Saturday's Chili - Chipotle Vegetable Chili with Chocolate

This week's Saturday's Chili is Chipotle Vegetable Chili with Chocolate. 1 Serving (1Cup) is only 230 calories and 27 net carbs.


Chipotle Vegetable Chili with Chocolate

Ingredients:

2 tablespoons Extra Virgin Olive Oil
1 medium Onion, chopped
1 medium Green Bell Pepper, chopped
1 medium Red Bell Pepper, chopped
1 cup Frozen Corn
1 can (28 ounces) No salt added Diced Tomatoes
1 can (15 ounces) Bush's Reduced Sodium Black Beans, (Rinsed and Drained)
1 can (15 ounces) Bush's Reduced Sodium Pinto Beans, (Rinsed and Drained)
1 tablespoon Chili Powder
1 teaspoon Ground Smoked Cumin
1/2 teaspoon Chipotle Chili Powder
1 pinch of Rubbed Sage
1 ounce Semisweet Chocolate, chopped

Instructions:

1 - Heat Oil in a large skillet over medium high heat. Add Onion and Bell Peppers; cook and stir 4 minutes or until softened. Stir in Corn; cook 3 minutes. Remove to Crock Pot.

2 - Stir Tomatoes, Beans, Chili Powder, Cumin, Chipotle Chili Powder, and Sage into Crock Pot. Cover; cook on low 6-7 hours. Stir Chocolate into Crock Pot until melted.
