For Breakfast this morning I had a Breakfast sandwich. I toasted a couple of slices of Healthy Life
Whole Grain Bread. Then, Mom had a package of Bob Evans Pork Sausage Patties and I fried one the Patties. Been a while since I had one of these. They fry up easy and make one good Sandwich. I also had my morning cup of Bigelow Green Tea. Mom went to Church so I had to stay home to keep an eye out on Dad. So after Breakfast I cleaned the house and did a load of laundry for Mom. Had everything done by noon so I had Lunch, I had Smoked Salmon and Ritz Whgole Wheat Crackers. For the rest of the afternoon, watching NFL Football. So for Dinner tonight I prepared Roasted Garlic and Cracked Black Pepper Pork Tenderloin w/ Roasted Cauliflower and Cut Green Beans








Hard to beat a good Pork Roast on a Sunday Afternoon! I'm using a Smithfield - Roasted Garlic and Cracked Black Pepper Fresh Pork Tenderloin. Kroger had them on sale so I picked one up. It comes already seasoned, Roasted Garlic and Cracked Black Pepper. I just added a bit of McCormick Grinder Sea Salt.






To prepare it I preheated the oven at 425 degrees. I then took a small roast pan and sprayed it with
Pam Cooking Spray and 1/2 tablespoon of Extra Light Olive Oil. As I said the Roast is already seasoned with Roasted Garlic and Cracked Black Pepper, I lightly Salted it with some McCormick Grinder Sea Salt. I then baked until I had an internal temperature of 150 degrees, a total of about 31 minutes. Very impressed with the Smithfield Roast. Seasoned perfectly, excellent taste, and very moist!






To go with my Pork Roast, I Sauteed some Baby Bella Mushrooms. Seasoned them with Ground Thyme, Ground Rosemary, Ground Roasted Cumin, and McCormick Grinder Sea Salt. I love having Mushrooms with about any dish. Easily prepared and low calorie and low carb side dish.










I also prepared some Roasted Cauliflower. I used a package of Kroger Packaged Cauliflower Florets.
So I made some Buffalo Cauliflower with them! To prepare them I needed; 1 Package of Cauliflower Florets, 1 tablespoon of extra virgin olive oil, sea salt and pepper to taste, 1/4 cup or more) hot sauce, and blue cheese or ranch dressing for dipping. Then to make it is really easy I just tossed the cauliflower florets in the oil, seasoned with salt and pepper, arranged in a single layer on a baking sheet and roasted in a preheated 400 degree oven until lightly golden brown, about 20-30 minutes. Then, the good part, toss the cauliflower in the hot sauce! I served it with Litehouse Lite Bleu Cheese Dressing/Dip for dipping. It’s one delicious side dish! I also heated up a can of Del Monte Low Sodium Cut Green Beans, I could have Beans every meal, love them! For Dessert later tonight I'll be having a bowl of Dole Sliced Peaches.

Buffalo Roasted Cauliflower

ingredients

1 head cauliflower, cut into florets
1 tablespoon oil
salt and pepper to taste
1/4 cup hot sauce
blue cheese or ranch dressing for dipping (optional)

directions

Toss the cauliflower florets in the oil, salt and pepper, arrange in a single layer on a baking sheet and roast in a preheated 400F oven until lightly golden brown, about 20-30 minutes.

Toss cauliflower in the hot sauce and enjoy warm with blue cheese or ranch dressing for dipping and celery sticks on the side.
