Crock Pot 3 Bean Buffalo Chili w/ Cornbread

Dinner Tonight: Crock Pot 3 Bean Buffalo Chili w/ Cornbread

For breakfast I reheated some leftover Pioneer Peppered White Gravy and toasted a couple of slices of Healthy Life Whole Grain Bread, love gravy on everything! It was another night of heavy rain that continued through the day. One of those rainy days to stay in and kick back. Which is what I did for most of the day, I'm in a huge Slug Mode. For dinner tonight I wanted a major comfort food so tonight it's Crock Pot 3 Bean Buffalo Chili w/ Cornbread.

I got my last container of my Crock Pot 3 Bean Buffalo Chili out of the freezer and let it thaw overnight in the fridge. Which also means I'll be making another batch before too long! I'll leave full details on how to make it.

It’s loaded with nothing but good things. I use Wild Idea Buffalo Ground Round (99% Lean) which is
the best tasting Ground Buffalo that I’ve found. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Red Beans), 1 Can (16 oz.) Bush’s chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) drained and rinsed, Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 4 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!).

To prepare it I start by browning both packages of the Wild Idea Ground Buffalo. Using a large skillet
sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Buffalo and all the seasonings and Tomato Paste, stirring often. When the Buffalo has browned I add from the skillet to the liner lined Crock Pot. Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours.

Then the serious eats begin, comfort food with Chili! With the sweetness of the Buffalo combined

with all those spices and beans, it’s just hard to beat! This may have been my best batch of Chili yet, You can serve it many ways; in a bowl or mug and
top it with your favorite Cheese or Chopped Green Onions with a side of Oyster Crackers. Another way to have it is served on top of a Johnny Cake (Cornbread) or have a side of Cornbread with it. I made a Mini Cast Iron Skillet of Cornbread. I used Martha White Corn Meal Mix. For me Chili and Cornbread are the perfect pairing! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Wild Idea Buffalo meat is as good as food gets. Grass-fed buffalo not only leads the way on the nutritional frontier, but its rich, earthy and slightly sweet taste will be sure to please your palate. I hope you find these basic instructions helpful in making your buffalo experience a pleasant one. When in doubt, remember, Wild Idea Buffalo meat is naturally lean and so it is easy to over cook. We recommend cooking it no more then medium. If you have additional questions on preparation, feel free to contact me, at 866-658-6137 or by email at jill@wildideabuffalo.com or info@wildidieabuffalo.com.
Cheers! Jill

I find it easier to prepare the ready-made patties while they are still partially frozen. Pull apart partially thawed burgers. Rub with olive oil and salt and pepper. To achieve a medium rare temperature, place on a hot grill for 2.5 minutes each side, closing grill during grilling time.

Crock Pot 3 Bean Buffalo Chili w/ Oyster Crackers

Dinner Tonight: Crock Pot 3 Bean Buffalo Chili w/ Oyster Crackers

Well we avoided the morning snow they said we could get, still chilly out only about 22 degrees out this morning. But around 2:00 this afternoon it started snowing and we got about 1/2" of snow on the ground but not the roads. It melted about an hour later. Ran a few errands for Mom and finished the laundry for her. Stopped by to see Dad at rehab and back home. Wanted a hot and hearty meal tonight so what better than Crock Pot 3 Bean Buffalo Chili! Absolutely love this stuff!

I had this froze in the freezer so I let it sit the fridge to thaw overnight. It's my last container of the Crock Pot 3 Bean Buffalo Chili so I'll be making a new batch soon. It freezes and reheats great. After heating it up I added a couple of shakes of Frank's Red Hot Sauce and topped it with some fresh grated Dutch Gouda Cheese. For me it gets no better! I'll leave the recipe on how to prepare the Crock Pot 3 Bean Buffalo Chili below.

It’s loaded with nothing bu good things. I use Wild Idea Buffalo’s Ground Buffalo which is the best tasting Ground Buffalo that I’ve found. The 3 Beans I use are 1 Can (15 oz.) Chili Beans, 1 Can (15 oz.) Kidney Beans (rinsed), and 1 Can (15 oz.) Great Northern Beans (rinsed). Then I mix in 1 White Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 1 Tbs. Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours. Then you have yourself some good, comfort food Chili! You can serve it many ways; in a bowl or mug and top it with your favorite Cheese or Chopped Green Onions with a side of Oyster Crackers. Another way to have it is served on top of a Johnny Cake (Cornbread) or have a side of Cornbread with it.

Buffalo Tacos!

Dinner Tonight: Buffalo Tacos

Wow, back to back sunny days above freezing! Come on Spring Time. The forecast is still looking good, with a continued warm up. Went to the bank and got my car washed, a much needed wash! For dinner tonight Buffalo Tacos.

For the most part when making a Buffalo Meat dish, I'm using my favorite Wild Idea Buffalo. I'm using the Wild Idea Buffalo Ground Round, 99% Lean. I started by frying the Ground Buffalo in Canola Oil (on medium heat) and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. I then added 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup of Water. When using Buffalo, or Bison, always remember it gets done quicker than other meats. I stirred everything until it was well mixed and then let it simmer on medium low until the water reduced and it started to thicken up a bit. Just a fantastic aroma as it was cooking!

For my other toppings I used 1 small can of Mario Sliced Black Olives, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Dean’s Guacamole, Old El Paso Taco Sauce, and it's all in a Ortega Fiesta Flats. You can have so many different types of Tacos with so many different toppings, just endless options for dinner. This is the second  time I tried the New Ortega Fiesta Flats. They make a nice option to the regular Taco Shell. Their 150 calories and 17 net carbs per serving, 2 Shells make a serving. They’re nice size, so you can load them up with healthy toppings. Another plus is they seem to hold their shape, even after a couple of bites.Nice add to keep in the pantry. For dessert later Healthy Choice Dark Fudge Swirl Frozen Yogurt.
