Chicken Quesadilla and Refried Beans

Dinner Tonight: Chicken  Quesadilla and Refried Beans



A big change in our weather, with bigger changes coming tomorrow. Sunny out and a high in the 50's today, beautiful Fall Day out! Over the weekend we have a freeze warning out for Saturday and Sunday, tis the season! I love this Fall weather. Dad had a rough night breathing last night, a lot better today. He also started his home therapy today, which he needs. Went to Kroger for a few items for tonight's dinner. Back home cleaned house today and cleaned up the leaves outside. Got the cart out for a while, had to wear a Sweatshirt the air was really cool. For dinner tonight I prepared Chicken  Quesadillas and Refried Beans.




I picked up a big and beautiful Rotisserie Chicken at Kroger yesterday and pulled all the meat off of it and had it in the fridge. To make the Chicken  Quesadillas I'll need the following; 1 cup shredded Kroger Monterey Jack Cheese (about 2 ounces), 1 cup Sargento Reduced Fat Shredded Sharp Cheddar Cheese (about 2 ounces), Mission Extra Fluffy Fajita Flour Tortillas, Shredded Cooked Chicken (I used a Kroger Simple Truth Rotisserie Chicken), Chopped Cilantro, Sliced Black and Green Olives, Shredded Lettuce, Wholly Guacamole, Simple Truth Salsa, and Daisy Reduced Fat Sour Cream (last four items are for topping and optional).



To prepare it I started by combining the Cheeses in a medium bowl. I then heated a large frying pan
over medium heat until hot, about 3 minutes. Place a Tortilla in the pan and sprinkle with half of the Chicken, half of the Cilantro, Olives, and half of the Cheese Mixture. Top with a second Tortilla and cook until the underside of the bottom Tortilla is golden brown in several spots and half of the cheese is melted, about 3 minutes. Using a spatula, carefully flip the Quesadilla over and cook until the underside of the second Tortilla is crisp and golden brown in several spots and all of the cheese is melted, about 2 to 3 minutes more. Then just slide the Quesadilla from the pan onto a cutting board and cut into wedges. Just repeat with the remaining ingredients to make a the other Quesadilla. Serve topped with Shredded Lettuce, Guacamole, Salsa, and Sour Cream, if desired. These turned out fantastic! The Chicken, Cheese, Olives, and toppings were a perfect mix!





Then Mom and Dad wanted some Refried Beans also, so I opened up a can of Old El Paso Fat Free Refried Beans. You could also use the Refried Beans to make Quesadillas with also! For dessert later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Walking Turkey Taco

Ingredients
½ (20-ounce) package JENNIE-O® Lean Ground Turkey
2 teaspoons chili powder
2 teaspoons BUFALO® salsa picante classic hot sauce
2 cups HERDEZ® yellow and white corn masa tortilla chips
⅓ cup WHOLLY SALSA® roasted tomato salsa
½ cup drained canned corn kernels
½ cup rinsed and drained canned black beans
⅓ cup WHOLLY GUACAMOLE® spicy dip
¼ cup finely chopped red onion
lime, if desired
Directions
Cook turkey according to package directions. Always cook to well-done, 165°F as measured by meat thermometer. Add chili powder. Cook 1 minute or until fragrant. Stir in hot sauce.

Arrange chips in three disposable leak-proof bags. Spoon turkey over chips.

Top with salsa, corn, black beans, guacamole and onion. Garnish with lime, if desired.
* Always cook to an internal temperature of 165°F. Learn how to safely handle turkey.

Jennie - O Turkey Recipe of the Week - Summer Time Turkey Burgers

Summer Time Turkey Burgers

Ingredients
4 JENNIE-O® All Natural Turkey Burgers
4 burger buns
2 ounces cotija cheese
¼ cup pico de gallo
8 large leaf lettuce
4 teaspoons fresh chopped cilantro
squeeze of fresh lime juice
4 ounces non-fat Greek yogurt
4 ounces WHOLLY GUACAMOLE® dip, if desired
4 ounces HERDEZ® salsa, if desired

Directions
Cook turkey burgers as specified on the package. Always cook until well-done, 165°F as measured by a meat thermometer.

Toast buns and top with turkey burger, cheese, Pico de Gallo, lettuce, cilantro and squeeze of fresh lime. Spread yogurt on the bottom side of top bun. Serve dip and salsa, if desired.

Turkey Tacos

Today's Menu: Turkey Tacos






Mostly cloudy today and about 41 degrees this morning. The weekend only highs around 60 degrees and very cool mornings, love this weather! Well my Dad got to come home from the hospital today! Good to have him back home. He's still real weak, we'll have to keep a close   eye on him. For dinner tonight always one of my favorites, Turkey Tacos!








And when making Turkey Tacos I always use Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Canola Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make one fine Taco!









For toppings I’ll be using; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Wholly Guacamole, Old El Paso Taco Sauce, Red Onions, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. For dessert later a Healthy Choice Dark Fudge Swirl Greek Yogurt.

Turkey Tacos

Dinner Tonight: Turkey Tacos






We had quite a light show going on outside early this morning before dawn. Lot of rain, wind, and thunder and lightening. I heard some areas lost power but ours stayed on. Started the morning off with a bowl of Cheerios. Then caught up on laundry and housework for Mom. She spends most of the day helping Dad out at the rehab center. She loves Tacos so that's what I prepared for dinner tonight. I prepared Turkey Tacos for dinner tonight.  






When making Turkey Tacos it’s I always Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. Turkey Tacos Tonight!

It was a long day today, as my Dad fell early this morning again. Luckily he didn't break anything but his neck area is very sore and he has a couple of cuts on his arm. They are going to keep him in the hospital for 3 - 4 days and then to rehab to build his strength up. I hope he pulls through this but he is very weak and at almost 93 it's harder to overcome things like this. Hoping for the best! It was cool morning here, about 47 degrees. Very unusual for August around here. After getting back from the hospital I caught up some housework for Mom. Dinner tonight I prepared Turkey Tacos.








As usual when I make Turkey Tacos it’s with Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. Pulled Buffalo Chuck Roast Fajitas

Dinner Tonight: Pulled Buffalo Chuck Roast Fajitas




Beautiful morning out today! It heated up though as the day went on, mid 80's. Had the cart out early doing some minor repair work on it and then rode around most of the morning. Went to Walmart and picked up a few items and purchased some eave drain pipe extension hoses for some of the drain pipes and back home for the day. For dinner tonight Pulled Buffalo Chuck Roast Fajitas.




Leftovers from Dinner 2 nights ago turns into tonight's dinner! I'm using  the Wild Idea Buffalo Pulled Buffalo Chuck Roast that I made a Sandwich out of and using it for Pulled Buffalo Chuck Roast Fajitas tonight! To make my Fajita I'll be using; Wild Idea Buffalo Pulled Buffalo Chuck Roast, Ole Fajita Flour Tortillas, Wholly Guacamole, Daisy Light Sour Cream, Fresh Cilantro, Diced Red Onion, and Sliced Sweet Peppers.



I think you could use the Wild Idea Buffalo Pulled Buffalo Chuck Roast for any dish and it would be delicious! It comes marinated in Organic Apple Cider, Organic Lime Juice, Onion Powder, Cumin, Sea Salt, Black Pepper, Chili Powder, Paprika, Garlic Powder, Oregano, Cayenne Pepper. So with all that you know it's going to be good! For dessert later tonight a bowl of Breyer's Carb Smart Vanilla Bean Ice Cream topped with some fresh sliced Georgia Peaches that I picked up earlier. Too Good!

It's Turkey Tacos Tonight!

It's been one gorgeous July 4th day out today! Sunny and a high of 75 degrees, beautiful. Going to go later and watch some local fireworks, it's a tradition. Had the cart out all day just riding around enjoying the day. For dinner tonight I prepared Turkey Tacos.








As usual when I make Turkey Tacos it’s with Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. Turkey Tacos!

Another picture perfect day out again, 75 degrees and sunny! Went fishing at a local County Park Lake for most of the morning and afternoon. Caught a few Crappie and Blue Gill along with a 2 lb. Bass. Didn't keep any, returned them to the lake. Had the cart out for a while also, just too nice to stay in. For dinner tonight its Turkey Tacos.








As I had said in an earlier post I'll be using my free samples from Jennie - O. I received a 1 lb. package of Jennie - O Lean Taco Seasoned Ground Turkey, a package of Wholly Guacamole, 1 - 7 oz. can of  HERDEZ® Salsas. I tasted the Herdez Salsas and just wasn't a big fan of it so I won't be using that. First time I've tried any of these, so thanks again to Jennie - O for the free samples!








I'll be using the Jennie - O Lean Taco Seasoned Ground Turkey. I Love the Jennie -O Turkey Products, always fresh and low calorie and low carb and this one is no exception. I started by frying the Ground Turkey in Canola Oil and seasoned it with just a bit of Morton's Salt Substitute. I've been making Tacos for a long time, so it feels like I'm forgetting a step by not adding Taco Seasoning to the Turkey as it's cooking. But it comes Seasoned, and judging by the aroma as it was cooking it was going to be delicious. And it was! I'll have to the Jennie - O Lean Taco Seasoned Ground Turkey around when making Tacos! 5 Stars for the  Jennie - O Lean Taco Seasoned Ground Turkey.









For my other toppings I’ll be using; Sliced Black Olives, Sliced Green Olives, Wholly  Guacamole, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, and Shredded Lettuce.
