Today's Menu: Beer Battered Fish and Fries
I was at Kroger early this morning trying to find something that sounded good for dinner when I spotted some beautiful looking Haddock Fillets, I found dinner! Beer Battered Fish and Fries. It just sounded right! The recipe for the Beer Batter was based on recipe I found on The Food Network that I tweaked a little. If you like Fish your going to love this recipe! The Beer Batter makes one killer golden crust! I used 2 fillets that I cut up into several small pieces, it made plenty for three people. The Batter makes a delicious tasting crust that fries up golden brown. I used Yuengling Light Lager Beer, 99 calories 8 1/2 carbs, for the Batter. The Fish has a fantastic taste and the Batter encrusts the fillets to keep it moist. If you love Fish as much as I do give this one a try. I left the recipe at the end of the post.
Along with the Fish I baked some Ore Ida Crinkle Fries. For dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with some fresh sliced Peaches.
Beer Battered Fish and Chips
Ingredients
Beer Batter:
1 (12-ounce) bottle beer. I used Yuengling Light Lager 99 calories 8 1/2 carbs
2 cups all-purpose flour
1 teaspoon Seasoning, recipe follows
1 1/2 pounds Haddock fillets, skinned with bones removed, and fish cut diagonally into 1-inch-wide strips (5 to 6-inches long)
Directions
Spray skillet with Pam Cooking Spray. Preheat Pan on Medium while adding up to 1/2 inch of Extra Virgin Olive Oil. Make sure Oil is hot before adding Fish.
Batter:
In a large bowl, pour in 1 bottle of beer. Sift 1 1/2 cups flour into the bowl, whisking in gently until just combined, stir in House Seasoning. Pat fish dry and season on both sides with salt and pepper and coat the fish in the beer batter. Dredge the pieces of fish in 1/2 cup of remaining flour and slide into oil as coated. Fry fish, turning over frequently, until deep golden and cooked through, 4 to 5 minutes. Transfer to a paper towel-lined baking sheet and keep warm in oven. Fry remaining fish in batches, making sure oil remains hot between batches.
Serve fish with French fries.
Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.

Skyline 3 Way tonight!
Dinner Tonight: Skyline 3 Way - Chili, Spaghetti, Cheese w/ Side of Oyster Crackers
It's been forever and a day since I've had a Skyline 3 Way, and it was worth the wait! If your from the Cincinnati area you know Chili Spaghetti is a way of life around here. The Chili Wars have been raging around here for a long time. I've always been a Skyline Chili man myself. Just something about their recipe. A little spicy with a hint of sweet and loaded with spices. The recipe remains a top secret and probably will be forever. When I was diagnosed with Diabetes2 I changed my diet and eating habits and through a lot of work I finally reversed my Diabetes2 and off all medication for it. I've been off it for a while now and had my first Domino's Pizza back in January so I thought now it's time for my first Skyline 3 Way! They now sell it packaged for the microwave, a bit smaller size than what you get at a Skyline but just right for those still watching calories and carbs. It comes with Spaghetti topped with that wonderful Skyline Chili. You add the Cheese to make it a 3 Way. I used Kraft 2% Shredded Sharp Cheese and also had a side of Skyline Oyster Crackers. Overall it was just over 400 calories and 33 carbs. For dessert later a bowl of Breyer's Carb Smart Vanilla ice Cream topped with Del Monte No Sugar Added Sliced Peaches. Below i left a little info and history about Skyline Chili.
Skyline Chili
Skyline Chili is a chain of chili restaurants based in Cincinnati, Ohio. Founded in 1949 by Greek immigrant Nicholas Lambrinides, Skyline Chili is named for the view of Cincinnati's skyline that Lambrinides could see from his first restaurant (which has since been demolished), opened in the section of town now known as Price Hill. It is also the "official chili" of many local professional sports teams and venues, including the Cincinnati Reds, Columbus Blue Jackets and the Kings Island theme park, and also sponsors the Crosstown Shootout, an annual men's college basketball rivalry game between the city's two NCAA Division I teams, Cincinnati and Xavier.
In 1912, Nicholas Lambrinides immigrated to Cincinnati from Kastoria, Greece, and brought his favorite family recipes with him. To save up the money to bring his wife to America as well, he first worked as a cook for a railroad crew and in a hotel kitchen, then opened a short-order diner. After nearly a decade, his wife was able to join him in Cincinnati and they raised five sons.
By World War II, Lambrinides was working as a chef for the original Empress Chili restaurant, where he continued to tinker with a recipe which he had been developing for years. In 1949, he and three of his sons opened their own place on Glenway Avenue, near the top of a steep hill (Price's or Price Hill). That diner was located at the intersection of what is now Quebec and Glenway Avenue. The owners named it Skyline Chili for its panoramic view of downtown Cincinnati. After some local resistance in the predominantly Roman Catholic neighborhood Skyline developed a large and devoted following – especially on Thursdays and Saturdays, which immediately preceded and proceeded meatless Fridays.
The family opened a second restaurant in 1953 and the growth of the business accelerated in the 1960s; by the end of the century, there were 110 Skyline restaurants, mostly in Ohio, but with additional establishments in other states including Kentucky, Indiana, and Florida. Lambrinides died in 1962 at the age of 82, but his sons continued to operate and expand the company. They retained the original recipe unchanged, though. According to William Lambrinides, "Dad always said, 'Don't change a thing with the recipe – don't add anything, don't take out anything, it's perfect the way it is'." As a result, Skyline's version has largely become synonymous with "Cincinnati-style chili". In 1998, the company was sold to Fleet Equity Partners, a New England investment firm, which promised not to change the recipe (which they reportedly keep locked in a safe).
Skyline Chili is unique in that it is not chili con carne, the meat dish that originated in (and is the state dish of) Texas. Instead, Cincinnati-style chili is a sauce usually used over spaghetti or hot dogs, containing a unique spice blend that gives it a very distinct taste. Officially, the recipe for Skyline Chili is a well-kept family secret among Lambrinides' surviving children. However, many Skyline patrons and Cincinnatians believe that the unique taste of Skyline Chili comes from chocolate and cinnamon, spices common in Greek cuisine's meat dishes. The general recipe is not unique to Skyline — "Cincinnati-style" chili is sold by several chili parlors in the area including Empress, Dixie, Gold Star Chili, Camp Washington, Dawson's School House of Chili, and other chili parlors.
Skyline's menu includes their signature dishes: cheese coneys (a hot dog topped with Skyline Chili, mustard, onions, and cheese), and 3-ways (spaghetti topped with Skyline Chili and cheese; 4-ways (choice of beans or onions added), and 5-ways (beans and onions both added). Additional menu items include burritos made with Skyline Chili, classic and Greek-style salads, french fries, and baked potatoes topped with Skyline Chili. To accommodate patrons who follow a low carbohydrate diet, Skyline has recently offered low-carb options such as a "coney bowl"—a cheese coney without the bun, and also now serves vegetarian options, using beans and rice in place of chili in many of its dishes.

Sloppy Bison Joe's w/ Baked Potato Chips
Dinner Tonight: Sloppy Bison Joe's w/ Baked Potato Chips
I had some extra Ground Bison Sirloin so I decided to make Sloppy Joes out of it. I browned the Bison in Extra Virgin Olive Oil and seasoned it with Sea Salt, ground Black Pepper, and Ground Smoked Cumin. I try to use Cumin as much as I can due to the health benefits of it. After browning the Bison I added a jar of Not So Sloppy Joe Sauce. I ran across this sauce at Meijer a while back and have it used it ever since for all my Sloppy Joes. It's a thick sauce that's seasoned perfectly! I served the Joe on Healthy Life Whole Grain Buns. I had a side of Ruffles Baked Potato Chips. A good tasting chip that's only 122 calories and 22 carbs. For dessert later a slice of Pillsbury Nut Quick Bread topped with a scoop of Breyer's Carb Smart Vanilla Ice Cream.

Dinner Tonight: Bison Sirloin w/ Baked Potato, Grilled Asparagus, and Whole Grain Bread
I had a Bison Sirloin Steak tonight. I love Bison and use it all the time instead of Beef, except for an occasional Beef Sirloin Steak. I seasoned this one with McCormick Grinder Steakhouse Seasoning. I pan fried it in a 1/2 tablespoon of Extra Virgin Olive Oil about 4 minutes per side. It came ot a juicy mediun rare! I even made an extra one that I'll have for breakfast in the morning, Steak and Eggs w/ Whole Grain English Muffin! For sides I had Grilled Asparagus Spears, Baked Potato, and Healthy Life Whole Grain Bread. I seasoned the Potato with Sea Salt and Pepper and topped it with I Can't Believe It's Not Butter and Daisy Reduced Fat Sour Cream. For dessert later Breyer's Carb Smart Vanilla Ice Cream topped with Dole Mango Slices.

Dinner Tonight: Honey & Spice Baked Chicken w/ Whole Grain Brown Rice, Asparagus Bits, and Whole Grain Bread
Tried a new recipe tonight for dinner. I ran across it in latest issue of Simple & Delicious / Taste of Home. It's coated with a lot of my favorite Spices Garlic Powder, Chili Powder, Smoked Cumin, Cayenne Pepper among other ingredients. Coat your Chicken Breasts, bake, and baste and you have some mouth watering Chicken! It came out flavorful and moist. Tasty and easy Chicken dish, I will have this again. I left the recipe at the bottom of the post, give it a try. For sides I had Uncle Ben's Whole Grain Brown Rice, Green Giant Asparagus Bits, and Healthy Life Whole Grain Bread. For dessert later a slice of Pillsbury Nut Quick Bread with a scoop of Breyer's Carb Smart Vanilla Ice Cream. I made several loaves of the Nut Quick Bread in mini foil pans and froze them. They come in handy for a quick dessert or snack.

Today's Menu: Bison Sirloin Steak w/ Sliced Portabella Mushrooms, Grilled Potato Slices, and Whole Grain Bread
Had a beautiful Bison Sirloin Steak for dinner. Cooked about 4 1/2 minutes per side and seasoned with McCormick Grinder Steakhouse Seasoning. Came out juicy and delicious! For sides I had Meijer Grilled Potato Slices w/ Cheese and Herb Seasoning and Portabella Mushroom Slices. The slices were of an extra large Portabella Mushroom that I seasoned with Ground Smoked Cumin, Parsley, Sea Salt, and Ground Pepper. I lightly sauteed them in Extra Virgin Olive Oil. If you like Potatoes the Meijer Grilled Potatoes are a great alternative to fresh Potatoes. They come frozen and are already Seasoned. You can Stir Fry them for 5 minutes, which is how I always prepare them, or you can warm them up by microwave. Plus the thing I like, along with the taste, is they are only 80 calories and 11 carbs! For dessert something new, Pillsbury Nut Quick Bread. I had a slice of that topped with a scoop of Breyer's Carb Smart Vanilla Ice Cream, too good!

Pan Seared Sockeye Salmon and Basil Pesto w/ Green Beans, Sweet Corn...
Dinner Tonight: Pan Seared Sockeye Salmon and Basil Pesto w/ Green Beans, Sweet Corn, and Whole Grain Bread
I had a Pan Seared Sockeye Salmon and Basil Pesto with a Lemon Wedge. I seasoned the Salmon with McCormick Grinder Sea Salt, McCormick Grinder Black Peppercorn, and Parsley. I then pan seared with Extra Virgin Olive Oil about 3 1/2 minutes per side. When done I topped it with Basil Pesto and a Lemon Wedge. The Salmon contains those healthy omega-3′s that we need to be incorporating into our diet!
For sides I had Green Beans and Sweet Corn along with Healthy Life Whole Grain Bread. I tried a can of Del Monte Summer Crisp Whole Kernal Golden Sweet Corn and loved it! Great flavor and only 80 calories and 16 carbs. The Del Monte Cut Green beans are 20 calories and 5 carbs and the Healthy Life Whole Grain Bread 80 calories and 16 carbs. So for 3 sides it's only a total of 180 calories and 37 carbs! Not bad at all. For dessert later a Mini Banana Split. Using a Mini Banana, Breyer's Carb Smart Vanilla Ice Cream, Smucker's Sugar Free Hot Fudge Chocolate Topping, and a Tablespoon of Cool Whip Free. If you crave one at least make it as low calorie and low carb as you can.

Shrimp w/ Mac & Cheese
Dinner Tonight: Shrimp w/ Mac & Cheese
Easy fixed comfort food tonight! Wanted something healthy, hot, and easy to fix. I had Shrimp along with Mac & Cheese. I used Sea Pak Light and Crispy Shrimp that I baked at 450 degrees for 12 minutes and Smart Ones three Cheese Macaroni that was microwaved on high for 4 minutes. You can't get much easier and in minutes you have your dinner. The Shrimp was 190 calories and 13 carbs while the Mac & Cheese was 300 calories and 49 carbs. The Mac & Cheese was a good size serving so I just had a half serving so that lowered the calories to 150 and 25 carbs. For dessert later tonight Breyer's Carb Smart Vanilla Ice Cream topped with Del Monte No Sugar Added Sliced Peaches.

Baked Pork Chops w/ Asparagus, Boiled New Potatoes and…
Bread
I another of the Monster Chops for dinner tonight and I marinated it in J B’s Fat Boy’s Haugwash Barbcue Sauce. Just the name Fat Boy’s Haugwash makes my mouth water! If you’ve never tried any of their Rubs or Sauces you got to give them a try! The best I’ve ever had, bar none. Wish it was a little lower in calories and carbs but it’s worth cutting back on other things to fit this in the dinner. Anyway I marinated the Chops in the Sauce and refrigerated it for 4 hours. I removed the chops from the fridge and shook off any excess of the sauce and then seasoned it with McCormick Grinder Sea Salt and Grinder Black Peppercorn and then applied a light rub of McCormick Grillmate’s Applewood Rub. I then pan fried the Chops browning both sides then baked the Chops at 350 degrees for 20 minutes and then flipping the Chops over and baking another 25 minutes or until temperature reads 165 degrees.
As sides I had Asparagus seasoned with Garlic Salt and Black Pepper and lightly fried in Extra Virgin Olive Oil, I Can’t Believe It’s Not Butter along with sliced Almonds and crumbled Turkey Bacon. I also sliced some New Potatoes up and seasoned them with Sea Salt, Pepper, and Parsley and then boiled them until they were tender, about 15 minutes. Also had a slice of Pillsbury Rustic French Bread. Dessert later a bowl of Breyer's Vanilla Carb Smart Ice Cream topped with Del Monte Sugarless Sliced Peaches.

Spaghetti w/ Meatballs
Today’s Menu: Spaghetti and Turkey Meatballs w/ Bella Vita Low Carb Pasta Sauce
I had Spaghetti tonight and used Ronzoni Healthy Harvest Whole Wheat Spaghetti. For the Meatballs I used Honeysuckle White Turkey Meatballs with Bella Vita Low Carb Pasta Sauce (Meat Flavored). I love this Sauce it’s got great flavor and a choice of two different types: Meat Flavored and Roasted Garlic. Along with the great taste it’s only 70 Calories and a mere 6 Carbs! That’s huge when most Pasta Sauces are double the calories and carbs. I also had a slice of Healthy Life Whole Grain Bread and some Shredded Parm to top off the Spaghetti. For dessert later tonight a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with Del Monte Sugarless Sliced Peaches.

Ground Chicken Burger w/ Kicked Up Chili Beans
Today’s Menu: Ground Chicken Burger w/ Kicked Up Chili Beans
I had a Ground Chicken Burger with a side of Kicked Up Chili Beans for dinner tonight. The lighter the better in this heat wave your having. I used Tyson Extra Lean Ground Chicken. I added a tablespoon of Italian Style Bread Crumbs to the burger. With lean Chicken it’s tough sometimes keeping it together to form a burger so the bread crumbs really help. I seasoned it with Sea Salt, Ground Black Pepper, and Ground Smoked Cumin. Fried it in Extra Virgin Olive Oil about 4 minutes per side. Served on an Healthy Life Whole Grain Bun and topped with Lettuce, a slice of Monterrey/Jack Cheese and a dab of Jack Daniel’s Smoked Honey BBQ Sauce. For the Beans I used Joan of Arc Spicy Chili Beans and added Jack Daniel’s BBQ Sauce, Crumbled Turkey Bacon Bits, and a few dashes of Frank’s Red Hot Sauce. Dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with fresh Red Raspberries.

Dinner Tonight: Bleu and 'Shroom and Bison Burger w/ Baked Steak Fries
Light comfort food tonight for dinner. I had a Ground Bison Sirloin Burger which was seasoned with McCormick Grinder Steakhouse Seasoning and then fried in Extra Virgin Olive Oil about 4 minutes per side. Just a note when you fry a Bison Burger watch it carefully as it fries quicker than Beef because it's so lean. Anyway I used Healthy Life Whole Grain Buns and topped the Burger with Crumbled Bleu Cheese and Sauteed Mushrooms. The Mushrooms were lightly sauteed in E.V. Olive Oil and a half pat of I Can't Believe It's Not Butter then seasoned with Sea Salt, Pepper, Parsley, Cumin, and Minced Garlic. As a side I had Ore - Ida Steak Fries that I baked. Dessert later Breyer's Carb Smart Vanilla Ice Cream topped with a little Smucker's Sugarless Chocolate Hot Fudge Topping.

As sides had Long Grain &Wild Rice along with Healthy Life Whole Grain Bread. For dessert later a bowl of Breyer's Carb Smart Chocolate Ice Cream.

Mahi Mahi w/ Potato Cakes and...
Dinner Tonight: Mahi Mahi w/ Potato cakes and Whole Grain Bread
I had some more of the Mahi Mahi I had purchased from Kroger! Absoulutly, drop dead, delicious! Lightly rolled the fillet in Italian Bread Crumbs, seasoned with Sea Salt and Pepper, and fried in Extra Virgin Olive Oil about 4 minutes per side. It really didn't need a lot of seasoning as it was delicious tasting as is. As sides I had Potato Pancakes and Healthy Life Whole Grain Sliced Bread. I used Manischewitz reduced Sodium Potato Pancake Mix. Easy to make and only 80 calories and 18 carbs per serving (3 pancakes a serving). Later some Breyer's Carb Smart Ice Cream for dessert.

Diet Dr. Pepper Ice Cream Float
…and About That Dessert
I had a Dessert I haven’t had in a very long time, an Ice Cream Float. It’s been since High School since I’ve had one of these. It was actually a Diet Dr. Pepper Ice Cream Float. Very easy and simple to make. I used Diet Dr. Pepper and Breyesrs Carb Smart Ice Cream. Calorie and carb wise this is a winner with Diet Dr. Pepper at 0 calories and 0 carbs and Breyers Carb Smart Ice Cream 90 calories and 13 carbs. If you make this add your Ice Cream to a tall glass and then add the Dr. Pepper, add the Dr. Pepper slowly and with the glass slightly tilted to avoid foaming over. It turned out too good. The foam from the Dr. Pepper was almost frozen when mixing with the Ice Cream. If you haven’t had one in a while give it try!
