Quick Mexican Recipes

From the EatingWell website its Quick Mexican Recipes. Lightened up Mexican recipes that include; Coctel de Camarones, Tijuana Torta, and Steak Burritos. Find them all at the EatingWell website along with all the other delicious and healthy recipes. http://www.eatingwell.com/

Quick Mexican Recipes

Healthier Mexican favorites ready in 30 minutes or less.
We love the zesty flavor of traditional Mexican food, but Mexican recipes can often be loaded with hidden calories, fat and sodium. Our lighter recipes for Mexican favorites, such as burritos, guacamole, huevos rancheros, fajitas, margaritas and more, are healthier Mexican meals full of fiber-rich vegetables, lean meats and spicy sauces. Whip up one of these fresh and healthy Mexican recipes and have a healthy side dish, dinner or drink ready in under 30 minutes.

Coctel de Camarones
This classic Mexican shrimp cocktail is usually served as a starter, but makes a quick, refreshing main dish on a busy night. Add some of your favorite hot sauce for extra kick. You can eat it immediately or chill it for up to 4 hours if you prefer it colder. Serve with: Warm corn tortillas or cheese quesadillas and your favorite hot sauce......

Steak Burritos
Here’s a burrito inspired by San Francisco’s super burritos that come packed with meat, beans, rice, cheese, guacamole and salsa. We’ve kept this home-style version a bit simpler to make and a whole lot healthier with brown rice, whole-wheat tortillas and a more reasonable serving size. We recommend wrapping it in foil—the traditional way to serve it—so you can pick the burrito up and eat it without it falling apart, peeling back the foil as you go. Serve with a cold beer and vinegar-dressed slaw........

Tijuana Torta
A Mexican-style torta is just like a burrito, except the “wrapper” is a hollowed-out roll instead of a tortilla. Here it's filled with mashed spiced black beans and a quick guacamole. Take this vegetarian version to another level (and add calcium) by melting Monterey Jack cheese onto the bean side of the sandwich. Serve with: Grilled corn on the cob or Spanish rice.......

Easy Mexican Food Favorites

From the EatingWell website its Easy Mexican Food Favorites. You'll find Baja-Battered Fish, Black Bean and Salmon Tostadas, and Chilaquiles Casserole are just 3 of the recipes you'll find! It's all on the EatingWell website along with all the other healthy and delicious recipes. http://www.eatingwell.com/

Easy Mexican Food Favorites

Taco recipes, fajita recipes, tostadas recipes and more easy Mexican food recipes.
We love Mexican meals, but often the differences between going out for Mexican food and cooking at home are extra calories, fat and salt. You don’t need so much of the ingredients that give Mexican food an unhealthy rap, such as sour cream and cheese, when the key ingredients that make Mexican naturally healthy—beans, rice, salsa, avocados—are so delicious. Plus you may already have some of these ingredients stocked in your pantry (or should!). Whip up a fresh and healthy Mexican meal easily with these tostadas recipes, taco recipes, fajita recipes and more healthy Mexican recipes.

Baja-Battered Fish
You may not think of fish as a taco ingredient, but the Mexican-inspired fish-taco craze is beginning to spread. Once you've had one, you'll understand. This recipe is a healthful version of the battered, deep-fried and crispy fish at Rossy's Tacos in Baja California.....

Black Bean & Salmon Tostadas
Pickled jalapeños, cilantro and avocado perk up convenient canned salmon for a quick tostada topping. Skip store-bought and make your own crispy shells in the oven. Serve with: Brown rice cooked with diced tomatoes and onions or salsa........

Chilaquiles Casserole
Our version of this enchilada-style chilaquiles casserole is packed with nutritious beans and vegetables. Canned prepared enchilada sauce has great flavor and keeps the prep time quick. It can vary in heat level so find one that suits your taste. If you want to eliminate the heat altogether, try a green enchilada sauce (which is often milder than red) or substitute two 8-ounce cans of plain tomato sauce......

Healthy Roasted Pepper Recipes and Tips

Spaghetti with Arugula, Roasted Peppers & Prosciutto
The complex flavors of a good Parmesan, such as Reggiano, and a high-quality prosciutto, such as San Danielle, Volpi or di Parma, are essential for this pasta. Less expensive products will often contribute more saltiness than true flavor to the final result. Ask for a sample at the delicatessen when buying--if it tastes good on its own, it will make the dish taste good as well.....

Mediterranean Portobello Burger
This mushroom sandwich comes topped with a luscious Greek-style salad. Make it a meal: Serve with cucumber spears and a glass of Firestone Gewurztraminer......

Poblano & Skirt Steak Fajitas
This variation on fajitas pairs fresh poblanos with steak and scallions. Skirt steak has fabulous flavor but tends to be chewy, so slice it thinly across the grain......

Chipotle Honey - Roasted Chicken w/ Stewed Pinto Beans Fajitas

Dinner Tonight: Chipotle Honey - Roasted Chicken w/ Stewed Pinto Beans Fajitas

I had a Ham and Scrambled Egg Sandwich for Breakfast this morning. Using Boar's Head Smoked Honey Ham, 1 medium Egg (Scrambled), A shake or two of frank's Hot Sauce in the Egg, and a Kroger Wheat Hamburger Bun (Toasted). Along with my morning brew of Bigelow Decaf Green Tea, I was ready for the day! Not too bad out today, sunny and in the low 30's. They say in the 50's tomorrow but rain all day. Got out and cleared the driveway of the remaining snow and ice. Then got out and ran an errand for Mom and stopped by the bank and back home. For dinner tonight, last night's leftovers makes my dinner tonight. I prepared a Chipotle Honey - Roasted Chicken w/ Stewed Pinto Beans Fajitas.

Yesterday's meal of Chipotle Honey - Roasted Chicken w/ Stewed Pinto Beans was so good that I was going to make sure that the leftovers did not go to waste! So tonight I made the leftovers into Chipotle Honey - Roasted Chicken w/ Stewed Pinto Beans Fajitas. I used Mission Flour Fajitas. I started by shredding one of the Chipotle Honey - Roasted Chickens, using the Bear Paw. I had purchased the Bear Paw Meat Shredder on Amazon last week, come in handy for shredding meat and removing meat from the roasting pan onto a platter. So I shredded the Chicken and then put it into a small sauce pan and reheated it. As the Chicken was heating, in another small sauce pan I reheated the Stewed Pinto Beans. Once both were reheated I took a Fajita and first spread Chicken on it and then the Stewed Pinto Beans. I topped it with a few shakes of the Frank's Hot Sauce and sprinkled some fresh grated Dutch Gouda Cheese. Not only did this make a great dinner last night, it made another delicious meal for me tonight. Makes one hearty Fajita! The Hot Sauce and Gouda Cheese just added that extra flavor. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt. I've left the original post with full recipe for the Chipotle Honey - Roasted Chicken w/ Stewed Pinto Beans below.

Chipotle Honey - Roasted Chicken w/ Stewed Pinto Beans

A couple of new recipes for dinner. These come from an issue of Clean Eating Magazine, Chipotle
Honey - Roasted Chicken w/ Stewed Pinto Beans. Another one of those recipes that looked and sounded too good to pass up. The recipe calls for; Pam with Olive Oil Cooking Spray, 1 tbsp Raw Honey, 2 1/2 tsp Safflower Oil, divided ( I used Extra Virgin Olive Oil), 1 tsp Lime Zest plus 2 tsp fresh Lime Juice (divided), 1/4 plus 1/8 tsp Chipotle Chile Powder(divided), 1/2 tsp Sea Salt (divided), Pinch fresh Ground Black Pepper, 4 Bone - In Chicken Breasts (I used only two Boneless and Skinless Chicken Breasts), 1 small Red Onion (finely chopped), 1 tbsp Minced Garlic, 1 tbsp finely chopped seeded Jalapeno Chile Pepper, 1 tbsp unsalted Tomato Paste, 1 15 - oz BPA - free can unsalted Pinto Beans, drained and rinsed, 1 cup Low - Sodium Chicken Broth, and 3 tbsp finely chopped fresh Cilantro leaves (divided.)

To prepare it, preheat the oven to 400 degrees. Line a rimmed baking sheet with foil and mist with cooking spray. In a small bowl , combine Honey, 2 tsp Oil, Lime Juice, 1/4 tsp Chile Powder, 1/4 tsp Sea Salt, and Black Pepper. Using Paper Towels, pat Chicken dry and place on prepared sheet. Brush Chicken evenly with Honey Mixture. Roast for about 30 to 35 minutes, turning over halfway, until golden brown and Chicken reaches 165 degrees when tested with an instant read thermometer in thickest part. Remove from oven, cover and let rest for 5 minutes. Using tongs, turn Chicken to dip both sides in caramelized juices on sheet. (Alternatively, use a brush to brush it on.) Meanwhile, in a medium saucepan on medium, heat remaining 1/2 tsp Oil. Add Onion, Garlic, Jalapeno, remaining 1/4 tsp Sea Salt.Saute until Onion is soft, about 5 minutes. Add Tomato Paste and saute for 1 minute. Add Beans and Broth, and bring to a simmer on medium high. Cover, reduce heat to low and simmer for 25 minutes more. Stir in Lime Zest and 2 tbsp Cilantro. To serve divide Beans on to bowls or plates and top each serving with 1 piece Chicken. Drizzle any remaining Juices from baking pan over Chicken and sprinkle with remaining tbsp Cilantro.

Fairly easy to prepare and worth anytime it takes. The Chicken is just flat out delicious! The Spices, Lime and Jalapeno all combine to make one flavorful Chicken Breast. Also the recipe turns out a good Bean dish also, that makes the perfect side dish for the Chicken. Another Keeper Recipe. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

One of America's Favorites - Fajitas

Mixed beef and chicken fajita ingredients, served on a hot iron skillet

A fajita (/fəˈhiːtə/; Spanish: [faˈxita] is a term found in Tex-Mex cuisine, commonly referring to any grilled meat usually served as a taco on a flour or corn tortilla. The term originally referred to the cut of beef used in the dish which is known as skirt steak. Popular meats today also include chicken, pork, shrimp, and all cuts of beef. In restaurants, the meat is often cooked with onions and bell peppers. Popular condiments are shredded lettuce, sour cream, guacamole, salsa, pico de gallo, cheese, and tomato. The northern Mexican variant of the dish name is Arrachera.

Fajita is a Tex-Mex, Texan-Mexican American or Tejano, diminutive term for little meat (beef) strips. Founded in South Texas, Rio Grande Valley. The word fajita is not known to have appeared in print until 1971, according to the Oxford English Dictionary. The exact time in which the dish was named fajita means little belt.

The word faja is Spanish for "strip", "band", "sash", or "belt".

Beef fajita

The first culinary evidence of the fajitas with the cut of meat, the cooking style (directly on a campfire or on a grill), and the Spanish nickname going back as far as the 1930s in the ranch lands of South and West Texas. During cattle roundups, beef were butchered regularly to feed the hands. Throwaway items such as the hide, the head, the entrails, and meat trimmings such as skirt were given to the Mexican cowboys called vaqueros as part of their pay. Hearty border dishes like barbacoa de cabeza (head barbecue), menudo (tripe stew), and fajitas or arracheras (grilled skirt steak) have their roots in this practice. Considering the limited number of skirts per carcass and the fact the meat wasn't available commercially, the fajita tradition remained regional and relatively obscure for many years, probably only familiar to vaqueros, butchers, and their families.

The food became popular in Tex-Mex restaurants in Houston, Austin, and San Antonio. In southern Arizona, the term was unknown except as a cut of meat until the 1990s, when Mexican fast food restaurants started using the word in their marketing. In recent years, fajitas have become popular at American casual dining restaurants as well as in home cooking.

In many restaurants, the fajita meat is brought to the table sizzling loudly on a metal platter or skillet, with the tortillas and condiments.

Jennie - O Turkey Breast Tenderloin Fajitas

Dinner Tonight: Jennie - O Turkey Breast Tenderloin Fajitas

Windy all day but it was sunny and a high of 50 degrees! The sun and temps melted a lot of our snow today but still a lot left. They say 60 degrees tomorrow but heavy rain and strong winds coming in with it. Went to Meijer and picked up a few items then stopped by the bank and filled the car up with gas. Got home in time to watch Team U.S.A. Hockey Team win another one, going to the Medal Round! For dinner tonight another new one,Jennie - O  Turkey Breast Tenderloin Fajitas.

It was Fajitas tonight using Jennie - O Extra Lean Boneless Turkey Breast Tenderloins, Ortega Fajita Skillet Sauce, Delallo Tri-Color Sweet Peppers, fresh grated Dutch Gouda Cheese, Green Giant Summer Crisp Sweet Yellow and White Kernel Corn, and Ole Fajita Flour Tortillas. I had all the ingredients except for the Jennie O Turkey which I picked up at Meijer.

As usual if I'm using Turkey it's Jennie - O Turkey. To get started I heated some Canola Oil in a medium size skillet over medium high heat and adding my thin-sliced Turkey Tenderloins. I seasoned them with Sea Salt and a teaspoon of Roasted Ground Cumin. I cooked them until they were well-done, 165 degrees as measured by my meat thermometer. Came out a beautiful and moist golden brown and ready for the rest of the ingredients.

Removed the Turkey from the skillet and added the sliced Sweet Peppers and Sweet Corn Kernels, stirring often until both were tender. Then returned the Turkey to the skillet along with the packet of Ortega Fajita Skillet Sauce. Continued cooking for about 8 minutes until everything was heated through. Served the mix on an Ole Fajita Flour Tortilla, that I heated up in the microwave. Topped everything with some fresh grated Dutch Gouda and sliced Black Olives. What a meal! Love the Jennie - O Extra Lean Boneless Turkey Breast Tenderloins, always a winner! Also had a tablespoon of Daisy Reduced Fat Sour Cream on the side. For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

Buffalo Fajitas

By: Jill O'Brien

Serves 4
A great version of this TexMex favorite. This fajitas recipe is fun, easy, and will be a sure hit with the family. Its super quick to prepare and it will be sure to please.

INGREDIENTS:
FOR FAJITAS:

1 pound Buffalo Skirt or Flank Steak, rinsed and patted dry
1 tablespoon olive oil
1 large sweet onion, cut into strips
1 red bell pepper, cut into strips
1 green bell pepper, cut into strips
8 flour tortillas, warmed (best warmed over grill fire)
FOR MARINADE:

1 Anaheim chili, roasted and peeled
1 tablespoon garlic, chopped
2 tomatillos, quartered
¼ cup fresh cilantro, packed
½ teaspoon cumin
½ teaspoon cardamom
1 teaspoon salt
½ cup fresh lime juice, (2 limes)
2 teaspoons olive oil
*Optional: If you like more of a smoky tomato flavored fajita, add 2 chipotle peppers in adobo sauce to marinade ingredients. I like to do half with and half without. Nice contrast in taste and color!

PREPARATON:

 Mix all ingredients in blender.
Place Buffalo steak and marinade in large zip lock bag. Massage marinade into meat. Refrigerate overnight.
Let meat rest on counter for 2 hours before cooking.
Heat cast iron skillet to medium high heat.
Remove steak from marinade and shake off excess over sink.
Place steak in hot skillet and sear for 2 minutes on each side.
Remove steak and place on cutting board, and cover tightly with foil. Let rest, while sautéing vegetables.
Add olive oil to pan and then vegetables. Sauté vegetables until lightly browned, stirring occasionally.
Remove pan from heat.
Slice seared steak into thin slices, against the grain.
Serve with warmed tortillas and pass with desired condiments.
