One of America's Favorites - Tater Tots

A plate of Tater Tots.
A tater tot is a side dish made from deep-fried, grated potatoes. They are widely recognized by their
crispness, cylindrical shape, and small size. Tater Tots is a registered trademark of Ore-Ida (a division of the H. J. Heinz Company), which has become genericized.

The product was created in 1953 when Ore-Ida founders F. Nephi Grigg and Golden Grigg were trying to figure out what to do with leftover slivers of cut-up potatoes. They chopped up the slivers, added flour and seasoning, then pushed the mash through holes and sliced off pieces of the extruded mixture. The product was first offered in stores in 1956.

Originally, the product was very inexpensive. According to advertising lectures at Iowa State University, people did not buy it at first because there was no perceived value. When the price was raised, people began buying it. Today, Americans consume approximately 70 million pounds of tater tots per year.

When the tater tot product was first produced, there was no name for them. The owners of Ore-Ida decided to hold a contest among the employees that would help determine the product name. Clora Lay Orton, then a young house mother, submitted the name "tater tots". The name was a hit and she won the contest.

In the United States, tater tots are common at school-lunch counters and cafeterias. They are also sold
In the Midwest Tater Tot Hotdish is a soup-based casserole
in the frozen food sections of grocery stores. Some fast-food restaurants also offer them.

The supermarket chain Safeway Inc. sells a generic brand of tater tots known as "Tater Treats". Sonic drive-in also features tater tots on their regular menu; available toppings include cheese and chili. Sonic also sells "Cheesy Tots", coin-shaped tots that contain melted cheese and potatoes. Several restaurants in the Pacific Northwest offer a nacho version of tots ("totchos"), covered in nacho cheese sauce and toppings.

Some Mexican-style fast-food restaurants offer seasoned Tater Tots: Taco Time and Señor Frog's call them "Mexi-Fries", while Taco Bell used to sell them as "Mexi-Nuggets" and "Border Fries". Taco Mayo in the Southwest offers round disc-shaped tater tots called "Potato Locos." Taco John's also has coin shaped tots called "Potato Olés".

In some areas of the Northeast, however, they are often called "juliennes" or "potato puffs". In the Midwest states, Tater Tot Hotdish is a very popular soup-based casserole consisting of tater tots, ground beef, and various vegetables. Tater Tots are extensively referenced in the film Napoleon Dynamite.

In Australia, they are known as "potato gems", "potato royals" or "potato pom-poms" (also used in New Zealand). In the United Kingdom, Ross Frozen Foods once produced "oven crunchies" which are no longer available, but are still produced and sold under the name "potato crunchies" by supermarket chain Morrisons. In Canada, McCain Foods Limited calls its line "Tasti Taters". Cascadian Farm calls its line "Spud Puppies".

Here's a recipe for Tater Tots that my Mom uses.

Homemade Potater Tots

Ingredients
2 russet potatoes
1/4 cup chopped fresh chives (optional)
2 teaspoons salt
1 teaspoon white pepper
vegetable oil for frying

Directions
1 -Place the potatoes in a saucepan of water to cover, and bring to a boil over medium heat. Reduce heat, and simmer until the potatoes are cooked through but still firm, about 20 minutes. Remove from the water, and peel the cooked potatoes while still hot.
2 - Line a baking sheet with parchment paper and set aside.
3 - Shred the potatoes with a box grater, and place the shredded potatoes in a bowl. Lightly mix in the chives, salt, and white pepper. Spoon the potato mixture into a piping bag with a 1/2-inch round tip.
4 - Pipe the potato mixture onto the parchment paper in a long, 1/2-inch wide rope. Place the baking sheet into the refrigerator until the potato mixture has cooled and set, about 1 hour. Cut the potato strip into 1-inch lengths.
5 - Heat vegetable oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Working in batches, deep-fry the potato pieces until crisp and golden brown.

Sharp Cheddar Buffalo Burger w/ Baked Fries

Dinner Tonight: Sharp Cheddar Buffalo Burger w/ Baked Fries

A perfect Fall Day out today! Sunny and about 60 degrees. Got the cart out and rode around and spent some time down by the lake. Talked to a couple of people fishing, they had caught a few small Bass. A local Church here in the area was going around the neighborhood raking peoples lawn for them, and we had a ton of leaves so thank you to all of them! For dinner, Sharp Cheddar Buffalo Burger w/ Baked Fries.

I used my favorite Buffalo Burger, Wild Idea Buffalo 1/4 Buffalo Burger. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it in Canola Oil about 3 1/2 minutes per side. Buffalo gets done rather quickly due to it’s so lean. I topped it with a slice of Sargento Ultra Thin Sharp Cheddar Cheese and served it on an Aunt Millie's Reduced Calorie Whole Grain Bun.

For a side with my Burger I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Tried these for the first time earlier and really like them. Served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Wild Idea Buffalo Burgers
4 – 1/4-Lb Buffalo Burgers
Prepare for a whole new level of burger. Conveniently pre-made into one-quarter pound patties that are ever so grillable. Dinner ready. Each pack is 1 pound with 4 – 1/4 Lb patties.

Cheddar Buffalo Burger w/ Baked Fries

Dinner Tonight: Cheddar Buffalo Burger w/ Baked Fries

Overcast day out today and not much going on. Updated the computer and ran all the cleanups and installed a new program and that was the extent of my day. For dinner it was a Cheddar Buffalo Burger w/ Baked Fries.

I used Great Range Ground Bison. I seasoned it with Sea Salt and Ground Black Pepper and I pan fried it in Canola Oil, about 4 minutes per side. Came out just like I like them, medium rare with a nice char on the outside with a little pink and juicy in the middle! I made the switch to Buffalo, or Bison, quite a while back and have never missed Beef. I love the taste of Buffalo over Beef and the way it cooks up. I served it on an Aunt Millie's Light Whole Grain Bun and topped the Burger with a slice of Sargento Ultra Thin Sharp Cheddar. For a side I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Served these with a side Daisy Reduced Fat Sour Cream. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Great Range Ground Bison

All natural (Minimally processed. No artificial ingredients). Raised without antibiotics, no added hormones (Federal regulations prohibit the use of hormones in bison). Dinner Tonight: Cheddar Bacon Turkey Burger w/ Baked Fries

Hard rains out on and off all day here. Went to Meijer in between the down pours and picked up a few items for dinner tonight and ran a few errands. For dinner tonight I prepared a Cheddar Bacon Turkey Burger w/ Baked Fries.

Meijer carries the best selection of Jennie - O Turkey Products, at around here. While there earlier today I purchased some Jennie - O Turkey Burger Patties (Lean), which was for dinner. Only 180 calories and 9 g fat and already made into patties. Pan fried them in Canola Oil about 17 minutes, flipping three times. While the patties were frying, in another skillet I fried up some Jennie -O Turkey Bacon, another low calorie and lean Jennie - O Turkey Product. The bacon is only 30 calories, 0 carbs and .05 g fat. I served the burger on an Aunt Millie's Reduced Calorie Whole Grain Bun and topped with a slice of Sargento Reduced Fat Sharp Cheddar and a slice of Turkey Bacon. One good tasting Burger!

For a side with my burger I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Served these with a side Daisy Reduced Fat Sour Cream. For dessert later a Skinny Cow Ice Cream Bar.

Seasoned Tilapia Sandwich w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries

Dinner Tonight: Seasoned Tilapia Sandwich w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries

It was cleaning day, computer cleaning day. Amazing how much dust can gather in and around a computer. Took the panel off and cleaned inside it, then cleaned the outside of it. Cleaned the computer desk, which is always a dumping site for everything! Then did some back up of files, deleted a lot of things and ran a day long computer scan. All is okay and back up running! For dinner I had laid some frozen Tilapia Fillets in the fridge overnight to thaw. Then for dinner it was Seasoned Tilapia Sandwich w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries.

Still using the bag of Tilapia I had purchased from Walmart. Good thing to have in the freezer, their easily thawed, easy to prepare , and delicious! I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Canola Oil about 3 minutes per side. Served it on a Aunt Millie’s Deli Style Whole Grain Mini Sub Bun.

For a side for my Fish Sandwich I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Served these with a side Daisy Reduced Fat Sour Cream. For dessert/snack later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

Just as well as I didn't catch but a couple of small Bass. For dinner to cap off this beautiful day, it was all by oven Baked Smokey BBQ Seasoned Chicken Wings w/ Baked Fries.

Sharp Cheddar Buffalo Burger w/ Baked Fries

Dinner Tonight: Sharp Cheddar Buffalo Burger w/ Baked Fries

The last couple of days I've been a little nervous as I found a small knot, or lump, on my right arm in the armpit area. And with my history of Melanoma it's always a bit unnerving when something like this pops up. So my Oncologist got me right in this afternoon to check everything out. The news was good! The knot I was feeling is a result of the Cancer Clinical Trial I took a few years back. The knot was near where and injection site was when I received treatment for the trial. As they say better safe than sorry.

For dinner I prepared a Sharp Cheddar Buffalo Burger w/ Baked Fries. I used the Wild Idea Buffalo 1/4 Lb. Buffalo Burger, my favorite which Wild Idea Buffalo was featured on the Food Network last night! The Burgers come frozen in a package 4 and pre-made. So just thaw and fry it! I seasoned it with Sea Salt and Ground Black Pepper. I pan fried it in Canola Oil about 3 1/2 minutes per side. i served it on a Healthy Life Whole Grain Hamburger Bun and topped the Burger with a slice of Sargento Ultra Thin Sharp Cheddar.

To go with my Buffalo Burger I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. I had a side of Hidden Valley Smoked Bacon Ranch Spread/Dip for my Fries. I really like these new dips that Hidden Vally has out. Then for dessert later a Del Monte Diced Mango in Light Syrup.

Dinner Tonight: Turkey Bacon and Sharp Cheddar Cheese Turkey Burger w/ Baked Fries

It's been another one of those beautiful Summer days out again! This morning it was around 47 degrees and then we had a high of about 80 degrees with a slight cool breeze. Spent as much time as I could outside in the sun, just too nice out. For dinner tonight I prepared a Turkey Bacon and Sharp Cheddar Cheese Turkey Burger w/ Baked Fries.

I used Jennie - O Extra Lean Ground Turkey Breast for my Burger, 120 calories and 0 carbs. I seasoned it with Sea Salt and Ground Black Pepper and pan fried it in Canola Oil, fried about 4 1/2 minutes per side. Came out moist and juicy! Served it on a Healthy Life Whole Grain Hamburger Bun and topped it with a slice of Jennie - O Turkey Bacon (30 calories and 0 carbs) and a slice of Sargento Ultra Thin Sharp Cheddar Cheese. Baked Ham and Swiss Hoagie w/ Baked Fries

Dinner Tonight: Baked Ham and Swiss Hoagie w/ Baked Fries

Happy Labor Day everyone, hope you had a fun one! It's been real muggy out today, and a rain shower late afternoon which made it worse. Not much going on, went to the store early and that was about it. For dinner tonight I prepared a Baked Ham and Swiss Hoagie w/ Baked Fries.

I used Aunt Millie’s Deli Style Whole Grain Mini Sub Buns and then for the Ham I used Kroger Brand Private Selection Oven Roasted Rosemary Ham. This has become my favorite packaged Hams incredible taste and it’s 70 calories and 1 carb per serving. The slices are very thin so I used a double serving of it on the Hoagie. I topped it with a new spread/dressing, Hidden Valley Smoked Bacon Ranch Sandwich Spread. Word of caution, this stuff is so good you'll get a spoon and just eat from the jar! I think it's new, I had a coupon I got from Sunday's Paper and that's how I found out about it. When at Walmart earlier I seen they had it in stock. They had about 4 different varieties of it and I went with the Smoked Bacon Ranch Dressing. I also topped it with 2 slices of Sargento Ultra Thin Swiss Cheese.

I preheated the oven to 350 degrees and while that was heating up I combined 1Tbsp. of Blue Bonnet Light Butter (Melted) , 1/2 tsp. dried onion, 1 tsp. Worcestershire sauce, 1 1/2 tsp. Poppy Seed dressing, and 1/2 tsp. yellow mustard. Mixed it to it was well combined. Poured the mixture over the sandwich. Covered it with foil and baked at 350 degrees for 15 minutes then remove foil and bake an additional 10 minutes to allow the rolls to crisp. Remove from oven to cool and served. Great recipe for Baked Ham and Swiss Sandwiches! The Poppy Seed Dressing Mixture that tops the Hoagie pulls everything together, all kinds of flavor! I also baked some of the Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, love these fries! For dessert later a bowl of fresh sliced Peaches.

Buffalo Cheese Burger w/ Baked Fries

Dinner Tonight: Buffalo Cheese Burger w/ Baked Fries

Late afternoon a friend of mine meet me over at a place here in West Chester, Union Square. They had the The Union Centre Food Truck Rally going on all day there. It was a fund raiser for the Boys and Girls Clubs here in Butler County. Seemed to be a good turnout as the vendors we talked to said it had been steady all day. There was about 11 Food Trucks and a few vendors that were cooking from a tent. Didn't stay long though, just too humid out. A passing shower made it worse. For dinner tonight a simple but one of my all-time dinner classics,  Buffalo Cheese Burger w/ Baked Fries!

I topped it with a slice of Sargento Ultra Thin Sharp Cheddar Cheese and served it on a Healthy Life Whole Grain Bun.

For a side with my Cheese Burger I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Tried these for the first time earlier and really like them. Served these with a side of Hunt's Ketchup for dipping. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Wild Idea Buffalo 4 – 1/4-Lb Buffalo Burgers

Prepare for a whole new level of burger. Conveniently pre-made into one-quarter pound patties that are ever so grillable. Dinner ready. Each pack is 1 pound with 4 – 1/4 Lb patties.

Seasoned Tilapia Sandwich w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries

Dinner Tonight: Seasoned Tilapia Sandwich w/ Baked Cracked Black Pepper and Sea Salt Country Style
Fries

As I went to bed last night my throat felt funny and then this morning I had Laryngitis. For some reason I get this about once a year. Hopefully it will clear up in a day or so. For dinner Tilapia. I prepared a Seasoned Tilapia Sandwich w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries.

I had purchased a bag of about 12 small Tilapia Fillets from Walmart, just the right size for sandwiches. Good thing to have in freezer, their easily thawed, easy to prepare , and delicious! I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain's Lemon Pepper Breading Mix. Pan fried them in Canola Oil about 3 minutes per side. Served it on a Aunt Millie's Deli Style Whole Grain Mini Sub Bun and topped with Ice Burg Lettuce. If you read my blog often, you know how I love Fish!

For a side for my Fish Sandwich I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Tried these for the first time earlier and really like them. Served these with a side Daisy Reduced Fat Sour Cream. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Chili and Cheese Footlong Wieners w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries

Dinner Tonight: Chili and Cheese Footlong Wieners w/ Baked Cracked Black Pepper and Sea Salt Country
Style Fries

I had went to Kroger early this morning to pick up a couple of items when I ran into a huge display of Footlongs and Footlong Buns! I couldn't resist it I had to buy a package of each! Having these always reminds me of when I was growing up we would always go to A & W's Root Beer Stand every Summer Weekend. They were only open during the Summer but packed day and night. Nothing was better than an A & W Footlong w/ Chili, Cheese, and Mustard with a frozen mug of A&W Root Beer, it got no better than that on those hot Summer Days! So for dinner tonight I prepared Chili and Cheese Footlong Wieners w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries.

They had a couple of brands of Footlongs and I went with the Queen City Sausage Footlong Wieners. Queen City is hard to beat foe quality and their Footlongs were 160 calories where the other brand was at 240 calories, saved 80 calories! To prepare them I boiled them using a long roaster skillet. I put enough water in it to cover the Footlongs about 2" over them. Brought the water to a boil added the Wieners and boiled about 5 minutes. They came out just right!

To serve them I placed them on a Heiner's Footlong Bun, first time I ever used them. I wanted to use a thick Turkey Chili with Beans but it was just too many calories so I went with Skyline Chili, just 40 calories. Skyline is a popular Coney and Spaghetti Restaurant here locally and sell a lot of their products in stores. To plate it I topped the Footlong with French's Yellow Mustard, Diced Onions (I passed on the Onions Mom and Dad love them), Chili, and Sargento Reduced fat Shredded Sharp Cheddar. This all makes one heck - of a Chili Cheese Footlong! I also baked up a new type of Ore Ida Fries. Found them at Meijer the other day, Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. These are some killer Fries! The Cracked Black Pepper and Sea Salt are perfect. They have these in Potato Wedges also, I'm sure their just as good! For dessert later a Jello Sugar Free Double Chocolate Pudding.

Sauteed Mushroom Buffalo Burger w/ Baked Crinkle Fries

Dinner Tonight: Sauteed Mushroom Buffalo Burger w/ Baked Crinkle Fries

Not much going on today. I even took a rare afternoon siesta which I hardly ever do. I did go to a local farmers Vegetable stand nearby here and picked up a Watermelon and Cantaloupe up for my Mom and Dad. I can eat either but never been a huge fan of either. For dinner I prepared a Sauteed Mushroom Buffalo Burger w/ Baked Crinkle Fries.

I used Great Range Ground Bison to make my Burger. My favorite is Wild Idea Buffalo but I have a lot of the Great Range Bison in the freezer that I have to use. It's always a good product but it doesn't have the taste to it as Wild Idea Buffalo does. Anyway I made my pattie and seasoned it with Sea Salt and Ground Black Pepper. I pan fried it in Canola Oil and fried it about 4 minutes per side, a good medium rare with a char on the outside and a little pink in the center. Makes a delicious juicy burger! I served it on a Healthy Life Whole Grain Bun and topped with Sauteed Baby Bella Mushrooms.

To go with my Burger I had Baked Ore Ida Crinkle Fries with a side of Hunt's Ketchup. Made a perfect and healthier Burger and Fries. Healthier by using Bison over Beef, by using a Whole Grain Bun, and by Baking the Fries instead of a deep fry. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Great Range Ground Bison

All natural (Minimally processed. No artificial ingredients). Raised without antibiotics, no added hormones (Federal regulations prohibit the use of hormones in bison). US inspected and passed by Department of Agriculture. Great Range Brand is proud to bring you the same premium natural bison products served in the nation's finest restaurants. Enjoy the flavor of Great Range!

Grilled Steak Hoagies on Whole Grain Sub Buns w/ Baked Crinkle Fries

Dinner Tonight: Grilled Steak Hoagies on Whole Grain Sub Buns w/ Baked Crinkle Fries

It was back to the family Doctor this morning. He wanted to go over a few things from the blood work. He
took a bit more blood to check my Iron count and a few other things, still hoping it's nothing serious. It really upsets me and troubles me when something comes back from testing out of whack. With everything I've been through I just get real jittery. Got to stay positive though! For dinner another one of the J.T.M. Hoagies along with some baked Ore Ida Crinkle Fries.

I used the J.T.M. Beef Steak Hoagies I had used the other day. They come pre-cooked and frozen so all you have to do is warm them back up. You bake them pan fry them or grill them, I pan fried them this time. It took about 3– 4 minutes per side and they were ready. J.T.M. is one of the better tasting prepared Hoagies and they have a whole line of Hoagies, Hamburgers, and such. I served them on Aunt Millie’s Deli Style Whole Grain Mini Sub Buns. For toppings I Sauteed some Baby Bella Mushrooms, Ragu Original Pizza Sauce, and Sargento Ultra Thin Provolone Cheese. For a side to go with my  Hoagie I baked some Ore Ida Crinkle Cut Fries. For a dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

JTM Steak Hoagie

I've never seen weather like were having this Spring! After a run of nice warm Spring days, today's high is

Good news, My Dad was released from the rehab center this afternoon and is back home and resting comfortably. Grilled Marinated Flat Iron Steak Sandwich w/ Baked Crinkle Fries

Dinner Tonight: Grilled Marinated Flat Iron Steak Sandwich w/ Baked Crinkle Fries

I've been getting some great recipe ideas lately from the various cooking shows on TV. The one I prepared tonight is based on a recipe that I just seen yesterday on one of Paula Deen's shows, Grilled Marinated Flat Iron Steak Sandwich and also a side of  Baked Crinkle Fries.

I used a Flat Iron Steak that I had purchased from Kroger. I marinated my Steak overnight. The marinade consisted of; 3/4 cup Reduced Sodium Soy Sauce,  1/4 cup Extra Virgin Olive Oil, 3 tablespoons Worcestershire Sauce, 2 tablespoons fresh Lemon Juice, 3 cloves Garlic, minced, 2 teaspoons Ground Black Pepper. I then mixed everything in a small bowl and got a gallon size Hefty Zip Lock Plastic Bag and placed my Steak in it and added the marinade. I let it marinate from about midnight last night till I prepared for dinner tonight. To prepare the Steak I drained the steak, discarding the marinade. Placed the steak  in a large skillet that I had sprayed with Pam and Canola Oil. I pan fried it on medium heat about 4 to 5 minutes on each side, medium rare to rare in the very center. Letting it stand for 10 minutes before slicing. the Steak came out perfect with a fantastic flavor from the marinade. I sliced thin and against the grain. I served it on a Aunt Millie's Light Whole Grain Bun. I topped it with Arugula and a Bacon Horseradish Sauce that I also prepared.

To prepare Bacon Horseradish Sauce I mixed the following ingredients; 2 teaspoons minced Green Onion, 1 cup Hellman's Reduced Fat Mayonnaise, 6 slices Turkey Bacon, cooked and crumbled, 2 teaspoons Prepared Horseradish, 1/4 teaspoon Lemon Zest, and 1/2 teaspoon fresh Lemon Juice, cover and chill until needed. I also had a side of Ore Ida Crinkle Fries that I baked. For dessert later I baked some fresh Mini Loaves of Pillsbury Nut Quick Bread. I had a slice of the Nut Bread topped with a scoop of Breyer's Carb Smart Vanilla Ice Cream.

Grilled Marinated Flat Iron Sandwiches

Ingredients:

Marinade:

3/4 cup Reduced Sodium Soy Sauce
1/4 cup Extra Virgin Olive Oil
    3 tablespoons Worcestershire Sauce
    2 tablespoons fresh Lemon Juice
    3 cloves Garlic, minced
    2 teaspoons Ground Black Pepper
    1 (4 1/2-pound) Flat Iron Steak, trimmed

Bacon Horseradish Sauce:

    2 teaspoons minced Green Onion
1 cup Hellman's reduced Fat mayonnaise
6 slices Turkey Bacon, cooked and crumbled
    2 teaspoons Prepared Horseradish
    1/4 teaspoon Lemon Zest
    1/2 teaspoon fresh Lemon Juice
Aunt Millie's Light Whole Grain Buns
    Arugula, for serving

Directions:

For the marinade: In a large resealable plastic bag, combine the soy sauce, oil, Worcestershire sauce, lemon juice, garlic, and pepper. Add the flank steak, seal the bag, and refrigerate for at least 8 hours.

Preheat a grill to medium heat.

Drain the steak, discarding the marinade. Place the steak on the grill. Grill 4 to 5 minutes on each side, or until desired temperature. (You may also bake at 425 degrees F until a meat thermometer inserted in thickest portion reads 145 degrees, 40 to 45 minutes.) Let stand for 10 minutes before slicing.

For the bacon horseradish sauce: In a small bowl, combine the green onions, mayonnaise, bacon, horseradish, lemon zest, and lemon juice. Cover and chill.

To assemble: Spread desired amount of Bacon Horseradish Sauce over the bottom of the rolls. Top with desired amount of arugula. Top with sliced flank steak. Cover with roll tops. Serve immediately.

Smoked Cheddar and Mushroom Bison Burger w/ Baked Crinkle Fries

Dinner Tonight: Smoked Cheddar and Mushroom Bison Burger w/ Baked Crinkle Fries

In a span 24 hours here in the Ohio Valley it Thundered, Rained, Sleeted, Freezing Rain, and now it's Snowing. We have about 2" on the ground and they said we could expect anywhere from 6" to 8" with more coming over the weekend. Welcome to Ohio!

For dinner one of my favorites a Smoked Cheddar and Mushroom Bison Burger w/ Baked Crinkle Fries! Just love that Bison or Buffalo. I had ordered some Bison Products from http://www.buffalogal.com/. I had tried the Bison Top Sirloin about a week ago and tonight I'm trying the Buffalo Gal 1/3 Buffalo Patties. Their a really good looking plump Burger. I pan fried it on medium heat in Canola Oil about 4 minutes per side. The Burger came out moist and juicy with that fantastic Bison taste. I'll give it two thumbs up, excellent Bison Burger! I served it on a Healthy Life Whole Grain Bun topped with Sauteed Mushrooms and a slice of Borden Smoked Cheddar.

For a side I had a serving of Baked Ore Ida Crinkle Fries. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Suggested Cooking Tips:
Bison burger is lean (ranging from 93-96% lean) so when grilling or pan frying the burger - place it on medium heat - COVER. Allow the burger to do its cooking on one side. Don't poke, smash or continually flip the burger because you want to maintain all of the moisture and fat in the meat. When burger appears mostly cooked - flip one time and in 30-45 seconds it should be ready to serve. You might find that using a meat thermometer is helpful when first cooking the burger. It should reach 160 degrees internal temp.
