Slow-Cooker "Corned Beef" and Cabbage
This warming slow-cooker stew has all the flavors of corned beef and cabbage but with much less sodium, plus it's ready in half the time of traditional corned beef and cabbage. Rather than curing the beef in a salty brine for at least a day, we just throw the beef and veggies into a crock pot with pickling spice for that delicous briny flavor without the long soaking period......

Vegetarian Pressed Italian Sandwich
Typically, pressed sandwiches are a celebration of many meats. Here, we've opted for grilled eggplant slices, artichokes and arugula to make a satisfying vegetarian version. Giardiniera, a type of Italian relish typically made from bell peppers, celery, carrots, cauliflower, olives, vinegar and spices, perks up the flavors of any sandwich. You can use convenient prepared giardiniera or homemade. Choose a hot or mild version, depending on your preference for heat.........

Kitchen Hint of the Day!

X-tra protein in the tacos...........

When making Tacos I sometimes add a can of rinsed black beans to the Ground Turkey and Taco mix as it's cooking. The black beans gives it that extra protein and added flavor. Just be sure to drain and rinse the black beans to reduce the sodium content. Enjoy those Tacos!!

Turkey and Black Bean Pita Bread Tacos

Dinner Tonight: Turkey and Black Bean Pita Bread Tacos

Started my morning off with Fried Turkey Spam, 1 Egg Sunnyside Up, 2 Slices Klosterman Wheat Bread, and a cup of hot brewed Bigelow Decaf Green Tea. Did some laundry for Mom. Finally got her out of the house to enjoy herself. She met her cousin, who is like a sister to her, for lunch. She needed to get out, it's just so stressful dealing with my Dad as his health isn't getting any better and doesn't do anything to try to get better.  Moving on, it's a beautiful day outside, around 80 or so and low humidity (No Rain either). For dinner tonight I prepared Turkey and Black Bean Pita Bread Tacos.

I used my favorite Ground Turkey, Jennie-O Extra Lean Ground Turkey Breast. The Jennie-O Extra
Lean Ground Turkey Breast comes in at 120 calories, 1.5g of Fat, and 0 carbs and comes out perfect every time! To prepare the Turkey I fried it in a medium size skillet in Extra Virgin  Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix, 3/4 cup of Water, and I also added 1 can of Bush’s Low Sodium Black Beans, I drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos. Mixed well until everything was coated and then simmered another 5 minutes until heated through.

For my other Taco toppings I used 1 small can of Mario Sliced Black Olives, sliced Green Olives,
some Whole Kernel Corn (Leftover from Dinner the other night), Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Shredded Lettuce, Old El Paso Taco Sauce, and Daisy Reduced Fat Sour Cream  and all in a Joseph Flax, Oat Bran and Whole Wheat Pita Bread. I love these Pita Breads! 50 Calories, 1g Fat and only 4 Net Carbs! I use them instead of Bread when I can. The Pita Bread makes a perfect Taco and healthier Taco! For dessert later a Healthy Choice Chocolate Swirl Frozen Greek Yogurt.

Jennie - O Recipe of the Week - Shamrock Turkey Burger

Celebrate St. Pat's Day the healthy and delicious way. From the Jennie - O website it's the Shamrock Turkey Burger.

Shamrock Turkey Burger

Ingredients
BURGER
½ cup oats
3 tablespoons Worcestershire sauce
1 cup chopped green onion
1 teaspoon freshly ground pepper
1 (20-ounce) package JENNIE-O® Lean Ground Turkey,
6 (5-inches x 5-inches) pieces parchment paper or waxed paper
nonstick cooking spray

HOT CABBAGE KRAUT
1 tablespoon olive oil
2 cups thinly sliced onion
4 slices JENNIE-O® Turkey Bacon, thinly sliced
¼ teaspoon salt
¼ teaspoon freshly ground pepper
1 clove garlic, minced
2 teaspoons granulated sugar
3 cups finely shredded coleslaw mix
2 tablespoons stout beer or broth
6 slices Colby cheese
6 whole wheat or sour dough buns, split and toasted
¼ cup fat-free ranch dressing
6 large green lettuce leaves

Directions
In large bowl combine oats and Worcestershire sauce. Let stand 5 minutes or until oats are softened. Add onion, pepper and turkey. Mix until well combined. Divide mixture into 6 equal portions. Position 5-inch shamrock shaped cookie cutter on top of one piece parchment paper. Press one portion of meat inside shamrock and press out evenly to shape (3/8-inch thickness). Gently remove the cookie cutter releasing meat with your fingers from the inside. Set aside. Repeat with remaining portions of meat.

Spray large skillet with nonstick cooking spray. Place patties in skillet over medium heat. Cook 15 minutes, covered, turning 2 to 3 times and until 165°F. as measured by a meat thermometer. Always cook to well-done.

While patties are cooking, place olive oil, sliced onions, sliced bacon, salt and pepper in large skillet over medium heat. Cook 10 minutes or until onions are softened and bacon is browned. Add garlic, sugar, shredded cabbage & beer. Cook 6 to 8 minutes longer until cabbage is softened and liquid is evaporated. Reduce to low heat.

Using a 3-inch shamrock cookie cutter, cut each cheese slice. Assemble burgers spreading ranch dressing on top of each bun. Place lettuce leaf on bottom bun and top with hot cabbage kraut, shamrock shaped patty and top with cutout shamrock cheese. Serve with bun top on plate to appreciate your fun design.
