Moroccan Lemon Chicken with Olives
Preparation time: 20 minutes. Cooking time: 1 hour.
Ingredients
1 tablespoon olive oil
6 skinless, boneless chicken breasts (approximately 4 ounces per breast)
1 large onion, chopped
2 cloves garlic, minced
2 sticks whole cinnamon
2 teaspoons ground cumin
2 teaspoons ground turmeric
1/2 teaspoon freshly ground black pepper
2 lemons
2 small plum tomatoes, chopped
1 cup water
18 large green olives
Directions
Heat olive oil in a large pan. Place chicken breasts in hot oil and cook on all sides until slightly browned on surface. Remove from pan and set aside. To pan add onion, garlic, cinnamon sticks, cumin, turmeric, and black pepper. Cook about 5 minutes, stirring, until onion is cooked. Return chicken to pan and cover. Squeeze the juice of two lemons, reserving lemon peels. Add lemon juice to pan. Slice lemon peels into strips and add to pan with chopped tomatoes, water, and olives. Cover the pan and bring contents to a boil, then reduce heat to low and allow the mixture to simmer for about 45 minutes, until chicken is tender, occasionally lifting the lid to stir mixture and check that liquid available in pot is adequate to avoid burning. When chicken is done, arrange contents on a platter, discarding cinnamon sticks. Serve immediately. (This dish is excellent served with couscous.)
Yield: 6 servings.
Serving size: 1 chicken breast with 3 green olives.

Cumin Spiced Pork Tenderloin w/ Roasted Butternut Squash and Golden Hominy
Dinner Tonight: Cumin Spiced Pork Tenderloin w/Roasted Butternut Squash and Golden Hominy
To start my morning off I prepared Turkey Goetta, Hash Browns, and Toast. For the Turkey Goetta I
used Glier's Turkey Goetta, best by far! I just sliced a few slices off and lightly fried them in Extra Light Olive Oil. Then I also prepared some Simply Potatoes Shredded Hash Browns. I also toasted a slice of Aunt Millie's Light Whole Grain Bread that I topped with some Smucker's Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. After Breakfast I did a couple of loads of laundry. Then after Lunch I took my car up and had it washed and I vacuumed the inside. Then went to the ATM and then dropped off a few letters at the Post Office. For Dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Roasted Butternut Squash and Golden Hominy.
I purchased the Simple Truth Pork Tenderloin from Kroger yesterday, just over 1 1/2 lbs. To make the dish I’ll need; 1 tablespoon Extra Virgin Olive Oil, 1 pork Tenderloin, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the Ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. From the stove to the oven; Bake at 400° for 10 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter or dish and let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! This is my favorite Pork Recipe by far!
Then for one side I prepared some Roasted Butternut Squash, easy recipe for some delicious
Butternut Squash! I purchased 1 small package of Diced Butternut Squash at Kroger. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Walnut Pieces, 1 tablespoons Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.
To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the
Olive Oil, add the Walnut Pieces, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash! The Walnuts work perfect with the Squash. I really love Butternut Squash!
For another side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden
Hominy, and its been a while since I’ve any. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke zero to drink.

Cumin Spiced Pork Tenderloin Fillet w/ Golden Hominy and Cut Green Beans
Dinner Tonight: Cumin Spiced Pork Tenderloin Fillet w/ Golden Hominy and Cut Green Beans
To start my morning off toasted a couple Nutri Grain Eggos and had a cup of Bigelow Decaf Green Tea. 60 degrees and cloudy out today. Did some light cleaning around the house and then a load of laundry. Later on got the Hand-Vac out vacuumed my car insides and the got Mom's car for her and cleaned the windows inside and out on both cars. That was about it for the day. For Dinner tonight I prepared a Cumin Spiced Pork Tenderloin Fillet w/ Golden Hominy and Cut Green Beans.
I had no clue what to have for Dinner so I did some digging into the freezer. I came across a Meijer Pork Tenderloin Fillet and I had my Dinner, Cumin Spiced Pork Tenderloin. I sat it in the fridge to thaw overnight. To make the dish I’ll need; 1 tablespoon Extra Virgin Olive Oil, 1 pork Tenderloin, 1
tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. Then I also heated up a can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and
heat until heated through. I just love Green Beans, all Beans! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Diet Peach Snapple to drink.

Pork Facts….
One serving of pork is 3 ounces, or about the size of a deck of cards, according to the National Heart, Lung and Blood Institute. An image of the portion size is important because a thick pork chop can be
twice that size and without realizing it you can eat double the calories. You’ll get 137 calories and 4 grams of fat from a 3-ounce pork chop. Pork is similar to chicken, with 3 ounces of chicken breast containing 140 calories and 3 grams of fat. A pork chop has 65 milligrams of cholesterol, compared to 72 grams in chicken breast, but they both have just 1 gram of saturated fat.

Cumin Spiced Pork Chops w/ Golden Hominy and Cut Green Beans and Potatoes
Dinner Tonight: Cumin Spiced Pork Chops w/ Golden Hominy and Cut Green Beans and Potatoes
For Breakfast this morning I toasted a couple of Nuti Grain Eggos and heated up a couple of
Johnsonville Turkey Sausage Links. I also made a cup of the Bigelow Decaf Green Tea. Outside its showers and thunderstorms with a high of 68 degrees. Cleaned the house today, dusted and ran the vacuum. That was about it for the day. So for dinner tonight I prepared Cumin Spiced Pork Chops w/ Golden Hominy and Cut Green Beans and Potatoes.
On my last visit to Meijer I picked up a couple of huge Bone – In Pork Loin Chops and had them in
the freezer. I grabbed 1 of the Chops from the freezer and let it thaw overnight in the fridge. Then to prepare my Chop I’ll need; The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. From the stove to the oven and bake at 400° for 20 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork!
I love the trio of a Pork Chop, Golden Hominy, and Green Beans/ Potatoes. I have these 2 sides quite
often when having Pork Chops. For a side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy. For those that never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. If you’ve never tried it do, makes a delicious side dish!
Then I also heated up a can of Del Monte Cut Green Beans and Potatoes. As everything was cooking I also Baked a Loaf of Garlic Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Cumin Spiced Pork Chops w/ Golden Hominy and Cut Green Beans and Potatoes
Dinner Tonight: Cumin Spiced Pork Chops w/ Golden Hominy and Cut Green Beans and Potatoes
For Breakfast on this Wintery Sunday Morning I toasted a couple of Nuti Grain Eggos and heated up
a couple of Johnsonville Turkey Sausage Links. I also made a cup of the Bigelow Decaf Green Tea. Outside we've had a rain, sleet, snow, back to rain and had a high of 33 degrees. Good day to stay in. Cumin Spiced Pork Loin Chops w/ Savory Herb Potatoes and Golden Hominy
Dinner Tonight: Cumin Spiced Pork Loin Chops w/ Savory Herb Potatoes and Golden Hominy
For Breakfast this morning I made a Breakfast Sandwich. I heated an al fresco Chicken Sausage Patty. Then toasted a Thomas 100 Calorie Multi Grain English Muffin and used a 1/2 of slice Boar's
Head Vermont Yellow Cheese. Excellent Breakfast Sandwich! I also had a cup of Bigelow Decaf Green Tea. The heavy rains have returned! Rain and Thunderstorms most of the day, a high of 57 degrees. All this rain is going to cause more flooding. I took Mom to get her hair done and after dropping her off I went over to see a friend of mine. He's been home bound with a broken leg. He's doing good, but has a bad case of the Cabin Fever! Back home not a lot going on, just did a few things around the house. For Dinner tonight its Cumin Spiced Pork Loin Chops w/ Savory Herb Potatoes and Golden Hominy.
I had bought a package of Center Cut Pork Loin Chops from Meijer a week or so ago and had broke the package down and had the individual Chops in plastic bags, in the freezer. I grabbed a couple of the bags and laid them in the fridge overnight to thaw. So to prepare my Chops I’ll need; The Cumin
Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. I always have some of the Rub made up in a large Spice Jar I have To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork.
For one side dish I prepared the Little Potato Co. Savory Herb Potatoes. We love these! The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up.
For a second side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy. For those that never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. My favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! For Dessert/Snack later a bowl of Skinny Pop - Pop Corn along with a Diet Peach Snapple to drink.
Pork Facts….
One serving of pork is 3 ounces, or about the size of a deck of cards, according to the National Heart,
Lung and Blood Institute. An image of the portion size is important because a thick pork chop can be twice that size and without realizing it you can eat double the calories.

Cumin Spiced Pork Chops w/ Roasted Butternut Squash and Roasted Asparagus
Dinner Tonight: Cumin Spiced Pork Chops w/ Roasted Butternut Squash and Roasted Asparagus
For Breakfast this morning I prepared a favorite of mine. I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bow and sprinkled some Sargento
Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Wow what a change in the weather! A high of 62 degrees and mostly sunny yesterday and a high of 28 degrees with a wind chill around 22 degrees! Welcome to Ohio Weather! Did some cleaning around the house and then cleaned and straightened 2 closets, much needed. For Dinner tonight I prepared Cumin Spiced Pork Chops w/ Roasted Butternut Squash and Roasted Asparagus.
I had picked up a package of Pork Tenderloin Center Cut Pork Chop at Meijer a few days ago and had them in the freezer. I laid 2 of them in the fridge overnight to thaw. So to prepare my Chops I’ll need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili
Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. Because of the size of them there is some leftover for Breakfast!
Place the Squash on a sheet pan and drizzle with the
Olive Oil, Salt, and Peppercorn and toss well.
For another side I prepared Roasted Asparagus. To prepare the Asparagus I just needed Extra Virgin Olive Oil, Garlic (minced), Sea Salt, Freshly grated Black Pepper, Lemon Juice, and Shredded Parmesan Cheese. Rinse clean the asparagus. Break the tough ends off of the asparagus and discard.
Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly seasoned. Place pan in oven and cook for approximately 8-10 minutes, depending on how thick your asparagus spears are, until tender when pierced with a fork. Drizzle with a little fresh lemon juice and shredded Parm Cheese before serving. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Cumin Spiced Pork Chop w/ Mashed Potatoes, and Mixed Chili Beans
Dinner Tonight: Cumin Spiced Pork Chop w/ Mashed Potatoes, and Mixed Chili Beans
To start my morning off I prepared French Toast and Sausage. For the French Toast I used Aunt Millie’s Light Whole Grain Bread, Egg Beater’s, Ground Nutmeg, and Ground Cinnamon. For the
Sausage I used Johnsonville Turkey Sausage Links. I also had my morning cup of Bigelow Decaf
Green Tea. Rain almost all day on and off, 46 degrees. Good day to stay in, which I needed. Up most of the night battling the Phantom Pains. They started about 9:00 last night and didn't let up until about 11:00 this morning. It was one long night! So after the Phantom Pains stopped I caught up on some much needed sleep. For Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Mashed Potatoes, and Mixed Chili Beans.
On my last visit to Meijer I picked up a Bone – In Pork Loin Chop and had it in the freezer. I grabbed the Chop from the freezer and let it thaw overnight in the fridge. Then to prepare my Chop I’ll need;
The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork!
To go with the Chop I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes
and serve, just as good as homemade, if not better. I Love the combination of Mashed Potatoes and Beans!
For a 2nd side I prepared a can of Bush’s Mixed Chili Beans – Kidney and Pinto Beans in Mild Chili Sauce. For me you just can’t beat Bush’s Beans. I’ve prepared these several times now and really
love them, nice combo using the Kidney and Pinto Beans. To prepare them just empty the Beans into a small sauce pan. Cover and heat to a simmer. Done! The only store I have found them is Meijer so far. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Cumin Spiced Butterfly Pork Chop w/ Savory Potatoes and Golden Hominy
Dinner Tonight: Cumin Spiced Butterfly Pork Chop w/ Savory Potatoes and Golden Hominy
For Breakfast to start the morning off I fried up a couple of Jimmy Dean Turkey Sausage Patties, first time having these in a while. Love Jimmy Dean Turkey Products! Then I prepared some Simply
Potatoes Garlic and Herb Hash Browns. Seasoned them with Salt and Pepper and served them sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar. I also toasted a slice of Aunt Millie's Light Whole Grain Bread and had my morning cup of Bigelow Decaf Green Tea. Great Breakfast to start the day. Gave the house a quick cleaning then I had to go to the Post Office to get some Christmas Cards out. Then it was baking the rest of the afternoon. I baked Mini Loaves of Cinnamon Swirl and Chocolate Chip of Quick Bread. I baked them to give to 6 of my neighbors for Christmas. I'll deliver them tomorrow. For Dinner tonight I prepared Cumin Spiced Butterfly Pork Chop w/ Savory Potatoes and Golden Hominy.
I hadn't had Butterfly Pork Chops in a while and these looked great. I purchased them from Meijer, 2
to a package. I'm preparing them with my Cumin Spiced Rub that I use for most of my Pork Dishes.
So to prepare my Chop I’ll need; The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2
teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 2 minutes, browning both sides. From the stove to the oven and bake at 400° for 11 minutes until the thermometer registered 145°, turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! It's been too long since having these Butterfly Chops!
For one side dish I prepared the Little Potato Co. Savory Herb Potatoes. We love these! The Potatoes
come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up.
For a second side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden
Hominy. For Dessert/Snack later a bowl of Breyer's Carb Smart Vanilla Ice Cream.

come in a microwavable tray.
Hominy. For Dessert/Snack later a bowl of Breyer's Carb Smart Vanilla Ice Cream.
