Roasted Applewood Smoke Flavor Turkey Breast Tenderloin w/ Mashed Potatoes........

Dinner Tonight: Blackberry Glazed Roasted Applewood Smoke Flavor Turkey Breast Tenderloin w/ Mashed Potatoes, Cut Green Beans, and French Bread

To start my morning off I prepared a Potato and Ham Skillet. I prepared a bag of the Simply Potatoes
Steakhouse Seasoned Diced Potatoes. Midway through the cooking time I added a 1/2 bag of Meijer Brand Diced Ham. Also had a cup of Bigelow Decaf Green Tea. Its 3 below outside this morning and we had a high of 19 degrees. It's supposed to be above freezing Sunday! If it is it's our first day above freezing in 2 weeks, hope they are right. Caught up on some work around the house and that was about it for the day. For Dinner tonight I tried a new Jennie - O Product. I prepared a Roasted Blackberry Glazed Applewood Smoke Flavor Turkey Breast Tenderloin w/ Mashed Potatoes, Cut Green Beans, and French Bread.

I purchased the Jennie - O Applewood Smoke Flavor Turkey Breast Tenderloin from Meijer the other day. I had been wanting to try one of these for a while now and finally purchased one. It comes pre-seasoned and is 100 calories, 4 carbs, and 99% fat free. Besides this beautiful Tenderloin all I'll need to prepare it is some McCormick Grinders of Sea Salt and Peppercorn Medley, and Extra Light Olive Oil. To make the Blackberry Glaze I'll need Smucker's Sugarless Blackberry Jam, Red Wine Vinegar, Splenda Sugar, and Ground Cinnamon.

First I mixed my Blackberry Glaze and set it aside until ready to use. I left the recipe for this at the end of the post. To prepare the Tenderloin I'll be baking it. Preheat the oven to 350°F. Next sprayed a shallow baking pan with Pam Non Stick Cooking Spray and add a tablespoon of the Extra Light Olive Oil to it. Then   place the Tenderloins in the baking pan. With about 10 minutes of cooking time left I Glazed on of the Tenderloins. Bake until meat thermometer inserted into thickest portion of the meat reaches 165°F, approximately 62 minutes. Remove from the oven, cover and let rest 5-10 minutes before slicing.

Started slicing it and it's so very tender and moist. It has a fantastic taste. The Applewood Smoke and combination of Spices it was marinated in was perfect! First time trying it and not the last! Good job Jennie- O. For the added Blackberry Glaze , it was perfect! It went with the Turkey like it was meant to be. I only Glazed 1 of the Tenderloins, I wasn't sure Mom and Dad would like it. But they loved it and we ended up putting Glaze on the other Tenderloin also.

.

To go with the Turkey Tenderloin I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better.

I also heated up a can of Del Monte Cut Green Beans. I also baked a loaf of Pillsbury French Loaf
Bread. Wow, that was one delicious Dinner. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn with a Coke Zero to drink.

Saturday's Chili - Springfield Chilli

Another Chili Recipe off the Cooking Light/My Recipes website. It's this week's Saturday's Chili - Springfield Chilli. Looking for a recipe idea just the sites out, and enjoy!  http://www.cookinglight.com/     http://www.myrecipes.com/

Springfield Chilli
The Illinois version of chili is typically spelled with an extra "l" and features coarse-grind beef, which we augment here with ground turkey breast. Regular ground meat will work just fine. In 1993, the state legislature proclaimed Springfield the "Chilli Capital of the Civilized World."
Yield: 6 servings

Springfield Chilli

Ingredients
1 none bacon slice, finely chopped
2 1/4 cups finely chopped onion, divided (about 2 medium)
2 none garlic cloves, minced
1 pound coarsely ground turkey breast
1/2 pound coarsely ground sirloin
1 none (12-ounce) can beer (such as Budweiser)
3 tablespoons chili powder
1 teaspoon Worcestershire sauce
1/2 teaspoon kosher salt
1/4 teaspoon ground cumin
1 none (14 1/2-ounce) can diced tomatoes, undrained
1 none (8-ounce) can no-salt-added tomato sauce
1 none (15-ounce) can pinto beans, rinsed and drained
1/2 cup (2 ounces) reduced-fat shredded cheddar cheese
none Oyster crackers (optional)

Preparation
1. Cook bacon in a large Dutch oven over medium heat 5 minutes or until browned. Stir in 2 cups onion; cover and cook until onion is tender (about 5 minutes). Uncover and stir in garlic; cook for 1 minute.

2. Increase heat to medium-high; add turkey and sirloin to pan. Cook 5 minutes or until browned, stirring to crumble. Add beer; cook until liquid is reduced to 1/3 cup (about 7 minutes). Stir in chili powder and next 5 ingredients (through tomato sauce). Cover, reduce heat, and simmer 30 minutes or until mixture thickens. Stir in beans; cook 10 minutes or until thoroughly heated. Ladle 1 cup chili into each of 6 bowls. Top each serving with 4 teaspoons cheese and 2 teaspoons onion. Serve with crackers, if desired.

Jennie – O OVEN READY™ Boneless Skinless Turkey Breast w/ Mashed Potatoes,....

Dinner Tonight: Jennie – O OVEN READY™ Boneless Skinless Turkey Breast w/ Mashed Potatoes, Canned Green Beans, and Crescent Rolls

It was about 20 degrees and sunny when I headed out this morning, which is a lot better than it's been around here! Ended up sunny all day and hit close to 40 degrees, plus they say in the upcoming days 50 and close to 60! Headed out and stopped at the Bank, Post Office and a couple of stores for groceries. Dinner tonight was a Holiday Comfort Food Dinner, I prepared a Jennie – O OVEN READY™ Boneless Skinless Turkey Breast w/ Mashed Potatoes, Canned Green Beans, and Crescent Rolls.

As I said I used the Jennie – O Oven Ready Skinless Boneless Turkey Breast. A perfect way to have a moist and fantastic tasting Turkey! Comes in Jennie O turkey Breast Oven Ready Bag,  that you bake at 375 degrees for about 2 to 3 hour until it reads 170 degrees. It also now has a pop up inserted in the breast that pops up when done. The Turkey comes out moist, juicy and delicious, with an excellent flavor! So cooking usually for just myself and my parents, it's just the right size (2-3 lbs.). Enough leftover for some great Turkey Sandwiches the next day or so!

Home canned Green Beans

For one side I heated up some Bob Evan's Mashed Potatoes, microwave for a total of 6 minutes and ready. Then we broke out a jar of the Canned Green Beans, we canned these last year. Love Canned Beans, taste just as fresh as fresh Green Beans. I also whipped a box of Stove Top Low Sodium Turkey Stuffing for Mom and Dad, they love Stuffing. And finally I baked a can of Pillsbury Reduced Fat Crescent Rolls. It was a Thanksgiving Dinner come early! For dessert later a couple of Del Monte Mini Bananas.

Jennie – O  OVEN READY™ Boneless Skinless Turkey Breast

Get all the great benefits of Oven Ready™ in a smaller-sized boneless and skinless turkey breast; this delicious home-cooked turkey breast is the perfect dinner to serve year-round.Goes directly from your freezer to your oven with no thawing.

Product Features:

Remove frozen turkey from white outer package.

Smoked Cajun Turkey, Rosemary Ham, and Swiss Grilled Sandwich w/ Baked Fries

Dinner Tonight: Smoked Cajun Turkey, Rosemary Ham, and Swiss Grilled Sandwich w/ Baked Fries

Our nice weather left real quickly, snow flurries and a wind chill in the 20's.  Went to the grocery early and then spent most of the afternoon cleaning my Hoveround Chair and then catching up on laundry. For dinner tonight, Smoked Cajun Turkey, Rosemary Ham, and Swiss Grilled Sandwich w/ Baked Fries.

I picked up a Jennie - O Premium Portions Hickory Smoked Cajun Style Turkey Breast, try saying that five times real fast! I love these, great sliced, for sandwiches, and just the right size for 1 or 2 people (1.39 lbs). Plus it's only it's only 50 calories and 1 carb per serving! It comes already seasoned and precooked. Just serve cold or heated up. I heated up a few slices in the oven for the sandwich. So I had the Turkey and I also had a couple of slices of Kroger Private Selection Oven Roasted Rosemary Ham. Topped it with Sargento Ultra Thin Swiss Cheese and Hidden Valley Spicy Chipotle Spread. Served it on a couple of slices of Klosterman Wheat Bread and then grilled in a medium size skillet with a 1/2 Tbs of Blue Bonnet Light Stick Butter.

Then for a side I baked some  Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served with a side of Hunt's Ketchup. For dessert later a Del Monte No Sugar Added Peach Chunk Cup.

Subway to the Rescue!

Today's Menu: 6" Turkey Breast & Black Forest Ham Sub

I was at the rehab center the biggest part of the day and really didn't feel like cooking dinner tonight. So it was Subway to the rescue! I had a 6" Sub on a 9 grain Wheat Bun w/ Provolone, Black Olives, Lettuce, Olive Oil Blend, and Yellow Mustard. The total calories for the sub is 380 calories and 45 carbs. I could have had lowered those totals a bit by going without the Provolone Cheese and Olive Oil Blend but I had a very low calorie and carb count today so I was able to add the extras. I also had a side of Ruffle's Light Fat Free Potato Chips, 80 calories and 17 carbs per serving (15 Chips). For dessert later tonight a Jello Sugar Free Chocolate Pudding, 60 calories and 14 carbs. Enjoy the Weekend Everyone!

Turkey and Swiss Panini w/ Green Beans and ...

Dinner Tonight: Turkey and Swiss Panini w/ Green Beans and Potato Pancakes

Put the new Panini Grill into use right away! First time I ever owned one and love it. This will expand the menu choices. My first one I fixed on the grill was a sliced Turkey Breast with 2% Swiss Cheese on Healthy Life Whole Grain Bread. I purchased another Jennie - O Turkey Breast and had baked it earlier and then sliced it all up for sandwiches throughout the week. As sides had some Green Beans leftover from last night and 2 Potato Pancakes leftover from my Mom's dinner she had fixed yesterday. Not sure on dessert or a small snack for later.
