The Jennie - O Turkey Recipe of the Week - Turkey Satay

Turkey Satay

Ingredients
1 (24-ounce) package JENNIE-O® Savory Roast Turkey Breast Tenderloin
3 tablespoons low-sodium soy sauce
1 tablespoon brown sugar
2 tablespoons fresh lime juice
¼ cup creamy peanut butter
½ teaspoon crushed red pepper flakes
1 clove garlic, minced
1½ cups brown rice
2¼ cups water
¾ cup coconut milk
1½ teaspoons grated lime peel


Directions
Heat grill. Cut tenderloins into ½-inch thick strips. Thread turkey strips onto skewers. Meanwhile, combine soy sauce, brown sugar, lime juice, peanut butter, crushed red pepper flakes and garlic until combined and sugar has dissolved; set aside.

In saucepan, combine brown rice, water and coconut milk. Bring mixture to a boil. Reduce heat, cover and simmer 25 to 30 minutes or until liquid is absorbed and rice is tender. While rice is cooking, place turkey skewers on grill and cook, turning occasionally, 18 to 20 minutes or until turkey is well-done, 165°F as measured by a meat thermometer. To serve, stir grated lime peel into rice. Spoon rice onto platter and top with skewers. Serve with peanut sauce for dipping.

Tip: If using wooden skewers, soak in water at least 30 minutes before using.
