Slow Cooker Honey Chipotle Chicken Tacos

Dinner Tonight: Slow Cooker Honey Chipotle Chicken Tacos

For Breakfast this morning I heated up the remainder of the Potato and Ham Skillet along with the morning cup of Bigelow Decaf Green Tea. After Breakfast I went to the local Kroger here up the road. Wanted to go early before the rain returned. I didn't need much but as always I picked up a few extra items. Back home finished up some laundry for Mom. Then later I took everything out of the fridge and gave it a good cleaning. My how time flies when your having fun! For Dinner tonight a new Chicken Dish. I prepared Slow Cooker Honey Chipotle Chicken Tacos.

The minute I saw this recipe I knew I had to try it! I seen it on Facebook and after checking on the net I found various sites that had it, all basically the same. I'm using the the one from the with salt and wit website (http://withsaltandwit.com/). A very good website with a load of great recipes, check it out! To make the dish I'll need the following; For the Chicken: - 2 pounds skinless and boneless chicken breasts, ⅓ cup honey. For the Honey Chipotle Marinade: - 1½ teaspoons chili powder, 2 teaspoons chipotle in adobo sauce (or ground chipotle powder if gluten free), 1 tablespoon ground cumin, 1½ teaspoons paprika, 1½ teaspoon garlic salt, 1 teaspoon onion powder, heaping ½ teaspoon ground coriander, and ½ teaspoon pepper. Just by the list of seasonings, you can tell that the Chicken will be packed with flavor!

I had the Chicken Breasts in the freezer so I sat them in the fridge and let them thaw overnight. To
prepare the dish; Got the Slow Cooker out and lined it with a Slow Cooker Liner, then sprayed it with Pam Cooking Spray. Placed the chicken in the bottom of the Slow Cooker. Then mixed together the Chicken Rub Ingredients. Sprinkled the Rub evenly over the Chicken. Next take the Honey and pour over top the Chicken. Cover and cook on high for 3 - 3½ hours or low for 5-6 hours or until meat is cooked through and easily falls apart. I cooked mine on high for 4 hours. Once the Chicken was cooked, remove it from the slow cooker and shred it with two forks. Then return the shredded chicken back to the slow cooker to absorb the cooking liquid. Taste and seasoned it with salt and pepper.

To serve them; I used Old El Paso Flour Tortillas. I wrapped the Tortillas in a paper towel and heated
them up in the microwave, 30 seconds. In the center of each Tortilla, added the Chicken mixture and topped with the other toppings. Toppings I used; Red Cabbage, Kraft 2%  Shredded Colby/Jack Cheese, sliced Black Olives, and a light touch of Ortega Smokey Chipotle Taco Sauce. And these Soft Tacos are ready to serve! One huge problem I came across with this recipe, when you shred the Chicken trying not to eat it as you shred it! The Chicken is incredible, just bursting with flavor! You have all the Spices, with heat from the Chipotle, and then the Honey giving it a sweet taste. Truly a "Keeper Recipe". So if you love Chicken and Soft Tacos, you have to try this one! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Pulled Chicken, Black Bean, and Corn Soft Tacos

Dinner Tonight: Pulled Chicken, Black Bean, and Corn Soft Tacos

For Breakfast I made some hash Browns and a slice of Toast. I used Simply Potatoes Hash Browns and for the Toast I used Healthy Life Whole Grain Bread. Did a few things around the house and then I was off to the hospital. My best friend was going to have surgery this morning. I went up to be with his sister and we waited together. He's going to be fine as everything went well. It seems like I've been at this hospital way too much of late, 2 friends of mine and my dad all have been up here the last few weeks. So often that the Parking Valets know me by name. Back at home I laid down for a bit for a short nap and to relax a bit. For dinner tonight it's Pulled Chicken, Black Bean, and Corn Soft Tacos.

I wanted something light and delicious so what better than some Soft Tacos. To make these I'll need the following; Old El Paso Flour Tortillas, 1 Rotisserie Chicken (Pulled Chicken), various Spices (to season the Chicken), 1 can Bush's Chili Beans (Black Beans in Mild Chili Sauce), 1 can Green Giant Steam Crisp Niblets (Whole Kernel Sweet Corn, sliced Black Olives, chopped Lettuce, Daisy Light Sour Cream, and Old El Paso Taco Sauce (Smoky Chipotle). The makings of something good!

I had purchased the Rotisserie Whole Chicken from Kroger yesterday afternoon. After getting it
home I pulled all the meat and stored it in a plastic container in the fridge until today when it was time to make the Tacos. I put the Chicken in a skillet and reheated it on medium heat. As the Chicken was heating I seasoned it with Ground Cumin, Dried Cilantro, Chili Seasoning, McCormick Grinder Sea Salt and McCormick Grinder Peppercorn Medley.

As the Chicken was heating I got my other ingredients ready. I opened up a can of Early California Whole Large Black Olives (Reduced Salt) and sliced them up. Then I got 2 small sauce pans; 1 for the Chili Beans and 1 for the Corn. Heated both until heated through.

With all the ingredients heated and ready I got the Soft Tortillas ready. I wrapped the Tortillas in
paper towels and microwaved them for 40 seconds. Now to make the Soft Tacos. I first layered in the Chicken, followed by the Taco Sauce, Chili Beans, Corn Kernels, Taco Sauce, Lettuce, and topped with a dab of Light Sour Cream. Loaded and ready to eat! Love these Soft Tacos. All the ingredients just come together to make one flavorful meal. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Roasted Red Pepper, Cilatro and Green Chile Shrimp Tacos

Dinner Tonight: Roasted Red Pepper, Cilantro and Green Chile Shrimp Tacos

To start my Sunday morning I heated up a couple of slices of Smithfield Anytime Sliced Ham and
then served them on a toasted Healthy Life Whole Grain English Muffin. Another cool morning out, around 34 degrees. Cloudy but less windy out and it a high in the 50's. Mom and Dad went to Church so it gave me a chance to clean the house. After that Mom had a ton of old bills and such that I shredded for her. For dinner tonight I prepared Roasted Red Pepper, Cilatro and Green Chile Shrimp Tacos.

I had picked up a packet of Ortega Cilantro and Green Chile Skillet Sauce and couldn’t wait to have some Shrimp Tacos. It's been quite a while since I've made these. I used a bag of Kroger Seafood Large Shrimp along with the packet of Ortega Cilantro and Green Chile Skillet Sauce, Delallo Roasted Red Peppers, Jalapeno slices, Shredded Carrots, Chopped Scallions, fresh Shredded Kroger Private Selection Asiago Cheese, and Old El Paso 6" Flour Tortillas. The Old El Paso 6" Flour Tortillas are 150 calories and 29 carbs per serving (2 Tortillas).

I heated up a tablespoon of Extra Virn Olive Oil in a medium size skillet over medium heat. I started
by slicing the Sweet Peppers into strips and adding them to the skillet, stirring them and cooking until tender (about 4 minutes). Stirred in the Shrimp and sliced Jalapenos, stirred this until the Shrimp just started turning pink. Then added the Ortega Cilantro and Green Chile Skillet Sauce, cooking another 4 minutes till everything was heated through. What an aroma coming from the skillet! Heated up the Tortilla Wraps in the microwave for 20 seconds and added Shrimp Taco Mixture. Carrots, Scallions, then topped it some fresh grated Asiago Cheese, and served. Just a flatout delicious Shrimp Soft Taco! Had a nice heat to it but not overpowering. I need to start having these much more often! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Garlic Chili Chicken Soft Taco w/ Refried Beans and Pop Corn Chips

Today's Menu: Garlic Chili Chicken Soft Taco w/ Refried Beans and Pop Corn Chips

An easy to fix low carb and low calorie dinner tonight. I used Old El Paso Tortilla Stuffers. I love these from Old El Paso. They have a Carne Asada Steak and Garlic Chili Chicken, which is the one I went with tonight. The Garlic Chili Chicken includes the Seasoned Rice, Chicken, Pinto Beans, and Peppers, plus it's only 80 calories and 11 carbs! I used La Banderita Low Carb and Low Fat Soft Tacos, 81 calories and 11 carbs. As a side I had a serving of Old El Paso Fat Free Refried Beans and  a half serving of Chip'ins Pop Corn Chips. Here's another great low carb item Chip'ins. Only 120 calories and 22 carbs per serving, about 20 chips equals a serving. For dessert later I'll have a Yoplait Delight Chocolate Eclair Parfait.
