Muenster Cheese Turkey Burger w/ Baked Potato

Dinner Tonight: Muenster Cheese Turkey Burger w/ Baked Potato

Cloudy and cool out today, a high in the low 60's. Had a Poached Egg, and 2 Eckrich Smoked Turkey Sausage Links, on a Healthy Life Whole Grain Muffin. Love those Poached Eggs! Had the morning work out and cleaned up around the house a bit. Then later ran a couple of errands for Mom and back home. For dinner tonight I prepared a Muenster Cheese Turkey Burger w/ Baked Potato.

I’m using the Jennie – O Turkey Burger Patties. Picked up a package at Meijer a while back and have
them in the freezer. I sat one pattie in the fridge overnight to thaw. They’re already pre-made Patties and come fresh or frozen so all I did was season it with Sea Salt and Ground Black Pepper and fry! I fried them in Extra Virgin Olive Oil about 7 minutes per side. Always cook to 165°F as measured by a meat thermometer. As always the Burger came out moist, flavorful, and delicious! Served it on a Kroger Lite Wheat Hamburger Bun and topped with a slice of Simple Truth Muenster Cheese.

For a side with my Burger I had a Baked Potato seasoned with Sea Salt and Ground Black Pepper and I Can’t Believe It’s Not Butter. For dessert later a Healthy Life Dark Fudge Swirl Frozen Greek Yogurt.

Grilled Cracked Pepper Dark Turkey Pastrami Sandwich w/ Baked Fingerling Potato Wedges

Dinner Tonight: Grilled Jennie – O Cracked Pepper Dark Turkey Pastrami Sandwich w/ Baked Fingerling Potato Wedges

Not a bad morning, when I went out to get the morning papers there was no wind and about 32 degrees. But about an hour or so later the wind picked up and the temperatures started dropping. Then by around 2:00 this afternoon we had wind gusts up over 50 mph with snow, at one point you couldn't see past the house next to you because of the blowing snow. By tomorrow morning a wind chill below 0. Winter is proving it's not near over yet. Helped out with some laundry and ran the vacuum, and that was about it for the day. Chair, remote, and College Basketball for the remainder of the afternoon! For dinner tonight I prepared a Grilled Cracked Pepper Dark Turkey Pastrami Sandwich w/ Baked Fingerling Potato Wedges.

I had made the Grilled Jennie – O Cracked Pepper Dark Turkey Pastrami last week and enjoyed it so much I wanted to prepare it again. To make my Sandwich I’ll need; Jennie – O Cracked Pepper Dark Turkey Pastrami, Klosterman Wheat Bread, Simple Life Muenster Cheese, and Litehouse Lite Thousand Island Dressing. I’ll be using my Flat Griddle Pan to prepare it. To prepare it; on one bread slice I layered the Cheese, Turkey Pastrami, and Dressing. Cover with remaining bread slice. Place Sandwich on the Griddle. Cook 4 to 6 minutes or until the bread was toasted and golden brown, turning once. Wow, Jennie – O has another winning product with this Jennie – O Cracked Pepper Dark Turkey Pastrami! One delicious and healthy Deli Meat to have on hand. The Muenster Cheese and Litehouse Lite Thousand Island Dressing worked perfect with the Pastrami.

For a side to go with the Sandwich I prepared some fresh-cut Fingerling Wedges. I sliced the Potatoes into wedges and seasoned them with a light coat of Extra Virgin Olive Oil, Garlic Powder, Dried Thyme, and McCormick Grinder Sea Salt and Black Peppercorn. Spread them out on a small Cookie Sheet and baked at 400 degrees until fork tender, about 20 minutes. Put a light sprinkle of fresh shredded Sargento Asiago Cheese over top and served. I wonder why Fingerling Potatoes are so hard to find? Jungle Jim's International Market is the only one to carry them around here, at least the only one that I have found. For dessert later a Healthy Choice Dark Chocolate Frozen Greek Yogurt.

Turkey Tacos!

Dinner Tonight: Turkey Tacos

Another picture perfect day out again, 75 degrees and sunny! Went fishing at a local County Park Lake for most of the morning and afternoon. Caught a few Crappie and Blue Gill along with a 2 lb. Bass. Didn't keep any, returned them to the lake. Had the cart out for a while also, just too nice to stay in. For dinner tonight its Turkey Tacos.

As I had said in an earlier post I'll be using my free samples from Jennie - O. I received a 1 lb. package of Jennie - O Lean Taco Seasoned Ground Turkey, a package of Wholly Guacamole, 1 - 7 oz. can of  HERDEZ® Salsas. I tasted the Herdez Salsas and just wasn't a big fan of it so I won't be using that. First time I've tried any of these, so thanks again to Jennie - O for the free samples!

I'll be using the Jennie - O Lean Taco Seasoned Ground Turkey. I Love the Jennie -O Turkey Products, always fresh and low calorie and low carb and this one is no exception. I started by frying the Ground Turkey in Canola Oil and seasoned it with just a bit of Morton's Salt Substitute. I've been making Tacos for a long time, so it feels like I'm forgetting a step by not adding Taco Seasoning to the Turkey as it's cooking. But it comes Seasoned, and judging by the aroma as it was cooking it was going to be delicious. And it was! I'll have to the Jennie - O Lean Taco Seasoned Ground Turkey around when making Tacos! 5 Stars for the  Jennie - O Lean Taco Seasoned Ground Turkey.

For my other toppings I’ll be using; Sliced Black Olives, Sliced Green Olives, Wholly  Guacamole, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, and Shredded Lettuce. All served in a Ortega Whole Grain Corn Taco Shell. Did I say I love Tacos, I do! As for the Wholly Guacamole, they named it right! Wholly Guacamole is exactly that. Creamy, Chunks of Avocados, and full of Creamy Flavor. For dessert later a bowl of Breyer's Carb Smart Chocolate Ice Cream.

Oven Roasted Turkey Breast w/ Mashed Potatoes, Sugar Snap Peas, and...

Today's Menu: Oven Roasted Turkey Breast w/ Mashed Potatoes, Sugar Snap Peas, and Baked Artisan Harvest Grain Bread

It was a bit of pre Thanksgiving Dinner tonight, Oven Roasted Turkey Breast w/ Mashed Potatoes, Sugar Snap Peas, and Baked Artisan Harvest grain Bread. I prepared a Jennie - O Oven Ready Turkey Breast. This is the easiest Turkey Breast there is to prepare! Preheat your oven to 375 degrees and remove the frozen Turkey from the outer package. Keep the Turkey in it's cooking bag and place it in a roasting pan. Roast it for 2 1/2 to 3 hours making sure the Turkey reads at least 170 degrees. You have Turkey! Simple, easy, and delicious.

For sides we had individual servings of Idahoan Mashed potatoes,  Sugar Snap Peas, and Meijer Bakery Artisan Harvest grain Bread. All these are easily prepared items also. For the Idahoan Mashed Potatoes just add a bit of water and microwave for 1 1/2 minutes, done. The Sugar Snap Peas is a new one I've tried now a couple of times, Walmart Marketside brand. You can microwave these or boil them in water which is what I did. Just boil for 3 - 4 minutes and their ready. These are some of the best tasting Sugar Snap Peas I've ever had. Their big and bursting with flavor.  I also baked a Meijer Bakery Artisan Harvest Grain Loaf Bread. For dessert later a bowl of Blue Bunny Frozen Chocolate/Vanilla Swirl Yogurt.

**Added some leftover sliced carrots**

Not So Sloppy Turkey Joes w/ Crinkle Fries

Tonight: Not So Sloppy Turkey Joe's w/ Crinkle Fries

It had been a while since we had any Sloppy Joe's and that sounded just right for dinner tonight! So it was Not So Sloppy Turkey Joe's for tonight. I used Hormel Not So Sloppy Joe Sauce again. I love this Sloppy Joe Sauce it's Thick and Hearty with great flavor. Easier to use than Sloppy Joe Mix also. No adding water and extra simmering time. I used Jennie – O Extra Lean Ground Turkey which is only 120 calories and 0 carbs! I fried the Turkey in Extra Virgin Olive Oil and seasoned it with Ground Smoked Cumin, Ground Thyme, Parsley, Sea Salt, and Ground Pepper. With the sauce already seasoned I still like to get the healthy herbs and spices in when I can. When the Turkey was done I drained the skillet of fat and oil and added the jar of Sauce, stirring until mixed and warmed. Easy to fix and delicious. I served the Turkey Joe on a Healthy Life Whole Grain Bun.

I had Ore Ida Baked Crinkle Fries as a side along with some Antipasto I purchased from Jungle Jim's Market earlier in the day. For dessert later a 50 calorie 10 carb Skinny Cow Fudge Pops.

Not So Sloppy Turkey Joe's

Slow Roasted Turkey Pot Roast & Brown Mushroom Gravy w/ Mashed Potatoes, Carrots,...

Dinner Tonight: Slow Roasted Turkey Pot Roast & Brown Mushroom Gravy w/ Mashed Potatoes, Carrots, and Whole Grain Bread

Tried something new for dinner tonight, Jennie - O Slow Roasted Turkey Pot Roast. Came across this the other day Kroger and they had just put them out earlier in the morning. Easy to fix. You can microwave it in it's own container or bake it at 375 degrees for 1 hour which was the way I prepared it. After I hour I removed it and the aroma was fantastic! I pulled the bone out of the meat and using two forks shredded the meat. I then, in a bowl, added Heinz Mushroom Gravy to the Turkey and we have Pot Roast! Holy Pot Roast Batman we have a winner! This makes one fine dinner. This will be added the rotation of dinners. Maybe even the best part is the leftovers! This is going to make some killer Pot Roast sandwiches.

For sides I had Idahoan Homestyle Mashed Potatoes that I topped with some of the Heinz Mushroom Gravy. I also had boiled Mini Carrots and Healthy Life Whole Grain Bread. For a dessert/snack later I'll be having Tostitos Artisan Roasted Garlic & Black Bean Tortilla Chips with something new from Velveeta/Kraft; Velveeta Cheesy Chili Dip.

Turkey Wrap w/ Cream of Tomato Soup

Today's Menu: Turkey Wrap w/ Cream of Tomato Soup

Sometimes the easy things to fix are the best! I had a Turkey Wrap and Cream of Tomato Soup. I used the Hungry Girl Whole Wheat w/ Flax Foldit Flatbread. Love these especially when I use it in the Panini Press. They taste great and are only 90 calories and 15 carbs. I made the wrap with Turkey that we leftover from the other night when we I had baked a Jennie - O Turkey Breast. I topped it with Sargento Ultra Thin Colby Jack Sliced Cheese, which is only 40 calories and 1 carb, Kraft Reduced Mayo w/ Olive Oil, and French's Yellow Mustard.

For the soup I used Amy's  Organic Light in Sodium - Cream of Tomato Soup, which is some of the tastiest Tomato Soup I have ever had from a can. Not only great tasting but it's only 110 calories and 19 carbs! I also had tried the Butternut Squash and it was excellent also. They have several flavors and I plan on tying more of them. I left the Soup info and description at the end of the post. For dessert later a Yoplait Delight Chocolate Eclair Parfait.

Hanky-Panks Turkey Style

The traditional hanky panky is pretty high-fat. I’ve cut down the fat, carbs and calories by using Turkey, and they still taste great. These have about 60 calories per piece.

1 pound ground turkey, Jennie - O Extra Lean
1 pound Jennie - O Extra Lean Italian Sausage
1 pound 2% Velveeta
1/2 teaspoon Oregano
1/2 tablespoon Worcestershire Sauce
2 loaves of Whole Grain Cocktail Bread

In a medium skillet, brown the turkey and sausage together, breaking up thoroughly with a fork. Drain extra grease. Add the Velveeta , oregano and Worcestershire sauce and stir until cheese is melted. Put 2 teaspoons of the mixture on top of each piece of rye bread and arrange on a cookie sheet or broiler pan. Preheat broiler, then broil the hanky panks until the cheese is bubbly and hot.

Makes about 60.

These freeze very well. Just put them in the freezer in a single layer, and when they’re frozen solid, move to zip-lock bags. At the party, put in a 450-degree oven until bubbly and warm through, about 10 minutes.

It was Thanksgiving dinner early or late? Either way it was just flat out delicious! Velveeta Cheesy Skillet Turkey Mac w/ French Bread

Dinner Tonight: Velveeta Cheesy Turkey Mac w/ Rustic French Bread

You have to love these one pot meals. I used Kraft/Velveeta Cheesy Skillets Dinner Kit/Ultimate Cheeseburger Mac. The dinner kit includes: Pasta, Velveeta Cheese Sauce, and Seasoning pack. All I had to do was add the 2 cups of water and 1lb. of Ground Turkey. I used Jennie – O Extra Lean Ground Turkey. Using the Extra Lean Ground Turkey instead of the Ground Beef you can lower the calorie count by anywhere from 60 – 80 calories! As I browned the Turkey I added Sea Salt, Pepper, and Ground Smoked Cumin for seasoning. It’s ready in about 10 minutes. I then add 2 cups of water, the seasoning and pasta. Simmer for 11 – 13 minutes and add the Velveeta Cheese and your ready for dinner.  I’ll leave the instructions at the end of the post. It’s 350 calories and 27 carbs but you can lower the calorie count by using the Ground Turkey as stated above. I had a side of Pillsbury Rustic French Bread. For dessert a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.

3 Bean Turkey Chili

Dinner Tonight: 3 Bean Turkey Chili

Made a batch of the 3 Bean Turkey Chili! Love this stuff. Not only is it delicious and healthy it's easy to make and it's a 1 pot meal! Just "Set it and forget it", my favorite info commercial saying. About 5-6 hours on low in your crock pot and you'll have some great tasting chili! This is great to freeze so you can have it anytime. I left the recipe at the end of the post. I topped the chili with some fresh grated Smoked Dutch Gouda Cheese and a side of Oyster Crackers.

Ingredients

1 lb. Ground turkey
1 Packet McCormick Chili Seasoning Mix
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (15 oz.) Chili Beans
1 Can (15 oz.) Kidney Beans, rinsed
1 Can (15 oz.) Great Northern Beans, rinsed
1/2 Cup of Water
1 Tbs Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)

Marinated Baked Turkey Tenderloin w/ Mashed Potatoes, Sweet Corn, and...

Dinner Tonight: Marinated Baked Turkey Tenderloin w/ Mashed Potatoes, Sweet Corn, and Whole Grain Bread

I had a Jennie – O Baked Turkey Tenderloin that I had marinated for three hours in JB’s Fat Boy Sticky Stuff BBQ. After seasoning it with Sea Salt, Ground Black Pepper, and Smoked Cumin. I then baked it for 30 minutes covered and thirty minutes uncovered at 350 degrees. The Turkey turned out moist and delicious. The JB’s Fat Boy Sticky Stuff BBQ. Sauce makes a perfect marinade for not only Turkey but also Chicken.

As sides I had Idahoan Mashed potatoes and Del Monte Summer Crisp Whole Kernel Golden Sweet Corn. Not a huge Corn eater but I love this Corn, great flavor and only 80 calories and 16 carbs. I also had Healthy Life Whole Grain Bread. For dessert later a Yoplait 100 Calorie Delight Chocolate Eclair Parfait.
