Pulled Chicken, Black Bean, and Corn Soft Tacos

Dinner Tonight: Pulled Chicken, Black Bean, and Corn Soft Tacos

For Breakfast I made some hash Browns and a slice of Toast. I used Simply Potatoes Hash Browns and for the Toast I used Healthy Life Whole Grain Bread. Did a few things around the house and then I was off to the hospital. My best friend was going to have surgery this morning. I went up to be with his sister and we waited together. He's going to be fine as everything went well. It seems like I've been at this hospital way too much of late, 2 friends of mine and my dad all have been up here the last few weeks. So often that the Parking Valets know me by name. Back at home I laid down for a bit for a short nap and to relax a bit. For dinner tonight it's Pulled Chicken, Black Bean, and Corn Soft Tacos.

I wanted something light and delicious so what better than some Soft Tacos. To make these I'll need the following; Old El Paso Flour Tortillas, 1 Rotisserie Chicken (Pulled Chicken), various Spices (to season the Chicken), 1 can Bush's Chili Beans (Black Beans in Mild Chili Sauce), 1 can Green Giant Steam Crisp Niblets (Whole Kernel Sweet Corn, sliced Black Olives, chopped Lettuce, Daisy Light Sour Cream, and Old El Paso Taco Sauce (Smoky Chipotle). The makings of something good!

I had purchased the Rotisserie Whole Chicken from Kroger yesterday afternoon. After getting it
home I pulled all the meat and stored it in a plastic container in the fridge until today when it was time to make the Tacos. I put the Chicken in a skillet and reheated it on medium heat. As the Chicken was heating I seasoned it with Ground Cumin, Dried Cilantro, Chili Seasoning, McCormick Grinder Sea Salt and McCormick Grinder Peppercorn Medley.

As the Chicken was heating I got my other ingredients ready. I opened up a can of Early California Whole Large Black Olives (Reduced Salt) and sliced them up. Then I got 2 small sauce pans; 1 for the Chili Beans and 1 for the Corn. Heated both until heated through.

With all the ingredients heated and ready I got the Soft Tortillas ready. I wrapped the Tortillas in
paper towels and microwaved them for 40 seconds. Now to make the Soft Tacos. I first layered in the Chicken, followed by the Taco Sauce, Chili Beans, Corn Kernels, Taco Sauce, Lettuce, and topped with a dab of Light Sour Cream. Loaded and ready to eat! Love these Soft Tacos. All the ingredients just come together to make one flavorful meal. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Turkey and Black Bean Pita Bread Tacos

Dinner Tonight: Turkey and Black Bean Pita Bread Tacos

Started my morning off with Fried Turkey Spam, 1 Egg Sunnyside Up, 2 Slices Klosterman Wheat Bread, and a cup of hot brewed Bigelow Decaf Green Tea. Did some laundry for Mom. Finally got her out of the house to enjoy herself. She met her cousin, who is like a sister to her, for lunch. She needed to get out, it's just so stressful dealing with my Dad as his health isn't getting any better and doesn't do anything to try to get better.  Moving on, it's a beautiful day outside, around 80 or so and low humidity (No Rain either). For dinner tonight I prepared Turkey and Black Bean Pita Bread Tacos.

I used my favorite Ground Turkey, Jennie-O Extra Lean Ground Turkey Breast. The Jennie-O Extra
Lean Ground Turkey Breast comes in at 120 calories, 1.5g of Fat, and 0 carbs and comes out perfect every time! To prepare the Turkey I fried it in a medium size skillet in Extra Virgin  Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix, 3/4 cup of Water, and I also added 1 can of Bush’s Low Sodium Black Beans, I drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos. Mixed well until everything was coated and then simmered another 5 minutes until heated through.

For my other Taco toppings I used 1 small can of Mario Sliced Black Olives, sliced Green Olives,
some Whole Kernel Corn (Leftover from Dinner the other night), Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Shredded Lettuce, Old El Paso Taco Sauce, and Daisy Reduced Fat Sour Cream  and all in a Joseph Flax, Oat Bran and Whole Wheat Pita Bread. I love these Pita Breads! 50 Calories, 1g Fat and only 4 Net Carbs! I use them instead of Bread when I can. The Pita Bread makes a perfect Taco and healthier Taco! For dessert later a Healthy Choice Chocolate Swirl Frozen Greek Yogurt.

Turkey Tacos!

Dinner Tonight: Turkey Tacos

Rain and sun mix on and off all day. We've been lucky so far, the bad storms and tornadoes haven't been in this area. I had read the other day that Pork prices were soaring and after stopping by Kroger I believe it! Huge increase on all the Pork as well as the Beef products. For dinner tonight it's Taco Night!

As usual when I make Turkey Tacos it’s with Jennie -O Ground Turkey Breast! Love the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. Most times I also add Black Beans but decided not to this time.

For toppings I'll be using; Sliced Black Olives, Sliced Green Olives, Dean's Guacamole, Old El Paso Taco Sauce, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N' Stuff Taco Shells (Whole Grain Corn). Add the Jennie - O Turkey and you got you some mouth watering and delicious Tacos! Love Taco Nights. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

Buffalo Tacos!

Dinner Tonight: Buffalo Tacos

Wow, back to back sunny days above freezing! Come on Spring Time. The forecast is still looking good, with a continued warm up. Went to the bank and got my car washed, a much needed wash! For dinner tonight Buffalo Tacos.

For the most part when making a Buffalo Meat dish, I'm using my favorite Wild Idea Buffalo. I'm using the Wild Idea Buffalo Ground Round, 99% Lean. I started by frying the Ground Buffalo in Canola Oil (on medium heat) and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. I then added 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup of Water. When using Buffalo, or Bison, always remember it gets done quicker than other meats. I stirred everything until it was well mixed and then let it simmer on medium low until the water reduced and it started to thicken up a bit. Just a fantastic aroma as it was cooking!

For my other toppings I used 1 small can of Mario Sliced Black Olives, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Dean’s Guacamole, Old El Paso Taco Sauce, and it's all in a Ortega Fiesta Flats. You can have so many different types of Tacos with so many different toppings, just endless options for dinner. This is the second  time I tried the New Ortega Fiesta Flats. They make a nice option to the regular Taco Shell. Their 150 calories and 17 net carbs per serving, 2 Shells make a serving. They’re nice size, so you can load them up with healthy toppings. Another plus is they seem to hold their shape, even after a couple of bites.Nice add to keep in the pantry. For dessert later Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Wild Idea Buffalo Ground Round, 99% Lean

We use the Top Round and the Sirloin Tip cuts and remove all visible fat, for this super lean meat. It is rich and dark in taste and color. Substitute for any of your favorite ground dishes.

Black Bean and Turkey Tacos Tonight!

Dinner Tonight: Black Bean and Turkey Tacos Tonight

It's Monday!Splattered 2 Eggs in the floor this morning, then got some bread out to toast and it had molded, then the capper for the morning I went out to get the paper this morning and they had tossed it in the grass by the edge of the drive-way and I was in my Hoveround. Took the Hoveround it to the edge of the drive and reached for the paper, you guessed it the Hoveround tipped over with me in it! I'm fine, scrapped up knee and a couple of bruises. Come on Tuesday, hurry up and get here! For dinner I prepared Turkey Tacos.

I used the Ground Turkey and Black Bean Mix I had leftover from last nights dinner. i warmed it up along with toppings of a can of Green Giant Steam Crisp Sweet Corn Kernels, Lindsay Sliced Black Olives, Shredded Lettuce, Old El Paso Taco Sauce, and I used Old El Paso Stand - Up Taco Shells. I love tacos, tacos of all kinds. One of the more versatile dinner items there is. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt and a Ice pack for the bruises!

Pulled Buffalo Chipotle BBQ Sandwich w/ Mini Taco Tostadas Appetizers

Dinner Tonight: Pulled Buffalo Chipotle BBQ Sandwich w/ Mini Taco Tostadas Appetizers

Wow, we finally saw the sun today! They say not for long though as more heavy rain predicted. Went to
Meijer this morning and picked up quite a few items. Finding Meijer prices lower and lower, that's a good thing. They also have the best selections of Jennie - O products, which I love using! In fact I'll be using some of the Jennie - O Extra Lean Ground Turkey for an appetizer for tonight. For dinner I prepared a Pulled Buffalo Chipotle BBQ Sandwich w/ Mini Taco Tostadas Appetizers.

I used Wild Idea Buffalo Pulled Buffalo Chuck Roast. It comes in a 1 lb. package and it's already cooked. It's rubbed with a blend of Mexican seasonings and then slowly braised to fall apart tender. All I did was open and heat! I topped it with JB'S Fat Boy Chipotle BBQ Sauce and served on a Aunt Millie's Light Whole Grain Sandwich Bun. I love Buffalo and Wild Idea Buffalo has the most delicious Buffalo Meat there is!

For a side or appetizer I prepared Mini Taco Dip Tostadas with a Greek Yogurt/Sour Cream Sauce. Really
happy how this came out, delicious! A really good and easily prepared appetizer. Got the idea from the Cooking Channel and I used some reduced fat items to make it a bit more healthy and keeping the taste. I first made Greek Yogurt/Sour Cream Sauce using a 1/4 cup Nonfat Greek Yogurt, 1 Tablespoon Daisy Reduced Fat Sour Cream, and the Zest of 1 lime, plus juice of 1/2 lime. Just combine all the 3 ingredients in a small bowl and refrigerate until ready to use, real easy to make. For the  Mini Taco Dip Tostadas I needed 1/2 - Packet Old El Paso Taco Seasoning, 2 Tablespoons Extra Virgin Olive Oil, Tortilla chips, preferably round, 8 ounces Jennie - O 99-percent Fat-Free Ground Turkey, 1/2 cup Low Sodium Canned Black Beans, rinsed and drained, Pinch Sea Salt, Fresh Cracked Black Peppercorn, Frank's Red Hot Sauce to taste, optional, and 1 cup Sargento Shredded Reduced - Fat Cheddar Cheese.

Heat the oil in a large skillet over medium-high heat. Preheat the oven to 350 degrees F.Place chips in on a broiler-proof baking sheet set aside. Brown the turkey in the skillet, breaking it up with a fork, until the meat is no longer pink, 5 to 7 minutes. Add 1 tablespoon of the taco seasoning, salsa and some salt and black pepper. Continue cooking, stirring occasionally, until most of the liquid has evaporated. Spread turkey mixture across all the chips and top with the cheese. Broil long enough to melt cheese and heat the chips, and then let cool and serve! This is a real keeper recipe! We could have made a meal of just these, everyone enjoyed them! I left the full recipe at the end of the post. For dessert later tonight a slice of Pillsbury Nut Quick Bread topped with a scoop of Breyer's Carb Smart Vanilla Ice Cream.

Fish (Cod) Tacos w/ Refried Beans

Dinner Tonight: Fish (Cod) Tacos w/ Refried Beans

Beautiful day out, a good breeze kept the humidity down all day. I had purchased a large fillet of Cod yesterday when I was Kroger. I sliced it up into 3 pieces, saving 2 pieces that I froze to make Fish Sandwiches out of later and 1 piece for my dinner tonight. I prepared Fish Tacos along with a side of Refried Beans.

I first washed the Cod off in water and patted dry with a paper towel. I then grabbed a Hefty Zip Plastic Bag and added Zatarain's Lemon Pepper Breading Mix and the Cod, shaking it till it was well covered. I pan fried it in Canola Oil, fried it about 3 minutes per side. The Zatarain's gives it perfect seasoning. After it was done I broke it into smaller pieces for the Taco.

For toppings along with the Cod I used Green Giant Sweet Yellow and White Corn Kernals, Shredded Lettuce, Ortega Diced Jalapenos, Sliced Black Olives, fresh grated Dutch Gouda Cheese, and Taco Bell Bold and Creamy Chipotle Sauce. If you've never tried the Taco Bell Bold and Creamy Chipotle Sauce and you like Taco Sauce with a nice little kick to it you'll love this Sauce! Not over bearing heat but a nice little warm up. The Cod with all the toppings and Sauce make a good Taco. Cod is so versatile, you can cook it about any way and use it for countless dishes. I also warmed a can of Old El Paso Fat Free Refried Beans, perfect side for Tacos and it's Fat Free! For dessert later some Peanut Butter and Crackers. I used Jif Reduced Fat Peanut Butter and Ritz Whole Grain Crackers.

Tacos, Turkey Tacos!

Dinner Tonight: Turkey Tacos

Beautiful day out, a little humidity but not bad. My Mom is doing a lot better and getting around fine. For dinner it was Turkey Tacos. I used Honeysuckle White Ground Turkey (97/3). I seasoned it a bit with Cilantro, Sea Salt, and Smoked Ground Cumin and I used Old El Paso Taco Seasoning.

For the Taco fillers I had Green Giant Summer Crisp White and Yellow Kernel Corn, sliced Black Olives, shredded Lettuce, Arugula, Sargento Mexican 4 Cheese, and Old El Paso Medium Taco Sauce. To assemble my Taco I first layered the bottom with shredded Lettuce, the Lettuce helps soak up any moisture so the bottom of your Taco doesn’t get soggy. After the Lettuce I layered in my ground Turkey, then Black Olives, Corn, Arugula, Taco Sauce   topped with the Shredded Cheese! I love a Taco when it all comes together! For dessert/snack later this evening a 100 Calorie Mini Bag of Jolly time Pop Corn.

Taco Night! Turkey Tacos!

Today's Menu: Taco Night! Turkey Tacos!

Has Spring actually arrived and staying? 80 degrees and sunny out today, a perfect day! We''ll wait and see if drops back down to chilly in a day or so. On to to tonight's dinner; It was Turkey Taco Night along with a side of Fat Free Refried Beans.

Tonight's meal was almost all Old El Paso. I used Old El Paso Stand Up Taco Shells, Old El Paso Fat Free Beans, Old El Paso, Sliced Green Chilies, and Old El Paso Original Taco Seasoning. OLE! The Ground Turkey I used was Honeysuckle White Extra Lean Ground Turkey (99/1). I browned the Turkey in Canola Oil, seasoning it with Sea Salt, Ground Pepper, Ground Roasted Cumin, Dried Cilantro, and the Old El Paso Taco Seasoning. I almost always substitute Ground Turkey or Ground Buffalo for Ground Beef, all around healthier for you (See the end of the post).
Refried

My toppings for the Tacos include Sliced Black Olives, Sliced Green Chilies, Shredded Lettuce,  Sargento Reduced Fat 4 Cheese Mexican, and Old El Paso Taco Sauce (Medium). As I said Earlier I used Old El Paso Stand Up Taco Shells and I had a small side of Refried Beans topped with Daisy Reduced Fat Sour Cream. Can't wait to make some Ground Buffalo Tacos here in the next week or so! For dessert later a bowl of Breyer's Carb Smart Vanilla Ice cream topped with some sliced Mangos.

Ground Turkey vs Ground Beef

A 100-g serving of ground turkey contains 148 calories, while the same-sized serving of ground beef contains 192 calories.

Ground turkey contains much less fat than ground beef, which is generally considered to be a benefit. Each 100-g serving of ground turkey contains 7.7 g of fat, while 100 g of ground beef contains 12.7 g.

Both ground beef and ground turkey can be appropriate for carbohydrate-restricted diets, as both are carbohydrate-free.

Ground beef and ground turkey are both good sources of protein. Ground turkey contains slightly more protein, 19.7 g, than ground beef, which contains 19.4 g. This difference is unlikely to affect your overall health.

With this weather the way it is around here It's no wonder so many people have the flu! Yesterday we had to
turn the air conditioner on in the late afternoon because it was in the 80's and a bit humid. Today a cold wind and 34 degrees, and had to turn the heat on! Amazing!  For dinner I prepared my favorite Tortilla, the Old El Paso Stand ‘n Stuff Soft Flour Tortillas. I see them now more often in stores, so there a whole lot easier to find now. Love these things, their only 160 calories and 24 carbs for 2 Soft Shells, more than enough for 1 person by the time you load it up. So for dinner tonight it was Old El Paso Stand ‘n Stuff Soft Flour Tortillas w/ Ground Turkey and all the Fix’ins!

I filled mine with Jennie – O Extra Lean Ground Turkey – 99/1. I pan fried it in Canola Oil and seasoned it with Ground Cumin, Sea Salt, Cilantro Flakes, and a 1/2 packet of Old El Paso Taco Seasoning. Then for the fillers I added Green Giant Steam Crisp Super Sweet Yellow and White Corn, Sliced Black Olives, Bush’s Low Sodium Dark Red Kidney Beans, Lettuce, Kraft Mexican Taco Shredded Cheese, and Taco Bell Creamy Chipotle Sauce. If you’ve never tried the Taco Bell Creamy Chipotle Sauce it’s another you have to try. It’s got a nice creamy thick sauce with just the right amount of Chipotle heat! For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Old El Paso Stand ‘n Stuff Soft Flour Tortillas w/ Ground Turkey and all the Fix’ins

Dinner Tonight: Old El Paso Stand ‘n Stuff Soft Flour Tortillas w/ Ground Turkey and all the Fix’ins

Couldn't wait to have these Soft Tortillas again, Old El Paso Stand ‘n Stuff Soft Flour Tortillas. This is one of my favorite Taco Shells, these are great! Their a Flour Soft Stand Up Tortilla. Only 160 calories and 24 carbs per serving which is 2 Tortillas. Their formed into a soft bowl and keep their shape after warming them up and loading them up! Because of their shape you can really load them up with your fillers. If you come across these grab a box, you’ll love them!

Tonight's Dinner Fix'ins are; Jennie – O Extra Lean Ground Turkey – 99/1. I pan fried it in Canola Oil and seasoned it with Ground Cumin, Sea Salt, Cilantro Flakes, Diced Green Onions, and a 1/2 packet of Old El Paso Taco Seasoning. I also added Dole Chef's Cut Diced Pineapple and Mango, Del Monte Sweet Corn, Sliced Black Olives, Bush’s Low Sodium Dark Red Kidney Beans, Lettuce, fresh Shredded Dutch Gouda Cheese, and Taco Bell Creamy Chipotle Sauce. If you’ve never tried the Taco Bell Creamy Chipotle Sauce it’s another you have to try. It’s got a nice creamy thick sauce with just the right amount of Chipotle heat! A little high in calories and fat but it’s one of those that’s so good it’s worth it every now and then. The Dole Chef's Cut Diced Pineapple and Mango is another new item I came across at Walmart the other day. They come frozen and already diced, perfect for any recipe. Adding this to all the other ingredients was the right touch! Along with heat provided by different things the fruit gives that slightly sweet taste, great pairing! These could be the best Tacos I've ever prepared. My parents were going to have something else for their dinner till they seen how good they looked. They agreed with me delicious! For dessert later some Newman's Own Blackbean and Corn Salsa with Tostito's Baked Scoops.

Turkey Tacos!

Dinner Tonight: Turkey Tacos

I'll start off by saying our prayers and thoughts go out to all those affected by the incoming hurricane, may you all be safe! I Had these about a week ago and couldn't wait any longer to have them again, Turkey Tacos! I used Honeysuckle White Ground Turkey (93/7). I seasoned it a bit with Cilantro, Sea Salt, and Smoked Ground Cumin and I used Old El Paso Taco Seasoning.

For the Taco fillers I prepared a good variety to please everyone. I prepared a can of Del Monte Whole Kernal Corn, a can of Bush's Reduced Sodium Black Beans, sliced Black Olives, diced Tomato's, shredded Lettuce, Deli Style Sliced Tamed Jalapeno's, 2 types of Cheese Kraft 2% Shredded Sharp Cheese and fresh grated Dutch Gouda, and two types of Taco Sauce- Old El Paso Medium Taco Sauce and Taco Bell Bold and Creamy Chipotle Sauce. So we had plenty of choices of toppings for some great tasting Tacos! I also added a side of Refried Beans.

To assemble my Taco I first layered the bottom with shredded Lettuce, the Lettuce helps soak up any moisture so the bottom of your Taco doesn't get soggy.

After the Lettuce I layered in my ground Turkey, then Black Olives, Corn, Black Beans, Taco Bell Bold & Creamy Chipotle Sauce and all of it topped with shredded Dutch Gouda Cheese! Ohhh tooo GOOD!

For dessert later a Jello Sugar free Chocolate Pudding topped with some Cool Whip Free.

Turkey Tacos w/ Refried Beans

Today's Menu: Turkey Tacos w/ Refried Beans

Simple, easy, and delicious! It was Turkey tacos w/ Refried Beans for dinner tonight. It had been a while since I had Tacos. I used Honeysuckle White Extra Lean Ground Turkey, 99/1 and 140 calories and 0 carbs. I wanted to use Jennie - O Extra Lean which is 20 less calories but they were out of stock on it. I browned the Turkey until it was no longer pink, I fried it in Canola oil. As it it finished browning I added a packet of Old El Paso Original Taco Seasoning.

I prepared several items for the filling to give everyone a variety. I prepared a can of Bush's Reduced Sodium Black Beans, a small can of Del Monte Whole Kernel Corn, sliced Black Olives, a jar of Dunbar's Sweet Roasted Peppers, shredded Lettuce, Kraft Mexican Taco Cheese, and two types of Taco Sauce; Ortega Mild Taco Sauce and Taco Bell Bold and Creamy Chipotle Sauce. So as you can see everyone had plenty of choices for their Taco fillings. I loaded mine with a bit of everything! I used the Ortega Mild Taco sauce. I also warmed up a can of Old El Paso Reduced Sodium Refried Beans. Just a note about the Dunbar's Sweet Roasted Peppers, this was the first time I tried them. These were fantastic! Great flavor and went great with everything. For dessert/snack later tonight a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Chicken Soft Tacos

Today's Menu: Chicken Soft Tacos

I had no clue on what to have for dinner tonight so I went shopping at the local Walmart to see what looked good. After hitting a few aisles I came across dinner! I picked up some Old El Paso Soft Tacos, a few cans of Ortega Premium Chunk Chicken Breast with rib meat in Santa Fe style sauce with black beans & corn, Thin Cut Chicken Breasts, and Lettuce. I had Shredded Cheese Sliced Black Olives, Green Chilies, and Taco Sauce already at the house so I was set to have Chicken Tacos for dinner tonight!

I used Harvestland Thin Cut Chicken Breasts. I seasoned them with Morton's Salt Substitute and Ground Black Pepper. I've been trying out The Morton's Salt Substitute here lately. My blood pressure been running a tad high so I've been trying to cut Salt where I can. Anyway back to the Chicken after seasoning it I fried them in Extra Virgin Olive Oil about 4 minutes per side. Removed them from the heat and sliced them into strips. I then microwaved 1 can of Ortega Premium Chunk Chicken Breast with rib meat in Santa Fe style sauce with black beans & corn and mixed it with the sliced Chicken. A can of this contains enough Chicken by itself but I wanted to add more meat to it.

With the Chicken ready I heated 2 Old El Paso Soft Tacos, 40 seconds in the microwave and assembled my Tacos. Layered Lettuce, Chicken mixture, Kraft Mexican Cheese, and Topped with Ortega Mild Green Taco Sauce. I don't use this sauce often enough! Just a hint of heat to it and very flavorful. It's made with Green Tomatoes and Tomatillos. Good alternative to normal Taco Sauce. Fantastic Tacos! For me the Mild Green Taco Sauce and the  Ortega Santa Fe style brings everything together and makes some delicious Tacos! I left the info on the Ortega Premium Chunk Chicken Breast with rib meat in Santa Fe style sauce with black beans & corn at the end of the post. For dessert later a slice of Pillsbury Nut Quick Bread.

Tilapia Tacos!

Dinner Tonight: Tilapia Tacos

I wanted Fish tacos so I found a couple of recipes on line and combined the two and they came out perfect. I used some of the delicious Tilapia that I have been buying from Walmart. The seasoning is perfect for Fish with a little bit of a kick but not overpowering. For the Salsa I used my favorite it's a Kroger Store Brand Naturally Preferred Black Bean and Corn Organic Salsa. I also used  Murray's Maple Smoked White Cheddar Cheese. If you've never tried Murray's Cheese, and it's available in your area, give it try. They have a wide variety and always great tasting. Anyway I assembled all the ingredients on to my Stand Up Tacos and enjoyed 2 very delicious Tacos! I left the recipe below.

Tilapia Fish Tacos
Makes 4 tacos

Ingredients:

1 Teaspoon Chili Powder
1/2 Teaspoon Smoked Cumin
1/4 Teaspoon Cayenne Pepper
1 Teaspoon of Cilantro Flakes
Extra Virgin Olive Oil
1 Lime
2 6-Ounce Tilapia fillets (or Mahi Mahi or Haddock would work well)
Sea Salt and Ground Black Pepper to taste
4 Old El Paso Stand 'N Stuff Taco Shells or use a Soft Taco's

For toppings:
I used Mezzetta Deli Sliced Tamed Jalapeno Peppers, Mixed Salad from a Salad Bag, Murray's Maple Smoked White Cheddar, Naturally Preferred Black Bean and Corn Organic Salsa (Kroger Brand)

Directions:
1) Prepare the fish. Mix the Chili Powder, Smoked Cumin, Cayenne Pepper, Cilantro, 1 tablespoon Olive Oil and the juice of 1 Lime in a small bowl. Arrange the fish fillets in a glass baking dish or plate. Brush fillets on both sides with spice mixture and season with Salt and Pepper. Let marinate at room temperature for 30 minutes.

2) Heat a large nonstick skillet over a medium heat and add 1 tablespoon of Olive Oil. Saute the fillets until browned and cooked through, about 4 minutes per side. Transfer to a plate and break into bite-sized chunks with a fork.

3) Assemble the tacos. Divide fish among four tortillas and add your favorite toppings and Enjoy!

Garlic Chili Chicken Soft Taco w/ Refried Beans and Pop Corn Chips

Today's Menu: Garlic Chili Chicken Soft Taco w/ Refried Beans and Pop Corn Chips

An easy to fix low carb and low calorie dinner tonight. I used Old El Paso Tortilla Stuffers. I love these from Old El Paso. They have a Carne Asada Steak and Garlic Chili Chicken, which is the one I went with tonight. The Garlic Chili Chicken includes the Seasoned Rice, Chicken, Pinto Beans, and Peppers, plus it's only 80 calories and 11 carbs! I used La Banderita Low Carb and Low Fat Soft Tacos, 81 calories and 11 carbs. As a side I had a serving of Old El Paso Fat Free Refried Beans and  a half serving of Chip'ins Pop Corn Chips. Here's another great low carb item Chip'ins. Only 120 calories and 22 carbs per serving, about 20 chips equals a serving. For dessert later I'll have a Yoplait Delight Chocolate Eclair Parfait.
