Leftovers: Chicken ‘n’ Noodles w/ Sliced Carrots and Whole Grain Bread

Dinner Tonight: Leftovers: Chicken ‘n’ Noodles w/ Sliced Carrots and Whole Grain Bread

It's been one hectic day today! My Dad had a doctor's appointment but before that this morning I had to call 911. He was really struggling getting his breath, a nagging cough was turning worse, and was really weak. I wanted him to go to the doctor a week ago but as usual when I try to help it goes upon deaf ears. And now this is the result, he's in the hospital with pneumonia. Then on top of that my Mom's get a cold and I've got my yearly Pre - Spring Sinus Infection. It's not been a good day to say the least. It's been a warm day a high near or at 60 degrees, and they're calling for 64 degrees tomorrow! Then back to back cold days with possible flurries, no wonder everyone is sick! Well thank goodness for leftovers, because it was Leftover City tonight for dinner! , I reheated Chicken ‘n’ Noodles w/ Sliced Carrots and a Slice of Whole Grain Bread.

Just to jog the memory, I used Margaret Holmes Simple Suppers Chicken n Noodles Fixins’. Another of my favorite Comfort Foods! I used to buy this at Walmart all the time but Margaret Holmes no longer makes it, lack of sales they say. Anyway it comes in a 5 serving can and contains the Noodles and Seasoning, I added the Chicken. I cut up 2 Perdue Perfect Portions Chicken Breasts seasoning them with Sea Salt, Ground Black Pepper, Ground Smoked Cumin, and Parsley. I then fried them in a large skillet until done and added the can of Fixins’. Cooked until it the Sauce was bubbling and heated throughout. The broth that’s with Noodles is incredible! Rich and thick and seasoned just right.

I also had of side of Boiled Sliced Carrots leftover that I warmed up and a slice of Klosterman Wheat Bread, that I buttered with I Can't Believe It's Not Butter. Then for dessert later tonight a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Chicken ‘n’ Noodles w/ Sliced Carrots and Whole Grain Bread

Dinner Tonight: Chicken ‘n’ Noodles w/ Sliced Carrots and Whole Grain Bread

Somewhat cooler out today, high in the low 40's where it's been in the mid 50's lately. But not a bad day, sun finally came out in the early afternoon. Went to the store to pick up a few items and on my way home seen something I don't believe I ever saw around this area, Seagulls. At least they looked like Seagulls, I compared my picture with some on line and that's what they look like. They were in a field and the parking lot of the West Chester Public Library, where there's always a big gathering of Geese. And the Geese were none too happy about the new guests in their territory! Not sure on why they were settled in here, there was about 3 good size flocks of them. Anyway tonight for dinner it was Chicken ‘n’ Noodles w/ Sliced Carrots and Whole Grain Bread.

Chicken ‘n’ Noodles w/ Sliced Carrots and Whole Grain Bread

Dinner Tonight: Chicken ‘n’ Noodles w/ Sliced Carrots and Whole Grain Bread

Had a slight case of the dreaded Cabin Fever, so it was time to get out! Stopped by the bank to start and then to one of my favorite stores to shop or just browse, jungle Jim's International Market! The store is just amazing! The Deli has the best selection of Boar's Head Meats and Cheese of anyone. A fantastic Olive and Side Dish case and the best Cheese selection of anyone. The Produce, Bakery, Meat , and Seafood departments are all top notch also. Then the International selection of all World Foods can not be topped, at least in this area. So whether it's Crabs, Geoduck, Polenta, or Quail or Ostrich Eggs they have it. While there I purchased some Oranges, Bananas, Calf Liver (for my Mom), Boar's Head sliced Rare Roast Beef and sliced Honey Smoked Turkey, Snapple, and a couple of different Blue Cheese and Cheddars. Love that Store! For dinner tonight I prepared Chicken ‘n’ Noodles w/ Sliced Carrots and Whole Grain Bread.

I used Margaret Holmes Simple Suppers Chicken n Noodles Fixins’. Another of my favorite Comfort Foods! I used to buy this at Walmart all the time but they no longer carry it so I came across some for sale on the Amazon web site so I purchased 8 cans of it. I'm wondering if Margaret Holmes is going to discontinue making it? Anyway it comes in a 5 serving can and contains the Noodles and Seasoning, I added the Chicken. I cut up 2 Perdue Perfect Portions Chicken Breasts seasoning them with Sea Salt, Ground Black Pepper, Ground Smoked Cumin, and Parsley. I then fried them in a large skillet until done and added the can of Fixins’. Cooked until it the Sauce was bubbling and heated throughout. The broth that’s with Noodles is incredible! Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and Seasoned Pinto Beans

Dinner Tonight: Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and  Seasoned Pinto Beans

A day of errands today. The Bank, Post Office, Meijer, and Walmart. Got a couple of Gift Cards for the family, buying some early Christmas Gifts. The storm they were warning everyone about for 2 days barely affected our area, and it didn't come in till about 10 pm last night. For dinner tonight; Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and  Seasoned Pinto Beans.

Still running low on the Wild Idea Buffalo Steaks so I used a Great Range Bison Sirloin. I seasoned it with McCormick Grinder Sea salt and Black Peppercorn. No new grill yet so I pan fried it in Canola Oil, about 4 minutes per side. Medium rare with a nice char on the outside and a little pink and moist inside, love Bison or Buffalo! Topped it with some Sauteed Baby Bella Mushrooms. Steak and Mushrooms are always the perfect pairing.

For a side I had a Baked Potato that I seasoned with Sea Salt and Ground Black Pepper, topped with some I Can't Believe It's Not Butter. Then I also heated up a can of Margaret Holmes Seasoned Pinto Beans. First time I tried these, I picked a can up while at Walmart earlier. And as all Margaret Holmes Products they were delicious! Nicely seasoned and full of flavor. For dessert/snack later tonight a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Chicken ‘n’ Noodles w/ Cut Green Beans and Whole Grain Bread

Dinner Tonight: Chicken ‘n’ Noodles w/ Cut Green Beans and Whole Grain Bread

Another very cool morning and beautiful Fall Day out again. Stopped by Jungle Jim's Market with my parents, picked up some produce and Ocean Perch. Love that store, there's always something going on in the store and today they cooking breakfast dishes with Ostrich Eggs! Amazing how huge those Eggs are, big enough to feed 5 people on 1 Egg (if not more). For dinner tonight I prepared Chicken ‘n’ Noodles w/ Cut Green Beans and Whole Grain Bread.

I used Margaret Holmes Simple Suppers Chicken n Noodles Fixins’. Another of my favorite Comfort Foods! It comes in a 5 serving can and contains the Noodles and Fixings, I added the Chicken. I used 2 Boneless and Skinless Chicken Breasts seasoning them with Sea Salt, Ground Black Pepper, Ground Smoked Cumin, and Parsley. I then fried them in a large skillet until done, removed and sliced into small pieces. Then added the Chicken back to the pan along with the can of Noodles and Fixins’. Cooked until it the Sauce was bubbling and heated throughout. The broth that’s with Noodles is incredible! Rich and thick and seasoned just right. I left the info and web site link to Margaret Holmes at the end of the post.

I also heated up a can of Del Monte Low Sodium Cut Green Beans and a couple of slices of buttered Healthy Life Whole Grain Bread. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Dinner Tonight: Chicken ‘n’ Noodles w/ Boiled Mini Carrots and Whole Grain Bread

Spent the morning and early afternoon at the Findlay Market in Cincinnati. First time I've been down there in about 12 years or more. It's really grown since I was there last. Any and all fruits, vegetables, meats, and baked goods. Really a neat place to visit! For dinner I prepared Chicken ‘n’ Noodles w/ Boiled Mini Carrots and Whole Grain Bread.

Pan Fried Seasoned Haddock w/ Seasoned Blackeye Peas and Diced Rutabagas

Dinner Tonight: Pan Fried Seasoned Haddock w/ Seasoned Blackeye Peas and Diced Rutabagas

We went from sunny and pleasant Spring days right into late July hot, hazy, and humid weather. Really a lot of pollen out there. But on the plus side it's above 10 degrees with no snow or ice! Broke down today and purchased a new bed frame, mattress, and box springs and none to soon as my bed was ready to go at anytime. Went with a nice firm mattress. For dinner tonight I prepared a Pan Fried Seasoned Haddock w/ Seasoned Blackeye Peas and Diced Rutabagas.
uncomfortable out today with

I purchased the Haddock from Kroger Seafood Dept. yesterday. To prepare it I cut the fillet into smaller pieces and used Zatarain's Lemon Pepper Seasoning for it, one of my favorite seasonings. I pan fried it in Canola Oil about 3 1/2 minutes per side. Came out golden brown and full of flavor!

For side dishes it was all Margaret Holmes sides, except the Bread. I heated up a can of Margaret Holmes Seasoned Blackeye Peas and a can of Diced Rutabagas. I love the Blackeye Peas and the seasoning it comes in, it's spot on! The Rutabagas I've had  once before, something different for a side and it's only 35 calories and 17 carbs per serving. I seasoned them with a pinch of Ground Nutmeg and a pinch of Splenda Brown Sugar. I also baked a loaf of La Brea Bakery Take and Bake Artisan Multi Grain Loaf. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

Shredded Turkey BBQ w/ Seasoned Blackeye Peas, Mashed Potatoes, and...

Today's Menu: Shredded Turkey BBQ w/ Seasoned Blackeye Peas, Mashed Potatoes, and Whole Grain Bread

September is starting out beautiful outside! The weekend is going to sunny and the highs in the low 70's, I love it! For dinner I prepared Shredded Turkey BBQ w/ Seasoned Blackeye Peas, Mashed Potatoes, and sliced Whole Grain Bread. I used Jennie - O Slow Roasted Turkey Pot Roast. Easy to fix, you can microwave it in its own container or bake it at 375 degrees for 1 hour which was the way I prepared it. After I hour I removed it from the oven and the aroma was fantastic! I pulled the bone out of the meat and then using two forks shredded the meat. When preparing this before I would combine it with brown gravey and make it as a Pot Roast. This time I just shredded the Turkey and added JB's Fat Boy Sticky Stuff BBQ Sauce. I served it on a Healthy Life Whole Grain Bun. This makes one delicious sandwich! The Turkey is so tender it melts in your mouth and combined with BBQ Sauce it makes a fantastic combo.

For sides i prepared a can of Margaret Holmes Seasoned Black Peas, Bob Evans mashed Potatoes, and sliced Healthy Life Whole Grain Bread. What a meal! Everyone enjoyed it. For dessert later a bowl of Blue Bunny Naturally Frozen Chocolate/Vanilla Yogurt.

Chicken ‘n’ Noodles w/ Boiled Mini Carrots and Baked 9 Grain Bread

Today’s Menu: Chicken ‘n’ Noodles w/  Boiled Mini Carrots and Baked 9 Grain Bread

Busy running errands most of the day. It was another perfect day out, about 81 degrees, sunny with a slight breeze. Anyway for dinner tonight I went with the Margaret Holmes Simple Suppers Chicken ‘n’Noodles Fixins’. It comes in a 5 serving can and contains the Noodles and Seasoning, I added the Chicken. I cut up 2 Chicken Breasts seasoning them with Sea Salt, Ground Black Pepper, Ground Smoked Cumin, and Parsley. I then fried them in a large skillet until done and added the can of Fixins’. Cooked until it the Sauce was bubbling and heated throughout. The broth that’s with Noodles is incredible! Rich and thick and seasoned just right. I left the info and web site link to Margaret Holmes at the end of the post. I had sides of sliced Carrots and Baked 9 Grain Bread.  First time I tried the 9 Grain Loaf. It's from the Walgreen Bakery and it's a keeper! It's a real moist and delicious tasting bread. The combination of all the different grains come together to give it a unique and delicious fresh taste. Just baked at 400 degrees for 12 minutes and it's done. For dessert later a Jello Sugar Free Dark Cherry Jello, only 10 calories!

Grilled Butterfly Pork Chops w/ Buttered Corn, Seasoned Blackeye Peas, and...

Today's Menu: Grilled Butterfly Pork Chops w/ Buttered Corn, Seasoned Blackeye Peas, and Harvest Grain Bread

A beautiful August Summer day out and a perfect day to fire up the grill! While at Kroger early this morning I picked up some great looking Butterfly Pork Chops, and they were on sale to make it even better. I seasoned them with McCormick Grinder Sea Salt and Black Peppercorn. After seasoning I gave them a light spray of Pam w/ Olive Oil to help them from sticking to the grill while grilling. I grilled them over medium high about    minutes per side. I turned them over twice and after the second time I brushed a new sauce on that I had purchased a while back at Jungle Jim's Market, Bronco Bob's Smoked Bacon Chipotle Sauce. Between the grilling flavor and the Chipotle Sauce these Chops were awesome! Moist and juicy and the Sauce providing a sweet heat. Fantastic sauce for Chops and i'm sure it would go well with Chicken.

For sides for these delicious Chops we had Margaret Holme's Buttered Corn and a can of M. Holme's Seasoned Blackeye Peas. I started using Magaret Holme's products a while back, I found them at Walmart. As far as I'm concerned their the best tasting canned Vegetables there is. I also baked a small loaf of Kroger Bakery Harvest Grain Bread. For dessert later a bowl of Del Monte No Sugar Added Sliced Peaches and Sliced Pears.

Dinner Tonight: Tangy Apricot Chipotle Sauce Marinated Pork Chop w/ Seasoned Blackeye Peas, Diced New Potatoes, and Whole Grain Bread.

I am a lover of Sauces! While at Jungle Jim's Market last week I picked up a couple of new Marinade Sauces. The one I'm trying today is Bronco Bob's Tangy Apricot Chipotle Sauce. Bronco Bob has a whole line of Chipotle Sauces, I left the description and web site link at the bottom of the post.

Anyway I did a little taste test on the Bronco Bob's Tangy Apricot Chipotle Sauce and it's a winner! It gives you the heat of the Chipotle and the tangy sweetness of the Apricot. So I marinated my Pork Chop about 3 hours in the frig. Removed it from the marinade, shaking off the excess, and seasoned it with Morton's Salt Substitute and Ground Black Pepper. I grilled it over medium heat about 3 1/2 minutes per side, the chop was a thin chop. The marinade was meant for Pork! A great combination of heat and sweetness and griiled the chop to make it that much better. Can't wait to try the other flavors. For sides I had a can of Margaret Holmes Seasoned Blackeye Peas along with Diced New Potatoes that i boiled. I also had a slices of Aunt Millie's Light Whole Grain Bread. I think for dessert/snack later some Jif Reduced Fat Peanut Butter on Ritz Whole Grain Crackers.

Pork Chop w/ Seasoned Corn, Mashed Potatoes, and French Bread

Dinner Tonight: Pork Chop w/ Seasoned Corn, Mashed Potatoes, and French Bread

It looks as though our hot and humid weather has returned to the Ohio Valley, and it's going to last through out the week. For dinner I had a Pork Chop w/ Seasoned Corn, Mashed Potatoes, and fresh baked French Bread. I seasoned the Chop with McCormick Grinder Sea salt and Black Peppercorn along with a light coat of flour. I then pan fried it in Extra virgin Olive Oil about 4 minutes per side on medium heat. As a rule they always say to get your Pork at thermometer reading of 165 degrees. After frying the Chop I topped it with JB's Fat Boy Haug Waush Bar b cue Sauce. Love Pork Chops!

For sides I heated up a can of Margaret Holme's Seasoned Corn, I've been using Margaret Holmes products for a while now. I also had Idahoan 4 Cheese Mashed Potatoes. Another very easy side to fix. Just add water and microwave and you have some tasty Mashed Potatoes. Then I baked some more of the delicious French Bread I had purchased from Walmart yesterday. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Baked Grouper w/ Green Beans, Diced Rutabagas, Whole Grain Bread

Today's Menu: Baked Grouper w/ Green Beans, Diced Rutabagas, Whole Grain Bread

Another scorcher outside again, 95 -100. We were very lucky in my area. A storm moved throughout Ohio with winds 70 - 80 mph winds. Most of Ohio and our surrounding area has been without power since about 6:00 pm yesterday but where I live we never lost our power.

So for dinner I baked a beautiful Grouper fillet. I tried a new recipe which I left at the end of the post. It's an easy prepared recipe that contains 6 spices along with butter and lemon juice. For the butter I used I Can't Believe It's Not Butter. The fillet came out moist and flakey. The spice combination gives it a fantastic flavor! The fillet was big enough that I cut it in half and I'll have the other half for lunch tomorrow. It'll make a great fish sandwich.

As sides I had Margaret Holmes Diced Rutabagas. If you never had Rutabagas you should give them a try. The taste of the Rutabaga is similar to a Potato and the color of a Sweet Potato. I boiled them and seasoned them with Sea Salt, Black Pepper, and added I Can’t Believe It’s Not Butter which I added after it was done. I left the info on the Rutabagas at the end of the post. I also had Green Beans and Healthy Life Whole Grain Bread. For dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with some Dole Frozen Sliced Mangos.

(Serves 1 fillet )

INGREDIENTS:
1 tablespoons butter, melted
1-1/2 teaspoons lemon juice
1/8 teaspoon garlic salt
1/8 teaspoon dried parsley
1/8 teaspoon paprika
1/8 teaspoon ground white pepper
1/8 teaspoon sea salt
1/8 teaspoon ground smoked cumin
1/2 pound grouper fillets
1-1/2 teaspoons mayonnaise
1/8 teaspoon paprika

Ready for the oven!

DIRECTIONS:

1. Preheat oven to 350 degrees F. Combine melted butter and lemon juice in a small bowl. Brush 2 tablespoons of this mixture on a piece of foil placed on the broiler pan.
2. Mix together all 6 spices. Sprinkle spice mixture on both sides of fillets.
3. Bake fillets until meat flakes, about 10 minutes. Brush fillets with remaining lemon butter before serving.

Bread Crumb Crusted Tilapia w/ Smashed New Potatoes, Seasoned Blackeye Peas, and...

Dinner Tonight: Bread Crumb Crusted Tilapia w/ Smashed New Potatoes, Seasoned Blackeye Peas, and Whole Grain Bread

For dinner I fried up some Tilapia fillets that I rolled in Italian Style Bread Crumbs that I had seasoned with Cayenne Pepper, Sea Salt, and Ground Black Pepper. I made sure that the fillets were well coated and fried them in Extra Virgin Olive Oil about 4 minutes per side. The fillets came out delicious. I love Tilapia! It fries up to a beautiful golden brown and has a fantastic mild taste. Plus it can be used and prepared many ways.

For sides I had a can of Margaret Holmes Seasoned Blackeye Peas, Smashed New Potatoes, and Healthy Life Whole Grain Bread. To make the Smashed Potatoes I used Green Giant Klondike Petite Gourmet Potatoes. I cut each Potato in quarters. Then after putting them in a bowl I added a tablespoon of Extra Virgin Olive Oil and then seasoned with McCormick Grinder Sea Salt, Black Peppercorn, Dill, and Parsley and mixed until all were coated. I then boiled them for 20 minutes. Then put them in a serving bowl and with a fork smashed them up. Added I Can’t Believe It’s Not Butter and 2 slices of crumbled Turkey Bacon  and continued to smash and mix. For dessert later a slice of Pillsbury Nut Quick Bread topped with a scoop of Breyer’s Carb Smart Vanilla Ice Cream.

Herb Crusted Pork Tenderloin w/ Mixed Mushroom Rice, Buttered Corn, and...

Today's Menu: Herb Crusted Pork Tenderloin w/ Mixed Mushroom Rice, Buttered Corn, and Harvest Grain Bread

A thank you to Paula Deen for these 2 recipes! I was watching one her older shows from 2007 and saw these 2 recipes and couldn't wait to give them a try, Herb Crusted Pork Tenderloin w/ Mixed Mushroom Rice. I purchased the Boneless Pork Loin at Kroger early this morning and couldn't wait to put it to use. I preheated the oven to 475 degrees F.  I placed the pork loin on a rack in a roasting pan. I then combined Sea Salt, Extra Virgin Olive Oil, Minced Garlic, Thyme, Rosemary, and Basil in a small bowl. Then with my fingers, massaged the mixture onto the pork loin, covering all of the meat and fat. I roasted the pork for 30 minutes, then reduced the heat to 425 degrees F and roast for an additional hour. Test for doneness using an instant-read thermometer. When the internal temperature reaches 155 degrees F, remove the roast from the oven. Allow it to sit for about 20 minutes before carving. It will continue to cook while it rests.

For the Buttered Corn I opened a can Of Margaret Holmes Buttered Corn and heated that up. After removing the Pork Roast out of the oven I reduced the heat to 400 degrees F and baked the Harvest Grain Bread. Then for the other Paula Deen recipe, Mixed Mushroom Rice, I Sauteed the mushrooms and onion in butter in a skillet until soft. Stirred in the rice, soy sauce, salt and pepper, and green onions. Cook until warmed through. Very easy to fix! I used Uncle Ben's Brown Rice instead of White Rice. I also didn't use the 1/2 medium Onion the recipe called for. I used Green Onions only for the recipe. I lke Onion but not quite that much of it for recipes. I also used Lite Sodium Soy Sauce and I Can't Believe It's Not Butter (Stick) as my Butter.I left the original recipes for the Pork Roast and Mixed Mushroom Rice at the end of the post. Everyone enjopyed the dinner! The Pork Roast was unbelievable, moist and tender with incredible flavor. The Herb mix made a perfect crust on the roast. The Mixed Mushrrom and Rice is a side dish keeper! It combined 2 of my favorite sides Mushrooms and Rice. A big thank you to Paula Deen for these recipes! For dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with Del Monte Sliced No Sugar Added Peaches.
