Fried Okeechobee Crappie w/ Potato Pancakes and Cut Italian Green Beans

Dinner Tonight: Fried Okeechobee Crappie w/ Potato Pancakes and Cut Italian Green Beans

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin, scrambled 1
medium size Egg, and fried 2 slices of Jennie - O Turkey Bacon. Served it all on the English Muffin. I also had a cup Bigelow Decaf Green Tea. A delicious way to start the day, and healthy! After Breakfast started a load of laundry for Mom. Then outside to finish up some repairs on my Hoveround and also a goo cleaning, which it needed. Everything done so just did a few things around the house. For Dinner tonight I prepared Fried Okeechobee Crappie w/ Potato Pancakes and Cut Italian Green Beans.

I’m down to my last 3 bags of Lake Okeechobee Crappie in the freezer. My Aunt sold her place down on Lake Okeechobee so I probably won’t be having Crappie once this batch is gone. So I laid the last 3
bags in the fridge overnight to thaw, and it's a Fish Fry for tomorrow! To start I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Extra Virgin Olive Oil about 3 minutes per side. As always they came out Golden Brown and delicious! It’s hard to even describe how much I love eating Crappie, especially the Lake Okeechobee Crappie.

For a side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I
didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes).

For another side I heated a can of Allens Cut Italian Green Beans, our family’s favorite Bean Side. To
prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Fried Okeechobee Crappie w/ Potato Pancakes, Cut Green Beans, and….

Dinner Tonight: Fried Okeechobee Crappie w/ Potato Pancakes, Cut Green Beans, and Cornbread

Very cool out this morning. After I had a light breakfast I went to McDonald's for Mom and Dad and
brought back their breakfast for them before they went to Church. It was in the 30's here this morning. For the day plenty of sunshine and a high in the low 50's. Not much going on today so it was the easy chair, remote, and NFL Football for the afternoon. For dinner tonight I prepared Fried Okeechobee Crappie w/ Potato Pancakes, Cut Green Beans, and Cornbread.* I had Hashbrowns instead of the Potato Pancakes.

It’s been too long between Crappie Dinners! So I got in the freezer and grabbed the last three bags of
Okeechobee Crappie, or Specks as they call them in Florida, and let them thaw overnight in the fridge. That is the last bags of Crappie in the freezer, hopefully my cousins will bring me some more in March!

To go with the Crappie I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). I wanted Hasbrowns instead of the Potato Pancakes. I used Simply Potatoes Hashbrowns. Then I heated up a can of Del Monte Cut Green Beans, Green Beans go well with any meal as far as I’m concerned. Green Beans was my favorite Vegetable growing up even.

I also baked a small skillet of Martha White Cornbread. Cornbread is something I think I could eat
every meal. Nothing better than hot slice of Cornbread with Butter on it. When I make this I just make it by the instructions on the package but I only use half the ingredients because I use a small cast iron skillet to make it. I use Egg Beaters and Extra Virgin Oil instead of Eggs and Vegetable Oil the recipe calls for. Bake at 450 degrees for about 25 minutes and you have some golden brown piping hot Cornbread! If you use a small cast iron skillet just cut the recipe in half and it comes out just right for the skillet size. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Fried Okeechobee Crappie w/ Hash Browns, Cut Green Beans, and..

Dinner Tonight: Fried Okeechobee Crappie w/ Hash Browns, Cut Green Beans, and Cornbread

It's been a rainy, windy, cool day here in West Chester, almost feels like an early Winter's day instead of Fall! Not much going on outside in this weather. Went to see dad in rehab for a while, he's getting a lot stronger and wanting to come home. He should be released by next Friday they told us. Back at home did some light cleaning and then hit my easy chair with the remote for an afternoon of College Football. For dinner tonight it's my favorite fish, Crappie. I prepared Fried Okeechobee Crappie w/ Hash Browns, Cut Green Beans, and Cornbread.

It's been too long between Crappie Dinners! So I got in the freezer and grabbed a couple of bags  of

As always they came out Golden Brown and delicious! It’s hard to even describe how much I love eating Crappie, especially the Lake Okeechobee Crappie.

To go with the Crappie I prepared some Hash Browns, Potatoes are perfect with Fish. I always use Simply Potatoes Hash Browns. Fried in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. Then I heated up a can of Del Monte Cut Green Beans, Green Beans go well with any meal as far as I’m concerned. Green Beans was my favorite Vegetable growing up even.

I also baked a small skillet of Martha White Cornbread. Cornbread is something I think I could eat
every meal. I like a nice fresh and hot slice with Butter on it. When I make this I just make it by the instructions on the package but I only use half the ingredients because I use a small cast iron skillet to make it. Fried Okeechobee Crappie w/ Golden Hominy and Cut Green Beans

Dinner Tonight: Fried Okeechobee Crappie w/ Golden Hominy and Cut Green Beans

Had a light Breakfast of 2 Eckrich Smoked Turkey Sausage Breakfast Links and a Healthy Life While Grain Muffin, with my morning Bigelow Decaf Green Tea. Did a load of laundry for Mom. Then went to Kroger and picked up a couple of prescriptions for Dad. Came back and got the leaf blower out and cleaned the drive and around the house. Grilled a Ball Park White Turkey Frank for lunch. After lunch a friend of mine called and wanted me to pick her up to go get her car at mechanics. Busy day. For dinner tonight it's nothing but good! I prepared Fried Okeechobee Crappie w/ Golden Hominy and Cut Green Beans.

As I scanned the freezer last night for something to have for dinner a bag of that Lake Okeechobee Crappie caught my eye right away! So I grabbed a couple of bags and put them in the fridge to thaw overnight. Okeechobee Crappie, or Specks as they call them in Florida are my favorite, just love the taste of them! To start I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Extra Virgin Olive Oil about 3 minutes per side.As always they came out Golden Brown and delicious! It’s hard to even describe how much I love eating Crappie, especially the Lake Okeechobee Crappie.

For a side dish I opened up a can of Kroger Brand Golden Hominy. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. My favorite is the Golden Hominy. If you’ve never tried it do, makes a good side dish! Then I also heated up a small can of Del Monte Cut Green Beans. For dessert later a Jello Sugar Free Double Chocolate Pudding.

For Breakfast I warmed up a piece of the leftover Cubed Pork Steak and served it on a Healthy Life Whole Grain English Muffin and topped it with some Sweet and Hot Stone Ground Mustard. Along with my morning cup of fresh brewed Bigelow Decaf Green Tea. It was bit warmer out today, high of 81 degrees, but still sunny and low humidity. Went and had my car washed and the inside cleaned and come back home and had the cart out most of the day. For dinner tonight it’s Fried Okeechobee Crappie w/ Hash Browns and  Mini Ears of Sweet Corn.

Lake Okeechobee Crappie Fishing

The Florida Crappie fishing, speckled perch or speck’ as they are called throughout the State of Florida is the most sort after pan fish on Lake Okeechobee. Although the Florida crappie can be caught during the summer months, they really are at their best from late fall to early spring.

Go Lake Okeechobee freshwater fishing with your family and friends together for an affordable day of Florida crappie fishing on Lake Okeechobee. Lake Okeechobee comprises a 730-square-mile area and is the second-largest natural lake in the U.S., holding more than a trillion gallons of water.

Most fishing takes place along the southeastern, west and north portions of the lake within a mile of the shoreline. Look for hyacinths, hydrilla and other water plants where big bass ambush shiners, bluegills and other scaled groceries. They also pounce on frogs, crickets, worms, grasshoppers and pretty much any fish smaller than itself. Plastic imitations of those baits work well.

You know the deal black crappies speckled perch to most Floridians are about as smart as a dead bird, but fortunately they are a lot more abundant. Stick a minnow in their face, set the hook and start heating up the frying-pan as we say here on Okeechobee.

Fried Okeechobee Crappie w/ Canned Green Beans, Fried Potatoes, and...

Dinner Tonight: Fried Okeechobee Crappie w/ Canned Green Beans, Fried Potatoes, and Corn Bread

I think Spring may have a foot hold on our weather finally! The Winter that wouldn't go away has finally did just that, go away. Windy but sunny all day and about 70 degrees, My Mom's Easter Flowers are up and getting ready to bloom, our neighbors are already in bloom. More rain coming, deal with that when it happens. Got the 4 wheel mobility cart out for a while today. It's still running good and I think I've had now for 5 or 6 years now. My Mom's cousin and her husband stopped by and brought me 10 big and beautiful bags of Okeechobee Crappie, or Specks as they call them in Florida! I love all Fish and Seafood but these have to be my favorite. So for dinner tonight it's Fried Okeechobee Crappie w/ Canned Green Beans, Fried Potatoes, and Corn Bread.

They brought them straight up from Florida sealed and frozen. I laid 2 bags out in the fridge overnight to thaw. I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Canola Oil about 3 minutes per side. As usual this year's batch of Crappie is just as good as previous years. They came out Golden Brown and delicious! I could just eat these fillets for dinner, or any meal, with no sides needed!

For one side I peeled and sliced some Red potatoes up. Seasoned with Morton's Salt Substitute and ground Black Pepper. Fried them in a Cast Iron Skillet in Canola Oil, fried on medium high and turned with a spatula several times until both sides started browning. I rarely fix Potatoes like this, but I should. The Potatoes come out so delicious prepared this way. Then for another side I heated up a Mason Jar of the canned Green Beans that we had canned back last Summer. They taste as if they were just picked from the garden. I also had a slice of Klosterman Wheat Bread but Mom and Dad wanted some Cornbread so I prepared them a small Cast Iron Skillet of Martha White Cornbread. For dessert later a Jello Sugar Free Double Chocolate Pudding topped With a dab of Cool Whip Free.

Fried Okeechobee Crappie w/ Hash Browns and Collard Greens

Dinner Tonight: Fried Okeechobee Crappie w/ Hash Browns and Collard Greens

A dreary and cloudy day out today. Had to run my parents to Cincinnati for my Dad to get a new portable Fairfield, you can read about both in two earlier posts. For dinner tonight, Fried Okeechobee Crappie w/  Hash Browns and Collard Greens.
breather. He's had a home oxygen for a while now but he's going to have to keep a portable air with him when he's out. A lot going on locally with Operation Pumpkin in Hamilton and Jungle Jim's Ring of Fire Weekend in

It's always a sad day when I use my last bags of the Lake Okeechobee Crappie, or as the locals there call them "Specks". My cousin always brings me a batch when they go down for the winter at Lake Okeechobee, Florida. I try to make them last as long as I can but the time has come to break that last bag out of the freezer. I love all fish but these are my favorite fresh water fish by far! Love the taste and just how they fry up so good and brown. I laid the last bag out last night to thaw in the fridge. As usual with Crappie they came out Golden Brown and delicious!

For side dishes I prepared  Hash Browns and Collard Greens. I used Simply Potatoes Hash Browns, my favorite Potato side dishes. Fried in Canola Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. Also, for the first time, I prepared Collard Greens. They were canned and Walmart Store Brand. Just heated them in a small sauce pan on medium high for 5 minutes, drained, and season with Sea Salt. I think I had Collard Greens 1 other time. They came out very good, a good change of pace for a side dish! For dessert later tonight a bowl of Del Monte No Sugar Added Peach Chunks.

Fried Crappie w/ Red Beans and Rice, Boiled Mini Ears of Corn...

Dinner Tonight: Fried Crappie w/ Red Beans and Rice, Boiled Mini Ears of Corn, and Corn Bread

Spent the better part of the day cleaning the kitchen. Pulled the stove out and cleaned behind it, straightened shelves, and gave the fridge and freezer a good cleaning. While cleaning the freezer I came across tonight's dinner! I thought I had used all the Okeechobee Crappie that was given to me but I found 4 bags of it in the back of the freezer. So for dinner tonight I prepared Fried Crappie w/ Red Beans and Rice, Boiled Mini Ears of Corn, and Corn Bread. I prepared the Cornbread for Mom and Dad, I had Whole Grain Bread.

After the bags of Crappie thawed out I rinsed them with water and patted dry with paper towel. I seasoned them with just a bit of Sea Salt and put them into a gallon size Hefty Freezer Bag and added Zatarain's Lemon Pepper Breading Mix to the bag. Zipped shut the bag and shook it until the fillets were well covered. Pan fried them in Canola Oil, about 2-3 minutes per side, until they were golden brown. And what a taste, the best tasting Crappie there is! Crappie are Crappie but the ones from Lake Okeechobee have no rivals!

For sides for this delicious Crappie I prepared  some of Grandma Maud's Red Bean and Rice. I had prepared the Black Beans and Rice several times, and love it, so I thought I would try the Red Beans and Rice. Just follow the easy instructions on the package and you have some great Red Beans and Rice! It had a good Cajun Seasoning to it and was only 100 calories and 16 net carbs. This would go great with a Blackened Chicken or Shrimp. I also boiled some Green Giant Mini Ears of Sweet Corn and I baked a Cat Iron Skillet of Martha White Cornbread. The Cornbread was for Mom and Dad, I had a slice of Healthy Life Whole Grain Bread. For dessert later a bowl Breyer's Carb Smart Vanilla Ice Cream topped with Dole Chef Cuts Mango Pineapple.

Fried Crappie w/ Hash Browns, Green Beans, and Baked Garlic Knot Rolls

Dinner Tonight: Fried Crappie w/ Hash Browns, Green Beans, and Baked Garlic Knot Rolls

One long night last night! I was dealing with some very bad and strong Phantom Pains. They were the worst I've had to deal with in quite some time. Phantom pains are exactly that, they are pains that amputees sometimes experience in the area of their missing limb. Mine being my left leg that was amputated back in 2001. There's no known cure or treatments that work to ease the pain so I just have to ride it out. This started sometime during the early morning hours and I've had it ever since, hopefully it will quit soon! Mom stayed and had dinner with my Dad at the rehab center so it's just me tonight. I prepared Fried Crappie w/ Hash Browns, Green Beans, and Baked Garlic Knot Rolls. it had been a while since I broke out one of the frozen Crappie bags and prepared them and it time tonight!

I normally just season the Crappie with Sea Salt and Ground Pepper and rolled in Bread Crumbs but tonight I rolled the fillets in  Zatarain’s Fish Fri Lemon Pepper Seafood Breading Mix. After washing the Crappie and patting them dry on a paper towel I then poured some of the breading mix into a Hefty Zipper Bag and added the Fish shaking it in the bag until it was well covered. I skillet fried it in Canola Oil until it was golden brown. With this breading the Fish comes out perfect. The crust and the seasoning is meant for Fish! Crappie is delicious anyway you fix it but this breading makes it even more mouth watering!

To go with the Crappie I prepared some Hash Browns, Simply Potatoes has Browns. You can't beat Simply Potatoes brand Has Browns. Just season and fry to how done and brown you want them. Quick, easy, and delicious. Makes a great side for any meal. I also heated up a single serve can of Del Monte Cut Green Beans and I baked some Walmart Bakery Savory Garlic Knot Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Crappie Tonight!!

Dinner Tonight: Fried Crappie w/ Loaded Baked Potato Casserole, Green Beans, and Whole Grain Bread.

As Spring inches ever closer I always get my yearly Crappie fillets. My Cousins come home from their 3 month Winter retreat at Lake Okeechobee. Which also means I get a mess of fresh Crappies  or Specks as they call them down in Florida. I could eat these every day and not get tired of them. I could not wait to open that first bag up and start frying! I seasoned them with Sea Salt and Ground Black Pepper. I then rolled each fillet in a Whole Wheat Flour and Italian Bread Crumb Mix. I lightly fried them in Canola Oil about 3 minutes per side. As the picture shows they came out golden brown and the taste unbelievable!

For side dishes to accompany the Crappie I prepared a Loaded Baked Potato Casserole, Green Beans, and Whole Grain Bread. I used Idahoan Loaded Baked Potato Casserole. The easy and delicious way to have Potato dishes. It's 150 calories and 22 carbs per serving. The Green Beans were Del Monte Cut Green Beans, just heat in a sauce pan and serve. The Bread, Aunt Millie's Whole Grain Light Bread. For dessert later a Jello Sugar Free Dark Chocolate pudding.

Lake Okeechobee Crappie

Lake Okeechobee

Well if I’m posting about Lake Okeechobee you know it has to do with one of my favorite fish, the Crappie! My cousins dropped off my yearly supply of Lake Okeechobee Crappie!  Here’s a little info on Lake Okeechobee.

Lake Okeechobee locally referred to as The Lake or The Big O, is the largest freshwater lake in the state of Florida. It is the seventh largest freshwater lake in the United States  and the second largest freshwater lake contained entirely within the lower 48 states. Okeechobee covers 730 square miles (1,900 km2), approximately half the size of the state of Rhode Island, and is exceptionally shallow for a lake of its size, with an average depth of only 9 feet (3 m). The lake is divided between Glades, Okeechobee, Martin, Palm Beach, and Hendry counties. Maps of Florida[3] show that all five of these counties meet at one point near the center of the lake.

The most common fish in this lake are largemouth bass, crappie and bluegill. Pickerel have been less commonly caught.
