I love Breakfast and the early mornings! It's the quietest part of the day and the beginning of a new day, full of hope and surprises. I like starting off with Breakfast and one of my favorites is making a Breakfast Sandwich. There's endless toppings and ingredients you can use to make one. I made one this morning consisting of a Healthy Life Whole Grain English Muffin, Scrambled Egg (1 Egg), and Fried Kahn's Deluxe Bologna (Sliced Thin). I use a Medium Size Egg (it's only 60 calories) and season it with a splash of 2% Milk (to make the Egg fluffier), a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar, and Sea Salt and Ground Black Pepper. I get the Bologna sliced very thin. I find that when you get it sliced thin it fries up better, it gives it a nice char on the outside. Put all the ingredients together and you have a delicious and healthy way to start your day, along with a cup of fresh brewed Bigelo Decaf Green Tea.

Good and Healthy Way to Start the Day!

The Jennie - O Patties are only 90 calories for a serving of 2 Patties. I made the folks Coffee and a Bigelow Decaf Green Tea for myself.

A Simple and Delicious Start of the Day!
Got in that extra hour of sleep this morning with the clock's being turned back for an hour. Woke up starving this morning and prepared just what sounded good. I had Hash Browns, Turkey Sausage, English Muffins, and Glazed Apples! I used; Simply Potatoes Hash Browns pan fried in 1 tablespoon of Extra Virgin Olive Oil, Bob Evans Turkey Sausage (my favorite Turkey Sausage Breakfast Links), Healthy Life Whole Grain Muffins (my usual choice of breads), and to top off and provide some fantastic flavor 1 1/2 tablespoons of Bob Evans Glazed Apples (love these Apples). You can prepare all this in about 20 minutes and you have one delicious and healthy breakfast! i added a cup of hot brewed Green tea and the Sunday Paper to make it complete.

Starting the day off light and healthy!
Light Multi-Grain English Muffin, Sugar Free Blackberry Jam, and Decaf Hot Brewed Green Tea and that started the morning off right! Throw in the newspaper and I'm set. I always use Healthy Life Original Light Multi-Grain English Muffins and Smucker's Sugar Free Jam The breads are always fresh and the Jam is fantastic! You can't tell it's Sugar Free and comes in several varieties. I've been drinking Green Tea since 2006. I really enjoy a hot cup of Tea and the health benefits are a plus. Time to eat and read the paper.

A Nice Hearty Breakfast, for Dinner!
Dinner Tonight: Mushroom and Cheese Omlett w/ Whole Grain English Muffin and Turkey Bacon
A chilly, rainy, and gloomy day around here again and I wanted something hearty and healthy. So I made a healthy breakfast for my dinner tonight! I had a two Egg Omelett seasoned with Sea Salt and Ground Black Pepper and then added Mushrooms and Kraft 2% Shredded Sharp Cheddar. As sides I had 3 strips of Turkey Bacon and a Healthy Life English Muffin that I topped with Smucker's Sugarless Blackberry Jam. If you like Jams and Jellies give Smucker's Sugarless a try. They have several different flavors and all are fantastic!

Eggs Benedict
Another great way to start your day off! Healthy, delicious, low carb, and low calorie that about covers it. Recipe and from the Diabetic Living On Line web site.
Eggs Benedict
The sour cream-mustard sauce is a quick, delicious, and lower-fat stand-in for the hollandaise sauce featured in classic Eggs Benedict.
SERVINGS: 2 servings
CARB GRAMS PER SERVING: 17
3 tablespoons light sour cream
2 teaspoons fat-free milk
1 teaspoon Dijon-style mustard
2 eggs
1 whole wheat English muffin, split
2 ounces thinly sliced reduced-sodium cooked ham
2 tomato slices
Snipped fresh chives (optional)
1. Preheat broiler. For sauce: In a small bowl, combine sour cream, milk, and mustard; set aside. Lightly grease a medium skillet. Half-fill the skillet with water. Bring water to boiling; reduce heat to simmering (bubbles should begin to break the surface of the water). Break one of the eggs into a small dish. Carefully slide egg into simmering water, holding the lip of the dish as close to the water as possible. Repeat with the remaining egg, allowing each egg an equal amount of space.
2. Simmer, uncovered, for 3 to 5 minutes or until egg whites are completely set and yolks begin to thicken but are not hard.
3. Meanwhile, place muffin halves, cut sides up, on a baking sheet. Broil 3 to 4 inches from the heat for 1 to 2 minutes or until toasted. Top muffin halves with ham and tomato slices. Broil about 1 minute more or until toppings are heated through.
4. To serve, use a slotted spoon to remove eggs from skillet; place eggs on top of tomato slices. Spoon sauce over eggs and, if desired, sprinkle with chives.
