Mini Flatbread Pepperoni and Sausage Pizza

Dinner Tonight: Mini Flatbread Pepperoni and Sausage Pizza

For Breakfast on this 1st day of April I had a Poached Egg that I served on a Healthy Life Whole
Grain English Muffin. They moved Dad from the hospital back over to the Rehab Center he was just at last week. They are going to try more therapy and if that doesn't work he will have to stay in an assisted living center, hope it doesn't come to that. So after Breakfast I went to Kroger and picked up a few snacks that Dad likes. Then after Lunch I went on over to see Dad. Back home took it easy and watched a few shows that I had recorded. For my dinner tonight I’m preparing a Mini Flatbread Pepperoni and Sausage Pizza.

While at Jungle Jim’s Market the other day I picked up a package of Kontos PreGrilled Mini Oval Flatbread. I had used these once before and really liked the way they came out. It’s pregrilled so it’s ready to eat or reheat. What I liked about it was they were the perfect size to make mini Pizzas with, plus they’re only 140 calories and 24 net carbs for a whole one (one serving)!

To make the Pizzas I’ll need; the Kontos PreGrilled Mini Oval Flatbread, Hormel Turkey Pepperoni, Johnsonville Turkey Sausage Links, Sliced Black and Green Olives, Ragu Pizza Sauce, Sargento Reduced Fat Shredded Mozzarella Cheese.

To prepare it I started by preheating the oven on 400 degrees. The Johnsonville Turkey Sausage is
precooked so all I had to do was heat up in a small skillet for 5 minutes on medium heat. Removed from the heat and sliced the Links up into small bite pieces. I then got a small baking sheet and lined it with foil and sprayed it with Pam Cooking Spray. I then took one of the Flatbreads and brushed a very light coat of Extra Virgin Olive Oil on the top of them.

Next I made my Pizza! I started by spreading 2 tablespoons of the Ragu Pizza Sauce across the top of the Flatbread. Then added the sliced Olives, Turkey sausage, Mozzarella Cheese, and topped it all with Turkey Pepperoni. Then I made a second one the same way. Laid the Flatbreads on the baking sheet and put it in the oven. I baked them for about 8 minutes, until the Cheese was melted and all items heated through.

The Flatbread provides a perfect Crust (Pizza Pie). It browned up great and had a fantastic flavor with a nice crunch! I’ll have to try different toppings, like Ham or Chicken, using the Kontos PreGrilled Mini Oval Flatbread. I’ve found a good Pizza Pie Crust and it's only 140 calories per serving! For dessert later a Weight Watcher's Cookies and Cream Ice Cream Bar.

Turkey Sausage, Turkey Pepperoni 7″ Whole Grain Crust Pizza

Dinner Tonight: Turkey Sausage, Turkey Pepperoni 7″ Whole Grain Crust Pizza

For Breakfast this morning I reheated the leftover Pork Chop from last night. Then I prepared some
Simply Potatoes Shredded Hashbrowns, toasted 2 slices of Healthy Life Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. Went out to get the Sunday Papers and its a cold one out there this morning, 18 degrees! For the day it was sunny and 39 degrees. After I ate I went to McDonald's and picked up Breakfast for Mom. Finished up some laundry Mom had started before she went to Church. After Lunch I headed over to see Dad at Rehab. He's wanting to come home, he's homesick and bored. It shouldn't be too much longer before they'll release him. Hopefully he can stay home once he gets here. Back home watched some College Basketball and relaxed. For Dinner tonight I prepared a Turkey Sausage, Turkey Pepperoni 7″ Whole Grain Crust Pizza

To make the Pizza I used a Mama Mary’s 7″ Whole Grain Pizza Crust. For toppings I used Jennie – O Ground Mild Breakfast Sausage, Hormel Turkey Pepperoni, Mushrooms, Sliced Green and Black Olives, Sargento Shredded Mozzarella Cheese, and Ragu Homestyle Pizza Sauce.

To prepare my Pizza; I first preheated my oven to 450 degrees. I then got a medium size skillet,
sprayed it with Pam Cooking Spray and heated it on medium heat. Next I got the roll of Jennie – O Turkey Sausage out and sliced about 1/4 of the roll off. I put the remainder in a plastic bag and put it back in the fridge to use later for a meal. I crumbled the Sausage and fried until done. Removed it from the skillet onto a paper towel lined plate and set aside.

I removed the pizza crust from package. Lightly brushed crust with Extra Light Olive Oil. I then
gathered my toppings up. The Black Olives are already sliced but the Green Olives come whole and I had to slice them. I then topped the crust with with; the Ragu Pizza Sauce, the Sargento Mozzarella Cheese, Hormel Turkey Pepperoni, Jennie – O Turkey Sausage, and finally the Black and Green Olives. The order of layers is all up to you.

Next I lowered the oven temperature to 425 degrees F. Then baked on oven Pizza Pan (middle position) for about 10 minutes. You can turn the oven on broil if you want to get the crust crisper if you want. I stopped at 10 minutes and it came out perfect! The Crust baked up with a nice crunch to it and all the ingredients worked great together. I love adding these Pizza Nights! For Dessert tonight a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Turkey Pepperoni and Turkey Sausage Pita Bread Pizza

Dinner Tonight: Turkey Pepperoni and Turkey Sausage Pita Bread Pizza

For Breakfast I broke out the Goetta again! I prepared some Glier's Turkey Goetta and prepared some
Simply Potatoes Hash Browns. I just love the combination of Turkey Goetta and Hash Browns. I also had my usual cup of Bigelow Decaf Green Tea. The rain showers have returned after drying out for a couple of days. High in the mid 80's and humid, as usual. Ran an errand for Mom and then I stopped by Walmart Vision Center to have my glasses adjusted. Then went to the hospital to see a friend of mine that had surgery yesterday, she's doing good and should be home soon! Back home and puttered around the house doing a few things to finish out the day. For Dinner tonight I prepared a Turkey Pepperoni and Turkey Sausage Pita Bread Pizzas.

I used Joseph’s Flax/Oat Bran and Stone Ground Whole Wheat Pita Bread for my Pizza Pie instead of
regular Dough Pizza Pie. I love using Joseph’s Pita Breads, always fresh and they’re only 60 calories, 1.5 grams fat, and 5 net carbs! A huge saving of calories and carbs over using normal Pizza Crust, without sacrificing taste. I preheated the oven on 400 degrees. To bake the Pita Pizzas I used a large Cookie Sheet. To prepare them I brushed them with a light coat of Extra Virgin Olive Oil, the coating of Oil browns it up just right. I then baked it for 5 minutes, just to brown it up a bit. Removed them from the oven and made my Pizzas.

For my toppings I used Ragu Homestyle Pizza Sauce, Jennie – O Lean Turkey Breakfast Sausage, Hormel Turkey Pepperoni, Sliced Black and Green Olives, sliced Baby Bella Mushrooms, 2 Anchovies Fillets, and Sargento Reduced Fat Shredded Mozzarella Cheese.

It took less than 10 minutes in the oven until everything heated up and the Cheese melted.Pizza is served! Everything combined makes one delicious Pizza! And the good thing is you can load these Pita Bread Pizzas up with toppings and still not have a lot of calories and carbs, my type of Pizza! Bakes up and tastes like a Thin-Crust Pizza! For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Mini Flatbread Pepperoni and Sausage Pizza

Dinner Tonight: Mini Flatbread Pepperoni and Sausage Pizza

I made one delicious Breakfast this morning! Mom and Dad even got up a bit early and had some. I used Simply Potatoes Diced Steakhouse Potatoes and a package of Meijer Diced Ham. Using a Cast Iron Skillet I started by frying the  Diced Potatoes. After about 9 minutes I then added the Diced Ham and stirred. In about 14 minutes it was ready! As the Potato/Ham was finishing I grabbed a small skillet and fried one Egg, Sunnyside Up. To serve made a bed of Potatoes and Ham and topped that with the Sunnyside Egg. Broke the Egg open and it just pulled the entire meal together! One hearty Breakfast this morning.

After Breakfast and the morning workout I went to Costco. Mom needed a few Pharmacy items and I
need a few things myself. While there I picked up several cases of canned vegetables and fruits to give to our Church, for the Free Meal Dinners they provide to people and family in need. Then I picked up a couple of boxes of Snack Varieties that I take to a local Cancer Treatment Center, for patients under going out patient Cancer Treatment. A snack tastes good while you're getting your treatment. I know, I was there myself! Then I also came across some items for my dinner the next few nights, which I'll start using tomorrow. Some Cilantro and Lime Seasoned Shrimp, Tuscan Seasoned Sliced Pork Tenderloin, and Walleye Fillets. Good day at Costco! Anyway for my dinner tonight I'm preparing a Mini Flatbread Pepperoni and Sausage Pizza.

While at Jungle Jim's Market yesterday I picked up a package of Kontos PreGrilled Mini Oval Flatbread. Never had tried it or heard of it until I came across it in the Bakery Department. It's pregrilled so it's ready to eat or reheat. What I liked about it was they were the perfect size to make mini Pizzas with, plus they're only 140 calories and 24 net carbs for a whole one (one serving)!

Chicken Parmesan Sandwich w/ Baked Potato

Dinner Tonight: Chicken Parmesan Sandwich w/ Baked Potato

I had an early morning Doctor's appointment so I had to skip Breakfast. I was a bit worried about a
health problem but it was nothing major, I'm on a prescription for 60 days. I always get a bit nervous when a health problem pops up, especially with my history of Melanoma Cancer. Not a bad day out today, high in the 30's and sunny. They say in the 50's and 60's by Saturday! For dinner tonight I prepared a Chicken Parmesan Sandwich w/ Baked Potato.

I came across this recipe idea in the latest issue of Taste of Home, Weeknight Chicken Parmesan
Sandwiches. Sounded good so I made my version of it. I'll need; Perdue Perfect Portions Italian Style Boneless and Skinless Chicken Breasts, 1/2 cup Progresso Italian Style Bread Crumbs, 11/2 cup Ragu Pizza Sauce, 1 slice Boar's Head Mozzarella Cheese, Kraft Reduced Fat Grated Parmesan Cheese, and Aunt Millie’s Deli Style Whole Grain Mini Sub Buns. I only made 2 of these, 1 for myself and 1 for Mom or Dad after they seen how good it looks!

I had the Chicken Breast in the freezer. I laid 2 of the Breasts in the fridge overnight to thaw. To
prepare it I preheated the oven to 400°. Placed the bread crumbs in a large plastic container. Add the chicken, a piece and rolled the breast to coat. Transfer to a small baking pan that I lined with foil and sprayed with Pam Cooking Spray.

Baked, uncovered, 15-20 minutes or until no longer pink. Spooned the pasta sauce over the chicken. Sprinkled with cheeses. Baked 2-3 minutes longer or until cheese melted. Serve on the mini sub buns. This makes one delicious Chicken Sandwich! The Chicken, Sauce, Cheese all combine just right. I left the original recipe and web link at the end of the post.

For a side dish I had some large Russet Potatoes. I baked one of them and cut in half, seasoned it with McCormick Grinder Sea Salt and Peppercorn Medley. Topped it with I Can't Believe It's Not Butter. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Weeknight Chicken Parmesan Sandwiches

Ingredients
4 boneless skinless chicken breast halves (6 ounces each)
1 cup garlic bread crumbs
1 cup garlic and herb pasta sauce
1 cup (4 ounces) shredded part-skim mozzarella cheese
Grated Parmesan cheese, optional
4 kaiser rolls, split

Directions
Preheat oven to 400°. Pound chicken with a meat mallet to 1/2-in. thickness. Place bread crumbs in a large resealable plastic bag. Add chicken, a few pieces at a time; close bag and shake to coat. Transfer to a greased 15x10x1-in. baking pan.
Bake, uncovered, 15-20 minutes or until no longer pink. Spoon pasta sauce over chicken. If desired, sprinkle with cheeses. Bake 2-3 minutes longer or until cheese is melted. Serve on rolls. Yield: 4 servings.

Deep Dish Pizza Casserole

Dinner Tonight: Deep Dish Pizza Casserole

It was a beautiful Summer Morning here in West Chester. But watching the early morning news it
was a bad day out on the inter-states. 3 major wrecks had 2 different interstates shutdown this morning, slow down people and take your time! After a light Breakfast I ventured out to Meijer, went for just a few items and ended up with a cart full! Luckily I didn't need gas, gas prices shot up over $3 a gallon overnight! Back home finished up a couple of loads of laundry for Mom and did some cleaning around the house. With everything done got the cart out for a while to enjoy the day. For dinner tonight I prepared a new recipe, Deep Dish Pizza Casserole.

I've got a winning Pizza recipe to pass along tonight! I came across this recipe on a Pillsbury Recipe Email and couldn't wait to give it a try. As I said earlier I went to Meijer this morning and picked up a couple of ingredients for tonight's meal. So to make this I'll need the following; 1 (13 ounce) Pillsbury Refrigerated Pizza Crust, 1 1/2 cups pizza sauce (Ragu Pizza Sauce), 2 1/2 cups of Sargento Shredded Mozzarella Cheese, 1/3 cup Kraft reduced Fat Grated Parmesan Cheese, Sliced Black and Green Olives, 12 whole Pepperoni (Hormel Turkey Pepperoni), and 1/2 pound cooked Jennie - O Italian Lean Seasoned Ground Turkey. I added sliced Olives to the recipe and substituted Jennie - O Lean Italian Seasoned Ground Turkey for the Spicy Italian Sausage. The Ground Turkey I'm using was one of the packages sent to me from Jennie - O yesterday. The Original Recipe along with the web link is at the end of the post.

To prepare the dish I preheated the oven to 425°F. Greased a 9x13 inch baking dish with Pam
Cooking Spray w/ Olive Oil. I unrolled the Pillsbury Pizza Dough, and pressed it into the bottom and halfway up sides of prepared baking dish. Then spread the dough with the Ragu  Pizza Sauce, and then sprinkle the cooked Jennie - O Lean Italian Seasoned Ground Turkey  over the top. Cover the Pizza with Cheese and then top with Turkey Pepperoni. Sprinkle the Parmesan over top. Bake for 15-20 minutes or until crust is golden brown and the Cheese is melted. Remove from the oven and sprinkle with more Parmesan. And we have a Deep Dish Pizza Casserole. I'll start off by saying this is one of those Keeper Recipes! The crust came out a perfect golden brown. And all the toppings combined to make it one delicious Pizza. Mom and Dad both said it was one of the best Pizzas they had ever had, so it's Parent Approved! For dessert later a bowl of Del Monte Sliced Peaches.

French Pizza Bread

I had bought a lot of French Bread for Mom the other day. As they were leaving for Church this morning she asked me if I would fix her and Dad some baked French bread Pizza with it for when they return from Church for lunch. Well I don't mind cooking, especially when it's for Ma and Pa!

To prepare it I'll need the Loaf of French Bread, Ragu Pizza Sauce, Hormel Turkey Pepperoni, Sliced Black Olives, McCormick Italian Seasoning, Extra Virgin Olive Oil, Sargento Reduced Fat Shredded Mozzarella Cheese.

Preheated the oven to 400 degrees. To start I sliced the French Bread in half, then cut the halves in half, and then sliced those halves in half length wise. I then lightly brushed the pieces with Extra Virgin Olive Oil across the tops. Spread them out on a foil lined cookie sheet and put them in the oven for 4 minutes. Removed from the oven and topped them with the Ragu Pizza Sauce, Italian Seasoning, Hormel Turkey Pepperoni, Sliced Black Olives, Cheese, and seasoned agin with the Italian Seasoning. Put them back in the oven until the Cheese was melting and it was heated through. I was just taking them out of the oven when Mom and Dad were coming in the door, good timing! Turned out fantastic, I'll have to keep these in mind for dinner sometime soon.

Flatout Flatbread Light Italian Herb Pizza - Turkey Pepperoni, Turkey Sausage, Olives,...

Today's Menu: Flatout Flatbread Light Italian Herb Pizza - Turkey Pepperoni, Turkey Sausage, Olives, and Mushrooms

Another chilly morning, around 39 degrees. Cloudy and about 68 degrees for the day. Went to Walmart early this morning and picked up a few items for tonight's dinner then stopped by the bank and home for the day. Got the cart out briefly, but the wind was kind of chilly so I wasn't out long on it. Then settled in for an afternoon of College Football. For dinner tonight Pizza, a Flatout Flatbread Light Italian Herb Pizza - Turkey Pepperoni, Turkey Sausage, Olives.

For my Pizza Pie/Crust I used a Flatout Flatbread Light Italian Herb. A fantastic tasting Flatbread that has only 90 calorie and 5 net carbs! For my sauce I used Ragu Pizza Sauce. My toppings were Sargento Reduced fat Shredded Mozzarella Cheese, Hormel Turkey Pepperoni, Jennie - O Sweet Italian Turkey Sausage, Anchovies, Sliced Mushrooms, Sliced Black Olives, and Sliced Green Olives. Then to prepare it, it couldn't be easier. I preheated the oven on 400 degrees. I first crumbled the Jennie-O Turkey Sausage and fried it until it was no longer pink and heated through. Put the crumbles on a plate lined with a paper towel to get what little excess oil there was left on it. Placed the Flat Bread on cookie sheet that I sprayed with Pam With Olive Oil Spray. Topped with the Ragu Pizza Sauce, then added the remaining toppings. Just bake at 400 till cheese starts to brown. And you have yourself one tasty and healthy Pizza! This is one great healthy version of a Pizza. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

A little more humid and warmer today. Went to Walmart early this morning and while there bought me and Mom a Breakfast Sandwich from Subway. Dinner Tonight: Turkey Pepperoni and Turkey Sausage Pita Bread pizza

An old friend of mine passed away late last night with lung cancer. He never had smoked but worked in bars most of his life and the doctors had said it was due to second-hand smoke. So it's been a bit of down day. Really muggy outside today, so not much going on. For dinner tonight I made a Pizza, but just not any Pizza a Turkey Pepperoni and Turkey Sausage Pita Bread Pizza!

I use Joseph’s Oat Bran and Stone Ground Whole Wheat Pita Bread anytime I can, especially for my Pizza! I love using Joseph’s Pita Breads, always fresh and they’re only 60 calories, 1.5 grams fat, and 5 net carbs!

For my toppings I used Jennie – O Hot Lean Turkey Breakfast Sausage, Ragu Homestyle Pizza Sauce, Hormel Turkey Pepperoni, Sliced Black and Green Olives, sliced Baby Bella Mushrooms, 2 Anchovies Fillets, Fresh Shredded Murray's Muenster Cheese, and Fresh Shredded Murray's Mozzarella Cheese. For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

Turkey Pepperoni, Turkey Sausage, Mushrooms, Black Olive, Pizza

Dinner Tonight: Turkey Pepperoni, Turkey Sausage, Mushrooms, Black Olive, Classic Crust Pizza

Beautiful Day out, about 70 and sunny! My parents went out to eat with friends so it was solo night for dinner and a Pizza sounded real good! I prepared a Turkey Pepperoni, Turkey Sausage, Mushrooms, Black Olive, Pizza.

I used my favorite Pizza Crust, Pillsbury  Classic Pizza Crust. To prepare it just preheat your oven on 400
degrees. Use a medium to large cookie sheet pan and spray it lightly with Pam. Then just open the can and spread the crust. The good thing about this is you make your crust as thin or as thick you want. Prebake it for 8 minutes and then add your toppings and put it back in the oven 8 – 10 more minutes until the crust is golden brown. Just a note; precook any of the toppings that need to be cooked, like any Sausage, before adding it as a topping.

My toppings were Hormel Turkey Pepperoni, Jennie O Lean Breakfast Sausage, Black Olives, Mushrooms (Sliced baby Bella), Sargento Shredded Mozzarella and Provolone Cheese, and Ragu Homestyle Pizza Sauce. As I said earlier the crust is fantastic! It bakes up to a golden brown with the outer crust nice and crunchy. I left the Pillsbury product description and web site link at the end of the post. For dessert later a Healthy Choice Chocolate Swirl Frozen  Yogurt.
