Buffalo Chili Dogs (Serves 6)

Delicious, messy and healthy! Our 100% grass-fed, nitrite free Hot Dogs, will bring you back to
eating hot dogs again. Better yet, try them covered in Bison Chili!

Ingredients:

1 – pkg. Wild Idea Buffalo Hot Dogs
2 – cups Wild Idea Buffalo Chili, heated (recipe below)
1 ½ cups cheddar cheese, shredded
6 hot dog buns (whole wheat or whole grain, best)
1 Tb. Olive oil
*optional toppings: pickled jalapeno’s, raw onion or your favorite extra
Instructions:

1 – Preheat inside gas grill to 550*. (Half of grill set on high and other half set on low).
2 – Place hot dogs over hot side of grill and grill for 2 minutes each side, closing grill during cooking time.
3 – While hot dogs are grilling brush inside of buns with olive oil and place inside down over low heat side of the grill, and brown. About two minutes.
4 – Remove browned buns and place hot dogs on buns.
5 – Top each hot dog with 1/3 cup of heated chili and sprinkle each with ¼ cup of shredded cheddar cheese. (Cheese will melt on its own, or use small torch if you would like to lightly brown cheese). Serve with optional toppings and a lot of napkins!
4 Bean Bison Chili

Makes 10 to 12 entrée servings.

Chili freezes nicely. Portion out and freeze for a quick meal at a later date.

Ingredients:

2 pounds ground bison
2 tablespoons olive oil
1 onion, chopped
2 tablespoons fresh garlic, chopped
2 tablespoons cumin
2½ tablespoons chili powder
½ tablespoon oregano
½ tablespoon thyme
2 teaspoons coriander
½ teaspoon each smoked paprika and cayenne
1 tablespoon black pepper
2 teaspoons salt
1 quart stewed tomatoes
1 quart tomato sauce
8 golden peperoncini, diced + juices
1 15oz can each: butter beans, black beans, kidney beans, and pinto beans, (drained – but not rinsed)
1 lemon, juiced
2 cups water

Mix all dry spices together.
1 – In heavy stew pot, over medium high heat, heat olive oil.
2 – Add Wild Idea bison meat, crumbling into small pieces. Lightly brown, stirring constantly for 4 minutes.
3 – Add onion, garlic and seasonings. Continue to brown, stirring occasionally for 10 minutes.
4 – Add remaining ingredients and bring to a full boil. Reduce heat and simmer uncovered for ½ to 1 hour, or until desired thickness is achieved.
5 – Adjust seasoning to taste. Garnish with fresh lime or lemon wedges, fresh chopped cilantro, sour cream, or grated cheddar cheese. Serve with Cheesy Jalapeño Corn Bread, (recipe included upon request with purchase).

"Meatless Monday" Recipe of the Week - Black Bean Burritos

This week's "Meatless Monday" Recipe of the Week is - Black Bean Burritos. Anthing using Black Beans has to be good! Thank you to Trina for passing this recipe along to me. Enjoy and Eat Healthy in 2018!

Black Bean Burritos
Ingredients
2 (10 inch) flour tortillas
2 tablespoons extra light olive oil
1 small red onion, chopped
1/2 red bell pepper, chopped
1 teaspoon minced garlic
1 (15 ounce) can low-sodium black beans, rinsed and drained
1 teaspoon minced jalapeno peppers
3 ounces reduced-fat cream cheese
1/2 teaspoon sea salt
2 tablespoons chopped fresh cilantro
* Your favorite salsa or taco sauce (Optional)

Directions
1 - Wrap tortillas in foil and place in oven heated to 350 degrees F (175 degrees C). Bake for 15 minutes or until heated through.
2 - Heat oil in a 10-inch skillet over medium heat. Place onion, bell pepper, garlic and jalapenos in skillet, cook for 2 minutes stirring occasionally. Pour beans into skillet, cook 3 minutes stirring.
3 - Cut cream cheese into cubes and add to skillet with salt. Cook for 2 minutes stirring occasionally. Stir cilantro into mixture.
4 - Spoon mixture evenly down center of warmed tortilla and roll tortillas up. Serve immediately. Top with salsa or taco sauce.

Chili and Cheese Nachos

Dinner Tonight: Chili and Cheese Nachos




To start my day off I had one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1
package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Also a cup of Bigelow Decaf Green Tea. A bit cooler out, 80 degrees with rain showers. Bad day with my allergies today, bad headache. So I didn't do a whole lot today. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.



We love Chili and Cheese Nachos around here! To make them I’ll need: Tostitos Multi Grain Scoops
for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! Especially love the Jalapenos, nice mild heat!





To prepare I preheated the oven at 400 degrees and sprayed a glass baking dish with Pam and layer
everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. I love Nachos, nothing better than a big plate of Chili Cheese Nachos! For Dessert later some Honey Crisp Apple Slices.





Hormel: Turkey w/Beans 98% Fat Free Chili

Directions:
Stove top: empty chili into saucepan. Stir occasionally while heating over medium heat, about 5 minutes or until hot. Microwave: empty chili into microwaveable bowl; cover loosely. Heat for 2 To 3 minutes or until hot, stirring once. Careful. Let chili stand in microwave 1 minute and stir before serving. All microwaves And stoves vary. Times given are approximate.

TOMATILLO TURKEY CHILI
Ingredients

1 Tbsp. canola oil
1 cup chopped onion
2 medium green bell peppers, seeded and chopped
1 large red, orange or yellow bell pepper, seeded and chopped
1 lb. lean ground turkey meat
4 cloves garlic, minced
1-2 fresh Fresno or jalapeno peppers, seeded and finely sliced
1 Tbsp. coriander
1 Tbsp. oregano
1 tsp. chili powder, or to taste
1 tsp. cumin
Salt and freshly ground black pepper
2 cups diced tomatillos or 2 (11 oz.) cans
1 cup frozen yellow corn
1 (15 oz.) can no salt added pinto beans, rinsed and drained
2 cups low-fat, reduced-sodium chicken broth
1/3 cup finely chopped cilantro
1/3 cup chopped green onions
Lime wedges for garnish
1/2 cup non-fat, plain, Greek yogurt, optional

Directions

Quick cooking directions

* In large pot, heat oil over medium-high heat. Add onion and bell peppers and saute until onion is translucent, about 5 minutes. Add turkey and saute until meat begins to brown, about 5 minutes. Stir in garlic, Fresno or jalapeno peppers, coriander, oregano, chili powder and cumin. Salt and pepper to taste. Saute 2 minutes, stirring often.
* Add tomatillos, corn, beans and broth. Reduce heat, cover and simmer for a minimum of 20 minutes, stirring occasionally.
* Divide chili among six serving bowls. Garnish with cilantro, green onions, lime wedges and yogurt, optional.

Slow cooking directions

* In medium skillet, heat oil over medium-high heat. Saute onion and turkey until turkey almost cooked through, but still slightly pink, about 5 minutes.
* In slow cooker, add turkey-onion mixture and remaining ingredients except cilantro, green onions, lime and yogurt. Stir until combined. Cook on low for 6 hours or on high for 4 hours, stirring occasionally.
* Divide chili among six serving bowls. Garnish with cilantro, green onions, lime wedges and yogurt, optional.

Easy Corn Chilaquiles

Chilaquiles were created by thrifty cooks looking for a creative way to use leftovers. Although chilaquiles was once referred to as a 'poor man's dish,' today it is eagerly enjoyed by everyone. This cheesy tortilla casserole can be served for brunch with eggs and refried beans.

Recipe Ingredients:

2 (16-ounce) jars ORTEGA Salsa - Homestyle Recipe
1 cup whole-kernel frozen corn
1 (7-ounce) can ORTEGA Diced Green Chiles
1 tablespoon or more diced jalapeños (optional)
3 cups coarsely crushed tortilla chips - divided use
3 cups shredded Monterey Jack cheese - divided use
1/2 cup shredded cheddar cheese

Cooking Directions:

1 - Preheat oven to 375°F (190°C). Lightly grease 2-quart casserole.
2 - Combine salsa, corn, chiles and jalapeños in medium bowl. Layer 1 cup chips, 1 1/2 cups salsa mixture and 1 cup Monterey Jack cheese in bottom of prepared casserole. Repeat layers 2 more times ending with cheese.
3 - Bake for 40 to 45 minutes or until bubbly and cheese is melted; top with cheddar cheese. Bake for an additional 5 to 10 minutes or until cheese is melted. Cool on wire rack for 5 to 10 minutes. Top with green onions and sour cream, if desired.
Makes 6 servings.

Turkey Sausage Stuffed Jalapenos

We have these from time to time and everyone loves it,Turkey Sausage Stuffed Jalapenos!  Using the Jennie - O Turkey Sausage, Fat Free Cream Cheese, and Kraft Light Ranch Dressing you're making it that much healthier without missing any of the flavor. Turkey Sausage Stuffed Jalapenos

Ingredients
1 pound Jennie - O Ground Turkey Sausage
1 (8 ounce) package Fat Free Cream Cheese, softened
1 cup shredded Kraft Parmesan Cheese
1 pound large fresh Jalapeno Peppers, halved lengthwise and seeded
1 (8 ounce) bottle Kraft Light Ranch Dressing (optional)

Directions
Preheat oven to 425 degrees F (220 degrees C).
1 - Place turkey sausage in a skillet over medium heat, and cook until evenly brown. Drain grease.
2 - In a bowl, mix the sausage, cream cheese, and Parmesan cheese. Spoon about 1 tablespoon sausage mixture into each jalapeno half. Arrange stuffed halves in baking dishes.
3 - Bake 20 minutes in the preheated oven, until bubbly and lightly browned. Serve with Ranch dressing.

Turkey Chili Verde

Denver’s famous green chili gets a makeover in this delicious recipe featuring lean ground turkey. With under 300 calories per serving, this hearty chili is a must-try recipe.

INGREDIENTS

1½ pounds tomatillos, husks removed and halved
2 poblano peppers, seeded and halved
2 jalapeño peppers, seeded, if desired
1 teaspoon kosher salt
2 tablespoons olive oil
1 large yellow onion, chopped
4 garlic cloves, chopped
1 (16-ounce) package JENNIE-O® Ground Turkey
2 teaspoons ground cumin
1 teaspoon ground coriander
4 cups low-sodium chicken broth
1 cup chopped fresh cilantro leaves



DIRECTIONS

1) Place tomatillos, poblano peppers, and jalapeños cut side down on jelly-roll pan. Broil 3 inches from heat source 3 to 5 minutes or until skins are charred. Place peppers in plastic zip-top bag and seal. Let stand 10 minutes. Remove and discard skins. Place tomatillos and peppers in food processor and process until smooth. Stir in salt.
2) In large Dutch oven, heat oil over medium-high heat. Add turkey. Cook turkey as specified on the package. Always cook to well done, 165°F as measured by a meat thermometer. Add onion and garlic and cook 5 minutes or until tender. Add cumin and coriander. Stir in tomatillo mixture and broth. Bring mixture to a boil. Reduce heat to medium-low and simmer 20 minutes. Stir in cilantro leaves.

* Always cook to an internal temperature of 165°F.

Crock Pot 3 Bean Buffalo Chili w/ Cornbread

Dinner Tonight: Crock Pot 3 Bean Buffalo Chili w/ Cornbread





For breakfast I reheated some leftover Pioneer Peppered White Gravy and toasted a couple of slices of Healthy Life Whole Grain Bread, love gravy on everything! It was another night of heavy rain that continued through the day. One of those rainy days to stay in and kick back. Which is what I did for most of the day, I'm in a huge Slug Mode. For dinner tonight I wanted a major comfort food so tonight it's Crock Pot 3 Bean Buffalo Chili w/ Cornbread.







I got my last container of my Crock Pot 3 Bean Buffalo Chili out of the freezer and let it thaw overnight in the fridge. Which also means I'll be making another batch before too long! I'll leave full details on how to make it.


It’s loaded with nothing but good things. I use Wild Idea Buffalo Ground Round (99% Lean) which is
the best tasting Ground Buffalo that I’ve found. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Red Beans), 1 Can (16 oz.) Bush’s chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) drained and rinsed, Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 4 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!).



To prepare it I start by browning both packages of the Wild Idea Ground Buffalo. Using a large skillet
sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Buffalo and all the seasonings and Tomato Paste, stirring often. When the Buffalo has browned I add from the skillet to the liner lined Crock Pot. Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours.








Then the serious eats begin, comfort food with Chili! With the sweetness of the Buffalo combined

with all those spices and beans, it’s just hard to beat! This may have been my best batch of Chili yet, You can serve it many ways; in a bowl or mug and
top it with your favorite Cheese or Chopped Green Onions with a side of Oyster Crackers. Another way to have it is served on top of a Johnny Cake (Cornbread) or have a side of Cornbread with it. I made a Mini Cast Iron Skillet of Cornbread. I used Martha White Corn Meal Mix. For me Chili and Cornbread are the perfect pairing! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.







 Crock Pot 3 Bean Buffalo Chili
Ingredients:

2 lb. Wild Idea Ground Buffalo
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)
1 Can (16 oz.) Bush’s chili Beans ( Kidney Beans)
1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix
1 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
4 Cloves Minced Garlic
1 Tbs Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
2 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.

Directions:
*Brown Buffalo in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and the oyster crackers, A Tablespoon of fat-free sour cream, or serve with some home made cornbread.

Triple Pepper Chili

Ancho chiles, jalapeño chile, and mild red bell pepper are the trinity of peppers used to make this spicy bean chili.

Recipe Ingredients:

2 ancho chiles (dried poblano chiles)
2 teaspoons vegetable oil
1 medium yellow onion, diced
1 red bell pepper, seeded and diced
1 large celery rib, chopped
2 cloves garlic, peeled and minced
1 jalapeño pepper, seeded and minced
2 (15-ounce) cans red kidney beans, drained
1 (28-ounce) can crushed tomatoes
1 tablespoon chopped fresh parsley
1 tablespoon chili powder
2 teaspoons dried oregano
1/2 teaspoon salt

Cooking Directions:

1 - Soak the ancho chiles in enough warm water to cover for 30 minutes to 1 hour. Drain; remove the seeds* and chop the chiles.
2 - In a large saucepan heat oil over medium heat. Sauté onion, bell pepper, celery, garlic and jalapeño for about 7 minutes, stirring frequently, until the vegetables are tender.
3 - Add beans, tomatoes, parsley, chili powder, oregano and salt; bring to a simmer. Reduce heat and continue cooking for 15 to 20 minutes over low heat, stirring occasionally. Serve with warm bread or your favorite toppings.
Makes 4 servings.

Kitchen Hints of the Day!

To store Jalapeno Peppers.........


* Store in a paper bag in the vegetable crisper of refrigerator.

* To freeze: Slice or chop peppers, then place in airtight containers or heavy-duty freezer bags, or wrap tightly in heavy-duty aluminum foil or plastic wrap.

* jalapenos can preserve them for pretty much indefinitely. Simply use a needle to string the peppers by their stems and hang them in a dry location. You can leave the peppers hanging or remove them once dry and store them in a dry location. Refrigeration is not necessary. You can also take dried jalapenos and grind them to use as an easy spice additive to meals.

* Jalapenos can be jarred or pickled. In either case, the jalapenos are generally left whole or sliced and packed tightly into jars. Then boiling water and any other additives the recipe calls for are added and the jar is sealed. You’ll find a wealth of recipes for pickling and jarring jalapenos in cook books and online, due to the variety of methods for this storage technique it’s best to find a recipe that applies to your particular needs.

Crock Pot 3 Bean Buffalo Chili w/ Cornbread

I had a Simple Truth Breakfast Sandwich to start the day, Egg White and Canadian Bacon. After

Breakfast I went out and started the car and let it warm up a bit. Another cold one out there at 9 degrees! Had to get out for a while today, I had a bad case of Cabin Fever! Felt great to get out. Stopped for gas, then the bank, and on to Kroger. I picked up a Birthday Cake for my Mom, her Birthday is tomorrow. Mom will be 88 Friday! Moms my best friend, cherish every day she's around. Tonight I prepared my Crock Pot 3 Bean Buffalo Chili w/ Mini Skillet of Cornbread.







What better than a big bowl of Chili on a cold Winter's Day! I’ve been out of Chili for a while now,
so it's high time to solve that problem! Plus I’ve been wanting some for a while now so it's time. It’s loaded with nothing but good things. I use Wild Idea Buffalo Ground Round (99% Lean) which is the best tasting Ground Buffalo that I’ve found. The 3 Beans I use are 1 Can (16 oz.) Bush's Chili Beans (Red Beans), 1 Can (16 oz.) Bush's chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush's Chili Beans (Great Northern Beans) drained and rinsed, Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 4 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!).




To prepare it I start by browning both packages of the Wild Idea Ground Buffalo. Using a large
skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Buffalo and all the seasonings and Tomato Paste, stirring often. When the Buffalo has browned I add from the skillet to the liner lined Crock Pot. Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours.






Then the serious eats begin, comfort food with Chili! With the sweetness of the Buffalo combined
with all those spices and beans, it’s just hard to beat! You can serve it many ways; in a bowl or mug and top it with your favorite Cheese or Chopped Green Onions with a side of Oyster Crackers. Another way to have it is served on top of a Johnny Cake (Cornbread) or have a side of Cornbread with it. I made a Mini Cast Iron Skillet of Cornbread. I used Martha White Corn Meal Mix. For me Chili and Cornbread are the perfect pairing! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.








Crock Pot 3 Bean Buffalo Chili
Ingredients:

2 lb. Wild Idea Ground Buffalo
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush's Chili Beans (Red Beans)
1 Can (16 oz.) Bush's chili Beans ( Kidney Beans)
1 Can (16 oz.) Bush's Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix
1 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
4 Cloves Minced Garlic
1 Tbs Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
2 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.



Directions:
*Brown Buffalo in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and the oyster crackers, A Tablespoon of fat-free sour cream, or serve with some home made cornbread.

Pepper of the Week - Chili Pepper

The chili pepper (also chile pepper or chilli pepper, from Nahuatl chīlli is the fruit of plants from the
Green bird's eye, yellow madame Jeanette, and red cayenne peppers
genus Capsicum, members of the nightshade family, Solanaceae. In Britain, Australia, Ireland, New Zealand, South Africa, Pakistan, India, and other Asian countries, the word "pepper" is usually omitted.

The substances that give chili peppers their intensity when ingested or applied topically are capsaicin (8-methyl-N-vanillyl-6-nonenamide) and several related chemicals, collectively called capsaicinoids.

Chili peppers originated in the Americas. After the Columbian Exchange, many cultivars of chili pepper spread across the world, used in both food and medicine. Chilies were brought to Asia by Portuguese navigators during the 16th century.

India is the world's largest producer, consumer and exporter of chili peppers. Guntur in the South Indian state of Andhra Pradesh produces 30% of all the chilies produced in India. Andhra Pradesh as a whole contributes 75% of India's chili exports.



The five domesticated species of chili peppers are as follows:
Thai pepper, similar in variety to the African birdseye
* Capsicum annuum, which includes many common varieties such as bell peppers, wax, cayenne, jalapeños, and the chiltepin
* Capsicum frutescens, which includes malagueta, tabasco and Thai peppers, piri piri, and Malawian Kambuzi
* Capsicum chinense, which includes the hottest peppers such as the naga, habanero, Datil and Scotch bonnet
* Capsicum pubescens, which includes the South American rocoto peppers
* Capsicum baccatum, which includes the South American aji peppers
Though there are only a few commonly used species, there are many cultivars and methods of preparing chili peppers that have different names for culinary use. Green and red bell peppers, for example, are the same cultivar of C. annuum, immature peppers being green. In the same species are the jalapeño, the poblano (which when dried is referred to as ancho), New Mexico (which is also known as chile colorado), serrano, and other cultivars.

Peppers are commonly broken down into three groupings: bell peppers, sweet peppers, and hot peppers. Most popular pepper varieties are seen as falling into one of these categories or as a cross between them.



The substances that give chili peppers their intensity when ingested or applied topically are capsaicin (8-methyl-N-vanillyl-6-nonenamide) and several related chemicals, collectively called capsaicinoids. Capsaicin is also the primary component in pepper spray, a less-than-lethal weapon.

When consumed, capsaicinoids bind with pain receptors in the mouth and throat that are responsible for sensing heat. Once activated by the capsaicinoids, these receptors send a message to the brain that the person has consumed something hot. The brain responds to the burning sensation by raising the heart rate, increasing perspiration and release of endorphins. A 2008 study reports that capsaicin alters how the body's cells use energy produced by hydrolysis of ATP. In the normal hydrolysis the SERCA protein uses this energy to move calcium ions into the sarcoplasmic reticulum. When capsaicin is present, it alters the conformation of the SERCA, and thus reduces the ion movement; as a result the ATP energy (which would have been used to pump the ions) is instead released as thermal energy.

The "heat" of chili peppers was historically measured in Scoville heat units (SHU), which is a measure of the dilution of an amount of chili extract added to sugar syrup before its heat becomes undetectable to a panel of tasters; the more it has to be diluted to be undetectable, the more powerful the variety and therefore the higher the rating. The modern commonplace method for quantitative analysis of SHU rating uses high-performance liquid chromatography to directly measure the capsaicinoid content of a chili pepper variety. Pure capsaicin is a hydrophobic, colorless, odorless, and crystalline-to-waxy solid at room temperature, and measures 16,000,000 SHU.

long periods of time, which may also be done by pickling.

Dried chilies are often ground into powders, although many Mexican dishes including variations on chiles rellenos use the entire chili. Dried whole chilies may be reconstituted before grinding to a paste. The chipotle is the smoked, dried, ripe jalapeño.

Many fresh chilies such as poblano have a tough outer skin that does not break down on cooking. Chilies are sometimes used whole or in large slices, by roasting, or other means of blistering or charring the skin, so as not to entirely cook the flesh beneath. When cooled, the skins will usually slip off easily.

The leaves of every species of Capsicum are edible. Though almost all other Solanaceous crops have toxins in their leaves, chili peppers do not. The leaves, which are mildly bitter and nowhere near as hot as the fruit, are cooked as greens in Filipino cuisine, where they are called dahon ng sili (literally "chili leaves"). They are used in the chicken soup tinola. In Korean cuisine, the leaves may be used in kimchi. In Japanese cuisine, the leaves are cooked as greens, and also cooked in tsukudani style for preservation.

Chili is by far the most important fruit in Bhutan. Local markets are never without chilies in different colors and sizes, in fresh and dried form. Bhutanese call this crop ema (in Dzongkha) or solo (in Sharchop). Chili is a staple fruit in Bhutan; the ema datsi recipe is entirely made of chili mixed with local cheese. Chili is also an important ingredient in almost all curries and food recipes in the country.

In India, most households always keep a stack of fresh hot green chilies at hand, and use them to flavor most curries and dry dishes. It is typically lightly fried with oil in the initial stages of preparation of the dish. Some states in India, such as Rajasthan, make entire dishes only by using spices and chilies.

Chilies are present in many cuisines. Some notable dishes other than the ones mentioned elsewhere in this article include:

* Arrabbiata sauce from Italy is a tomato-based sauce for pasta always including dried hot chilies.
Smoke-dried chipotle
Puttanesca sauce is tomato-based with olives, capers, anchovy and, sometimes, chilies.
* Paprikash from Hungary uses significant amounts of mild, ground, dried chilies, known as paprika, in a braised chicken dish.
* Chiles en nogada from the Puebla region of Mexico uses fresh mild chilies stuffed with meat and covered with a creamy nut-thickened sauce.
* Curry dishes usually contain fresh or dried chillies.
* Kung pao chicken (also spelled gong bao) from the Sichuan region of China uses small hot dried chilies briefly fried in oil to add spice to the oil then used for frying.
* Mole poblano from the city of Puebla in Mexico uses several varieties of dried chilies, nuts, spices, and fruits to produce a thick, dark sauce for poultry or other meats.
* Nam phrik are traditional Thai chili pastes and sauces, prepared with chopped fresh or dry chilies, and additional ingredients such as fish sauce, lime juice, and herbs, but also fruit, meat or seafood.
* 'Nduja, a more typical example of Italian spicy speciality, from the region of Calabria, is a soft, pork sausage made "hot" by the addition of the locally grown variety of jalapeño chili.
* Paprykarz szczeciński is a Polish fish paste with rice, onion, tomato concentrate, vegetable oil, chili pepper powder and other spices.
* Sambal belacan (pronounced "blachan") is a traditional Malay sauce made by frying a mixture of mainly pounded dried chillies and fermented prawn paste. It is customarily served with rice dishes and is especially popular when mixed with crunchy pan-roasted ikan bilis (sun-dried anchovies), when it is known as sambal ikan bilis.
* Som tam, a green papaya salad from Thai and Lao cuisine, traditionally has, as a key ingredient, a fistful of chopped fresh hot Thai chili, pounded in a mortar.
Fresh or dried chilies are often used to make hot sauce, a liquid condiment—usually bottled when commercially available—that adds spice to other dishes. Hot sauces are found in many cuisines including harissa from North Africa, chili oil from China (known as rāyu in Japan), and sriracha from Thailand.




Capsaicin is considered a safe and effective topical analgesic agent in the management of arthritis
Cubanelle peppers
pain, herpes zoster-related pain, diabetic neuropathy, mastectomy pain, and headaches. However, a study published in 2010 has linked capsaicin to skin cancer. A 2015 cohort study in China found that eating foods containing chili peppers at least twice a week led to a 10 percent reduced mortality rate all else being equal and eating foods containing chili peppers 6 to 7 days a week had a 14 percent relative risk reduction in total mortality; there was an inverse correlation between eating fresh chilies and diabetes not found in remainder of the cohort.

Crock Pot 3 Bean Buffalo Chili

Dinner Tonight: Crock Pot 3 Bean Buffalo Chili




Started my morning with a bowl of Cheerios Honey Nut Medley Crunch, my favorite Cheerios Cereal. After my morning workout I did some light housekeeping. It's one beautiful day in the neighborhood outside today! Still a light cool breeze bu t a high in the 60's and sunny. Ran an errand for Mom, stopped  by the bank, and the post office and back home. For dinner tonight one of my favorites, Crock Pot 3 Bean Buffalo Chili.
 




Well I'm using my last container of the Crock Pot 3 Bean Buffalo Chili I had in the freezer, time for another batch soon! I sat in the fridge overnight to thaw. To reheat it I just got the amount I wanted and put it in a small sauce pan and reheated it on medium low heat, till heated through. I love this Chili!



To make this Chili Comfort Food I needed; 2 lbs. Wild Idea Buffalo Ground Round (99% Lean) which is the best tasting Ground Buffalo that I’ve found. The 3 Beans I use are 1 Can (15 oz.) Chili Beans, 1 Can (15 oz.) Kidney Beans (rinsed), and 1 Can (15 oz.) Great Northern Beans (rinsed). Then I mix in 1 Red Onion (medium Chopped), 1 Jalapeno Pepper (Unseeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 1 Tbs. Ground Roasted Cumin (McCormick), 2 Tbs Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low and let this baby simmer for 5-6 hours. Then get ready to enjoy some serious Buffalo Chili! You can top it with Cheese or Diced Onions. Then you can serve it by itself, with Cornbread, or topping a Johnny Cake, over Spaghetti, Hot Dog topping, I even use it to make a Chili and Cheese Omelets. I had tonight's with a topping of Cheese and Oyster Crackers, Cincinnati Style! I've left the recipe at the end of the post. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Spicy Grilled Turkey


Ingredients
1 (1.10-pound) package JENNIE-O® Turkey Breast Cutlets
4 jalapeño peppers, sliced
CREAMY TACO SAUCE
1 (8-ounce) package low-fat cream cheese
1½ teaspoons taco seasoning
2 tablespoons lime juice
1 (16-ounce) can refried beans, warmed




Directions
Prepare grill for medium-high heat. Cook turkey cutlets on greased grill 2 to 3 minutes on each side. Always cook until well done, 165°F as measured by a meat thermometer. Cook jalapeño slices 2 minutes each side or until softened and grill marks appear.

To make creamy taco sauce, in medium skillet over medium heat, melt cheese. Add seasoning and lime juice. Stir until sauce is smooth and hot.

Serve turkey drizzled with sauce. Sprinkle jalapeños over sauce. Serve beans on side.

Sweet Pepper, Cilatro and Green Chile Shrimp Fajitas

Finally a day without the high humidity! It was about 72 for a high today. Ran some errands early and then back home. Got the cart out and did a little fishing and then just rode around enjoying the day. For dinner tonight; Sweet Pepper, Cilantro and Green Chile Shrimp Fajitas.








I used a packet of the Ortega Cilantro and Green Chile Skillet Sauce. If you like Shrimp Fajitas you have to give this sauce a try! To prepare it I used a bag of Kroger Seafood Jumbo Shrimp along with the packet of Ortega Cilantro and Green Chile Skillet Sauce, Delallo Tri-Color Pepperazzi Spicy Sweet Peppers, Chopped Jalapeno slices, Chopped Red Onion, fresh Shredded Asiago Cheese, and Ole Fajita Flour Tortillas.








I rinsed and drained my Shrimp off in a colander. I then heated up a tablespoon of Extra Virgin Olive Oil in a medium size skillet over medium heat. I started by slicing the Sweet Peppers into strips and adding them to the skillet along with the Chopped Red Onion, stirring them and cooking until tender (about 4 minutes). Stirred in the Shrimp and sliced Jalapenos, stirred this until the Shrimp just started turning pink. Then added the Ortega Cilantro and Green Chile Skillet Sauce, cooking another 4 minutes till everything was heated through. What an aroma coming from the skillet! Heated up the tortillas in the microwave for 20 seconds and topped them with Guacamole and the Shrimp Taco Mixture. I also topped it some fresh grated Asiago Cheese, and served. I keep packets of the Ortega Cilantro and Green Chile Skillet Sauce in stock, it makes on delicious Fajita! It's a nice heat to it but not overpowering with a fantastic medley of flavors. Winner, Winner, Shrimp Fajitas! For dessert/snack later a Jello Sugarless Dark Chocolate Mousse.

Chili and Cheese Nachos!

Partly sunny and around 70 degrees today, not a bad day outside. We went and seen my Aunt today, she's in an assisted living center here locally. Then went to a Birthday Party for my cousin's twins, 3 years old today! They've come such a long way. They were preemie twins, about 2 months early. They weren't sure they would make it, but they have and doing great. The boy is larger than his sister who is very petite. The boy is sort of mellow but the girl is a wild one! Just think the world of them! Got back sort of late so I wanted something easy but still delicious. So I went with a can't miss dish, Chili and Cheese Nachos!








I used Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape real good. For my toppings I used 1 can of Mario Sliced Black Olives. Before I go any further a bit about these Olives, anyone that uses small cans of Sliced Black Olives know what a pain they can be opening sometimes. Not these, they come in a can with a pull tab! About time. For my other toppings I used Mezzetta Deli Sliced Tamed Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella.





Add Cheese and Bake!


To prepare I preheat the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I start with a couple of tablespoons of Chili then I add my Scoops (Chips). I then add the Sliced Black Olives, the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese Blend. Then just pop it in the oven 10 minutes or so until the Cheese had started to melt and everything heated. For the Chili I warm it up in a sauce pan, adding a few shakes of Frank’s Red Hot Sauce, before I top the Scoops with it. Nothing better than a big plate of Chili Cheese Nachos! Also had an ice-cold Diet Dr. Pepper to drink. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Stove top: empty chili into saucepan. Stir occasionally while heating over medium heat, about 5 minutes or until hot. Microwave: empty chili into microwaveable bowl; cover loosely. Heat for 2 To 3 minutes or untilhot, stirring once. Careful. Let chili stand in microwave 1 minute and stir before serving. All microwaves And stoves vary. Times given are approximate.

Sweet Pepper, Cilantro and Green Chile Shrimp Tacos

Dinner Tonight: Sweet Pepper, Cilantro and Green Chile Shrimp Tacos








It hit 30 degrees today! Big improvement from where it's been. A good friend of mine that lives outside the Phoenix, Arizona area called me last night, we were talking sports of course. He was telling me the weather there is near perfect, a high of 75 and sunny! Come on Spring Time!! For dinner tonight a new one, Sweet Pepper, Cilantro and Green Chile Shrimp Tacos.

I had picked up a packet of Ortega Cilantro and Green Chile Skillet Sauce and couldn't wait to try it out, for some Shrimp Tacos. I used a bag of Kroger Seafood Jumbo Shrimp along with the packet of Ortega Cilantro and Green Chile Skillet Sauce, Delallo Tri-Color Pepperazzi Spicy Sweet Peppers, Chopped Jalapeno slices, fresh Shredded Dutch Gouda Cheese, and Ole Extreme Wellness High Fiber and Low Carb Tortilla Wraps.








I heated up a tablespoon of Extra Virgin Olive Oil in a medium size skillet over medium heat. I started by slicing the Sweet Peppers into strips and adding them to the skillet, stirring them and cooking until tender (about 4 minutes). Stirred in the Shrimp and sliced Jalapenos, stirred this until the Shrimp just started turning pink. Then added the Ortega Cilantro and Green Chile Skillet Sauce, cooking another 4 minutes till everything was heated through. What an aroma coming from the skillet! Heated up the Tortilla Wraps in the microwave for 20 seconds and added Shrimp Taco Mixture. I topped it some fresh grated Dutch Gouda, and served. Just an outstanding Wrap. I'll have to buy some more packets of the Ortega Cilantro and Green Chile Skillet Sauce, it makes on delicious Taco! Had a nice heat to it but not overpowering. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.
