Diabetic Dish of the Week - Slow Cooker Meat Loaf

For this week's Diabetic Dish of the Week it's a Slow Cooker Meat Loaf. You can use Jennie - O Ground Turkey or Ground Beef, to make it healthier go with Jennie - O. Also save on calories and carbs by using Egg Beaters in place of Eggs and replacing the Brown Sugar with Splenda Brown Sugar. Cut them where you can! Below is the original recipe, enjoy!


Slow Cooker Meat Loaf

Ingredients

1 1/2 lbs. Extra Lean Ground Beef
1/4 cup Fat Free Skim Milk
1/ cup Fine plain Dry Bread Crumbs
2 Eggs beaten
2 tablespoons minced Onions
3/4 teaspoon salt
1/2 teaspoon Ground sage
1/2 cup Ketchup
2 tablespoons packed Brown Sugar
1 teaspoon Dry Mustard

Directions

1 - Combine Beef, Milk, Bread Crumbs, Eggs, Onion, salt, and Sage in large bowl; shape into ball. I always use Crock Pot Liners when using my Crock Pot, sprayed with Pam Cooking Spray.  Place in the Crock Pot Slow Cooker. Cover, cook on low 5-6 hours.
2 - Set the Crock Pot on high. Combine Ketchup, Brown Sugar, and Mustard in small bowl. Pour over Meat Loaf in the Crock Pot. Cover and cook on high for 15 minutes. Cut the Meat Loaf evenly into 6 slices.


Here's a handy little Crock Pot cooking hint - To remove Meat Loaf when done, line crock with wide strip of aluminum foil, coming up sides of crock. Then lift out by the strips. Works great when making Crock Pot Ribs also!

Cheesy Italian Shells w/ Baked Cheese Bread

Dinner Tonight: Cheesy Italian Shells w/ Baked Cheese Bread



Well it's back to our humid and rainy pattern. Rain on and off since last night, and the
humidity has returned! 90's, humid and rain all week, but at least we had a run of 3 days of beautiful Summer days. Not much going on outside today so inside I did a load of laundry for Mom and then cleaned the house today. For dinner tonight I tried a new item, Hamburger Helper Cheesy Italian Shells. I prepared Cheesy Italian Shells w/ Baked Cheese Bread




I purchased a box of Betty Crocker Hamburger Helper - Cheesy Italian Shells at Kroger the
other day. Then while at Meijer that same day I purchased a package of Jennie - O Ground Turkey, and I have the perfect pairing! Hamburger Helper becomes Turkey Helper. The Helper box contains the  Cheesy Italian Shells pasta and hearty Italian-style sauce mix. I added 1 lb. package of Jennie - O Ground Turkey, 1 1/3 cups Water, and 1 3/4 cups 2% Milk. Plus it's a pan meal, easy clean up!


To prepare it; in a medium-sized skillet, sprayed with Pam Cooking Spray and 1 tablespoon
of Extra Virgin Olive Oil, I added the Ground Turkey and cooked until no longer pink. Then stirred in the Hot Water, Milk, Sauce Mix, and Pasta. Heated it until it started to boil and Reduced the heat. Covered it and  let it simmer for 25 minutes, stirring it often. Removed it from the heat and let cool for about 3 minutes and served. A fantastic combo, Hamburger Helper Cheesy Italian Shells and Jennie - O Ground Turkey! I t all creates a Cheesy, well seasoned, Pasta and Turkey dish. I always try to substitute Ground Beef with Jennie - O Ground Turkey or Extra Lean Ground Turkey Breast. By using the Ground Turkey you cut calories, carbs, and fat. Plenty leftover for lunch tomorrow.


I also baked some Cheese Bread. Took 2 slices of Klosterman Wheat Bread and topped it
with a bit of I Can't Believe It's Not Butter. Then I added Sargento Shredded Reduced Fat Mozzarella and topped it all with a sprinkle of Kraft Reduced Fat Grated Parmesan Cheese. Had the oven preheated on 400 degrees, Put the 2 slices on a small cookie sheet and baked them until the Bread was toasted and the Cheese melted. An easy prepared Cheese bread, goes great with Italian Dishes and all Pasta Dishes. For dessert later a bowl of Del Monte Sliced Peaches.

Directions: 
1. Brown Ground Beef In 10-Inch Skillet, Drain; 2. Stir In Hot Water, Milk, Sauce Mix & Uncooked Pasta, Heat to Boiling Stirring Occasionally; 3. Reduce Heat, Cover & Simmer About 25 Minutes Stirring Occasionally, Until Pasta Is Tender. Remove from Heat & Uncover (Sauce Will Thicken As It Stands).

Italian Turkey Burgers

A friend of mine passed this one along to me yesterday, just thought I would share it with everyone!


Italian Turkey Burgers


Ingredients:

1 pound Jennie - O Extra Lean Ground Turkey Breast
2 tablespoons chopped fresh Basil Leaves
1 teaspoon Hungarian Paprika
1 teaspoon Rubbed Sage
1 teaspoon minced garlic
1/2 teaspoon Sea Salt
1/4 teaspoon Ground Black Pepper
4 slices Sargento Ultra Thin Mozzarella Cheese
4 Aunt Millie's Reduced Calorie Whole Grain Hamburger Buns
2 Roma Tomatoes, sliced
Lettuce and sliced Onion; optional

Directions:

Prepare grill; heat until coals are ash white.
Meanwhile, combine ground turkey, basil, paprika, garlic, salt and pepper in medium bowl. Shape into 4 (14-inch thick) patties.
Place patties on grill. Grill, turning once, until cooked through (12 to 15 minutes). Top each burger with 1 slice cheese; continue grilling until cheese is melted (1 minute).
To serve, place burgers on buns; top with tomatoes.
Makes 4 servings.

We missed the damaging part of the storm that moved through the region. Got a lot of heavy rain with some strong winds from time to time. The rain did get rid of most of our snow that was left though. I actually think it's more windy today than overnight. Went to Kroger to pick up a few items and was heading home on I-75 and it was struggle for everyone driving as the winds were very high. For dinner tonight, one of my favorites, Taco Night! Black Bean and Jennie - O Turkey Tacos with the new Ortega Fiesta Flats.







As usual when it's Turkey Tacos it's Jennie -O Ground Turkey! Love the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I had drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos, added flavor and protein. Mixed well until everything was coated and then simmered another 5 minutes until heated through. The Black Bean and Ground Turkey mix is a perfect one for Tacos, they complement each other very well.







For my other toppings I used 1 small can of Mario Sliced Black Olives, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Dean's Guacamole, Old El Paso Taco Sauce, and all in a Ortega Fiesta Flats. I love Taco Nights! You can have so many different types of Tacos with so many different toppings, just endless options for dinner. First time we tried the New Ortega Fiesta Flats. They make a nice option to the regular Taco Shell. Their 150 calories and 17 net carbs per serving, 2 Shells make a serving. They're nice size, so you can load them up with healthy toppings. Another plus is they seem to hold their shapes, even after a couple of bites. I'll keep box of these in the pantry. For dessert later a Weight Watchers  Mini Ice Cream Cone.
