Buffalo Tenderloin-Tips w/ Noodles and Whole Baby Carrots

Dinner Tonight: Buffalo Tenderloin-Tips w/ Noodles and Whole Baby Carrots







For Breakfast I made some French Toast and Turkey Sausage Links. For the French Toast I used
Healthy Life Whole Grain Bread, Egg Beater's, Ground Nutmeg, and Ground Cinnamon. I topped it with I Can't Believe It's Not Butter and Maple Grove Farms Sugar Free Maple Syrup. Then I also fried up some Jennie - O Turkey Breakfast Sausage Links. Also had that every morning cup of Bigelow Decaf Green Tea. After Breakfast did some light house cleaning. On outside it's a beautiful Morning and Day out there today! Sunny, 79 degrees for a high, and NO Humidity! Swept off the wooden deck and driveway and done with chores of the day. Got the cart out along with my fishing pole, doing some fishing today! Went on down to the neighborhood lake and parked the cart and did some fishing. So relaxing and beautiful out. Caught about 5 Blue Gills and 1 small Bass, returned all of the them back in the lake. Love days like this! For Dinner tonight I prepared Buffalo Tenderloin-Tips w/ Noodles and Whole Baby Carrots.



I used the Wild Idea Buffalo Tenderloin-Tips. For the Buffalo Tenderloin-Tips I started by preheating
the oven on 400 degrees. Then in a small bowl I mixed the following Spices together; McCormick Grinder Sea Salt and Peppercorn Medley, Dried Thyme, Dried Basil, Roasted Cumin, and a sprinkle of McCormick Dried Oregano. Amounts are to taste. Next I got Cast Iron Skillet out. Sprayed it with Pam Cooking Spray and added 1 tablespoon of Extra Virgin Olive Oil and heated it on medium low heat on the stove.







I then put a light coat of Extra Virgin Oil on all sides of the Medallion. Then Seasoned the Buffalo

with the Spice Mixture, making sure to season all sides. Added the Medallions to the skillet and
cooked it for 1 minutes a side, just started to brown. Then from the stove to the oven, love Cast Iron Skillet Cooking! I then baked them for 6 minutes to a medium rare, to an internal temperature of 130 - 135° F when taken out of oven. Trust your meat thermometer and your eyes! Always remember that Buffalo cooks a lot quicker than Beef, so its low and slow when cooking. After removing the Buffalo from the oven I let it rest 5 minutes before serving. As far as I'm concerned Beef can't compare to the taste of Buffalo, or Bison! The Spices worked great with natural sweet taste of the Wild Idea Buffalo, and medium-rare is the perfect temperature. The Medallions are so flavorful and tender. I'll have to make sure to order more here in the near future.



To go with the Tips I prepared some Ronzoni Smart Taste Extra Wide Noodles. First time I've used
these. They are 180 calories, 0.5g total fat, 39 carbs, and 5g of fiber per serving. Nice source of Fiber. To prepare it; Bring 2 qts. water to a rapid boil. To add flavor and reduce stickiness, add salt. Add the pasta and stir; return to rapid boil. Cook uncovered, stirring occasionally. Drain well. i boiled it for 7 minutes, till tender. Ronzoni has a winner here, cooks up great and very tender.










Then I also heated up a can of Kroger Brand Whole Baby Carrots. These are so much easier to

prepare than boiling fresh Baby Carrots, and they taste just as fresh and good. Also had a slice of buttered Healthy Life Whole Grain Bread. For dessert later a bowl of Del Monte Sliced Peaches.
