Chili and Cheese Nachos w/ Side of Celery and Sliced Carrot Sticks
Dinner Tonight: Chili and Cheese Nachos w/ Side of Celery and Sliced Carrot Sticks
It's been an afternoon of March Maddness (College Basketball) and it's going to be an evening of the same. So what better than some Chili and Cheese Nachos to eat while watching the games this evening. Quick and easy to prepare so I won't miss any action and delicious and filling for a meal sometimes.
I used Tostito’s Whole Grain Scoops for the chips, 2 can Campbells Firehouse Chili w/ Beans, 1 small can of Sliced Black Olives, sliced Jalapenos, and Kraft 2% Pizza Cheese. Just layer in a baking dish and bake at 400 degrees until the chips are warmed and cheese is melted. I think the Campbell’s Firehouse Chili makes the Nachos. It’s a seasoned just right, thick and just enough heat to make it perfect! I also sliced up some Celery Sticks and Carrots along with some Litehouse Lite ranch Vegetable Dip. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers
Today’s Menu; Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers
Another one of those days where I didn't want a big meal but I wanted hot and hearty meal that didn't take much effort to prepare. So I went with my favorite microwave meal, Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers! They sell it packaged for the microwave, a bit smaller size than what you get at a Skyline but just right for those still watching calories and carbs. It comes with Spaghetti topped with Skyline Chili. You add the Cheese to make it a 3 Way. I used Kraft 2% Shredded Sharp Cheese and also had a side of Skyline Oyster Crackers. Overall it was just over 400 calories and 33 carbs. For dessert later a 100 Calorie Mini Bag of Jolly Time Pop Corn while watching the Survivor Finale tonight.

Cincinnati Style Chili & Cheese Coneys w/ Oyster Crackers
Today's Menu: Cincinnati Style Chili & Cheese Coneys w/ Oyster Crackers
Good news about my Dad, he should be released from rehab next Friday, barring any setbacks. So good news there! A lot less wear on all of us especially Mom as she's up there every day.
On to dinner. Tonight was Cincinnati Style Chili & Cheese Coneys w/ Oyster Crackers! We all always enjoy Coneys! If you take a look at pictures you'll see a different Hot Dog, I tried a couple of the Buffalo Hot Dogs that was delivered yesterday from Buffalo Gal. More on those later. The ingredients I need tonight are: Ball Park Smoked White Turkey Franks, Skyline Chili, Kraft 2% Shredded Sharp Cheddar, French's Yellow Mustard, Frank's Red Hot Sauce (Optional), Chopped Onions (Optional), and Healthy Life Whole Grain Hot Dog Buns. These are the ingredients that make some excellent Cheese & Chili Coneys! A lot of people add Chopped Onions but I've never been a fan of that. I do like adding Hot Sauce to the Dog though, I use Frank's Red Hot Sauce.
Yesterday my Buffalo Gal order was delivered so I prepared a couple of the Buffalo Hot Dogs so we could sample them also. I liked them, their very lean as all bison meat is.The taste reminded me more a Brat or Mett than a Hot Dog. I'm saving them for lunch tomorrow. Very quickly just to tell you how to assemble this masterpiece of the Cheese & Chili Coney World it's: Spread the Hot Dog Bun, Lay your Hot Dog in the Bun, top with Yellow Mustard, add the Chili, top it with Red Hot Sauce (Optional), add the Chopped Onions (Optional), top everything with Kraft 2% Shredded Sharp Cheddar Cheese, you're ready to eat! For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Tailgate Food Dinner
Today's Menu: Chili Dogs and Jalapeno Bottle Caps
It's Sunday and a full day of football and a big Sunday night Football game for the hometown Cincinnati Bengals! So what better than to fix a tailgate meal for dinner. I used to tailgate before all the Bengal games years ago but being in a wheelchair takes a little fun out of it so I catch all the games at home sweet home. But I can still fix some of the foods we used to prepare for the tailgate parties. For dinner I prepared Chili Dogs and Jalapeno Bottle Caps.
For the Chili Dogs I used Ball Park Smoked White Turkey Franks. These are my favorite Turkey Dogs. Low cal, low carb, and great tasting! I left the item description at the end of the post. I served it on a Healthy Life Whole Grain Bun and topped it with a splash of French's Yellow Mustard, Hormel Turkey Chili with Beans, and Kraft 2% Shredded Sharp Cheese. Ahh these are just too good!
I also prepared a batch of Jalapeno Bottle Caps. If your looking for a unique and delicious appetizer look no further! These are addicting once you start eating them. I've left the full recipe at the end of the post. Just to tell you a bit about them, you slice your Jalapenos into slices about the size of bottle caps and dip them in a beer batter and deep fry until browned. You do have to cut the seeds out of Jalapenos though. They come out flat - out delicious! A little heat but they actually come out with almost a sweet taste. You serve with a side of Bleu Cheese dressing, I used Litehouse Lite Bleu Cheese Dressing and Dip ( 80 calories and 3 carbs). Your going to love these! For dessert later a Blue Bunny Frozen Chocolate/Vanilla Swirl Yogurt Bar.

What do you do when your guy wants to cut the fat, but keep the flavor? That’s where these Ball Park possibilities come in. Each one is leaner than our regular meat or beef franks, so you can find the one that’s just right.

Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers
Today’s Menu; Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers
A really laid back day today. Just wasn't feeling up to par, allergies I believe. I really didn’t want to have to put much effort into preparing dinner so I went the very easy route of the Microwave! I went with the Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers! They now sell it packaged for the microwave, a bit smaller size than what you get at a Skyline but just right for those still watching calories and carbs. It comes with Spaghetti topped with that wonderful Skyline Chili. You add the Cheese to make it a 3 Way. I grated a block of Kraft 2% Sharp Cheese for a topping for my Chili and also had a half serving of Skyline Oyster Crackers. Overall it was just over 400 calories and 33 carbs. I left a little history of my favorite Chili Spaghetti/Coney place here in the Cincinnati area at the end of the post. For dessert later a Jello Sugar Free Dark Cherry Jello.

Skyline 3 Way tonight!
Dinner Tonight: Skyline 3 Way - Chili, Spaghetti, Cheese w/ Side of Oyster Crackers
It's been forever and a day since I've had a Skyline 3 Way, and it was worth the wait! If your from the Cincinnati area you know Chili Spaghetti is a way of life around here. The Chili Wars have been raging around here for a long time. I've always been a Skyline Chili man myself. Just something about their recipe. A little spicy with a hint of sweet and loaded with spices. The recipe remains a top secret and probably will be forever. When I was diagnosed with Diabetes2 I changed my diet and eating habits and through a lot of work I finally reversed my Diabetes2 and off all medication for it. I've been off it for a while now and had my first Domino's Pizza back in January so I thought now it's time for my first Skyline 3 Way! They now sell it packaged for the microwave, a bit smaller size than what you get at a Skyline but just right for those still watching calories and carbs. It comes with Spaghetti topped with that wonderful Skyline Chili. You add the Cheese to make it a 3 Way. I used Kraft 2% Shredded Sharp Cheese and also had a side of Skyline Oyster Crackers. Overall it was just over 400 calories and 33 carbs. For dessert later a bowl of Breyer's Carb Smart Vanilla ice Cream topped with Del Monte No Sugar Added Sliced Peaches. Below i left a little info and history about Skyline Chili.
Skyline Chili
Skyline Chili is a chain of chili restaurants based in Cincinnati, Ohio. Founded in 1949 by Greek immigrant Nicholas Lambrinides, Skyline Chili is named for the view of Cincinnati's skyline that Lambrinides could see from his first restaurant (which has since been demolished), opened in the section of town now known as Price Hill. It is also the "official chili" of many local professional sports teams and venues, including the Cincinnati Reds, Columbus Blue Jackets and the Kings Island theme park, and also sponsors the Crosstown Shootout, an annual men's college basketball rivalry game between the city's two NCAA Division I teams, Cincinnati and Xavier.
In 1912, Nicholas Lambrinides immigrated to Cincinnati from Kastoria, Greece, and brought his favorite family recipes with him. To save up the money to bring his wife to America as well, he first worked as a cook for a railroad crew and in a hotel kitchen, then opened a short-order diner. After nearly a decade, his wife was able to join him in Cincinnati and they raised five sons.
By World War II, Lambrinides was working as a chef for the original Empress Chili restaurant, where he continued to tinker with a recipe which he had been developing for years. In 1949, he and three of his sons opened their own place on Glenway Avenue, near the top of a steep hill (Price's or Price Hill). That diner was located at the intersection of what is now Quebec and Glenway Avenue. The owners named it Skyline Chili for its panoramic view of downtown Cincinnati. After some local resistance in the predominantly Roman Catholic neighborhood Skyline developed a large and devoted following – especially on Thursdays and Saturdays, which immediately preceded and proceeded meatless Fridays.
The family opened a second restaurant in 1953 and the growth of the business accelerated in the 1960s; by the end of the century, there were 110 Skyline restaurants, mostly in Ohio, but with additional establishments in other states including Kentucky, Indiana, and Florida. Lambrinides died in 1962 at the age of 82, but his sons continued to operate and expand the company. They retained the original recipe unchanged, though. According to William Lambrinides, "Dad always said, 'Don't change a thing with the recipe – don't add anything, don't take out anything, it's perfect the way it is'." As a result, Skyline's version has largely become synonymous with "Cincinnati-style chili". In 1998, the company was sold to Fleet Equity Partners, a New England investment firm, which promised not to change the recipe (which they reportedly keep locked in a safe).
Skyline Chili is unique in that it is not chili con carne, the meat dish that originated in (and is the state dish of) Texas. Instead, Cincinnati-style chili is a sauce usually used over spaghetti or hot dogs, containing a unique spice blend that gives it a very distinct taste. Officially, the recipe for Skyline Chili is a well-kept family secret among Lambrinides' surviving children. However, many Skyline patrons and Cincinnatians believe that the unique taste of Skyline Chili comes from chocolate and cinnamon, spices common in Greek cuisine's meat dishes. The general recipe is not unique to Skyline — "Cincinnati-style" chili is sold by several chili parlors in the area including Empress, Dixie, Gold Star Chili, Camp Washington, Dawson's School House of Chili, and other chili parlors.
Skyline's menu includes their signature dishes: cheese coneys (a hot dog topped with Skyline Chili, mustard, onions, and cheese), and 3-ways (spaghetti topped with Skyline Chili and cheese; 4-ways (choice of beans or onions added), and 5-ways (beans and onions both added). Additional menu items include burritos made with Skyline Chili, classic and Greek-style salads, french fries, and baked potatoes topped with Skyline Chili. To accommodate patrons who follow a low carbohydrate diet, Skyline has recently offered low-carb options such as a "coney bowl"—a cheese coney without the bun, and also now serves vegetarian options, using beans and rice in place of chili in many of its dishes.

Three Bean Turkey Chili!
Dinner Tonight: Three Bean Turkey Chili w/ Corn Bread Ears
It's a cold and rainy day outside today but it's warm and hearty here on the inside. Nothing is any easier than to fix dinner by using the crock pot. One my favorite crock pot recipes is Three Bean Turkey Chili! This is a fun recipe because you can make it as hot or as spicy as you want. Mine with all the ingredients comes out about medium hot. I could eat it a lot spicier but my parents are not fans of spicy or hot. I like my Chili hearty and thick but if you like yours a bit more thinner or with a soup you can add more water to this recipe to thin it out. I had a side of Cornbread Ears that I had baked.
Three Bean Turkey Chili
Ingredients
1 lb. Ground turkey
2 Cans (6 oz.) Hunt's Tomato Paste
1 Can (15 oz.) Chili Beans, rinsed
1 Can (15 oz.) Kidney Beans, rinsed
1 Can (15 oz.) Great Northern Beans, rinsed
1/2 Cup of Water
1 Packet McCormick Chili Mix
1 Tbs Minced Garlic
1 Tbs Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
1 Tsp. Ground cumin
1 Tbs of Cilantro Leaves
5 Dashes of Frank's Hot Sauce or to taste.
KRAFT 2% Milk Shredded Sharp Cheddar Cheese
Oyster Crackers, Reduced Fat
*COOK turkey in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining ingredients except 1 can of the tomato paste and the cheese and crackers.
*ADD to slow cooker and add in the remaining 1 can of tomato paste.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).
*Serve in bowl or mug with cheese and the oyster crackers, A Tablespoon of fat free sour cream, or serve with some home made cornbread ears.

Pizza Three Ways - Pepperoni, Turkey Sausage, and Ham & Pineapple
Dinner Tonight: Pizza Three Ways - Pepperoni, Turkey Sausage, and Ham & Pineapple
I had three of the Meijer Wheat Pita Bread's left so I used them to make three different Pizzas for everyone for dinner tonight. I made a Turkey Pepperoni, Turkey Sausage, and a Ham & Pineapple Pizza. The Pita Bread is only 80 calories and 17 carbs per serving which is half the Pita. At that the whole Pita Bread is only 160 calories. Pita Bread is a great alternative for your Pizza Crust, being lower in calories and carbs. I used Ragu Pizza Sauce, Kraft 2% Shredded Mozzarella Cheese for all 3 Pizzas. I brushed each Pita Bread with Extra Virgin Olive Oil and baked them at 385 degrees for about 9 minutes.
On the Pepperoni Pizza I used Hormel Turkey Pepperoni, Mushrooms and Sliced Black Olives.
For the Turkey Sausage Pizza I used Jennie - O Italian Turkey Sausage, Sliced Black Olives, and Mushrooms. I precooked the Turkey Italian Sausage before adding it as a topping.
For the last Pizza I used Mushrooms, Sarah Lee Thin Sliced Honey Baked Ham along with Dole Pineapple Chunks.
It was unanimous I needed to make more of the Ham & Pineapple. What a great flavor combination! The hint of Salt from the Ham and Sweetness from the Pineapple makes a delicious Pizza. For dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with some Dole Pineapple Chunks that were leftover from dinner.

Dinner Tonight: Potato Soup and Grilled Cheese
It's been a long day been fighting allergies the past two days and it's really worn me down. So for dinner I wanted something real easy to fix and something hot and hearty. The Grilled Cheese I used Kraft 2% Sliced Sharp Cheddar and Healthy Life Whole Grain Bread and grilled in I Can't Believe It's Not Butter. This stick to your ribs comfort food dinner hit the spot! Tried a new kind of Grilled Cheese for dinner, Grilled Cheese with Turkey Bacon and Thousand Island Dressing . As good as this sounds it tastes even better! The recipe for this will be at the end of the post. Along with the Grilled Cheese I had a bowl of Campbell's Chunky New England Clam Chowder with a side of Skyline Chili Oyster Crackers.
Grilled Cheese with Turkey Bacon and Thousand Island Dressing
2 Strips of Turkey Bacon
1/2 Tablespoon of I Can't Believe It's Not Butter
2 Slices of Healthy Life Whole Grain Bread
2 Slices of Kraft 2% Sliced Sharp Cheddar Cheese
1 Slice of Monterrey Jack Cheese
1 Tablespoon Thousand Island Dressing
* Cook the turkey Bacon in a skillet or grill pan until crisp. Remove and drain on a paper towel lined plate.
*Heat the Butter in a skillet over medium heat. Add one slice of Bread to the pan. Top with all the cheese and the Turkey Bacon. Take the remaining slice of Bread and spread on the Thousand Island Dressing and press it on top of the slice that's in the pan, dressing side down. Cook until the Cheese is melted and Bread is golden, about 3 - 4 minutes per side.
