Chili and Cheese Nachos
Dinner tonight: Chili and Cheese Nachos

Benn a very quiet day around the house and really the neighborhood. For breakfast I had a single egg scrambled egg, 2 Jennie - O Turkey Sausage Links, and 2 slices of toasted Klosterman Wheat Bread. Did my morning workout and went in and cleaned the kitchen this morning. After that did a load of laundry for Mom and cleaned up around the house, in and outside. A little too hot to get the cart out so I hopped in the car and went over to a friend of mine, he just recently got out of the hospital with gallstones (ouch). Back home and watched television for a while. For dinner tonight Chili and Cheese Nachos.
I didn't want anything real heavy so it was Nachos that sounded good! I used Tostios Multi Grain
Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives. Anyone that uses small cans of Sliced Black Olives know what a pain they can be opening sometimes. Not these, they come in a can with a pull tab About time! For my other toppings I sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good!
To prepare I preheat the oven at 400 degrees and sprayed a glass baking dish with Pam and layer
everything in. I opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added a about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or so until the Cheese had started to melt and everything heated. Nothing better on a cold Winter’s Day than a big plate of Chili Cheese Nachos! Also had an ice-cold Diet Dr. Pepper to drink. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt. Mom and Dad went out for inner but will have some Nachos later tonight for a snack.

Chicken Fajitas w/ Refried Beans
Dinner Tonight: Chicken Fajitas w/ Refried Beans

Another gorgeous Spring Day out again, Sunny and 70's! We are having our wooden deck painted
today, slowly but surely repairing everything. Everyone seems to be having a problem with Ants this Spring, hate Ants worse than I do Spiders! Went to Kroger and bought some Ant Spray to spray in the house and around the house outside. Got the cart out for a while, went down to our community lake and got the mail, beautiful outside! For dinner tonight, Chicken Fajitas w/ Refried Beans.
I used Ortega Fajita Skillet Sauce for my Fajita Sauce Base, I love using the Ortega Sauces. To prepare I’ll need the following; the Ortega Fajita Skillet Sauce, Simple Truth Roaster Chicken, Delallo Tri-Color Pepperazzi Spicy Sweet Peppers, Chopped Jalapeno slices, Daisy Reduced Fat Sour Cream, fresh Shredded Sargento Asiago Cheese, and Mission Yellow Corn Tortillas. For the Chicken I purchased a Simple Truth Rotisserie Whole Chicken from the Kroger Deli earlier. Pulled all the meat and using it for my Fajitas.
I heated up a tablespoon of Extra Virgin Olive Oil in a medium size skillet over medium heat. I started by slicing the Sweet Peppers into strips and adding them to the skillet, stirring them and cooking until tender (about 4 minutes). Stirred in the Chicken and sliced Jalapenos, stirred this for about 5 minutes. Then added the Ortega Fajita Skillet Sauce, cooking another 3 minutes till everything was heated through. Heated up the tortillas in the microwave for 20 seconds and topped them with a dab of the Daisy Reduced Fat Sour Cream and the Chicken Fajita Mixture. I also topped it with some fresh grated Asiago Cheese, and served. I keep packets of the Ortega Skillet Sauces in stock, it makes one delicious Fajita! Has a nice heat to it but not overpowering and the taste of the Ortega Sauce is incredible!Served with a side of Old El Paso Fat Free Refried Beans. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Chili and Cheese Nachos!
Dinner Tonight: Chili and Cheese Nachos
Another night and another round of not a lot of sleep, fighting with Phantom Pains for a second night in a row. Skillet Chicken Nachos
Dinner Tonight: Skillet Chicken Nachos
About 35 degrees with a wind chill of about 28 this morning as I was leaving the house. Stopped by the bank and then to Kroger for a few items for myself and Mom. It's amazing when store coupons or brand coupons come out how most stores all of a sudden are out of the items or they'll have the smaller size of something and out of the larger size! It's all stores that do it, none quite as bad as Kroger does sometimes though. They'll have Nature Made vitamins and supplements in the large size bottles until it goes on sale, Buy One and Get One Free. Bam, nothing but the small size bottles. Oh the life of grocery shopping! Anyway for dinner tonight a new recipe, Skillet Chicken Nachos, and a warning these are addictive!.
Came across this recipe from an email from Betty Crocker. Another one of those recipes where you take one look at it and you have to try it! Love Chicken, Black Beans, Sweet Corn, and put it as Nachos, I'm in! To prepare it I'll need: 1 tablespoon Extra Virgin Olive Oil, 1 1/4 lb Perdue Perfect Portions Boneless Skinless Chicken Breasts (cut into 1/4-inch pieces), 1 package (1 oz) Old El Paso™ Taco Seasoning Mix, 1 can (8 oz) Hunt's Tomato Sauce, 1 medium Red Bell Pepper (chopped 1 cup), 1 can (15 oz) Progresso Black Beans (Drained and Rinsed), 1 can (7 oz) Green Giant™ Niblets Whole Kernel Sweet Corn (drained), Sliced Jalapeno, 1 small Can Sliced Black Olives, 2 cups Sargento Reduced Fat Shredded Mexican cheese Blend (8 oz), 6 oz tortilla chips (about 42 chips), and 1/4 cup chopped fresh Cilantro. The original recipe didn't call for the Jalapeno Slices or Black Olives, I added that. I think there's an unwritten law that you have to Jalapenos if you're having Nachos.
To start in a 12-inch nonstick skillet, heat oil over medium-high heat. Cook chicken in oil 5 to 6 minutes, stirring occasionally, until no longer pink in center. Stir in the taco seasoning mix, tomato sauce, bell pepper, beans, corn and 1 cup of the cheese. Reduce the heat to medium; cook 3 to 5 minutes, stirring occasionally, until heated through and cheese is melted. Serve with the tortilla chips. Spoon chicken mixture evenly over chips. Sprinkle with remaining 1 cup cheese and the cilantro. Fairly easy dish to prepare. You can also have Daisy Reduced Sour Cream as a dip. Everything blended together and mad one Excellent Nacho Dish, a keeper recipe! The only problem with these are, it's hard to stop eating them! As far as the Tortilla Chips, just use your favorite.I used Mission Tortilla Rounds. The original recipe and web link is at the bottom of the post. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Turkey Tacos Tonight!
Dinner Tonight: Turkey Tacos
It was a long day today, as my Dad fell early this morning again. Luckily he didn't break anything but his neck area is very sore and he has a couple of cuts on his arm. They are going to keep him in the hospital for 3 - 4 days and then to rehab to build his strength up. I hope he pulls through this but he is very weak and at almost 93 it's harder to overcome things like this. Hoping for the best! It was cool morning here, about 47 degrees. Very unusual for August around here. After getting back from the hospital I caught up some housework for Mom. Dinner tonight I prepared Turkey Tacos.
As usual when I make Turkey Tacos it’s with Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make one fine Taco!
For toppings I’ll be using; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Wholly Guacamole, Old El Paso Taco Sauce, Red Onions, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love These Taco Nights. For dessert later a Healthy Choice Dark Fudge Swirl Greek Yogurt.

BBQ Turkey Sliders w/ Jalapeno Cheddar Fried Potatoes
Dinner Tonight: BBQ Turkey Sliders w/ Jalapeno Cheddar Fried Potatoes
Another beautiful day out again! We set a record low for the morning, 51 degrees. For Breakfast I got the Goetta out, Glier's Turkey Goetta. I had a Sunny Side Up Egg, Turkey Goetta, and Whole Wheat Toast. Nice start to any day. Got the cart out and went fishing today. Didn't catch a whole lot but caught some fantastic Sun all day. For dinner tonight I prepared BBQ Turkey Sliders w/ Jalapeno Cheddar Fried Potatoes.
If you’re having Sliders they might as well be healthy Sliders. The Jennie – O Turkey is only 120 calories with the Buns being 100 calories. To prepare them I formed the Ground Turkey into Slider Bun size patties. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn with just a pinch of Sage in each. I pan fried them in Canola Oil. Served them on the Pepperidge Farm Wheat Slider Buns and topped with JB's Fat Boy Sticky Stuff BBQ Sauce. Now this a slider, the Sauce just sets everything off. I could eat a plate full of these.
For a side dish for the Sliders I prepared Jalapeno Cheddar Fried Potatoes. Came across this a while back in an issue of Cuisine at Home Magazine. Made some changes from the original recipe. I used Simply Potatoes Steakhouse Seasoned Diced Potatoes, Canola Oil instead of Peanut Oil, Scallions, 1 Jalapeno (sliced), Sea Salt and Ground Pepper, Sargento Reduced Fat Mexican Style Shredded Cheese, and I also added some diced Red Onion. To prepare it; Add the Canola Oil to a Cast Iron Skillet and heat on medium. Prepare the Diced potatoes according to the package instructions. About midway through the cooking process add the Diced Red Onion and continue cooking. Then Scallions and Jalapeno; saute 2 more minutes, then season with Sea Salt & Pepper. Off the heat sprinkle with the Sargento Reduced Fat Mexican Style Shredded Cheese. And another keeper Potato Dish! This has turned out to be one of my favorite Potato Side Dishes. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Grilled Jennie - O Jalapeño Jack Turkey Franks w/ Cheddar and Bacon Potato Salad
Dinner Tonight: Grilled Jennie - O Jalapeño Jack Uncured Turkey Franks w/ Cheddar and Bacon Potato Salad
About 85 degrees today, sunny and not quite as humid. Got a chance to see the Blue Angels pass over in formation earlier today, one beautiful sight! Not much going on, caught up on some household chores and cleaned the grill. Started off with Eggs and Jennie - O Turkey Bacon, then for lunch a Jennie - O Sliced Roasted Turkey and Swiss Sandwich, and the Jennie - O Jalapeno and Cheddar Turkey Franks for dinner, Tonight I prepared Grilled Jennie - O Jalapeño Jack Turkey Franks w/ Cheddar and Bacon Potato Salad.
Jennie - O sent me the Jennie - O Jalapeño Jack Uncured Turkey Franks to try yesterday and couldn't wait to give them a try! So I fired the grill up and got them Dogs a grilling! They grilled up perfectly and tasted just as good and the Frank had a nice snap to it when biting into it! Good Cheese flavor and nice heat from the Jalapenos. One tasty Frank! Served it on a Healthy Life Whole Grain Hot Dog Bun and topped with some French's Yellow Mustard. As my Franks were grilling I grilled Mom and Dad a couple of Hamburgers.
Earlier I made some Cheddar and Bacon Potato Salad. I made this a while back and instantly loved it! I wasn't a huge Potato Salad fan until I made this. The Sour Cream and Chipotle Mayo makes an incredible tasty base for everything. If you like Potato Salad, give this one a try. I also prepared Mom and Dad a couple of ears of Sweet Corn. Fantastic dinner tonight! For dessert later a Jello Sugarless Dark Chocolate Mousse.

Cheddar and Bacon Potato Salad
If you love the big, bold flavors of loaded potatoes, you’ll flip for this potato salad recipe. It’s got all the fixin’s: Cheddar, bacon, red onions, sour cream and chives. Just 10 minutes to prepare, 20 minutes to the table!
Cheddar & Bacon Potato Salad Recipe
Directions
1 package Simply Potatoes® Steakhouse Seasoned Diced Potatoes*
1/2 cup chipotle or light mayonnaise
1/2 cup sour cream
2 tablespoons chopped fresh chives
1/4 teaspoon garlic salt
freshly ground pepper to taste
1/3 cup Crystal Farms® Reduced-Fat Shredded Sharp Cheddar Cheese
1/4 cup real bacon pieces
1/4 cup finely chopped red onion
1. Place potatoes and ¼ cup water in a microwaveable bowl. Cover; microwave on HIGH heat 10 to 12 minutes, until potatoes are tender. Cool.
2. Mix mayonnaise, sour cream, chives, garlic salt, and pepper in a large serving bowl until well blended.
3. Gently stir potatoes into dressing until well coated. Sprinkle with cheese, bacon, and red onion; cover and refrigerate until ready to serve. Stir toppings in just before serving.
Chipotle mayonnaise is readily available in the condiment aisle—or you can make your own by stirring one or two finely chopped canned chipotle chiles into plain mayonnaise.
Reduced-fat (light) sour cream is a good substitution for regular sour cream
If fresh chives are hard to find, substitute green onions.
Stove top: Place 1 package Simply Potatoes® Steakhouse Seasoned Diced Potatoes in a medium saucepan with 1/2 cup water. Bring to a boil; reduce heat to medium-low and cover. Cook about 10 minutes or until potatoes are just tender.
*Can be substituted with Simply Potatoes® Diced Potatoes with Onion

Sweet Pepper, Cilatro and Green Chile Shrimp Fajitas
Dinner Tonight: Sweet Pepper, Cilantro and Green Chile Shrimp Fajitas
Went to Meijer early this morning to pick up a few items I needed. As I was checking out it started pouring the rain, as I reached the door to go out the Meijer greeter said that I couldn't take the mobility cart out in the rain. So I asked her if somebody could pull my car up for me and I would load them up from there. She said no because of insurance reasons, so I asked her what I was supposed to do. She more less said I would have to wait for it to stop raining, which it wasn't going to stop for quite a while. I then asked if the guy that gets the carts could come out and get the cart after I unloaded everything into my car, again no. So to shorten the story I took an empty grocery bag covered the controls, so they wouldn't get wet, and took it out and unloaded my groceries. When done I grabbed my walker and took the cart back in out of the rain and walked back to the car. By the time I got in I was drenched and what really made me mad was two Meijer Employees stood there in full rain gear and just watched me, no attempt to lend a hand! I hope any of them are never in the position where they're having to do what I did and no one attempts to help them. Oh well, life goes on! For dinner tonight; Sweet Pepper, Cilantro and Green Chile Shrimp Fajitas.
I used a packet of the Ortega Cilantro and Green Chile Skillet Sauce. I've used this a few times now and love it! To prepare it I used a bag of Kroger Seafood Jumbo Shrimp along with the packet of Ortega Cilantro and Green Chile Skillet Sauce, Delallo Tri-Color Ppperazzi Spicy Sweet Peppers, Chopped Jalapeno slices, fresh Shredded Dutch Gouda Cheese, and Ole Fajita Flour Tortillas.
I heated up a tablespoon of Extra Virgin Olive Oil in a medium size skillet over medium heat. I started by slicing the Sweet Peppers into strips and adding them to the skillet, stirring them and cooking until tender (about 4 minutes). Stirred in the Shrimp and sliced Jalapenos, stirred this until the Shrimp just started turning pink. Then added the Ortega Cilantro and Green Chile Skillet Sauce, cooking another 4 minutes till everything was heated through. What an aroma coming from the skillet! Heated up the Tortillas in the microwave for 20 seconds and topped them with Guacamole Sauce and the Shrimp Taco Mixture. I also topped it some fresh grated Dutch Gouda, and served. I keep packets of the Ortega Cilantro and Green Chile Skillet Sauce in stock, it makes on delicious Fajita! Had a nice heat to it but not overpowering. For dessert later a Skinny Cow Chocolate Truffle Ice cream Bar.

Chili and Cheese Nachos!
Dinner Tonight: Chili and Cheese Nachos
I sure wish food industry would start producing single serving amounts of various packaged and canned foods! I always try to save what I don't use, either for leftovers or storing to use later, but you can only save so much before it starts piling up. I've emailed several manufactures like Del Monte and Dole for example but never a reply. Like everything else it's all about the money and food like everything else is a business. Enough complaining, another nice day but its a little warmer and a little humid but it is August. I hear next week we'll have the August days we dread, hot and humid! For dinner I went with something light and easy to prepare, Chili and Cheese Nachos.
I used Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just by their selves, and they bake and hold their shape real good. For my toppings I used 1 can of Mario Sliced Black Olives. Before I go any further a bit about these Olives, anyone that uses small cans of Sliced Black Olives know what a pain they can be opening sometimes. Not these, they come in a can with a pull tab! About time. For my other toppings I used Mezzetta Deli Sliced Tamed Jalapeno Peppers, Campbell's Firehouse Chili with Beans, and a blend of Sargento Reduced Fat Shredded Sharp Cheddar and Sargento Reduced Fat Mozzarella. I like using the Campbells Firehouse Chili with Beans for Nachos. It's Meaty, the Beans, and has some good Spice with it and a little Heat.
To prepare I preheat the oven at 400 degrees and spray a glass baking dish with Pam and layer everything in. I start with a couple of tablespoons of Chili then I add my Scoops (Chips). I then add the Sliced Black Olives, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese Blend. Then just pop it in the oven 10 minutes or so until the Cheese had started to melt and everything heated. Something I forgot to mention is I also heat my Chili up on low for about 20 minutes before I top my Chips with it. Serve it while it's hot, it's not bad cooled down either. Had an Ice Cold Diet Dr. Pepper also. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

3 Bean Buffalo Chili w/ Johnny Cakes
Dinner Tonight: 3 Bean Buffalo Chili w/ Johnny Cakes
Another beautiful day out, but they say that's coming too an end. The highs will be in the 90's and the humidity almost unbearable. The heat index will be very high starting Sunday. All good days must end, I guess. Earlier today I went fishing here at our community lake. Only caught a few small Blue Gills not much biting but a real relaxing morning. For dinner tonight I didn't want anything too heavy or filling but still wanted a hot and hearty meal. So I got in the freezer and grabbed the Crock Pot 3 Bean Buffalo Chili I froze from the last time I prepared some. I prepared the Crock Pot 3 Bean Buffalo Chili along with some Johnny Cakes.
The Chili has Ground Buffalo, Kidney Beans, Chili Beans, Great Northern White Beans, and ton of great Spices! Just put it in the Crock Pot, on low, for about 8 hours and you got you some mighty tasty Chili! I left the full recipe at the bottom of the post. That's the last of my Chili in the freezer so I'll have to make another batch soon.
As the Chili was heating up I made some Johnny Cakes. To prepare these all you’ll need is: Pam w/ Olive Oil Non – Stick Spray, 1/4 cup Extra Virgin Olive Oil, 1 3/4 cups Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. To serve I placed mine on a plate and topped it with my 3 Bean Buffalo Chili and Shredded Cheese. And now it's Comfort Food Heaven! The Chili is a perfect pairing with Cornbread no matter how you prepare your Cornbread. At the bottom of the post I left a little history on the “Johnny Cakes”. There are various ways to fix Johnny Cakes, I make mine using the Martha White Corn Meal Mix.

Johnnycakes – Pouring a batter similar to that of skillet-fried cornbread, but slightly thinner, into hot grease atop a griddle or a skillet produces a pancake-like bread called a johnnycake. This type of cornbread is prevalent in New England, particularly in Rhode Island, and also in the American Midwest and the American South. It is reminiscent of the term hoecake, used in the American South for fried cornbread pancakes, which may date back to stories about some people on the frontier making cornbread patties on the blade of a hoe.

Chili and Cheese Nachos w/ Side of Celery and Sliced Carrot Sticks
Dinner Tonight: Chili and Cheese Nachos w/ Side of Celery and Sliced Carrot Sticks
It's been an afternoon of March Maddness (College Basketball) and it's going to be an evening of the same. So what better than some Chili and Cheese Nachos to eat while watching the games this evening. Quick and easy to prepare so I won't miss any action and delicious and filling for a meal sometimes.
I used Tostito’s Whole Grain Scoops for the chips, 2 can Campbells Firehouse Chili w/ Beans, 1 small can of Sliced Black Olives, sliced Jalapenos, and Kraft 2% Pizza Cheese. Just layer in a baking dish and bake at 400 degrees until the chips are warmed and cheese is melted. I think the Campbell’s Firehouse Chili makes the Nachos. It’s a seasoned just right, thick and just enough heat to make it perfect! I also sliced up some Celery Sticks and Carrots along with some Litehouse Lite ranch Vegetable Dip. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

3 Bean Buffalo Chili w/ Johnny Cakes
Dinner Tonight: 3 Bean Buffalo Chili w/ Johnny Cakes
A while back I purchased 3lbs. of Wild Idea Ground Buffalo and have been waiting to use 2 lbs of it to make a Crock Pot full of 3 Bean Buffalo Chili ! Well today's the day. I made myself an early breakfast, exercised, and then started getting everything started to make a crock pot full of 3 Bean Buffalo Chili! For dinner I made 3 Bean Buffalo Chili w/ Johnny Cakes.
I usually use Extra Lean Jennie - O ground Turkey when making my Crock Pot 3 Bean Chili but I had been wanting to use Buffalo, or Bison if you prefer, for a while now but Bison is a bit more pricier than ground Turkey. Wild Idea Buffalo had Ground Buffalo on sale so I purchased 3 lbs. of it, so I had my Ground Buffalo for the Chili! I used 2 lbs. of it to make the Chili. To make the Chili, along with the 2 lbs. of Wild Idea Ground Buffalo, I added the following; 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Can (15 oz.) Chili Beans, 1 Can (15 oz.) Kidney Beans, rinsed, 1 Can (15 oz.) Great Northern Beans, rinsed, 1/2 Cup of Water, 1 Packet McCormick Chili Mix, 1 White Onion (medium), Chopped or Minced, 1 Jalapeno Pepper, Unseeded and Chopped, 1 Tbs Minced Garlic, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 1 Tbs. Ground Roasted Cumin, 2 Tsps Ground Cinnamon, 1 Tbs of Cilantro Leaves, and 5 Dashes of Frank’s Hot Sauce or to taste. The full recipe and instructions follow at the end of the post.
I used my older stand-up Crock Pot, it's my Mom's and she's had it for at least 20 years or more and it still works like it's brand new. I lined it with Reynold's Crock pot Liners, a must if you use a Crock Pot a lot! These liners make cooking in a Crock Pot even easier. Just put them in the Crock Pot and spray with Pam Non Stick Cooking Spray. When your food is done just empty it from the Pot and dispose of the liner. It can't get much easier. I then browned the Buffalo in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Added all the remaining spices and ingredients except 1 can of the tomato paste and the cheese and crackers. Stirred until it was well mixed. While that was cooking I opened all 3 cans of Beans, rinsing the Kidney Beans and Great Northern Beans. I mixed all 3 cans together in a large bowl and added the 2nd can of Tomato Paste to the Beans and stirred. Then I added half of the bowl of Beans to the Crock Pot and topped it with the Buffalo and Spices mix and topping that with the rest of the Beans. Covered with the lid , and let simmer and cook, on low, for about 8 hours. About 2 hours into the cooking time your kitchen should fill up the fantastic aroma of the Chili!
The Turkey 3 Bean Chili is delicious but it can't compare with Buffalo 3 Bean Chili! The Buffalo meat just has that sweet taste to it that makes it different than other meats, plus it's healthier than other meats. If you've never had Buffalo Chili you have to try it when you can! As I've also said the Wild Idea Buffalo is the best Buffalo I've ever had, and a lot of that is how the Buffalo is raised at Wild Idea. I've left info all about Wild Idea Buffalo along with the web link at the bottom of the post. Along with The Chili I made a side of Johnny Cakes (Fried Cornbread). For dessert later a slice of Pillsbury Nut Quick Bread topped with a couple of scoops of Breyer's Carb Smart Vanilla Ice Cream.

Wild Idea Buffalo meat is:
* Lower in calories, fat, and cholesterol than chicken or fish.
* 40% more protein than beef.
* Nutrient-dense, flavor rich, outrageously lean, and high in antioxidant Omega 3 fatty acids and vitamin E.
* 100% native grass fed – delivering 3.5x more omega-3 fatty acids than grain-fed bison.
* Red Meat That’s Good for You!
Wild Idea Buffalo is unlike any other meat company. We began with a vision of actually improving the eco-system of the Great Plains. Our buffalo are raised on the wide open spaces of South Dakota where they eat only the native grasses beneath their feet. They spend their whole lives roaming freely on thousands of acres, and never see a feedlot or slaughterhouse. The result is better lives for the bison, the restoration of over 100,000 acres of the prairie, and sweet, delicious red meat that is actually good for you. Not such a wild idea after all!
