2 – teaspoons thyme, or two to three sprigs fresh thyme *I use half fresh & half dried.
1 – teaspoon rosemary, or one to two small fresh sprigs *I use half fresh & half dried.
1 – teaspoon oregano, or one sprig oregano *I use half fresh & half dried.
2 – onions, 1 diced and 1 quartered
1 to 2 tomatoes, coarse chopped
5 – cups buffalo, vegetable or organic beef stock
2 – bay leaves
6 – potatoes, quartered
3 – celery stalks, quartered
4 to 6 – carrots, peeled and quartered
½ – cup red wine
Preparation:
1) Preheat oven to 225°. Rinse bison roast, pat dry and remove string. *Removing string is optional; I usually remove for this preparation, so I don’t loose the seasoning in removing after cooking.
2) Mix all the dried seasonings together. Rub the roast with 1 tablespoon of the olive oil, and rub the dried seasoning into the roast.
3) In a heavy pot over high heat, heat the remaining tablespoon of the olive oil. Place the seasoned roast into the hot oil and brown for 5 minutes. Turn roast 3 times, searing for 5 minutes each. *Positioning roast up against the pan sidewalls will help in browning the whole roast.
4) Move the roast to the side and add the chopped onions, lifting the roast so onions cover the bottom and stir occassionally. Allow the onions to cook for about 5 minutes.
5) Add the chopped tomatoes around the roast, the bay leaf, and pour in the stock. Let the stock
come to a full boil, then cover and turn off the heat.
6) Transfer covered roast into the preheated oven on the middle rack. Braise the buffalo pot roast for 6 hours.
7) During the last half hour of cooking, add the potatoes, pushing them down into the juices. Cover and increase heat to 375°.
8) Cook the potatoes for 15 minutes, then, add the celery, onion, and carrots. Cover and cook for an additional 15 minutes. Check the vegetables to insure they are cooked through, but still slightly firm. Continue to cook for a few more minutes if needed.
9) Remove the pot roast from the oven, and transfer the roast and the vegetables to a cutting board or platter. Cover with foil.
10) Place the pot with the juices on the stovetop over medium high heat. Bring to a boil. Mix the cornstarch into the wine, and whisk into the bubbling pan juices. If the gravy is not to your desired thickness add more wine/cornstarch mix, until desired consistency is achieved. Season to taste.
11) Carve the roast and pass with gravy and crusty bread.

Buffalo Pot Roast
Nothing represents “comfort food” more than a traditional pot roast. Wild Idea’s 100% grass-fed, rich and slightly sweet bison roast, braised until tender and juicy, nestled in a bed of potatoes and carrots, and covered with pan gravy, says it all! Always a favorite, but this savory, one pot meal is a wonderful way to welcome the fall! (Serves 6 to 8).

Tavern Style Pot Roast w/ Mashed Potatoes and Baby Carrots
Dinner Tonight: Tavern Style Pot Roast w/ Mashed Potatoes and Baby Carrots
Beautiful morning out there today. Chilly but sunny, we had a high in the 50's. Had a light Breakfast
and after my morning workout and a shower I had to get the Pot Roast started in the Slow Cooker. That done I moved on to some house cleaning, dust and vacuum. Then outside I got the leaf blower out, cleaned the deck and the driveway of the last remaining leaves. Still a few left but not many, finally! I was wanting to get the cart out for a spin but the wind had picked up in the afternoon and it was a bit chilly to be on the cart. Tried a new recipe for dinner tonight using Campbell’s® Tavern Style Pot Roast Slow Cooker Sauce. Tonight I prepared Tavern Style Pot Roast w/ Mashed Potatoes and Baby Carrots.
I came across this recipe at a site on WordPress, http://dawns-ad-lib.com/ Dawn has all kinds of great
recipes so check her site out soon! Anyway she had a Tavern Style Pot Roast that looked and sounded too good to pass up! So I had to give it a try, and very glad I did! This makes one fine meal.
To prepare the dish I'll need; 1 - 3lb. Chuck Roast, I package of Campbell’s® Tavern Style Pot Roast Slow Cooker Sauce, Bob Evan's Mashed potatoes, 2 cans Kroger Brand Baby Carrots, and I roll of Pillsbury French Bread.
As Dawn said there's no recipe. Just open the packet Campbell’s® Tavern Style Pot Roast Slow
Cooker Sauce, I lined the Slow Cooker with a plastic Slow Cooker Liner and spray it with Pam Cooking Spray, add your Roast to the Slow Cooker, pour the Sauce over the Roast, turn on the Slow Cooker, put the lid on it, and as the info commercials say "Set it and forget it". You'll be cooking it on low 7 to 8 hours or until beef is fork-tender. (or cook on high 4 to 5 hours.) When done remove the Roast and cut into slices. Simple, easy clean up, and one delicious Roast! The Campbell’s® Tavern Style Pot Roast Slow Cooker Sauce givesit an incredible flavor and richness. I've got a new item for the Pantry! The original post and the website link is at the end of the post.

I served it with some Bob Evan's Mashed Potatoes, which I just microwave and serve. Then I also
heated up 2 cans of Kroger Brand Baby Carrots. And finally I baked a loaf of Pillsbury French Bread. Perfect sides for a perfect Roast. For dessert later a Jello Sugarless Dark Chocolate Mousse.

Baked (Leftover) Pot Roast Mini Sub w/ Red Potatoes and Mini Carrots
Dinner Tonight: Baked Leftover) Pot Roast Mini Sub w/ Red Potatoes and Mini Carrots
What a beautiful morning, sunny and 60 degrees with no humidity! I mean a perfect morning. Got the cart out early this morning and was on and off of it all day, enjoying this weather. Repaired an eave spout in the back of the house and straightened up the shed a bit. For dinner tonight it was leftovers, some delicious leftovers! I prepared a Baked Pot Roast Mini Sub w/ Red Potatoes and Mini Carrots.
The Pot Roast Beef (Beef Shoulder) was so delicious last night for dinner, I didn't want to waste any of the leftovers. I took the Pot Roast and shredded it up a bit, discarding what little fat from it. Using a Crock Pot to prepare any meat, in most cases will get rid of most of the fat and turn it to flavor. I took the Shredded Beef and layered it on a Meijer Bakery Perfection Deli Mini Wheat Sub Bun. Topped it with just a bit of Sweet Hot Stone Ground Mustard and a slice of Boar's Head Muenster Cheese. I used I Can't Believe It's Not Butter and buttered the top Bun, so when I bake it will be nice and toasty. Put it on a small cookie sheet and baked for about 8 minutes at 400 degrees. Yesterday's pot Roast has made one delicious Mini Sub! The Beef moist and delicious, the melted Cheese over top, Sweet Mustard, and the crusty Bun, it all combines for one great Sandwich!
Then for a side I reheated some of the Red Potatoes and Baby Carrots. For dessert later a bowl of Breyer's Carb Smart Vanilla Bean Ice Cream.

Melt-in-Your-Mouth Pot Roast w/ Red Potatoes and Baby Carrots
Between 8:00 and 9:00 this morning a Thunderstorm moved through, good rain and got rid of some of the humidity. The Thunder was impressive, some of the loudest and longest I've heard! It was some deep rolling Thunder, a few times it shook the windows and the glassware sitting around. Had the carpets steamed cleaned today and to have a new dryer vent put on. For dinner I put a Beef Shoulder Pot Roast on in the Crock Pot. Dinner tonight it's Melt-in-Your-Mouth Pot Roast w/ Red potatoes and Baby Carrots.
I had been wanting a Pot Roast and what better day than today to finally make one! I had a couple of recipes that I had tried before but I wanted to try a new one. I found this one at the Taste of Home website, excellent website by the way. Pretty basic recipe; Using 1 boneless beef chuck roast (2.75 pounds), Red potatoes, Baby Carrots, Dijon Mustard, Dried Rosemary (crushed), Garlic Salt, Cumin, Dried Thyme, Pepper, chopped Onion, and Swanson Low Sodium Beef Broth.
Using the Crock Pot so you know it's easily prepared! Place the Potatoes and Carrots in a 5-qt. slow cooker. Cut the Roast in half. Combine the mustard, rosemary, garlic salt, cumin, thyme and pepper; rub over roast. Place in the slow cooker; top with onion and broth. Cover and cook on low for 6-8 hours or until meat and vegetables are tender. Another set it and forget recipe, I love them! What an aroma about half way through the cooking time. Took everything out after 8 hours, the Roast was falling apart and the Potatoes and Carrots were very tender. After removing the Roast and Vegetables from the Crock Pot, I drained all the wonderful juices also and we spooned it back over the Roast. A fantastic Pot Roast Recipe! The full recipe and the web link to the original recipe is at the bottom of the post. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Slow Roasted Turkey Pot Roast & Brown Mushroom Gravy w/ Mashed Potatoes, Carrots,...
Dinner Tonight: Slow Roasted Turkey Pot Roast & Brown Mushroom Gravy w/ Mashed Potatoes, Carrots, and Whole Grain Bread
Tried something new for dinner tonight, Jennie - O Slow Roasted Turkey Pot Roast. Came across this the other day Kroger and they had just put them out earlier in the morning. Easy to fix. You can microwave it in it's own container or bake it at 375 degrees for 1 hour which was the way I prepared it. After I hour I removed it and the aroma was fantastic! I pulled the bone out of the meat and using two forks shredded the meat. I then, in a bowl, added Heinz Mushroom Gravy to the Turkey and we have Pot Roast! Holy Pot Roast Batman we have a winner! This makes one fine dinner. This will be added the rotation of dinners. Maybe even the best part is the leftovers! This is going to make some killer Pot Roast sandwiches.
For sides I had Idahoan Homestyle Mashed Potatoes that I topped with some of the Heinz Mushroom Gravy. I also had boiled Mini Carrots and Healthy Life Whole Grain Bread. For a dessert/snack later I'll be having Tostitos Artisan Roasted Garlic & Black Bean Tortilla Chips with something new from Velveeta/Kraft; Velveeta Cheesy Chili Dip.

Diabetic Irish Beef Pot Roast with Vegetables
I found a good St. Patrick's Day recipe to pass along for those with Diabetes, Diabetic Irish Beef Pot Roast with Vegetables. Also a little Irish blessing to go along with the meal.

May the Irish hills caress you.
May her lakes and rivers bless you.
May the luck of the Irish enfold you.
May the blessings of Saint Patrick behold you.
~Irish Blessing
Ingredients
* 1 boneless beef bottom round rump roast or beef bottom round (3 to 3-1/4 pounds)
* 2 packages (24 ounces each) fresh pot roast vegetables (potatoes, onions, carrots, celery)
* 2 packages (.75 to .88 ounces each) mushroom or brown gravy mix
* 1/3 cup all-purpose flour
* 1/2 teaspoon salt
* 1/2 teaspoon black pepper
* 1 cup beer
* Chopped fresh parsley (optional)
Directions
1. Prepare pot roast vegetables: cut potatoes in half (or into quarters if large), onions into 1/2-inch wedges, and carrots and celery into 2-inch pieces; set aside.
2. Combine gravy mixes, flour, salt and pepper in large bowl. Add vegetables to bowl; toss to coat well. Remove vegetables from flour mixture and place in 5 to 6-quart slow cooker. Add beef roast to bowl, turning to coat evenly with flour mixture. Remove roast and place in slow cooker in center of vegetables.
3. Whisk beer into remaining flour mixture until smooth; add to slow cooker. Cover and cook on LOW 10 to 11 hours, or on HIGH 6 to 7 hours, or until beef and vegetables are fork-tender. (No stirring is necessary during cooking.)
4. Remove roast and vegetables. Skim fat from gravy. Carve roast into thin slices. Serve with vegetables and gravy. Sprinkle with parsley, if desired.
