One of America's Favorites - Belgian Waffles

Belgian Waffle

In North America, Belgian waffles are a variety of waffle with a lighter batter, larger squares, and deeper pockets than ordinary American waffles. Belgian waffles were originally leavened with yeast, but baking powder is now often used.

In Belgium itself, there are several kinds of waffle, including the Brussels waffle and the Liège waffle.

In North America, they are often eaten as a breakfast food; toppings vary from whipped cream, confectioners sugar, soft fruit, and chocolate spread, to syrup and butter or margarine. They may also be served with vanilla ice cream and fresh fruit (such as strawberries) as a dessert.

Originally showcased in 1958 at Expo 58 in Brussels, Belgian waffles were introduced to North America by a Belgian named Walter Cleyman at the Century 21 Exposition in Seattle in 1962, and served with whipped cream and strawberries. The waffles were further popularized in the United States during the 1964 New York World's Fair at Flushing Meadows Park. The waffle was introduced by Maurice Vermersch of Brussels, Belgium, and was named the Bel-Gem Waffle. Largely based on a simplified recipe for the Brussels waffles, Vermersch decided to change the name upon observing that many Americans could not correctly identify Brussels as the capital of Belgium. These waffles were served with whipped cream and strawberries, and retailed for a dollar.

Kitchen Hints of the Day!

Waffles.........

* When making Waffles; If your waffle maker doesn't have a doneness indicator, watch the steam coming out of the unit as you cook. When the steam stops, lift the lid. The waffle should be done.
* Adding a little vanilla, ground cinnamon, or ground nutmeg to the mix. If your recipe doesn't call for it, just add it to the mix.

One of America's Favorites - Chicken and Waffles

Soul food style chicken and waffles, served with peaches and cream as dessert

Chicken and waffles refers to either of two American dishes – one from soul food, the other Pennsylvania Dutch – that combine chicken with waffles. It is served in certain specialty restaurants in the United States.

The best known chicken and waffle pairing comes from the American soul food tradition and uses fried chicken. The waffle is served as it would be at breakfast time, with condiments such as butter and syrup. This unusual combination of foods is beloved by many people who are influenced by traditions of soul food passed down from past generations of their families. This version of the dish is highly popular in Baltimore, Maryland, enough to become a well-known local custom.

The exact origins of this dish are unknown, although several theories about its origin exist. Waffles entered American cuisine in the 1600s with European colonists. The food's popularity saw a notable boost after 1789 with Thomas Jefferson's purchase of a waffle iron in France.

In the early 1800s, hotels and resorts outside Philadelphia served waffles with fried catfish. Such establishments also served other dishes like fried chicken, which gradually became the meat of choice due to catfish's limited, seasonal availability. Waffles served with chicken and gravy were noted as a common Sunday dish among the Pennsylvania Dutch by the 1860s. By the end of the 19th century, the dish was a symbol of Pennsylvania Dutch Country, brought on in part by its association with tourism.

In 1909, a Griswold's waffle iron advertisement promised, "You can attend a chicken and waffle supper right at home any time you have the notion if you are the owner of a Griswold's American Waffle Iron."

The traditional origin of the dish states that because African Americans in the South rarely had the
Chicken and waffles
opportunity to eat chicken and were more familiar with flapjacks or pancakes than with waffles, they considered the dish a delicacy. For decades, it remained "a special-occasion meal in African American families." However, other historians cite a scarcity of actual early-era evidence of the dish's existence in the South, and place the origin later, after the post-Civil War migration of Southern African-Americans to the North during the Reconstruction Era. The combination of chicken and waffles does not appear in early Southern cookbooks such as Mrs. Porter’s Southern Cookery Book, published in 1871 or in What Mrs. Fisher Knows About Old Southern Cooking, published in 1881 by former slave Abby Fisher. Fisher's cookbook is generally considered the first cookbook written by an African American. The lack of a recipe for the combination of chicken and waffles in Southern cookbooks from the era may suggest a later origin for the dish.

Whatever the case, many modern variants of the dish owe their origins to the meal as it was served in the African-American community in early 20th-century Harlem, New York. The dish was served as early as the 1930s in such Harlem locations as Tillie's Chicken Shack, Dickie Wells' jazz nightclub, and particularly the Wells Supper Club. Harlem-style chicken and waffles have been popular in Los Angeles since the 1970s due to the fame of former Harlem resident Herb Hudson's restaurant Roscoe's House of Chicken and Waffles, which has become known as a favorite of some Hollywood celebrities and been referenced in several movies.

One of America's Favorites - Eggo Waffles

Eggo is a brand of frozen waffles in the United States, Canada and Mexico, which is owned by the
Two Eggo toaster waffles with butter and syrup
Kellogg Company. Several varieties are available, including homestyle, miniature, blueberry, strawberry, vanilla bliss, brown sugar cinnamon, buttermilk, and chocolate chip.

Other than waffles, Eggo also produces a selection of pancakes, French toast, and egg and cheese breakfast sandwiches, of which varieties include ham or sausage.

By mid-June 2009, Eggo had a 73% share of the frozen waffle market in the United States.

Eggo waffles were invented in San Jose, California, by three brothers, Tony, Sam, and Frank Dorsa. In 1953, the Dorsa brothers introduced Eggo frozen waffles to supermarkets throughout the United States. Frozen waffles do not require a waffle iron to prepare.

When the Dorsas first introduced the product it was called "Froffles", a portmanteau of frozen waffles. However people started referring to them as "eggos" due to their eggy taste. The name caught on and the brothers began using the moniker in marketing. Eventually the name became synonymous with the product and, in 1955, the Dorsa brothers officially changed the name to "Eggo".

Along with frozen waffles, the Dorsa brothers also produced Eggo potato chips (and Golden Bear potato chips) and Eggo syrup. All of the products were produced at a sprawling plant and factory on Eggo Way in San Jose, CA, near the intersection of US101 and East Julian Street. The Dorsas were very involved in local community activities and donated extensively to school and community projects. For Halloween, instead of candy, Tony Dorsa would give out bags of Eggo potato chips to trick-or-treaters.

In 1968, as a means of diversification, the Kellogg Company purchased Eggo. Their advertising slogan—"L'eggo my Eggo"—is well known through their television commercials.

Kellogg's produced an Eggo brand breakfast cereal that was shaped to have the likeness of waffles. Flavors include Maple syrup and cinnamon toast.

In 2016, the Netflix series Stranger Things featured Eggo waffles as a key story theme bringing the brand to global attention beyond the countries where the brand is sold. In the show, they were the favorite food of the character Eleven.

Kitchen Hint of the Day!

Thank you to Paaty L. for sharing this hint, I've never heard of this one!...

Here's a trick to keep waffles from sticking to the waffle iron: Beat a teaspoon of white wine into the batter. You'll never taste the wine, but it will keep the batter from adhering to the hot surface.

Kitchen Hint of the Day!

When making Waffles do not over mix the batter, and do not re-mix before you cook it. You want a fluffy batter, so try not to deflate it with too much handling.

Kitchen Hint of the Day!

When cooking on the griddle, you'll get better results if you clean it between each batch of pancakes or whatever you happen to be making. Do this easily with course salt wrapped in a piece of cheesecloth. The salt will provide a light abrasive cleaning and won't harm the surface if you're gentle.
