth to make an even layer. Sprinkle Parmesan over the top. Cover with aluminum foil, and bake for 20 minutes, or until heated through.
Makes 4 servings.

Penne with Asparagus
Tender, sautéed asparagus pieces, an Italian tomato sauce and Parmesan cheese are tossed with penne pasta in this simple, yet sophisticated dish.

Recipe Ingredients:
2 tablespoons butter
2 tablespoons olive oil
1 1/2 pounds asparagus, ends trimmed, cut into 1 1/2-inch pieces
2 medium onions, chopped
4 large garlic cloves, finely minced
2 (14-ounce) cans Italian-style tomatoes with juice
2 teaspoons dried basil
1/2 teaspoon dried oregano
1/4 teaspoon dried crushed red pepper
Salt and freshly ground black pepper to taste
1 pound penne, cooked according to package directions
1/2 cup grated fresh Parmesan cheese
Additional grated fresh Parmesan cheese

Cooking Directions:
1 - Melt butter with oil in large cooking pot over medium-high heat. Add asparagus and sauté 3 minutes. Using slotted spoon, transfer asparagus to bowl.
2 - Add onions to pot and sauté until lightly golden in color, about 10 minutes. Add tomatoes with their juices, basil, oregano, red pepper, salt and ground black pepper. Bring sauce to boil. Reduce heat to medium and simmer until sauce thickens slightly, breaking up tomatoes and stirring occasionally, about 15 minutes.
3 - Return asparagus to sauce. Cook until asparagus is crisp-tender, about 3 minutes. Add cooked penne and 1/2 cup Parmesan. Toss to combine. Season with additional salt and ground black pepper, if needed. Transfer pasta to large serving bowl. Serve, passing additional cheese separately.

Mulberry Street Turkey Burger
Here’s a quick burger recipe that lets you recreate the big flavors of Little Italy for a simple weeknight dinner. Enjoy lean turkey patties topped with marinara and freshly grated Parmesan.

INGREDIENTS
1 tablespoon oil
½ cup finely chopped onion
2 garlic cloves, minced
1 (14-ounce) can diced tomatoes, undrained
1 teaspoon dried oregano leaves
2 tablespoons tomato paste
2 tablespoons chopped fresh basil
1 (16-ounce) package JENNIE-O® Lean Turkey Burger Patties
4 reduced-calorie hamburger buns, split and toasted
4 tablespoons freshly grated Parmesan cheese

DIRECTIONS
1) Heat oil in pan over medium-high heat. Add onion and garlic. Cook, stirring occasionally, 5 minutes or until onion is softened. Add tomatoes with juice, oregano and tomato paste. Bring to a boil. Reduce to medium-low. Simmer, uncovered, stirring occasionally, 10 minutes or until thickened. Stir in basil.
2) Cook patties as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
3) On bun bottoms, layer patties, tomato mixture and cheese. Add bun top.
* Always cook to an internal temperature of 165°F.

Stuffed Turkey Braided Bread
Wow the crowd in every course! Start this holiday meal with this stuffed turkey braided bread! This recipe features mushrooms, leeks, fresh thyme, Parmesan and JENNIE-O® Lean Ground Turkey for a savory start to your celebration.

INGREDIENTS
½ (1-pound) package JENNIE-O® Lean Ground Turkey
3 leeks, thinly sliced
1 (8-ounce) package assorted mushroom, sliced
1 tablespoon chopped fresh thyme leaves
1 teaspoon kosher salt
1 (13.2-ounce) package puff pastry dough
1 egg, lightly beaten or ¼ cup egg substitute
½ cup grated Parmesan cheese

DIRECTIONS
1) Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) Add leeks, mushrooms, thyme and salt and cook 10 minutes. Spread mixture on jelly-roll pan to cool completely.
3) Place puff pastry sheet on parchment paper-lined baking sheet. Make 3-inch slits diagonally along each side of puff pastry, about 1 inch apart. Brush strips with egg. Place turkey mixture down center of pastry and fold dough strips across diagonally overlapping. Brush with remaining egg mixture. Sprinkle with Parmesan cheese. Bake 25 minutes or until browned.
* Always cook to an internal temperature of 165°F.

Three Cheese Manicotti
This recipe calls for purchased marinara sauce, but you can use about 1 3/4 cups homemade marinara or even leftover spaghetti sauce (should you conveniently happen to have some on hand). Whatever sauce is used, this pasta dish is easy enough to prepare for a weeknight supper, yet impressive enough to serve company.

Recipe Ingredients:
1 (12-ounce) package manicotti pasta shells (or 14 manicotti shells)
2 (15-ounce) cartons ricotta cheese
4 1/2 cups mozzarella cheese, grated - divided use
1 cup freshly grated Parmesan cheese - divided use
2 large eggs, lightly beaten
2 tablespoons chopped fresh flat-leaf parsley or 1 tablespoon dried parsley leaves
1 teaspoon kosher or sea salt
1/4 teaspoon freshly ground black pepper
1 (26-ounce) jar marinara sauce

Cooking Directions:
1 - Grease a 10 x 15-inch sided baking pan, such as a jelly roll pan; set aside.
2 - Cook manicotti pasta shells according to package directions; drain and set aside.
3 - In large bowl combine the ricotta cheese, 3 cups mozzarella cheese, 3/4 cup Parmesan cheese, beaten eggs, parsley, salt and pepper, mixing well. Divide mixture into 14 balls*.
4 - Carefully split a manicotti shell open. Shape a cheese ball to fit the shell; close shell and lay seam-side down into prepared baking pan (do not crowd the manicotti, allow some space between); repeat procedure with remaining shells and cheese balls.
5 - Pour marinara sauce evenly over shells, spreading as needed to completely cover the shells with sauce so they won't dry out while baking. Top with remaining 1 1/2 cups mozzarella and 1/4 cup Parmesan cheese.
Bake uncovered at 350°F (175°C) for 30 to 35 minutes or until bubbly and cheese filling is set.
6 - Makes 14 manicotti.

*An easy way to divide the ricotta cheese mixture evenly is to form a "log" using plastic wrap, then divide the log into 14 sections.

Variation: 3 Cheese & Spinach Manicotti - For filling, combine 1 (15-ounce) carton, 2 cups shredded mozzarella, 1/2 cup freshly grated Parmesan cheese, 1 large egg, 1/2 teaspoon salt and 1/4 teaspoon freshly ground black pepper and and 1 (10-ounce) package frozen chopped spinach that has been thawed and squeezed dry; proceed as instructed above for filling manicotti; topping with the marinara sauce, then 1 1/2 cups shredded mozzarella and 1/4 cup Parmesan.

Turkey Schnitzel

INGREDIENTS
2 egg whites
½ cup milk
5 tablespoons flour, divided
2 tablespoons grated Parmesan cheese
⅛ teaspoon ground nutmeg
1 tablespoon butter
1 (17.6-ounce) package JENNIE-O® Extra Lean Turkey Breast Cutlets
2 tablespoons fresh lemon juice, if desired
¼ cup chicken broth, if desired

DIRECTIONS
1) Heat oven to 200ºF. In shallow dish or pie plate whisk together egg whites and milk. Add 2 tablespoons flour, cheese, pepper and nutmeg; mix well. Heat a large non-stick skillet over medium heat. Add butter and heat until butter sizzles.
2) Place remaining 3 tablespoons flour in plastic bag. Add 2 turkey cutlets at a time to bag; shake to coat. Dip into milk mixture, turning to coat and letting excess mixture drip off. Add turkey to skillet. Cook cutlets as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer.
3) Transfer to a heat-proof serving platter; keep warm in oven. Repeat with remaining turkey and butter. After all the turkey is cooked, add fresh lemon juice and chicken broth, if desired to skillet; boil 1 to 2 minutes, stirring constantly and pour over the turkey.
* Always cook to an internal temperature of 165°F.
