Wild Idea Buffalo Recipe of the Week - BUFFALO and BROCCOLI STIR-FRY

BUFFALO and BROCCOLI STIR-FRY 
Super quick, super easy, super delicious!

Ingredients:
1 - pound Wild Idea Ground Buffalo
3 - spring onions, bulbs halved and sliced, greens sliced
1 - large head broccoli, flowers with tender part of stem
2 - tablespoon sesame oil + more if needed
2 - tablespoon Asian fish sauce
1/4 - cup rice vinegar
3/4 - cup organic chicken broth or water
2 - tablespoons soy sauce
2 - teaspoons sriracha sauce
1 - tablespoon cornstarch
2 - tablespoons brown sugar
1 - tablespoon fresh grated ginger
4 - garlic cloves, chopped
1 - teaspoon black pepper
salt to taste
Optional: chili flake, chopped peanuts, chopped cilantro

Preparation:

1 - Mix together the Asian fish sauce, vinegar, broth, soy sauce, srirachia, cornstarch, brown sugar, ginger, garlic and black pepper. Set aside.
2 - In a heavy bottom large skillet or wok over medium high heat, heat the oil.
3 - Crumble in the ground buffalo and break up further with a spatula as it cooks.
4 - When lightly browned add the sliced onion bulbs and continue to stir-fry until the meat is nicely browned. Add more sesame oil if needed.
5 - Add the sauce mixture and stir to incorporate.
6 - Nestle in the broccoli and cover the pan. Reduce heat to medium and cook for seven minutes or until broccoli is el dente.
7 - Sprinkle in amount desired of the sliced green of the onions, reserving any remaining to pass with dish.
8 - Season with salt to taste and add red pepper flake or serve on the side.
9 - Serve over rice and garnish as desired.

“Not So Sloppy” Buffalo Joe's w/ Baked Crinkle Fries

Dinner Tonight: “Not So Sloppy” Buffalo Joe's w/ Baked Crinkle Fries





Started my morning off by making a Breakfast Sandwich. Toasted a Healthy Life Whole Grain
English Muffin and as that toasted I fried up some Boar's Head Deluxe Ham and as that was finishing I took a slice of Sargento Swiss Cheese and layered that on to top of the Ham while in in the skillet. Love these English Muffin Breakfast Sandwiches! Heat, humidity, and showers throughout the day,seems to a holding pattern.  We got a whole lot of rain overnight and into today. Helped out Mom on a couple of loads of laundry. Then had to do some minor repair on the Hoveround. For Dinner tonight I prepared some “Not So Sloppy” Buffalo Joe's w/ Baked Crinkle Fries.
   




It’s Sloppy Joe Night tonight for dinner! A delicious and a super easy meal to make. To make the Sloppy Joe's I used a 1 lb. package of Wild Idea Buffalo Premium Ground Buffalo, 1 jar of Hormel Not So Sloppy Joe Sauce, and Healthy Life Whole Grain Hamburger Buns. Using Buffalo, or Bison, instead of Beef will give your Sloppy Joe's a deeper and richer flavor.








Using a large skillet to brown the Buffalo in I seasoned it with McCormick Grinder Sea Salt and
Peppercorn Medley. After the Buffalo was browned and no longer pink I added the jar of Not So Sloppy Joe Sauce stirring and making sure the Sauce and Buffalo was well mixed. Simmer until it’s warm, and served. I love the Hormel Not So Sloppy Joe Sauce. It’s a good thick sauce well seasoned with Spices, Onions, Green Peppers among other ingredients (70 calories and 15 carbs per serving). I served them on the Healthy Life Bun. Another delicious dish using Wild Idea Buffalo. For a side I baked some Ore Ida Crinkle Fries, with a side of Hunt’s Ketchup for the Fries. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Creamy Buffalo & Mushroom Soup

I am just going to come right out and tell you that this recipe is super delicious! It has an earthy, elegant flavor, and you will love the texture. (Serves 6 or 12 as a first course)

Ingredients:

5 - tablespoons butter
10 - ounces Cremini mushrooms, stemmed & chopped (reserve 3)
1 - tablespoon fresh rosemary, finely chopped + 1 small sprig
3 to 5 – garlic cloves, chopped
½ - onion, chopped, about half a cup
3 - cups buffalo or organic beef broth
8 - ounces cream cheese, cut into cubes
1 - pound package Wild Idea Premium Ground Buffalo
1 - teaspoon salt
1 - teaspoon pepper
2 - tablespoons fresh squeezed lemon juice

Preparation:

1) In a heavy bottom stockpot over medium high heat, melt 3 tablespoons of the butter. Add chopped mushrooms, rosemary, onions, and garlic and sauté until tender, about 7 minutes, stirring occasionally.

2) Add broth and bring to a boil. Reduce heat, cover, and simmer for 10 minutes.

3) Add cream cheese cubes and transfer all of the ingredients into a blender.

4) Return pot to the stove over medium high heat and melt another tablespoon of butter. Crumble the ground buffalo in the hot pan breaking up further with a spatula end, stirring continuously until lightly browned. Do not overcook or allow the meat to become hard.

5) Add browned meat to the blender or food processor and puree until smooth. *For a silkier texture I process the soup again in my “smoothy”, or smaller blender.

6) Return soup to pot and re-warm over medium heat, stirring occasionally.

7) Take remaining 3 mushrooms and finely dice them. Mince one short sprig or head of a rosemary sprig. In a small sauté pan over medium high heat, melt remaining tablespoon of butter. Add mushrooms and sauté until dark brown, adding the rosemary right at the end. Drain onto a paper towel.

8) Add lemon right before serving. To serve, ladle desired portions into bowl and sprinkle with crunchy mushroom bits. Accompany with crusty bread. So good!
