Breakfast Turkey Scrambler

Breakfast Turkey Scrambler
This breakfast pita is a tour-de-force of breakfast greatness — filled with hash browns, lean turkey ham, onion, scrambled eggs and shredded Cheddar. Under 300 calories per serving!

INGREDIENTS
¾ cup egg substitute or 3 eggs, lightly beaten
½ teaspoon paprika
½ cup milk
4-ounces JENNIE-O® Turkey Ham, cut into ¼-inch cubes
¾ cup hashbrown potatoes
1 tablespoon minced onion
1 tablespoon butter
6 Gordita or pita bread
½ cup shredded American or Cheddar cheese
salsa or hot sauce, if desired

DIRECTIONS
1) In medium bowl whisk together eggs, paprika and milk. Stir in turkey ham, potatoes and onion. In large non-stick skillet over medium heat, melt butter. Add egg and meat mixture. Cook stirring occasionally until fully cooked.
2) Lay Gordita bread on flat surface; divide turkey ham mixture and cheese evenly over bread. Fold over and serve. Serve with salsa or hot sauce, if desired.

Michigan Turkey Coney Dog
If you’ve ever driven through  Michigan, you’ll notice the people who live there love a good Coney. This recipe replicates an authentic Coney with turkey franks, HORMEL® turkey chili and cheddar cheese. It’s a backyard grilling crowd pleaser no matter where you are on the map!

INGREDIENTS

8 JENNIE-O® Jumbo Turkey Franks
8 hot dog buns
1 (15-ounce) can HORMEL® turkey chili, heated according to package directions
½ cup chopped green onion
1 cup shredded Cheddar cheese
crushed tortilla chips, if desired

DIRECTIONS

1) Cook turkey franks. Place turkey frank in each bun. Top with chili, onion and cheese.
2) Garnish with crushed tortilla chips, if desired.

Spicy Turkey Roll-up

Spicy Turkey Roll-up
Creamy, cheesy and carb-conscious, these little roll-ups pack a spicy punch. Fresh jalapeños blend with cool cream cheese, sharp Cheddar and lean turkey breast for a gluten free snack.

INGREDIENTS
1 (8-ounce) package cream cheese, softened
½ cup finely shredded Cheddar cheese
¼ cup minced canned jalapeño
½ pound sliced JENNIE-O® DELI FAVORITES® Tender Browned Turkey Breast, from the service deli
40 toothpicks
40 small green pimento-stuffed olives, if desired

DIRECTIONS
1) In small bowl, blend cream cheese, Cheddar cheese and jalapeño. Lay turkey breast slices on clean surface and spread with cream cheese mixture, leaving about ½-inch border on one end. Roll turkey up toward the end free of cream cheese and seal. Wrap individually in plastic wrap and chill until ready to serve.
2) To serve, secure each roll-up with 5 toothpicks, marking each piece, and slice in between the picks at a slight diagonal. Garnich each piece with an olive, if desired.

Turkey Breakfast Pizza

Brunch doesn’t get as much respect as other meals. But that stops today. With flaky crust, bell peppers and crispy turkey bacon, they’ll remember this meal all week.

INGREDIENTS
1 (13.8-ounce) can refrigerated pizza dough
½ (12-ounce) package JENNIE-O® Turkey Bacon
2 tablespoons butter
2 tablespoons flour
1¼ cups milk
½ cup shredded Cheddar cheese
¼ cup sliced green onions
¼ cup chopped red bell pepper

DIRECTIONS

1) Heat oven to 425°F. Spray 13x9-inch baking dish with non-stick cooking spray.
2) In prepared dish, press dough in bottom and up sides of pan. Bake 5 minutes. Remove from oven; set aside.
3) Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Crumble; set aside.
4) Melt butter in saucepan over medium heat. Stir in flour until smooth. Gradually whisk in milk. Cook 5 to 10 minutes or until thickened, stirring occasionally. Remove from heat and add cheese; stir until melted. Spread cheese sauce evenly over baked crust.
5) Sprinkle with bacon, green onions and bell pepper. Bake 15 minutes or until crust is golden brown.
* Always cook to an internal temperature of 165°F.

Cheddar Bacon Chicken Breasts w/ Kicked Up Chili Beans and Seasoned Diced Potatoes


Dinner Tonight: Cheddar Bacon Chicken Breasts w/ Kicked Up Chili Beans and Seasoned Diced Potatoes



Typical March weather here today. Woke up with the ground covered with new snow, then the sun came out and melted the snow, then it started to snow so hard you couldn't see anything out, and now more sunshine, and so on and so for March weather! For dinner tonight, Cheddar Bacon Chicken Breasts w/ Kicked Up Chili Beans and Seasoned Diced Potatoes.



I think the original recipe for Chicken called for Chicken Tenders but I used Then Cut Chicken Breasts instead and they came delicious! To make these I needed 1 Egg, OR 1/4 Cup Egg Beater's, 1/2 Cup Progresso Italian Bread Crumbs, Sea Salt and Ground Pepper for Seasoning,  1/2 cup finely shredded Cheddar cheese (2 oz), 1 Package or jar (3 oz) Cooked Real Bacon Bits or Pieces, and 1 package uncooked Thin Cut Chicken Breasts. To prepare them I pre-heated the oven to 400°F. Sprayed large foil covered cookie sheet with cooking spray. Then in shallow bowl added my 1/4 cup Egg Beater's. In large resealable food-storage plastic bag, placed bread crumbs, cheese and bacon. Dipped the chicken into Egg Beater's then placed them in the bread crumb bag; seal and shake to coat. Placed chicken on cookie sheet and baked for 20 to 25 minutes, turning once, until chicken is no longer pink in center and bread crumbs are golden brown. I served them with a side of Litehouse Bleu Cheese Dressing/Dip. The Chicken came out moist, tender, and very flavorful! And Bleu Cheese with Chicken anytime!



For sides to go with the Chicken Kicked Up Chili Beans and Seasoned Diced Potatoes. For the Beans I used Joan of Arc Spicy Chili Beans and added Jack Daniel’s BBQ Sauce, Crumbled Turkey Bacon Bits, Splenda Brown Sugar, and a few dashes of Frank’s Red Hot Sauce. I left the recipe at the end of the post. The Potatoes were Simply Potatoes Steakhouse Seasoned Diced Potatoes that were leftover from the other night, just reheated and served. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.







Cheddar Bacon Chicken Breasts

Ingredients:

1 Egg, OR 1/4 Cup Egg Beater's
1/2 Cup Progresso Italiain Bread Crumbs
1/2 cup finely shredded Cheddar cheese (2 oz)
1 Package or jar (3 oz) Cooked Real Bacon Bits or Pieces
1 package uncooked Thin Cut Chicken Breasts (not breaded)
Chive and Onion Sour Cream potato topper, if desired

Directions:

1 Pre-Heat oven to 400°F. Spray large cookie sheet with cooking spray.
2 -In shallow bowl, beat egg. In large resealable food-storage plastic bag, place bread crumbs, cheese and bacon. Dip chicken into egg. Place in bread crumb bag; seal and shake to coat. Place chicken on cookie sheet.
3 -Bake 20 to 25 minutes, turning once, until chicken is no longer pink in center and bread crumbs are golden brown. Serve with topper.




Kicked Up Chili Beans

Ingredients:

1 Can Spicy Chili Beans, Brand your choice. I use Joan of Arc
3 Pieces Crumbled Turkey Bacon. You can use Turkey or Turkey Bacon Crumbles
4 Shakes Frank’s Red Hot Sauce, or to taste
1/2 Cup Jack Daniel’s Honey Smokehouse BBQ Sauce
1/2 Tablespoon Splenda Brown Sugar or to taste
1 Teaspoon Ground Mustard


Directions:

Empty can of Beans into a medium sauce pan
Add Turkey Crumbles, Brown Sugar, Ground Mustard, Frank’s Red Hot Sauce, Honey BBQ Sauce, stir and mix.
Heat until desired temperature, and serve
