APPLE OATMEAL RAISIN COOKIES
Ingredients
1-1/4 cups Equal Spoonful or Granulated *
1 cup unsweetened applesauce **
1/2 cup firmly packed brown sugar
6 tablespoons stick butter, softened
1 egg
1/3 cup 2% milk
2 teaspoons vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1-1/2 cups quick or old-fashioned oats, uncooked
1 cup raisins
*May substitute 30 packets Equal sweetener
** Apple butter may be substituted for the unsweetened applesauce for a slightly spicier version.
Directions
Combine Equal, applesauce, brown sugar, butter, egg, milk and vanilla. Mix with electric mixer until well blended. Stir in combined flour, baking soda, cinnamon, nutmeg and salt. Gradually mix in oats and raisins until well combined.
Drop by tablespoonfuls onto sprayed baking sheets. Bake in preheated 350F oven 10 to 12 minutes or until light golden in color. Remove from baking sheet and cool completely on wire rack.
Store in airtight containers at room temperature.

"Meatless Monday" Recipe of the Week - APPLESAUCE BROWNIES
This week's "Meatless Monday" Recipe of the Week is - APPLESAUCE BROWNIES. Have a Dessert for today's recipe, APPLESAUCE BROWNIES. Made with unsweetened applesauce and unsweetened cocoa powder. APPLESAUCE BROWNIES
Ingredients

1/3 cup vegetable oil
1/2 cup unsweetened applesauce
1/2 cup unsweetened cocoa powder
1/2 cup sugar
1 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
2 large eggs
1 tsp vanilla extract
1/4 cup chopped nuts
Directions
Preheat oven to 375 F.
Combine oil, applesauce and cocoa. Add sugar and stir until dissolved. Add eggs and vanilla. Mix dry ingredients together and stir into the mixture.
Pour the batter into a greased and floured (or wax paper lined & sprayed) 9 inch square pan. Sprinkle on nuts (optional).
Bake about 20 to 30 minutes or until top is set but edges are not dried out. Toothpick will come out clean. Cut into 16 or 24 squares.

Cinnamon Swirl Coffee Cake
Thanks to Jackie for passing this one along, Cinnamon Swirl Coffee Cake. She said it's a Splenda recipe and she got it from her Mom. It's around 200 calories and 27 carbs per serving.
Cinnamon Swirl Coffee Cake
Ingredients:
Cake Batter:
3 cups cake flour
1 tablespoon baking powder
3/4 teaspoon baking soda
1/2 cup butter, Blue Bonnet Light Stick Butter
1 1/3 cups Splenda No Calorie Sweetener, Granulated
1 large egg
1/4 cup egg substitute
2 teaspoons vanilla extract
1/2 cup chopped walnuts, toasted
1/2 cup unsweetened applesauce
1 1/2 cups light sour cream - divided use
Filling:
3 tablespoons brown sugar
1 teaspoon ground cinnamon
Directions:
Preheat oven to 350°F (175°C). Spray a nonstick bundt pan with cooking spray. Set aside.
Sift cake flour, baking powder, and baking soda into a medium-sized mixing bowl; set aside. In a large mixing bowl, cream the butter with an electric mixer. Add Splenda Granulated Sweetener and egg. Beat until smooth. Add the egg substitute and vanilla. Beat briefly to incorporate. Add applesauce and half of the sour cream. Beat until smooth. Add the sifted flour mixture and beat at medium speed just until smooth. Add 1/2 cup chopped walnuts, toasted, and remaining sour cream and blend just until incorporated and batter is uniform. Set aside.
Make Filling: Place 1/4 of cake batter in a small bowl. Add brown sugar and cinnamon. Stir well.
Place 1/2 of the remaining cake batter into prepared pan. Top with filling. Swirl with knife. Top with remaining batter.
Bake 50 to 60 minutes or until a toothpick inserted near the center comes out clean.
Makes 16 servings.

Simple Applesauce
Apple Sauce with a hint of Cinnamon and Nut Meg, and real easy to prepare! Plus it's another Diabetic Friendly recipe!
Simple Applesauce
Ingredients:
3 pounds Apples - peeled, cored and chopped
3 cups Water
1/4 cup Splenda No Calorie Sweetener, Granulated
1 tablespoon Lemon Juice
1/4 teaspoon Ground Nut Meg
1 teaspoon Ground Cinnamon
Directions:
Place apples in a large saucepan and just barely cover with water. Simmer over medium-low heat until apples are tender, 15 to 20 minutes.
Run cooked apples through a food mill or blender. Stir in the SPLENDA® Granulated Sweetener, lemon juice, cinnamon, nut meg. Cook over medium heat for about 3 to 5 minutes.
Makes 8 servings.
