One of America's Favorites - Muffin

A chocolate muffin

A muffin is an individual-sized, baked product. It can refer to two distinct items, a part-raised flatbread and a cupcake-like quickbread. The flatbread is of British or European derivation, and dates from at least the early 18th century, while the quickbread originated in North America during the 19th century. Both are common worldwide today.

Quickbread muffins (known in Britain as "American muffins" or simply as "muffins") originated in
Quickbread Muffin
the United States in the mid-19th century. The use of the term to describe what are essentially cup cakes or buns did not become common usage in Britain until the last decades of the 20th century on the back of the spread of coffee shops such as Starbucks. (There is lingering resistance in the UK to the term as being inapplicable to cakes.) They are similar to cupcakes in size and cooking methods, the main difference being that cupcakes tend to be sweet desserts using cake batter and which are often topped with sugar icing (American frosting). Muffins are available in both savoury varieties, such as cornmeal and cheese muffins, or sweet varieties such as blueberry, chocolate chip, lemon or banana flavours. They are often eaten as a breakfast food, often accompanied by coffee or tea. Fresh baked muffins are sold by bakeries, donut shops and some fast food restaurants and coffeehouses. Factory baked muffins are sold at grocery stores and convenience stores and are also served in some coffee shops and cafeterias.

Recipes for quick bread muffins are common in 19th-century American cookbooks. Recipes for yeast-based muffins, which were sometimes called "common muffins" or "wheat muffins" in 19th-century American cookbooks, can be found in much older cookbooks. In her Boston Cooking-School Cook Book, Fannie Farmer gave recipes for both types of muffins, both those that used yeast to raise the dough and those that used a quick bread method, using muffin rings to shape the English muffins. Farmer indicated that stove top "baking", as is done with yeast dough, was a useful method when baking in an oven was not practical.

Ham and Jam Crispbreads
Smørrebrød is the Danish name for open-face sandwiches served on rye. Eating fiber-rich rye crisps (or rye bread) at breakfast (instead of white bread) may help you feel satisfied longer and help keep blood sugar levels steady. This version features lingonberry jam (yes, the kind you find at IKEA), ham and chives.......

Artichoke and Egg Tartine
For a Mediterranean-inspired breakfast, serve up fried or poached eggs on top of sautéed artichokes and toast. If you can't find frozen, be sure to rinse canned artichoke hearts well—they're saltier than frozen. Serve with hot sauce on the side, if desired........

Whole-Grain Buttermilk Pancakes
This healthy whole-grain buttermilk pancake recipe uses 100% whole-wheat flour, heart-healthy canola oil and just a tablespoon of sugar. Compared to most store-bought mixes or a classic recipe, this recipe saves about 30 calories, 3 grams saturated fat and 4 grams total sugar per serving, plus you'll dish up 2 extra grams of fiber. If you want to experiment with different types of whole grains, replace up to ½ cup of the whole-wheat flour with cornmeal, oats and/or buckwheat flour. Or add extra fiber and omega-3s by adding up to 3 tablespoons of ground flaxseed or chia seeds..........

COFFEE FLOUR
Coffee flour is a food with a mission. Every year, billions of pounds of coffee fruit are discarded as a byproduct of coffee production. Instead of leaving the fruit to rot as waste, coffee flour was created to convert the leftover fruit into a tasty, nutritious flour that can be used for baking, cooking and making beverages. High in fiber, protein, and antioxidants, coffee flour is a non-GMO food that is naturally gluten-free. Not only is our coffee flour a perfectly versatile ingredient, it also helps create jobs for farmers and protect the environment.

Health Benefits of Coffee Flour
A one-tablespoon serving of coffee flour contains only 34 calories, yet packs a whole lot of nutrition! This small serving provides over five grams of dietary fiber, including soluble and insoluble fiber to support digestion. Coffee flour is extremely rich in potassium and iron. Depending on the serving size, it can also supplement your diet with a good source of protein and antioxidants. Plus, coffee flour is sodium-free, fat-free, gluten-free, paleo and vegan-friendly. Coffee flour has all your dietary bases covered!
