Spaghetti and Meatballs

Dinner Tonight: Spaghetti and Meatballs

Well Mom and Dad are finally much better, Mom still has a cough but feels much better. I had bought some boxes of Christmas Candy last week and today delivered them. I took one box to the staff of Family Doctor, 1 box to the staff of my Oncologist, and a box to the Head Nurse at my Oncologist. She's a special person, she's helped me so much throughout the past 15 years that I have been going there. Have to go to Aldi sometime this week to get our Christmas Ham. If your looking for a good Ham you have to try the Appleton Farms Hams, it's the best Ham that our family has ever had! For dinner tonight I prepared Spaghetti and Meatballs.

I used Ronzoni Healthy Harvest Whole Wheat Spaghetti, my favorite Pasta. Cooks up great and an excellent tasting Pasta. Then for my Meatballs I used Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are good size, meaty, and have a fantastic taste and their 190 calories and 5 net carbs for 3 Meatballs. I almost always use Jennie -O when using Turkey but no store in this area sells Jennie – O Turkey Meatballs. I always prepare extra Meatballs so I can make a Meatball Sub with them. For my Pasta Sauce I used LaRosa’s Original Sauce. A local favorite and still one of the best Sauces I’ve had. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Ronzoni Healthy Harvest Spaghetti

Here’s something to absorb: One serving of RONZONI HEALTHY HARVEST pasta has over 20% of your daily recommended fiber intake – but did you know that fiber is good for you in more ways than just digestion?

People with diets high in fiber have a lower risk for weight gain, obesity, development of insulin resistance and diabetes. Fiber also prevents constipation, hemorrhoids and diverticulitis, but it also helps reduce the risk of certain chronic diseases like colon and breast cancer. Fiber may help lower LDL (bad) cholesterol and total cholesterol, therefore reducing the risk of heart disease. It can also help lower blood sugar to better manage diabetes.

Dietary fiber is the edible part of plants, primarily carbohydrates that are resistant to digestion and absorption in the small intestine. Fiber may be digested by fermentation in the large intestine. By eating high fiber foods you feel fuller, eat less, with fewer absorbed calories.

Fiber comes in two basic forms – soluble and insoluble. Soluble fiber is found in fruits, vegetables, seeds, brown rice, oats and barley. It prevents or reduces the absorption of certain substances into the bloodstream. Insoluble fiber is found mainly in whole grains and on the outside of seeds, fruits, legumes, and other foods. It is like a sponge that swells within the intestine to promote more efficient elimination and alleviate some digestive disorders.

Fiber is found only in plant foods and passes through the digestive tract without being completely broken down. Being indigestible, fiber provides no nutrients to the body, which is why for many years it was removed from processed foods like white bread. But, nutritionists have since discovered that fiber performs valuable functions precisely because it is not digested, and it is essential to good health.

Whole Wheat Spaghetti and Turkey Meatballs w/ Baked French Bread

Dinner Tonight: Whole Wheat Spaghetti and Turkey Meatballs w/ Baked French Bread

A sunny Spring day out today, but we still have a cool light breeze blowing. Took the Cart out for a spin but wasn't out too long due to the wind. The past day or so Mom and me have been gathering old bills and documents that needed shredded. This morning around the area was Shred Day. They have this every Spring where you can drop off anything you need shredded. I believe there was 4 drop areas this year from 9-1. I went over to one that was about 2 miles away around 9:00 this morning. I had no clue what I was in store for! There was literally hundreds, and I mean hundreds, of cars already in line! So from 9:02 this morning till about 10:10 I was in line to drop off 6 bags of bills and papers that needed shredded. The line actually moved quicker than what I thought it would, but what a traffic nightmare it was over there. Next time I'll go early. We have a shredder, but its old and very slow. Maybe it's time to invest in a new one. Anyway for dinner a classic comfort food, Spaghetti and Turkey Meatballs with French Bread.

You just can't go wrong with a Spaghetti and Turkey Meatballs Dinner! I used Ronzoni Healthy Harvest Whole Wheat Spaghetti and Turkey Meatballs along with Honeysuckle White Turkey Meatballs. I always use Ronzoni Healthy Harvest Pastas. The Spaghetti is 180 calories and 35 net carbs, which isn't bad for Pasta. The Honeysuckle White Turkey Meatballs are the best I’ve found, fantastic taste and their 190 calories and 6 carbs for 3 Meatballs. Topped everything with some fresh grated Parmesan Cheese and Ragu Chunky Mushroom Pasta Sauce. I normally use Bella Vita Low carb Pasta Sauce but was out of it so I went with the Ragu, which was excellent! I also baked a loaf of Pillsbury Rustic French Bread. Before baking it I brushed the top with extra Virgin Olive Oil and sprinkled Sesame Seeds across the top. It was a real Italian treat tonight! For dessert later a Jello Sugar free Double Chocolate Pudding topped with Cool Whip Free.

Turkey Meatball Hogie w/ Baked Fries

Dinner Tonight: Turkey Meatball Hogie w/ Baked Fries

No new snow but only a high of 21 today. It sure seems like a long winter this year! Sears came today to clean the fridge today, they clean and replace the coils at the bottom run, a cleaner through the water lines and ice maker, change the water filter, and any repairs if needed. All done free under the extended warranty we have on it. Comes in handy if anything breaks down on it, as it is getting to be an old fridge. For dinner tonight; Meatball Hogie w/ Baked Fries.

I used Honeysuckle White Fresh Italian Style Turkey Meatballs. I've tried many different Turkey Meatballs and these are the best tasting I've found. Their 190 calories and 5 net carbs per serving (3 Meatballs ). And three is plenty as these are good size Meatballs, three fit perfectly on Hot Dog Buns also. i put them in a small size sauce pan added a 1/2 jar of Ragu   Old World Style Traditional Pizza Sauce. Turned the burner on medium low and let the Meatballs and Sauce slow simmer.

When completely heated through I served the Meatballs on an Aunt Millie's Reduced Calorie Hot Dog Bun and topped with a thin slice of Muenster Cheese. Makes one fine Turkey Meatball Hogie! I served it with a side of Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, my favorite fries! Later tonight for dessert a Jello Sugar Free Double Chocolate Pudding with a dab of Cool Whip Free.

Spaghetti and Meatballs

Dinner Tonight: Spaghetti and Meatballs

Another cloudy day but it's in the low 50's, not bad for December! Went to Walmart and picked up a few items that were on sale for Christmas Gifts and picked up a couple of items for tonight's dinner. Tonight one of my favorites, Spaghetti and Meatballs.

I used Ronzoni Healthy Harvest Whole Wheat Spaghetti, my favorite Pasta. Then for my Meatballs I used Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are the best I’ve found, fantastic taste and their 190 calories and 5 net carbs for 3 Meatballs.

I normally use Bella Vita Low Carb Pasta Sauce but here lately I've been using LaRosa’s Original Pasta Sauce. I added my Meatballs and Sauce to a Sauce Pan and then added a small jar of Green Giant Sliced Mushrooms and simmered on low until all was heated. I topped the Spaghetti and Meatballs with some fresh grated Murray’s Parmigiano-Reggiano Cheese. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Spaghetti and Meatballs

Dinner Tonight: Spaghetti and Meatballs

A little warmer out today, in the low 50's. I'm having a new ramp entrance to our kitchen built. I had the old since 2001 when I lost my left leg. So it served it's purpose but the wood is old and cracking, so it's time for a new one. A couple of neighborhood guys that build sheds and decks are doing the work for me. Not much else happening besides, what else on Saturday, College Football! For dinner tonight its Spaghetti and Meatballs.

I used Ronzoni Healthy Harvest Whole Wheat Spaghetti. My favorite Pasta Ronzoni Healthy Harvest. Then for my Meatballs I used Honeysuckle White Turkey Meatballs. Whole Wheat Spaghetti and Turkey Meatballs w/ Baked Cheese Toast

Dinner Tonight: Whole Wheat Spaghetti and Turkey Meatballs w/ Baked Cheese Toast

Our run of beautiful days goes on but I hear rain is on it's way. Locked myself out of the house today, so
that's always fun! Finally was able to get a neighbor go through a side door that I can't get to and unlock the back door. Hopefully one day I'll be able to build a deck and ramps so I can get in and out of all the doors, life in a wheelchair! For dinner always a classic comfort food, Spaghetti and Turkey Meatballs w/ Cheese Toast

It had been a while since I had Spaghetti and Turkey Meatballs and it sounded good. I used Ronzoni Healthy Harvest Whole Wheat Spaghetti  along with Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are the best I've found, fantastic taste and their 190 calories and 6 carbs for 3 Meatballs. Topped everything with Kraft 2% Shredded Mozzarella Cheese and Bella Vita Low Carb Pasta Sauce (Meat Flavored). I added a few sliced Baby Bella Mushrooms to the Sauce. Along with the great taste the Sauce is only 70 Calories and 6 Carbs! At the end of the post I left the product description for the Ronzoni Spaghetti, Honeysuckle White Turkey Meatballs, and the Bella Vita Pasta Sauce.

I also had healthy Life Whole Grain Bread that I buttered with I Can’t Believe It’s Not Butter and then sprinkled with Kraft 2% Shredded Mozzarella Cheese . Then I baked it at 350 degrees for 7 minutes. Makes an quick and easy way for a side of Bread for Pasta Dishes. For dessert later a Jello Sugar Free Double Chocolate Pudding.

Kitchen Hints of the Day!

When eating pasta, try to balance the meal with some protein to allow for balanced blood sugar levels. Maybe that's why Grandma always made spaghetti and meatballs.

Hint 2 of the Day!

If you insert a small piece of cracked ice into the center of your meatballs before browning them, they will be moister. But be careful you'll need to experiment to make sure the centers don't remain raw. Cut open a meatball and check the doneness to determine the proper browning time.

Tofu Spaghetti and Turkey Meatballs

Dinner Tonight: Tofu Spaghetti and Turkey Meatballs

Tofu Spaghetti! This is a great Pasta substitute. I used House Tofu Shirataki Spaghetti Shaped.  I rinsed and heated the Tofu by the instructions, which I left at the bottom of the post along with description and web links. Plus it's only 20 calories and 3 carbs per serving! It comes packaged 2 servings per bag and with the low calories and low carbs you can have both servings for only 40 calories and 6 carbs. That's a huge difference between whole wheat pasta and the tofu calorie and carb count. You'll have to give this a try I think you'll be surprised. I left the Tofu info and web site link at the bottom of the post.

For my sauce I used my favorite pasta Sauce, Bella Vita Low Carb Meat Flavored Pasta Sauce. If you watching the calories and carbs this sauce is the Bomb! Comes in Roasted Garlic and Meat Flavored and is only 70 calories and 6 carbs! The Meatballs were Honey Suckle White Turkey Meatballs. Love these Meatballs great flavor and they make a delicious Meatball Sub! They are 190 calories and 6 carbs per serving (3 Meatballs). I seasoned it with McCormick Grinder Italian Seasoning and topped everything with a sprinkle of Kraft Shredded Parm and Kraft 2% Shredded Sharp Cheddar. 330 Calories and 16 carbs for a Spaghetti Dinner, not including your bread. For dessert later a Yoplait Chocolate/Banana Smoothie.

House Tofu Shirataki.
Tofu Shirataki is a great pasta alternative made from blending the root of the Konnyaku – a member of the yam family and tofu.
It is a healthy, uniquely textured noodle – that pleases people of all ages!

VARIETY OF SHAPES:
Macaroni New!
Spaghetti
Fettuccine
Angel-Hair

*The Macaroni shape is available in only selected retailers.

LOW CARB – only 3g of carbs per serving
LOW CALORIE – 20 calories per 4 oz serving
FIBER – 2g per serving
NO CHOLESTEROL
NO SUGAR
GLUTEN-FREE, DAIRY-FREE
CONTAINS 10% CALCIUM
VEGAN
KOSHER CERTIFIED

*TOFU SHIRATAKI CANNOT BE FROZEN

Directions:
Step 1: Empty your noodles into a strainer, and rinse them with water to get rid of the liquid they were packed in.

Step 2: Dry them as thoroughly as possible by blotting with paper towels — remove as much moisture as possible. We cannot stress enough how important this is.

Step 3: Cut them up a bit; they can be VERY long. (Fun fact: We once found a noodle that was six feet long!) Kitchen shears (scissors you use only for food) make this super-easy.

Step 4: Heat your noodles for a minute or two in the microwave or in a skillet on the stove. (If microwaving, you may want to blot for liquid one more time before adding sauce.)

Tofu Spaghetti and Turkey Meatballs

Today's Menu: Tofu Spaghetti and Turkey Meatballs

Tofu Spaghetti! Years ago I would have said "No Way" but now as I'm older and trying to eat more healthy this is great! I used House Food Tofu Shirataki Spaghetti Shaped Tofu. I made Mac & Cheese with Elbow Macaroni shaped Tofu a couple of weeks ago so I wanted to give Spaghetti and Meatballs a try. I heated the Tofu by the instructions, which I left at the bottom of the post along with description and web links.

I seasoned it with McCormick Grinder Italian Seasoning and topped everything with a sprinkle of Kraft Shredded Parm and Kraft 2% Shredded Sharp Cheddar. The nice part about this dinner, besides being delicious, is you can have a second helping and still have a low calorie and carb dinner. The one bag of Tofu makes more than enough for two people. For dessert/snack later a 100 Calorie Bag of Jolly Time Mini Bag of Pop Corn.

Turkey Meatball Mini Sub

Today's Menu: Turkey Meatball Mimi Sub Sandwich

Well I started out on having Spaghetti and Turkey Meatballs but by the time it was dinner I just wasn't that hungry but I had already made my Turkey Meatballs and Sauce. So I went ahead and used three of the Meatballs along with 1 1/2 tablespoons of the Sauce and put them on a Healthy Life Whole Grain Hot Dog Bun, and I had my Mini Sub! I used Honeysuckle White Turkey Meatballs, I think the best tasting pre-made Meatballs there are, Bella Vita Low Carb Pasta Sauce, fresh grated Smoked Dutch Gouda Cheese, and Healthy Life Whole Grain Buns for my ingredients. Lite, Healthy, and delicious! I could have used a 2% Mozzarella Cheese but i just can't pass up a chance to use that Gouda! No sides needed with this. For dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with Del Monte No Sugar Added Sliced Peaches.

I had Spaghetti tonight and used Ronzoni Healthy Harvest Whole Wheat Spaghetti. For the Meatballs I used Honeysuckle White Turkey Meatballs with Bella Vita Low Carb Pasta Sauce (Meat Flavored).
