Dinner Tonight: Honey-Mustard Pork Chops w/ Baked Macaroni and Cheese, Green Beans, and Whole Grain Bread
Tried a couple of new recipes for dinner tonight, Honey-Mustard Pork Chops w/ Baked Macaroni and Cheese. Both easy to fix and both low calorie and low carb. The Chops wee good but they would have been better if I would have had thicker Pork Chops, all I had were the thin cut chops. But as I said they were very good. It was nice combo of Honey and Dijon Mustard that gives it a great flavor. The recipe calls to broil the chops but because mine were so thin I had to bake them instead so not get them over done. Still turned out good though. The baked Mac and Cheese was also good. I didn't have enough of Penne pasta so I mixed it with Rotini Pasta. I used Ronzoni Healthy Harvest Whole Grain Pastas. I left the recipes for both at the end of the post. I also had sides of Green Beans and Healthy Life Whole Grain Bread. For dessert later a Yoplait Delight 100 Calorie Chocolate Eclair Parfait.
Honey-Mustard Pork Chops
Ingredients
1/4 cup Dijon mustard
4 teaspoons honey
1 teaspoon apple cider or 1 teaspoon white-wine vinegar
1/4 teaspoon black pepper
20 ounces bone-in loin pork chops, 4 each about 1 inch thick
Preparation
1. To prepare the marinade, in a small saucepan over low heat, heat the honey until it liquefies. Stir in the mustard, vinegar, salt and pepper; cool to room temperature.
2. Place the pork chops in a gallon-size sealable plastic bag; add the marinade. Seal the bag, squeezing out the air; turn to coat the chops. Refrigerate, turning the bag occasionally, at least 8 hours or overnight. Remove the chops from the refrig 30 minutes before broiling.
3. Preheat the broiler. Discard the marinade. Place the chops on the broiler rack and broil 3-4" from the heat until cooked through, 6-7 minutes on each side.

2 tablespoons canola oil
2 tablespoons all-purpose flour
2 cups fat-free milk
2 1/3 cups shredded fat-free Cheddar cheese
¼ teaspoon salt
¼ teaspoon black pepper

1. Cook penne according to package directions, omitting salt if desired. Drain in colander, then rinse under cold running water; drain.
2. Heat oil in large saucepan over medium heat. Add flour and cook, whisking constantly, 2 minutes. Gradually add milk, whisking until smooth. Increase heat to medium-high and bring to boil; boil 1 minute.
3. Remove saucepan from heat; add 2 cups of Cheddar, the salt, and pepper, stirring until cheese is melted. Stir in pasta. Pour into shallow 2-quart baking dish or 6 individual baking dishes; sprinkle with remaining 1/3 cup cheese. Bake until lightly browned and bubbly, about 25 minutes for a 2-quart baking dish and about 15 minutes for individual baking dishes. Let stand 5 minutes before serving.
Directions
Whisk together marinade ingredients in small bowl or cup: mustard, honey, vinegar, and pepper.
Transfer marinade to large zip lock plastic bag and add pork. Squeeze out air and seal bag. Coat pork completely with marinade by turning bag several times.

Crock Pot Baby Back Ribs w/ Mashed Potatoes and...
Today’s Menu: Crock Pot BBQ Baby Back Ribs w/ Mashed Potatoes and Crescent Rolls
Back by popular demand, by my parents, for dinner the Crock Pot BBQ Baby Back Ribs! I used Kroger Pork Baby Back Ribs. While I had the crock pot warming up I cut the rack of Ribs in half, to fit in the crock pot, and seasoned the Ribs with JB’s Fat Boy Premium Rub and I then brushed on a half a bottle of JB’s Fat Boy Haugwaush Bar B Cue Sauce. I cooked the ribs for 8 hours on low in the crock pot. After 5 hours I applied the other half of Haugwaush to the Ribs. The ribs came out tender fall off the bone delicious. No knife needed as the bones could be removed by just pulling on them. My rub and sauce are both J B's Fat Boy products. So far Kroger and on line are the only places I've seen that you can purchase J B's products.
For sides we had Bob Evan's Mashed Potatoes and a loaf of Pillsbury Reduced Fat Crescent Rolls. For dessert later a Yoplait Delight 100 Calorie Chocolate Eclair Parfait.

Fall Off the Bone Herb & Spice Crock Pot Chicken w/ Carrots and Golden Potatoes
Today's Menu: Fall Off the Bone Herb & Spice Crock Pot Roasted Chicken w/ Baby Carrots and Golden Potatoes
I put the new crock pot to use today. I made Fall Off the Bone Herb & Spice Crock Pot Chicken w/ Carrots and Golden Potatoes. It's the first time I made a roasted Chicken in the crock pot. Cooking a whole Chicken in the crock pot is super easy. First unwrap the Chicken, remove the bag of innards from the cavity and give the chicken a quick rinse. After I cleaned and rinsed the Chicken I rubbed the Chicken with the Butter over the outside and on the inside of the cavity. I then seasoned the Chicken with Sea Salt, White Pepper, and Smoked Ground Cumin. I then took the fresh Herbs (Rosemary, Sage, Thyme) and rubbed it in on the outside of the Chicken and then took 2 sprigs of the Rosemary, 2 sprigs of the Sage, and 4 sprigs of the Thyme and inserted it into the Chicken cavity.
Before putting the Chicken in the crock pot I layered the Baby Carrots evenly across bottom of the crock pot. I then scrubbed the Potatoes and quartered them with peel on, spreading them around the edges, leaving room for the chicken to sit in the middle. Then set the crock pot on high and roast for 6 - 8 hours. This can vary depending on your crock pot and size of the Chicken.
I use Crock Pot Liners all the time and in this case it really came in handy. The Chicken was so tender I couldn't remove it from the crock pot without it falling apart so by using the liner I was able to lift the entire Chicken and Veggies out and on to the platter. The Chicken came out "Falling Off the Bone" delicious! Same with the Carrots and Potatoes. Both were bursting with flavor and just as tender as the Chicken! I'll be putting this new crock pot to use quite often. For dessert later a Yoplait Delight 100 Calorie Chocolate Eclair Parfait.
Fall Off the Bone Herb & Spice Crock Pot Roasted Chicken
Ingredients:
1 (2 to 3 pound) Whole Chicken
1 bag Baby Carrots
6-8 Small Potatoes
Sea Salt and White Pepper to taste
1 Table spoon Smoked Cumin
Fresh Rosemary, Sage, Thyme to taste
1 cup Swanson Low Sodium Chicken Stock or Broth
I Can't Believe It's Not Butter, 1 1/2 Table spoons
Directions:
Layer baby carrots evenly across bottom of the crock pot.
Scrub potatoes and quarter them with peel on, spreading them around the edges, leaving room for the chicken to sit in the middle. If necessary, rearrange carrots/potatoes to ensure crock pot lid will seal. Then add the cup of Chicken Stock over top.
Rinse chicken and pat dry; empty cavity if necessary. Rub the Chicken with Butter outside and in the cavity and then season with spices. Then add the fresh Herbs rubbing them over the entire outside of the Chicken and then breaking off sprigs of the fresh Herbs and putting them in the cavity.
Cook on low all day, for 8-10 hours, depending on crock pot settings and size of the Chicken.

Johnsonville Brat w/ Crinkle Fries
Today's Menu: Johnsonville Brat w/ Crinkle Fries
Wanted something easy to fix and filling. I made a Johnsonville Brat, first one in a long time! I usually have Turkey Brats but they were out of them at the store earlier so I decided to go with the Johnsonville Pork Brats. Just pan fried until brown, about 5 minutes, then added water the pan and boiled for 12 minutes. A really great tasting Brat! Served it on a Healthy Life Whole Grain Bun and topped with French's Spicy Brown Mustard. Had Ore Ida Crinkle Fries as a side. For dessert later a Yoplait Delight 100 Calorie Chocolate Eclair Parfait.

Baked Catfish Tenders & Remoulade Dipping Sauce w/ Potato Pancakes and...
Dinner Tonight: Baked Catfish Tenders & Remoulade Dipping Sauce w/ Potato Pancakes and Creamy Parmesan Risotto
Mom and Dad wanted Fish tonight so that's what I had to make. I used a Kroger brand Catfish Tenders. Baked at 425 degrees for 25 minutes, they come out perfect! I made a Remoulade Dipping Sauce for them also. This Sauce is fantastic and goes well with almost all Fish. I'll leave the recipe at the end of the post for the Sauce.
As sides I made one my Mom's favorites Potato Pancakes. I use Manischewitz Potato Pancke Mix. Not only are these delicious but their only 80 calories and 18 carbs per serving, 3 pancakes! I also had Lundberg Creamy Parmesan Risotto it takes about 25 - 30 minutes to whip this up. Really a quick and very good tasting Risotto. For dessert later a Yoplait Delight Chocolate Eclair Parfait.
Remoulade Sauce
Ingredients
1 Cup Light Mayonnaise
2 Tblsp Chili Sauce
1 tsp Garlic Salt
1tsp Curry Powder, or to taste

Dinner Tonight: Copper River Salmon w/ Creamy Parmesan Risotto, Asparagus Bits, and Whole Grain Bread
Salmon and Risotto, what a fantastic and delicious pairing! You could pair anything with the great tasting Copper River Salmon but the Risotto is a perfect match. I seasoned the Salmon with McCormick Grinder Sea Salt and McCormick Grinder Black Peppercorn and then sprinkled a light coating of Italian Style Bread Crumbs. Fried in Extra Virgin Olive Oil about 6 1/2 minutes. As sides I had Lundberg Creamy Parmesan Risotto, great tasting and takes about 25 minutes to make. Topped it with about half a handful of shredded Parmesan. I also had a small can of Del Monte Asparagus Bits and Healthy Life Whole Grain Bread. A light dessert later tonight of Yoplait Delight Chocolate Eclair Parfait.

Garlic Chili Chicken Soft Taco w/ Refried Beans and Pop Corn Chips
Today's Menu: Garlic Chili Chicken Soft Taco w/ Refried Beans and Pop Corn Chips
An easy to fix low carb and low calorie dinner tonight. I used Old El Paso Tortilla Stuffers. I love these from Old El Paso. They have a Carne Asada Steak and Garlic Chili Chicken, which is the one I went with tonight. The Garlic Chili Chicken includes the Seasoned Rice, Chicken, Pinto Beans, and Peppers, plus it's only 80 calories and 11 carbs! I used La Banderita Low Carb and Low Fat Soft Tacos, 81 calories and 11 carbs. As a side I had a serving of Old El Paso Fat Free Refried Beans and a half serving of Chip'ins Pop Corn Chips. Here's another great low carb item Chip'ins. Only 120 calories and 22 carbs per serving, about 20 chips equals a serving. For dessert later I'll have a Yoplait Delight Chocolate Eclair Parfait.

Chicken and Dumplings w/ Corn Bread
Dinner Tonight: Chicken and Dumplings w/ Corn Bread
Tried something new for dinner tonight. I made some Chicken and Dumplings w/ Corn Bread. I used Reames Homestyle Flat Dumplings, first time I tried them and will be using them again. easy to fix and 170 calories and 35 carbs. The carbs could be lower but not bad for noodles plus the other ingredients for the Dumplings aren't very high in calories or carbs. Along with the noodles I used Miller's Amish Chicken Breasts (3 pieces), sliced Mini Carrots, and Diced New Potatoes.
I boiled the Chicken seasoning it with Sea Salt, Pepper, Thyme, and Ground Smoked Cumin. After the Chicken was done I pulled each breast aprt.I also boiled the Mini Carrots ahead of time also along with boiling the Diced New Potatoes. Before putting on the noodles I made the Cornbread. i tried Marie Callender's Low Fat Original Corn Bread, first time I tried this also. This was a breeze to fix also just add 1 1/2 cups water to the one pouch of Corn Bread Mix and mix throughly. Pour into a 8"x8"x2" pan and bake at 375 degrees for 30 minutes. Came out very moist and delicious. After getting the Corn Bread in the oven I started boiling the Dumplings, boil for 30 minutes. With about 8 minutes left to boiling the Dumplings I added the Carrots, Diced Potatoes, and Chicken Breast meat and continued to boil for the 30 minutes. As I said it was the first time I had used the Reames Dumplings and Marie Callender's Corn Bread mix and I'll be using both again as both turned out great. For dessert later a Yoplait Delight Chocolate Eclair Parfait.
