Fried Gulf of Maine Redfish w/ Potato Pancakes and Cut Green Beans

Dinner Tonight: Fried Gulf of Maine Redfish w/ Potato Pancakes and Cut Green Beans

For Breakfast this morning it was Steak and Eggs! I prepared a SayersBrook 4 oz. Bison Fillet Mignon. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. I then grabbed a small skillet, sprayed it with Pam Cooking Spray, and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Fried the first side 3 minutes and flipped it over and
cooked it another 2 minutes. I it came out a perfect medium rare! It was so tender and juicy. To go with it I cooked 1 Egg Sunny Side Up, toasted a couple of slices of Aunt Millie's Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. This is the way to start the day! It's a Heat Wave around here! It was 35 degrees early this morning. We had a high of 56 degrees and mostly cloudy. After my Breakfast I went and picked up Breakfast for Mom at McDonald's. Back home later I got broom and leaf blower out and cleaned off the deck area, it was a mess! That was about it for my day. Kicked back and watched TV and got ready for the Super Bowl later tonight. For Dinner I tried another Sea to Table Fish, Gulf of Maine Redfish. Tonight its Fried Gulf of Maine Redfish w/ Potato Pancakes and Cut Green Beans.

Being a Fish and Seafood Lover like I am, I'm sure glad I came across the Sea to Table website! They have some fantastic selections of Fish and Seafood, be sure to check them out  (https://www.sea2table.com/) Tonight I'm trying their Gulf of Maine Redfish. Gulf of Maine Redfish is - This deepwater New England classic -- also known as the Snapper of the Northeast -- has bright red skin and flaky meat that is slightly sweet.

The Redfish came frozen, 4 - 3oz. Fillets. I let it thaw overnight in the fridge. To prepare my Redfish I'll need; McCormick Grinder Sea Salt and Grinder Peppercorn Medley, Progresso Italian Style Bread Crumbs, and Extra Light Olive Oil. I first seasoned them with the Sea Salt and Peppercorn Medley.
Then rolled the Fillets in the Bread Crumbs and let sit for 5 minutes. Next I got a large skillet and sprayed it with Pam Non Stick Spray and heated it on medium heat. As the skillet was heating up I added 1 1/2 tablespoons of Extra Light Olive Oil. With the skillet heated I added the 2 fillets. As they started cooking I drizzled a bit of Lemon Juice across both fillets along with Dried Parsley. I cooked them for 3 minutes then flipped them over and continued cooking them for another 3 minutes, until both sides were a beautiful golden brown.

As the other Sea to Table Products, the Redfish is just as good! Fried up perfect, nice crust. The Fish was as described; flaky with and light sweet taste to it. It fried up like Ocean Perch, it curled as you cooked it. The Fish is a real meaty fish, which I love. Excellent Fish, look forward to having quite often! Just so happy I came across the Sea to Table website. I'm able to try fish that I would have never had a chance to try living here in Ohio, like tonight's Redfish and the Winter Skate I had last week and the Dover Sole. Plus there's more I haven't tried and looking forward to trying them also.

So for a side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). The whole family love’s these Potato Pancakes! They turn out so good and easy to reheat the leftovers.

Then I also heated up a can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and
heat until heated through. I just love Green Beans, all Beans! For Dessert/Snack later a bowl of Skinny Pop - Pop Corn along with a Diet Peach Snapple to drink.

Sea to Table - Gulf of Maine Redfish
Hand filleted, boneless, flash frozen
Why We Love It: Restaurants and home cooks all over New England embrace Gulf of Maine Redfish for its mild, slightly sweet taste and flaky meat. This fish makes a great alternative to other white-meat fish like Snapper, and is perfect for a long list of recipes. Each fillet is hand-cut and boneless, and retains its tender, bright red skin that helps lock in moisture no matter how you cook it.

Cooking Tip: Cut the fillets into bite-sized pieces and combine with veggies, tomatoes and broth for a delicious bouillabaisse.

Where It’s From: Redfish made a triumphant return from being overfished in the Atlantic Ocean, and now thrive in the deep waters off the coasts of Maine, Massachusetts, and New Hampshire.

Our Guarantee: We care about the fish you eat and work closely with our supply partners to provide you with the very best. If you are not 100% satisfied, we will replace or refund any item within 30 days.

Fried Walleye Fillet w/ Potato Pancakes and Green Beans

Dinner Tonight: Fried Walleye Fillet w/ Potato Pancakes and Green Beans

For Breakfast this morning I tried something new. I was at Meijer yesterday with Mom and I cam across some Ham, Artisan Crafted Kentucky Legend Hickory Smoked Ham. It was a small 2 1/2 lb. Ham, and it looked delicious! So I sliced off a few slices and heated it up in a skillet. Served it with a Sunnyside Up fried Egg and 2 slices of toasted Aunt Millie's Bread (lightly buttered). Also had my morning cup of Bigelow Decaf Green Tea. The Ham was moist and absolutely delicious! I'll be having this a lot more often, glad I came across it at Meijer!

Outside it was our warmest day in quite some time, 88 degrees and partly cloudy. We still have a lot of stuff to go through out in the shed so I spent most of the day doing that, and still things to go through! Dad has so many tools and things out there that's never used anymore. For Dinner tonight its a Fried Walleye Fillet w/ Potato Pancakes and Green Beans.

While at Meijer yesterday I bought a couple of fillets of Walleye. I first rinsed the fillets in cold water and patted them dry with paper towel. Then to prepare them I seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillets in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried them in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

So for a side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I
didn’t like!).

For a second side I heated up a can of Del Monte Cut Green Beans. I also reheated a couple of slices
of leftover Multi Grain Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Diet Peach Snapple to drink.

Dinner Tonight: Catfish Nuggets w/ Potato Pancakes and Cut Italian Green Beans

Started the day off with 1 Egg Sunnyside Up, fried a SayersBrook Bison Ranch Fillet Mignon,
toasted 2 slices of Healthy Life Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. I love those Fillet Mignon! After I had my Breakfast I went to Meijer for a few items and to pick some Catfish Nuggets up for tonight’s Dinner. Mostly sunny and 52 degrees out today. For Dinner tonight I prepared Catfish Nuggets along with Potato Pancakes and Cut Italian Green Beans.

Picked up the Catfish Nuggets at Kroger earlier. To prepare them I rinsed the Catfish Nuggets off in
cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat fried Catfish.

Catfish Nuggets w/ Potato Pancakes and Cut Green Beans

Dinner Tonight: Catfish Nuggets w/ Potato Pancakes and Cut Green Beans

For Breakfast this morning I fried up a package of Thin Cut Breakfast Pork Chops. I purchased these at Meijer. I had been wanting something different and I saw the Chops. So I seasoned them with Sea
Slat and Ground Black Pepper and then put a light coat of flour on them. I sprayed a large skillet Pam Cooking Spray and added a 1/2 tablespoon of Extra Light Olive Oil. Fried them on medium heat for 2 minutes per side, and done! To go with the Chops I fried some Simply Potatoes Shredded Hash Browns, Scrambled some Eggs, and toasted slices of Aunt Millie's Light Whole Grain Bread. I skipped the Eggs, they were for Mom and Dad. Cloudy and 65 degrees today, rain moved in later in the day. After Lunch I went to a Medical service Warehouse and picked up a wheel chair for Dad. He really needed this. Back home just did some odds and ends jobs around the house. For Dinner tonight one of my favorites, Catfish Nuggets w/ Potato Pancakes and Cut Green Beans.

Catfish
The most commonly eaten species in the United States are the channel catfish and the blue catfish, both of which are common in the wild and increasingly widely farmed. Farm-raised catfish became such a staple of the diet of the United States that on 25 June 1987, President Ronald Reagan established National Catfish Day to recognize “the value of farm-raised catfish.”

Catfish is eaten in a variety of ways. In Europe it is often cooked in similar ways to carp, but in the United States it is popularly crumbled with cornmeal and fried.… Wikipedia

After I had my Breakfast I went to Walmart for a few items and by Kroger to pick some Catfish Nuggets for tonight's Dinner. Not a bad day outside today, partly cloudy and 76 degrees out. A little cooler today and no humidity. Got the cart out and did a little yard work and then took a ride around the neighborhood and down by the lake. For Dinner tonight I prepared Catfish Nuggets along with Potato Pancakes and Cut Italian Green Beans.

Panko Crusted Cod Fish Sandwich w/ Potato Pancakes

Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Potato Pancakes

Went to bed sort of early last night and really got a nice long sleep in for a change. Woke up
refreshed and hungry. So for Breakfast I made Waffles and Turkey Sausage Links. For the waffles I used Bisquick Heart Smart Mix. The Heart Smart Mix has fewer calories, low fat, and less carbs than the normal mix. Mom and Dad was heading to McDonald's but I talked them into staying home and eating healthier for a change. So I made a big plate full of Waffles for everyone. After my morning workout it was house cleaning day today. Vacuumed and dusted inside and then went outside and did some cleaning out there. Not bad out, a bit warmer and bit more humidity but not too bad. For dinner tonight it's a Panko Crusted Cod Fish Sandwich w/ Potato Pancakes.

I had purchased the Cod earlier in the week and had it in freezer. I let it thaw overnight in the fridge. To prepare the Cod I rinsed the fillets off with cold water and patted dry. Then seasoned them with Sea Salt and Pepper. Combined the flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Place fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heat canola oil in a skillet and place the fillets in and saute 3 minutes each side, or until fillets are heated through and Panko Crust has browned.Served the fillet on a Kroger Whole Wheat Hoagie Bun with a slather of McCormick's Tarter Sauce. Made one extra for my lunch tomorrow!

Fish and Potatoes are such a natural and delicious pairing. So with that being said I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

One of America's Favorites - Potato Pancakes

Latkes frying in olive oil

Potato pancakes are shallow-fried pancakes of grated or ground potato, flour and egg, often flavored with grated onion or garlic and seasoning. Potato pancakes may be topped with a variety of condiments, ranging from the savory (such as sour cream or cottage cheese) to the sweet (such as apple sauce or sugar), or they may be served ungarnished. Potato pancakes are sometimes made from mashed potatoes to produce pancake-shaped croquettes.

Potato pancakes are associated with cuisines of many European and Middle Eastern century-old traditions including Austrian (as Kartoffelpuffer or "Erdäpfelpuffer"), Belarusian (as дранікі draniki), Czech (as bramborák or cmunda), German (as Kartoffelpuffer or Reibekuchen), Hungarian (as tócsni and other names), Iranian, Jewish (as latkes or latkas, Yiddish: לאַטקעס, Hebrew: לביבה levivah, plural לביבות levivot), Latvian (as kartupeļu pankūkas), Lithuanian (as bulviniai blynai), Luxembourg (Gromperekichelcher), Polish (as placki ziemniaczane), Russian (as draniki, драники), Slovak (as zemiakové placky, haruľa or nálečníky), Ukrainian (as deruny, деруни) and any other cuisines which have adopted similar dishes. It is the national dish of Belarus. In Germany, potato pancakes are eaten either salty (as a side dish) or sweet with apple sauce, blueberries, sugar and cinnamon; they are a very common menu item during outdoor markets and festivals in colder seasons. In Swiss cuisine, the Rösti differs insofar as it never contains egg or flour. It is a traditional favorite in southern Indiana during holiday festivities.

In the North-East of England (particularly County Durham), there is a popular dish known as tattie fish, because the pancake resembles a deep fried piece of fish. The pancake consists of flour, eggs, shredded potatoes and onions. Some people add tomato or cheese to the mix, depending on taste. A form of potato pancake known as boxty is a popular traditional dish in most of Ireland. It is made in a similar way but using more starch. The British also brought the potato pancake to Zimbabwe, Africa when Zimbabwe was a colony of Britain. They are still eaten today, where they are affordable.

The Swedish version of unbound potato pancakes is called rårakor. When prepared with a batter of wheat flour, milk, egg, and shredded potatoes and fried like thin pancakes, they are called raggmunk, the word "ragg" means crispy and "munk" derives from the Swedish "munkpanna", which is literally translated as donutpan. Both kinds are enjoyed with fried pork and lingonberry jam.

Polish tradition
Potato pancakes

Potato pancakes, known in Polish as placki ziemniaczane, are often served in Poland topped with meat sauce, pork crisps or goulash, as well as sour cream, apple sauce, mushroom sauce, and cottage or sheep's cheese or even fruit syrup. Placki ziemniaczane was a food staple at the 17th-century Polish monasteries according to written recipe from Stoczek Warmiński with one onion, two eggs and a spoonful of wheat flour per each kilogram of potatoes, served only with salt and pepper. In the 19th century, especially in times of economic difficulty during the foreign partitions, potato pancakes often replaced missing bread among the peasants. The lower-quality crops given to field laborers were sometimes turned by them quickly into pancakes to improve taste and prolong freshness. Also, their popularity is closely associated with the historic presence of one of the largest Jewish communities in the world flourishing in Poland.

The largest potato pancake (possibly in the world) measuring 2 meters and 2 centimeters was made during the annual two-day celebrations of Świt Plinzy (Plinza Dawn festival) in Rzechta, Poland. The tongue-in-cheek games in Rzechta include the throwing of bad potato pancake, with the record of 29 meters.

Czech tradition
Czech potato pancake is called bramborák and it is made of grated potatoes with egg, breadcrumbs or flour and seasoning (salt, pepper, most importantly garlic and marjoram; sometimes ground, cracked or whole caraway seeds) and is served as it is. Some regional versions blend in dough, sauerkraut, and/or sliced smoked meat. The same potato dough is used also as coating of fried pork chop called kaplický řízek.

Hanukkah tradition

Latkes (לאַטקע) are traditionally eaten by Jews during the Hanukkah festival. The oil for cooking the latkes is symbolic of the oil from the Hanukkah story that kept the Second Temple of ancient Israel lit with a long-lasting flame that is celebrated as a miracle. Prior to the introduction of the potato to the Old World, latkes were, and in some places still are, made from a variety of other vegetables, cheeses, legumes, or starches, depending on the available local ingredients and foods of the various places where Jews lived. Despite the popularity of latkes and tradition of eating them during Hanukkah, they are hard to come by in stores or restaurants in Israel, having been largely replaced by the Hanukkah doughnut due to local economic factors, convenience and the influence of trade unions.

The word "latke" itself is derived (via Yiddish) from the Russian/Ukrainian word латка (Polish: łatka, ACC: łatkę) meaning "patch." The word לביבה leviva, the Hebrew name for latke, refers in the Book of Samuel to a dumpling made from kneaded dough, as part of the story of Amnon and Tamar. Some interpreters have noted that the homonym לבב levav means "heart," and the verbal form of l-v-v occurs in the Song of Songs as well.

Latkes need not necessarily be made from potatoes. Numerous modern recipes call for the addition of ingredients such as onions and carrots.

Bluegrass Lean Bratwurst w/ Potato Pancakes

Dinner Tonight: Bluegrass Lean Bratwurst w/ Potato Pancakes

Our warmest day in quite sometime around here, 70 degrees and sunny! Started the day off with a Poached Egg on a Healthy Life Whole Grain English Muffin, and my usual cup of Bigelow Decaf Green Tea. Got some things done inside and then got the 4 wheel cart out for most of the afternoon, good to get out in beautiful weather! For dinner tonight it's Bluegrass Lean Bratwurst w/ Potato Pancakes.

I used Blue Grass Lean Bratwurst which are 100 calories and 4 carbs per Brat. To prepare them; Just add the Brats to a large skillet and add water, until the Brats are covered. Bring them to a brisk boil but then immediately turn down the heat to a very low boil, more of a simmer than an active boil. Simmer for about 15 to 20 minutes, then finish off in a pan with just the Brats and a little Extra Virgin Olive Oil to get a nice crispy char and finish. Love this method, if you can't grill them. Delicious and they cook up great! Served them all on Aunt Millie’s Reduced Calorie Hot Dog Buns and topped with Private Selection Sweet Hot Stone Ground Mustard.

For a side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Baked Bone-In Whole Chicken Breast w/ Potato Pancakes and Glazed Baby Carrots

Dinner Tonight: Baked Bone-In Whole Chicken Breast w/ Potato Pancakes and Glazed Baby Carrots

Another gorgeous morning and day here today, 53 degrees this morning. Ran some errands for Mom and back home. Had the cart out for most of the afternoon enjoying the sunshine. Dad is a lot better today, so that's good. For dinner tonight it's a Baked Bone-In Whole Chicken Breast w/ Potato Pancakes and Glazed Baby Carrots.

For the Chicken I used the PERDUE® OVEN READY Whole Seasoned Roaster Bone-In Breast. As it says “Oven Ready’, already seasoned, and little clean-up needed plus always delicious. To prepare it just preheat the oven to 400ºF. Cut open outer bag and remove Oven Ready Roaster Bone-In Breast, sealed in a cooking bag. Place in a shallow roasting pan, seasoned side up. Cut one small 1″ slit in cooking bag over the breast to vent during cooking. If cooking from Fresh: Place pan with breast (still in cooking bag) on lower shelf of oven and roast for approximately 80-90 minutes, until internal temperature of the breast reaches 180ºF. Comes out piping hot, well seasoned, and delicious! Plenty leftovers for some Chicken Fajita or Tacos for lunch tomorrow.

For one side dish I prepared Potato Pancakes. I used Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). Then I also prepared some Glazed Baby Carrots. I needed Whole Baby Carrots, Water, 2 tablespoons I Can't Believe It's Not Butter, and 2 tablespoons of Splenda Brown Sugar. To prepare them just cook the carrots in a small amount of water until tender. Drain. In a saucepan, combine the butter and brown sugar; heat until sugar dissolves. Add carrots and toss to coat. Heat through and done! Delicious Carrot Recipe! I also baked Mom and Dad a loaf of Pillsbury Rustic French Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

PERDUE® OVEN READY Whole Seasoned Roaster Bone-In Breast (3 lbs.)

Deliciously seasoned and juicy, whole bone-in chicken breast. Oven ready for convenience. Cooks perfectly in the bag for easy clean up.

INGREDIENTS
*Ingredients: Chicken, water, salt, potassium and sodium phosphates, brown sugar, dextrose, carrageenan, yeast extract, maltodextrin, natural flavor.

*Seasoning Ingredients: Dextrose, modified food starch, onion, maltodextrin, natural flavor, garlic, cottonseed oil, dried carrot, xanthan gum, dried parsley, calcium chloride, potassium chloride, carrageenan.
PRODUCT HANDLING
Keep refrigerated or frozen. Thaw in refrigerator or microwave. Cook thoroughly.
**If breast temperature is below 180ºF, return to oven and continue cooking, checking the temperature every 10 minutes until the temperature reaches 180ºF.

COOKING AND PREP
• Preheat oven to 400ºF. Cut open outer bag and remove Oven Ready Roaster Bone-In Breast, sealed in a cooking bag. Place in a shallow roasting pan, seasoned side up.
• Cut one small 1″ slit in cooking bag over the breast to vent during cooking. Note: Cooking bag will expand during cooking; allow enough room for the bag to expand without touching oven rack or walls.
• Cook from Fresh: Place pan with breast (still in cooking bag) on lower shelf of oven and roast for approximately 80-90 minutes, until internal temperature of the breast reaches 180ºF.**
• Cook from Frozen: Place pan with breast (still in cooking bag) on lower shelf of oven and roast for approximately 80-90 minutes until internal temperature of the breast reaches 180ºF.**
• Remove from oven and let stand for 10 minutes. Cut open cooking bag (use care to avoid hot steam and juices) and transfer breast to serving plate or cutting board. Remaining juices in bag can be used for a delicious seasoned gravy.

8oz. Buffalo Terres Major Filet w/ Sauteed Mushrooms, Baked Potato Pancake,...

Dinner Tonight: 8oz. Buffalo Terres Major Filet w/ Sauteed Mushrooms, Baked Potato Pancake, and Boiled Mini Carrots

Our streak of beautiful pre - fall days ended today. Only about 80 degrees but real humid and muggy. But beautiful Fall Days aren't far away! Not much going on today, the Phantom Pains finally stopped. When they're that painful it takes me a day just to recover. I wanted a good and hearty dinner tonight and what better than a good Buffalo Fillet to fill that want! I prepared a Wild Idea Buffalo 8oz. Buffalo Terres Major Fillet w/ Sauteed Mushrooms, Baked Potato Pancake, and Boiled Mini Carrots. Hearty, Healthy, and Delicious.

As I said I used the Wild Idea Buffalo 8oz. Buffalo Terres Major Fillets. Beyond any doubts one of the most tender cuts of any steak, Beef or Buffalo, you can find. I pan fried it in Canola Oil and seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I fried it about 4 minutes on one side and about 3 1/2 minutes on the other side, it gets done very quickly because it’s so lean. The Fillet came out medium rare with a beautiful char on it! I topped it with Sauteed Baby Bella Mushrooms.

For sides along with the Mushrooms, I tried a new product I came across at Kroger the other day. Golden Potato Pancakes by Old Fashioned Kitchens. I'll have to start keeping a box of these in the freezer! They turned out delicious, and easy to prepare. Just bake for 8-10 minutes per side at 400 degrees and you have yourself some mighty tasty Potato Pancakes! 70 calories and 10 carbs per pancake too! I left all the product info at the end of the post. I also boiled some Mini Carrots and a slice of healthy Life Whole Grain Bread. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Wild Idea Buffalo 8 oz. Terres Major Filet

The second most tender cut on the animal. This treasured cut is found in the chuck shoulder.
