Turkey Enchilada Poblano Peppers
In this healthy take on a turkey enchilada recipe, we stuff everything into a roasted poblano pepper shell rather than tortillas to pack an extra serving of veggies into this meal. If you can't find poblano peppers, you can substitute green bell peppers instead.................


Squash-Stuffed Roasted Poblano Peppers
When fresh, poblanos have a wonderful, somewhat sweet heat that makes a terrific vessel for rich-tasting butternut squash stuffing. Accompanied by corn tortillas or rice and beans, this makes a special vegetarian entree. Most of the preparation can be done in advance and the recipe can easily be doubled. Look for dark green poblanos about 5 inches long, with broad shoulders at the stem, tapering to a pointy tip. Wash your hands thoroughly after removing the seeds or wear rubber gloves; most of the chile oils are found in the seeds and connective membranes....................

Vegetarian Chili with Brown Rice
Ingredients
1 teaspoon canola oil
Vegetarian Chili with Brown Rice
1 onion, chopped
1 green bell pepper, diced
1 red bell pepper, diced
1 stalk celery, diced
1 jalapeño pepper,* minced
1 clove garlic, minced
2 cups fat-free vegetable broth
1 can (about 14 ounces) no-salt-added diced tomatoes
1 cup cooked brown rice
1 cup no-salt-added canned pinto beans, rinsed and drained
1/2 teaspoon dried oregano
1/2 teaspoon chipotle chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground cumin
6 tablespoons shredded reduced-fat Cheddar cheese


Directions
Heat oil in large saucepan over medium-high heat. Add onion, bell peppers, celery, jalapeño, and garlic; cook and stir 7 minutes.

Add broth, tomatoes, rice, beans, oregano, chili powder, salt, black pepper, and cumin. Bring to a boil over high heat. Reduce heat to medium; cover and cook 15 minutes or until vegetables are tender. Uncover; cook 10 minutes or until thickened.

Ladle chili into bowls; top each serving with 1 tablespoon cheese.

*Jalapeño peppers can sting and irritate the skin, so wear rubber gloves when handling peppers and do not touch your eyes.

Yield: 6 servings. Serving size: 1 1/4 cups.

Diabetic Dish of the Week - Tortilla Soup

This week's Diabetic Dish of the Week is Tortilla Soup. A filling, delicious, Diabetic Friendly Tortilla Soup.

Tortilla Soup

Ingredients
9 cups low-sodium chicken broth
5 cloves roasted garlic
1/2 cup chopped tomatoes
1/2 yellow onion, chopped
2 fresh jalapeno peppers, seeds removed and sliced into rings
1 1/2 teaspoons dried oregano
1/2 yellow onion, sliced
2 cups shredded, cooked chicken meat
1 lime, juiced
6 (6 inch) corn tortillas, cut into strips and toasted for garnish

Directions
1 - In heavy pot, bring the broth to a boil. Add garlic, tomatoes, chopped onion, jalapeno, and oregano to the stocks. Simmer uncovered for 30 minutes.
2 - Broil the sliced onions until soft and a little brown. Add broiled onions, chicken, lime juice to soup, and simmer till chicken is heated.
3 - Place toasted tortilla strips in each bowl and pour soup over strips.

Island Turkey Tacos

INGREDIENTS

1 (24-ounce) package JENNIE-O® Savory Roast Turkey Breast Tenderloin
¼ cup brown sugar
1 tablespoon ground allspice
1 teaspoon red pepper flakes
½ teaspoon salt
½ teaspoon black pepper
¼ teaspoon ground cinnamon
¼ teaspoon ground cloves
¼ teaspoon ground cumin
2 cups canned pineapple tidbits, drained
¼ cup diced onion
¼ cup diced red bell pepper
2 tablespoons chopped cilantro
1 tablespoon diced jalapeño pepper
1 tablespoon lemon juice
10 whole grain tortillas


DIRECTIONS

1) Cook turkey tenderloin as specified on the package. Always cook to well-done 165°F as measured by a meat thermometer. While the tenderloin is cooking, make the jerk style seasoning mix and pineapple salsa.
2) To make jerk seasoning, in bowl combine brown sugar, allspice, red pepper flakes, salt and pepper, cinnamon, cloves and cumin.
3) To make salsa, in bowl combine pineapple, onion, red bell pepper, jalapeño pepper, cilantro and lemon juice.
4) Shred turkey tenderloin and add to jerk seasoning mix. Stir to combine. Fill tortilla with turkey mixture and top with pineapple salsa.

Always cook to an internal temperature of 165°F.
