Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers

Dinner Tonight: Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers

To start my day off I Scrambled a couple of Eggs, topped it with Sargento Reduced Fat Shredded Sharp Cheddar Cheese, toasted a Healthy Life Whole Grain English Muffin, and had my morning cup
of Decaf Green Tea. Beautiful outside, sunny and 81 degrees but very windy. Long day today. I had to take Mom to 3 different places to get needed paper work for my Dad's Medicaid started. It's a lot of work to get it approved. Then about 1:00 this afternoon the center where Dad is at called and asked if we could come over. He was yelling and ranting out of control. We finally got him settled down. Really didn't feel like cooking after all that so I prepared some  Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers.

I wanted a hot good meal without a lot of effort, plus I’m always in the mood for some Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers. Nothing says comfort food more than a Skyline 3 Way! As always I used my favorite, the Skyline 3 Way – Chili, Spaghetti. It comes packaged for the microwave, a bit smaller size than what you get at a Skyline but just right for those still watching calories and carbs. It comes with Spaghetti topped with Skyline Chili. To prepare it, it couldn’t be easier!

It now comes in a microwavable pouch instead of microwavable bowl. Easily prepared – Just shake the pouch. Then tear the corner off to vent while cooking. Place the pouch standing upright in the microwave. Then microwave on high for 2 1/2 minutes. Let stand for 1 minute and it's ready!

Poured the Chili into a bowl, added a couple of shakes of Fran's Hot Sauce, topped it with Sargento Reduced Fa Shredded Sharp Cheddar  Cheese. I also had a side of Skyline Oyster Crackers. And if you’re having Oyster Crackers, then Frank’s Red Hot Sauce is a must! Just add a few drops on top of the Crackers, it’s the local way to have your Oyster Crackers.I gave Mom 1//2 a bowl of the Chili Spaghetti. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn and a Diet Peach Snapple to drink.

Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers

Dinner Tonight: Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. I wasn't hungry at all, just tired. I struggled all night with the Phantom Pains! It was a real rough night as the pain was very bad. Just wish they could come up with a cure for Phantom Pains! Dad is doing good and feeling a lot better. But x-rays show he now has water on both lungs, so that will have to be cleared up also. Hopefully he'll be able to come straight home without rehab. The heat and humidity is so bad, worse than it's been in a long time. It's so humid! Good day to stay in, which is what I did and caught up on some needed sleep. Wanted an easy prepared meal so tonight its a Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers.

It was god to have a day with no rain but that ended today with rain moving back in this afternoon. Before the rains moved in I washed down the outdoor furniture. Then it was to the shed to do some Spring Cleaning. I gave the neighbors a lot of Dad's old tools he'll never use again. Tossed a lot of junk out. Afterwards I made some of the Bear Creek Potato Soup. I'm going to take some to Dad for his Dinner tomorrow, hopefully he'll get to come home soon. Sweet Italian Turkey Sausage w/ Baked Shoestring Fries

Dinner Tonight: Sweet Italian Turkey Sausage w/ Baked Shoestring Fries

Wow, I was up at 6:00 this morning and rolled out to fetch the morning papers and it was like walking into a steam bath! Today will be in the 90's and extremely humid. So for Breakfast I prepared a Poached Egg, fried 3 slices of Jennie - O Turkey Bacon, toasted a slice of Healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. If you live around here in West Chester and you are looking for a Pest Control I highly recommend Affordable Pest Control in Fairfield, Ohio. We had a problem with Carpenter Ants and they wiped them out for us, great job guys. They did a follow up spray for us this afternoon. So the humidity kept me indoors today. I don't mind the heat but can't deal with the humidity. For dinner tonight I prepared a Sweet Italian Turkey Sausage w/ Baked Shoestring Fries.

I used the healthy and delicious Jennie O Lean Sweet Italian Turkey Sausages. I had it in the freezer so I let it thaw overnight in the fridge. I pan fried it, using Pam w/ Olive Oil Cooking Spray and no oil needed. Heated the pan on medium and cooked a total of about 17 minutes, turning the Sausages occasionally. They fry up plump and brown, as always Jennie – O Products always have that fresh taste to them. The Sausages have 160 calories and 0 carbs per Sausage. I served it on a Aunt Millie’s Reduced Calorie Whole Grain Bun and topped with French’s Spicy Brown Mustard. Love these, thank you Jennie – O!

Then for a side I baked some Alexia Organic Yukon Select Fries. I normally have Ore Ida Crinkle Fries but I wanted to change it up a bit so I’m going with the Alexia Organic Yukon Select Fries again. The more I have these the more I'm liking them! Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 18 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For dessert later a Del Monte No Sugar Added Peach Chunk Cup.

Tonight it’s Izzy’s!

Dinner Tonight: Izzy’s Lean Corned Beef Sandwich w/ Pringle’s Fat-Free Chips

I wanted to start off by wishing my Dad a Happy Birthday, he's 94 today! Wow, quite an
Rosemary, Sage, Thyme
achievement! Started my day off with a bowl of Kroger Brand Bran Flakes, this has become one of my favorite cereals. Not a whole lot going on outside today again, humidity is terrible out. So inside I replanted some Herb Plants into a pot display I purchased. Plants are doing good this year. Did a few chores in the house and ran some computer programs, that was about it today. Mom and Dad went out to eat with some friends so I was cooking for 1 tonight. I opted to eat out myself tonight, Izzy's. Tonight it's Izzy’s Lean Corned Beef Sandwich w/ Pringle’s Fat-Free Chips

Izzy’s is home of some the best Corned Beef there is! All their Sandwiches are delicious and they
own the market on the Corned Beef. I always get their Izzy’s Lean Corned Beef Sandwich. The “Lean” version of the Corned Beef it makes it healthier than most also. The sandwich contains 170 calories and 16 carbs per serving (1/2 Sandwich) and 340 calories and 32 carbs for a Full Sandwich. I had the Full Sandwich along with a side of small Pasta Salad and Pringle’s Fat Free Chips. To go along with it all I had an Ice-Cold Diet Dr. Pepper, 0 calories and 0 carbs. Love putting a small bottle of Dr. Pepper in the freezer for a bit, just enough to get a layer of ice forming on it! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.
