Cumin Spiced Pork Tenderloin Fillet w/ Golden Hominy and Cut Green Beans

Dinner Tonight: Cumin Spiced Pork Tenderloin Fillet w/ Golden Hominy and Cut Green Beans







To start my morning off toasted a couple Nutri Grain Eggos and had a cup of Bigelow Decaf Green Tea. 60 degrees and cloudy out today. Did some light cleaning around the house and then a load of laundry. Later on got the Hand-Vac out vacuumed my car insides and the got Mom's car for her and cleaned the windows inside and out on both cars. That was about it for the day. For Dinner tonight I prepared a Cumin Spiced Pork Tenderloin Fillet w/ Golden Hominy and Cut Green Beans.




I had no clue what to have for Dinner so I did some digging into the freezer. I came across a Meijer Pork Tenderloin Fillet  and I had my Dinner, Cumin Spiced Pork Tenderloin. I sat it in the fridge to thaw overnight.To make the dish I’ll need; 1 tablespoon Extra Virgin Olive Oil, 1 pork Tenderloin, 1
tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. From the stove to the oven; Bake at 400° for 10 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter or dish and let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! This is my favorite Pork Recipe by far!

For one side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy.
For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish!



Then I also heated up a can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and
heat until heated through. I just love Green Beans, all Beans! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Diet Peach Snapple to drink.












Pork Facts….
One serving of pork is 3 ounces, or about the size of a deck of cards, according to the National Heart, Lung and Blood Institute. An image of the portion size is important because a thick pork chop can be
twice that size and without realizing it you can eat double the calories. You’ll get 137 calories and 4 grams of fat from a 3-ounce pork chop. Pork is similar to chicken, with 3 ounces of chicken breast containing 140 calories and 3 grams of fat. A pork chop has 65 milligrams of cholesterol, compared to 72 grams in chicken breast, but they both have just 1 gram of saturated fat.

Diabetic Dish of the Week - PORK TENDERLOIN FAJITAS

PORK TENDERLOIN FAJITAS

Ingredients

4 pork tenderloins, (about 3 1/2 to 4 1/2 pounds total)
12 ounces fajita marinade, (1 1/2 cups)

Directions

1 - Place tenderloins in large self-sealing bag; pour marinade over. Seal bag and refrigerate for 2 to 24 hours.
2 - Heat oven to 450 degrees F. Remove tenderloins from marinade (discard remaining marinade), pat dry and place in shallow roasting pan. Roast tenderloins for 20-25 minutes, until internal temperature (measured with a meat thermometer) is 160 degrees F. Remove from oven, slice enough to serve. (One tenderloin serves 3 to 4.)
Wrap and refrigerate leftovers up to three days.
NOTES:
Have warm flour tortillas, sauteed onions and bell peppers and salsa available for your table.

One of America's Favorites - Pork Tenderloin Sandwich

Pork tenderloin sandwich (large)

The pork tenderloin sandwich contains a breaded and fried cutlet similar to the Wiener Schnitzel and is popular in the Midwest region of the United States, especially in the state of Indiana. The sandwich can first be traced back to the Nick's Kitchen restaurant in Huntington, Indiana (near Fort Wayne).

The primary differences between a Pork Tenderloin sandwich and a Wiener Schnitzel are that the Pork Tenderloin sandwich is made exclusively using pork loin and it is deep fried instead of pan fried. The Pork Tenderloin sandwich is also usually served on a bun. There is a grilled variant of the Pork Tenderloin that omits the breading and grills the tenderloin instead of deep frying it.

A Pork Tenderloin sandwich is traditionally prepared from a thinly sliced piece of pork tenderloin, hammered thin with a meat mallet. The meat is then dipped in flour, eggs and breadcrumbs or crushed saltine crackers before being deep fried in oil. After cooking, the prepared Pork Tenderloin is then served on a hamburger bun, with the meat overlapping the bun considerably. The sandwich can be served with condiments such as mustard, lettuce, onions, pickles, and mayonnaise.

The sandwich is usually served with a side of french fries, though onion rings are often provided instead.

The primary variant of the prepared pork tenderloin is a grilled prepared pork tenderloin. This is a healthier variation as the pork is grilled instead of fried. The meat is seasoned or marinated and then placed on a grill. After cooking, the meat is placed on a hamburger bun and topped with condiments.

Dinner Tonight: Leftovers; Cumin Spiced Pork Tenderloin w/ Slow Cooker Parmesan Potatoes and Green Beans




For Breakfast this morning I prepared a Chicken Sausage Patty Breakfast Sandwich. I toasted a Healthy Life Multi Grain English Muffin, heated up a al fresco Country Style Chicken Sausage Patty,
and topped it with a 1/2 slice of Kraft Deli Deluxe Sharp Cheddar Cheese. Love these Breakfast Sandwiches! Also I had my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to Meijer for a couple of items. Then stopped by McDonald's to pick up Breakfast for Mom. Did some things around the house, inside and outside. For Dinner tonight Leftovers; I reheated the Cumin Spiced Pork Tenderloin w/ Slow Cooker Parmesan Potatoes and Green Beans.

That Pork Tenderloin was so delicious last night I wasn't about to let it go to waste! So I reheated everything and I had Dinner! I've the original post from last night for description, instructions, ans pictures. Till tomorrow!


I purchased the Pork Tenderloin from Kroger yesterday, a small one at just over 1 lb. To make the dish I’ll need; 1 tablespoon Extra Virgin Olive Oil, 1 pork Tenderloin, 1 tbsp Roasted Cumin, 1 tsp
Garlic Powder, 1 tsp Cumin Spiced Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. From the stove to the oven; Bake at 400° for 10 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter or dish and let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist!




I prepared a Potato Recipe that I had not had in a while, Slow Cooker Parmesan Potatoes. Got the
idea from several similar recipes. I’ll need; 1 pound Baby Gold Potatoes (halved), 1⁄4 cup Water, 2 tablespoons Extra Light Olive Oil, 2 tablespoons Blue Bonnet Light Butter, 1/2 teaspoon dried Oregano, 1/2 teaspoon dried Basil, 1/2 teaspoon dried Dill, Sea Salt and freshly Ground Black Pepper (to taste), 1/4 cup Kraft Reduced Fat Grated Parmesan, and 2 tablespoons chopped fresh Parsley leaves.







I also cooked some more fresh Green Beans. Mom went Jungle Jim's International Market and bought them. I love beans, but they are even better when fresh. I also baked a loaf of RiverRoad Bake House Garlic Oval Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn. I had an Ice- Water to drink.









SLOW COOKER PARMESAN POTATOES

INGREDIENTS:

1 pound Baby Gold Potatoes, halved
1⁄4 cup Water
2 tablespoons Extra Light Olive Oil
2 tablespoons Blue Bonnet Light Butter
1/2 teaspoon dried Oregano
1/2 teaspoon dried Basil
1/2 teaspoon dried Dill
Sea Salt and freshly Ground Black Pepper, to taste
1/4 cup Kraft Reduced Fat Grated Parmesan
2 tablespoons chopped fresh Parsley leaves

DIRECTIONS:
1 – Line your Slow Cooker or Crock Pot with a disposable plastic liner. Lightly coat the plastic liner with nonstick spray. Add water. Place potatoes, olive oil, butter, oregano, basil and dill into the slow cooker; season with salt and pepper, to taste.
2 – Cover and cook on low heat for 4-5 hours or high heat for 2-3 hours, or until tender.*
3 – Serve immediately, sprinkled with Parmesan and garnished with parsley, if desired.

I had a Poached Egg and a toasted slice of Aunt Millie’s Light Whole Grain Bread. Also had a cup of Bigelow Decaf Green Tea. Mostly cloudy and 73 degrees out today, but no rain! Did a little yard work. Got the leaf blower out and cleaned off the deck and driveway areas. Then swept the shed out and straightened it up. For Dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Slow Cooker Parmesan Potatoes and Green Beans.

I had a Scrambled Egg and a toasted slice of Aunt Millie's Light Whole Grain Bread. I topped the Egg with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheese. Also had a cup of Bigelow Decaf Green Tea. I'm not sure but I may be coming down with a cold, a Summer cold (blah). Hopefully I'll be up and feeling better by tomorrow. I went to Walgreen's and picked up something to take in case it is a cold. After that a day of bed rest! For Dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Slow Cooker Parmesan Potatoes and Green Beans.

Cumin, 1 tsp Garlic Powder, 1 tsp Cumin Spiced Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. From the stove to the oven; Bake at 400° for 10 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter or dish and let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! The other “White Meat” sure is good!





Tried a new Potato Recipe, Slow Cooker Parmesan Potatoes. Got the idea from several similar recipes. I'll need; 1 pound Baby Gold Potatoes (halved), 1⁄4 cup Water, 2 tablespoons Extra Light Olive Oil, 2 tablespoons Blue Bonnet Light Butter, 1/2 teaspoon dried Oregano, 1/2 teaspoon dried Basil, 1/2 teaspoon dried Dill, Sea Salt and freshly Ground Black Pepper (to taste), 1/4 cup Kraft Reduced Fat Grated Parmesan, and 2 tablespoons chopped fresh Parsley leaves.



To prepare them; Line your Slow Cooker or Crock Pot with a disposable plastic liner. Lightly coat the
plastic liner with nonstick spray. Add water. Place potatoes, olive oil, butter, oregano, basil and dill into the slow cooker; season with salt and pepper, to taste. Cover and cook on low heat for 4-5 hours, you can also cook them on high heat for 2-3 hours. When they are fork tender serve them immediately, sprinkle with Parmesan and garnished with parsley. These came out incredible, another one of those Keeper Recipes! Plus easy clean up using the slow cooker liners.









I also cooked some more of the fresh Green Beans. I love beans, but they are even better when fresh. I also baked a loaf of Pillsbury French Bread. For Dessert later a bowl of Skinny Pop - Pop Corn and a can of Coke Zero to drink.    










SLOW COOKER PARMESAN POTATOES

INGREDIENTS:

1 pound Baby Gold Potatoes, halved
1⁄4 cup Water
2 tablespoons Extra Light Olive Oil
2 tablespoons Blue Bonnet Light Butter
1/2 teaspoon dried Oregano
1/2 teaspoon dried Basil
1/2 teaspoon dried Dill
Sea Salt and freshly Ground Black Pepper, to taste
1/4 cup Kraft Reduced Fat Grated Parmesan
2 tablespoons chopped fresh Parsley leaves

DIRECTIONS:
1 - Line your Slow Cooker or Crock Pot with a disposable plastic liner. Lightly coat the plastic liner with nonstick spray. Add water. Place potatoes, olive oil, butter, oregano, basil and dill into the slow cooker; season with salt and pepper, to taste.
2 - Cover and cook on low heat for 4-5 hours or high heat for 2-3 hours, or until tender.*
3 - Serve immediately, sprinkled with Parmesan and garnished with parsley, if desired.

Ginger Grilled Tenderloin

Fresh ginger always wakes up tired palates. This Oriental-inspired marinade gives pork tenderloin a new attitude on the grill, and makes this dish perfect for an after-work dinner party or for family supper.

Ingredients

2 pork tenderloin, (about 1 1/2 pounds total)
2 cups chicken broth
4 tablespoons ginger, grated
2 tablespoons soy sauce
2 tablespoons sesame oil
2 cloves garlic, minced

Directions

1 - Combine all ingredients in a self-sealing plastic bag; seal bag and refrigerate 2-24 hours.
2 - Remove tenderloins from marinade; discarding marinade. Grill tenderloins over medium-hot coals, turning occasionally, for 15-20 minutes, until thermometer inserted reads 160 degrees F. Slice to serve.

Dinner Tonight: Cumin Spiced Pork Tenderloin w/ Cut Green Beans and Potatoes, Sliced Carrots, and French Bread






Starting off another post by sending prayers to all those that lost their lives and the many injured over in Nice, France. Another senseless attack on the Human Race. It's time this Country rallies the World against these terrorist! Again my thoughts and prayers go out to all those affected.


For Breakfast I toasted a Healthy Life Whole Grain English Muffin, topped with just a dab of I Can't Believe It's Not Butter. Then I heated some Boar's Head Branded Deluxe Ham in a large skillet. As
the Ham was heating up I Scrambled some Egg Beater's Egg White. Topped the Ham and Egg off with a sprinkle of Sargento Reduced Calorie Shredded Sharp Cheddar. Fantastic, and healthy, way to start the day! It's somewhat cooler out, 84 degrees, but still humid with passing showers. Did a load of laundry for Mom and we had to have Dad at his Family Doctor for a check-up. Everything seemed to be good so it was back home. For Dinner tonight Spiced Pork Tenderloin w/ Cut Green Beans and Potatoes, Sliced Carrots, and French Bread.
                                                                                                           

I purchased the Simple Truth Pork Tenderloin from Kroger yesterday, a small one at just over 1 lb. To make the dish I’ll need; 1 tablespoon Extra Virgin Olive Oil, 1 pork Tenderloin, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian
Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. From the stove to the oven; Bake at 400° for 10 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter or dish and let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! The other "White Meat" sure is good!

For one side dish I heated up a can of Del Monte Cut Green Beans and Potatoes. I really like using
the Del Monte Cut Green Beans and New Potatoes, contains 2 of my favorite vegetables (Green Beans and Potatoes). I also heated up a can of Del Monte Sliced Carrots. Another canned Vegetable that’s as good as fresh. Growing up I wouldn’t look at a Carrot, now I could have them every day! I also baked a loaf of Pillsbury French Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Wow, some weather we had in the past day! Yesterday started off windy but by Noon it was a strong
wind around 40 mph. By 2:00 the winds were 50-60 mph. and that's when things started going bad. We kept our power, but a brief flicker, but some finer optic lines came down across  I - 75 which blocked the interstate for about 4 hours and we lost our internet service. Ours was down from around 2:00 till well after Midnight. Some of our neighbors lost their internet, cable tv, and phone service. They have the Time Warner Bundle which you have service for all 3 items. I never did like that for that very reason that happened, one goes and you lose everything. I have internet service through them but have DirectTV and phone service through Cincinnati Bell. It was only 28 degrees this morning and went up to around 50 degrees, but sunny out and just a light breeze. Had to do some cleaning outside, a lot of tree limbs, leaves, and debris scattered about. So anyway for dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Mashed Potatoes and Cut Italian Green Beans.

For one side I heated some Bob Evan’s Mashed Potatoes. Microwave for a total of 6 minutes and done. Then for another side dish I heated a can of Allens Cut Italian Green Beans. To prepare them
just empty the can into a small sauce pan and simmer until heated. Just season with a bit of Sea Salt and it’s ready! I could have Beans every day and never get tired of having them. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

Tuscan Seasoned Pork Medallions w/ Cut Italian Beans, Whole Potatoes, and..

Dinner Tonight: Tuscan Seasoned Pork Medallions w/ Cut Italian Beans, Whole Potatoes, Baked Italian Loaf Bread




Went out to get the morning papers early this morning and it was really windy out and a lot cooler than it's been. For Breakfast I toasted a Healthy Life Whole Grain English Muffin that I topped with some Smucker's Sugarless Blackberry Jam. I love the Smucker's Sugarless Jams. There's no difference in taste but fewer calories and carbs. I've even got Mom and Dad using them now. Did some cleaning around the house and took my Hoveround outside and gave it a good cleaning, it's a dust magnet under the seat and around the batteries. For dinner tonight I prepared a Tuscan Seasoned Pork Medallions w/ Cut Italian Beans, Whole Potatoes, and Baked Italian Loaf Bread.






While at Costco a while back I came across a package of Tuscan Seasoned Pork Loin Medallions. it was a good size package with 24 slices. I kept 4 slices out and froze the remaining 20 pieces. Prepared 4 of them and they were excellent and couldn't wait to have them again! So I got a bag of 4 medallions out and let them thaw in the fridge overnight.





I started by preheating the oven on 400 degrees. To prepare them I used a Cast Iron Skillet. Sprayed it
with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil and heated it on medium heat. I
then lightly Salted the Pork with Sea Salt and a sprinkle of McCormick Dried Parsley. Added the Pork to the skillet and cooked it for 2 minutes a side, just started to brown. Then from the stove to the oven, love Cast Iron Skillets! I then baked them to a medium rare, 145 degrees in the center of the medallions using a meat thermometer. Pork Tenderloin is one of my favorites. The Pork was so tender and flavorful. Seasoned just right and very moist. I'll have to buy another package next visit to Costco!






Then for one side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty
the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! I could have Beans every day and never get tired of having them.











Then for another side dish I heated up a can of Kroger Whole New Potatoes. Just heat and serve,
seasoned with McCormick Grinder Sea Salt and Black Peppercorn Medley, Parsley, and I Can’t Believe It’s Not Butter. I also baked a loaf of Pillsbury Italian Loaf Bread. For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

Not quite as cold this morning, sunny and about 27 degrees. For Breakfast I scrambled a couple of
medium size Eggs and toasted a couple of slices of Healthy Life Whole Grain Bread. After Breakfast I helped Mom out with a couple of loads of laundry and did a little house work. About Noon or so a friend of mine came over and helped replace the hard drive on my computer. Bit of a pain, had to transfer all the files to the new hard drive and reinstall Windows. When I bought the computer it came with Windows 7 already installed so I had to purchase a Windows 7 disc to reinstall. If this happens again I think I'll just buy a new computer! Anyway long afternoon, thankfully I had help. For dinner tonight I prepared Tuscan Seasoned Pork Medallions w/ Roasted Fingerling Potatoes and Cut Italian Beans.

I then backed them to a medium rare, 145 degrees in the center of the medallions using a meat thermometer. Pork Tenderloin is one of my favorites and this one ranked way up the chart! The Pork was tender and flavorful. Seasoned just right and very moist. Can't wait to prepare the other pieces in the fridge!




For a side I had some Fingerling Potatoes left so I used them tonight, prepared Roasted Fingerling
Potatoes. Started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, Parsley, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Still can’t figure out why it’s so hard to find Fingerling Potatoes in this area, only 1 store around here locally that sells them (Thank you Jungle Jim’s).






Then for one side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty
the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! I could have Beans every day and never get tired of having them.








Oven-Roasted Fingerling Potato Fries

Ingredients:

Fingerling Potatoes
Extra Virgin Olive Oil
Garlic Powder
Sea Salt
Pepper
Chili Powder
Kraft Reduced Fat Parmesan Grated Cheese
Directions:

1.) Thoroughly clean and scrub the potatoes.

2.) Cut the potatoes in half and add to a large mixing bowl.

3.) Add the olive oil. I used about 1 tablespoon, but this will vary by how many potatoes you use. Just use enough oil to give the potatoes a nice coat. Add your seasonings.

4.) Put on a baking sheet and sprinkle with the Parmesan Grated Cheese

5.) Roast in the oven for 25-35 minutes at 450 degrees. The potatoes should be tender in the middle when done.
