Diabetic Dish of the Week - Roasted Chickpeas

This week's Diabetic Dish of the Week is Roasted Chickpeas. When the snack attack hits have these healthy Roasted Chickpeas on hand! Enjoy and Eat Healthy!

Roasted Chickpeas

Ingredients
1 pound dried chickpeas (garbanzo beans)
1 teaspoon dried parsley
1 teaspoon dried thyme
sea salt, to taste
chili powder, to taste
2 tablespoons light olive oil

Directions
1 - Place chickpeas into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain chickpeas and pat dry.
2 - Preheat oven to 400 degrees F (200 degrees C).
3 - Toss chickpeas, olive oil, parsley, thyme, sea salt, and chili powder together in a bowl until evenly coated; spread in single layer on a baking sheet.
4 - Roast in the preheated oven, stirring every 8 minutes, until chickpeas are browned and crisp, about 40 minutes. Toss chickpeas with more sea salt, if needed, and cool completely.
