Kitchen Hint of the Day!

 How to freeze blueberries......

* Use fresh blueberries that are completely dry when you pop them in the freezer. Don’t worry about rinsing the berries before you freeze them; simply place them, still in their original containers, in resealable plastic bags and store them on your freezer shelf.
* If you prefer to rinse the blueberries first, dry them well with paper towels, then transfer them to freezer containers or resealable plastic bags for freezing. The blueberries will freeze individually so you can remove just the portion you need.
* If you didn’t wash your blueberries before freezing them, rinse them just before use.
For best results, toss your home-frozen blueberries into oatmeal, yogurt, smoothies, shakes or sauces within 10 months.

SUGAR FREE BLUEBERRY BANNOCK
Bannock is a flat quick bread that is often cut into wedges, like scones. This is a whole-wheat, baked version of a traditional Aboriginal recipe. Canola oil helps produce a light and tender crumb for this blueberry bannock recipe.

Recipe Yield: 8

Ingredients

1 cup whole-wheat flour (250 mL)
1 cup all-purpose flour (250 mL)
3/4 cup fresh or frozen blueberries (175 mL)
2 Tbsp baking powder (30 mL)

1 Tbsp canola oil (15 mL)

Directions
1 - Preheat oven to 400F (200C).
2 - In bowl, combine flours, blueberries, baking powder, cinnamon and salt.
3 - Stir in milk, water and canola oil and, using hands, moisten all ingredients, handling dough as little as possible.
4 - Turn dough out of bowl and place on lightly floured surface.
5 - Using hands, form disc about 1/2-inch (1-cm) thick and about 9-10 inches (22-25 cm) in diameter. If necessary, sprinkle with flour to keep dough from sticking. Cut into 8 wedges.

Kitchen Hint of the Day!

Buying Blueberries.......

When you buy fresh blueberries, look for berries that are firm, dry, plump and smooth-skinned, with a silvery surface bloom and no leaves or stems. Size isn’t an indicator of maturity but color is – berries should be deep purple-blue to blue-black.

Refrigerate fresh blueberries when you get them home, either in their original plastic pack or in a covered bowl or container. Be sure to wash your blueberries just before you start snacking, and eat them within 10 days of purchase.
