It's Taco Friday, Black Bean and Ground Turkey Tacos!

Dinner Tonight: It's Taco Friday, Black Bean and Ground Turkey Tacos!





Last day of the heat and humidity for at least a few days they say, at last! We even had a couple of real heavy showers through out the day, which we needed. Me I went to Walmart early this morning but not my usual Walmart I normally go to. I switched Walmarts, the one I normally go to was going down hill fast. The produce department wasn't stocked a lot of times with near expired fruits and vegetables and the other aisles were hardly ever fully stocked. Worse of all was their electric carts, which I need being an amputee. Of late the carts are broke or won't charge, always having to switch carts at least twice on every visit. So I go to a different one now and it's great. Plenty of working carts and everything well stocked! For dinner it's Tacos! I prepared Black Bean and Ground Turkey Tacos.





I used Honeysuckle White Ground Turkey, 99% Fat Free (130/0).  I pan fried it in Canola Oil and I Paso Taco Seasoning. As the Turkey was finishing up I added a can of Bush's Low Sodium Black Beans, before adding them I rinsed them off with cold water in a strainer. I mixed the Turkey and Black Beans in the pan until well mixed and continued cooking until the Turkey was done and the Beans were heated.
seasoned it a bit with Cilantro, Sea Salt, and Smoked Ground Cumin and I used 1 packet of Old El





I usually use Old El Paso Stand Up Taco Shells but while at Walmart I picked up a different one, Ortega Whole Grain Corn Taco Shells. Their a good size Taco Shell with 110 calories and 12 Net carbs per serving (2 Shells). Less calories and carbs than the Old El Paso Taco Shells.





For the Taco fillers I had Green Giant Summer Crisp White and Yellow Kernal Corn, sliced Black Olives, shredded Lettuce, Sargento Reduced Fat Mexican 4 Cheese, and Old El Paso Medium Taco Sauce. To assemble my Taco I first layered the bottom with shredded Lettuce, the Lettuce helps soak up any moisture so the bottom of your Taco doesn’t get soggy. After the Lettuce I layered in my ground Turkey/Black Beans, then Black Olives, Corn, Taco Sauce topped with the Shredded Cheese! Love these Tacos! Making Tacos also gave me the chance to use my new Taco Holders! I had never seen these before I purchased them at Walmart earlier today. Their made of hard plastic and you just sit your Taco Shell in it and it keeps it upright, a lot easier to load up the Taco and keeps it together when your eating iot and you want to sit it down. For dessert/snack later some Ritz Whole Grain Crackers topped with some Philly Reduced Fat Cream Cheese.

Tacos, Turkey Tacos!

Dinner Tonight: Turkey Tacos




Beautiful day out, a little humidity but not bad. My Mom is doing a lot better and getting around fine. For dinner it was Turkey Tacos. I used Honeysuckle White Ground Turkey (97/3). I seasoned it a bit with Cilantro, Sea Salt, and Smoked Ground Cumin and I used Old El Paso Taco Seasoning.




For the Taco fillers I had Green Giant Summer Crisp White and Yellow Kernel Corn, sliced Black Olives, shredded Lettuce, Arugula, Sargento Mexican 4 Cheese, and Old El Paso Medium Taco Sauce. To assemble my Taco I first layered the bottom with shredded Lettuce, the Lettuce helps soak up any moisture so the bottom of your Taco doesn’t get soggy. After the Lettuce I layered in my ground Turkey, then Black Olives, Corn, Arugula, Taco Sauce   topped with the Shredded Cheese! I love a Taco when it all comes together! For dessert/snack later this evening a 100 Calorie Mini Bag of Jolly time Pop Corn.

Dinner Tonight: Velveeta/Kraft Dinners Chili Cheese Mac Velveeta Cheesy Skillets w/ Whole Grain Bread




With Dad in rehab and Mom staying there the biggest part of the day I've been taking over all the daily house
work, still looking for an easier way to vacuum while in a wheelchair! I've scanned the net but nothing out there. As hey say you gotta do what you have to do! Anyway for dinner I prepared Velveeta/Kraft Cheesy Skillets Dinner Chili Cheese Mac, using Jennie – O Extra Lean Ground Turkey and added 1 can of Joan of Arc Light Red Kidney Beans. This is has become one of my favorite comfort foods. I pan so easy clean up, has, cheese, pasta, and for a meat it has ground turkey, and you can add a can of kidney beans to make it that much heartier!





As in all the Cheesy Skillet Dinners the kit includes: Pasta, Velveeta Cheese Sauce, and Seasoning pack. All I had to do was add the 2 cups of water and 1 lb. of Ground Turkey, and 1 can of Joan of Arc Light Red Kidney Beans. I used Jennie – O Extra Lean Ground Turkey. Using the Extra Lean Ground Turkey instead of the Ground Beef you can lower the calorie count by anywhere from 60 – 80 calories! As I browned the Turkey I added Sea Salt, Pepper, and Ground Smoked Cumin for seasoning. It’s ready in about 10 minutes. I then add 2 cups of water, the seasoning and pasta. Simmer for 10 – 12 minutes and add the Velveeta Cheese and your ready for dinner. I’ll leave the instructions at the end of the post. It’s 380 calories and 28 carbs but you can lower the calorie count by using the Ground Turkey as stated above. The Ultimate Cheeseburger Dinner is very good but i think this is my new favorite. I really like the Chili Seasoning! Another one pan quick, easy, and delicious Velveeta/Kraft Dinner! I also had a couple of slices of Aunt Millie’s Light Whole Grain Bread. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Velveeta Cheesy Skillets Chili Cheese Mac

Ingredients:
* 1 LB. Ground Beef or Ground Turkey (Extra Lean)
* Sea Salt, Pepper, Cilantro, Ground Smoked Cumin to taste; Optional
* 2 Cups Water
* 1 Velveeta Cheesy Skillets Dinner Kit/Chili Cheese Mac

Instructions:
* Brown and season 1 LB. Ground Turkey in large skillet. Drain
* Add 2 cups water, seasoning and pasta. Bring to a boil. Reduce Heat.
* Cover, Simmer and stir often until most of water is gone about 11-13 minutes. Remove from heat.
* Add Cheese from Velveeta Cheese Pouch. Stir in Cheese Sauce and serve

With this weather the way it is around here It's no wonder so many people have the flu! Yesterday we had to
turn the air conditioner on in the late afternoon because it was in the 80's and a bit humid. Today a cold wind and 34 degrees, and had to turn the heat on! Amazing!  For dinner I prepared my favorite Tortilla, the Old El Paso Stand ‘n Stuff Soft Flour Tortillas. I see them now more often in stores, so there a whole lot easier to find now. Love these things, their only 160 calories and 24 carbs for 2 Soft Shells, more than enough for 1 person by the time you load it up. So for dinner tonight it was Old El Paso Stand ‘n Stuff Soft Flour Tortillas w/ Ground Turkey and all the Fix’ins!



I filled mine with Jennie – O Extra Lean Ground Turkey – 99/1. I pan fried it in Canola Oil and seasoned it with Ground Cumin, Sea Salt, Cilantro Flakes, and a 1/2 packet of Old El Paso Taco Seasoning. Then for the fillers I added Green Giant Steam Crisp Super Sweet Yellow and White Corn, Sliced Black Olives, Bush’s Low Sodium Dark Red Kidney Beans, Lettuce, Kraft Mexican Taco Shredded Cheese, and Taco Bell Creamy Chipotle Sauce. If you’ve never tried the Taco Bell Creamy Chipotle Sauce it’s another you have to try. It’s got a nice creamy thick sauce with just the right amount of Chipotle heat! For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Woke up early this morning and had to turn the heat on, down to 35 degrees! Turned out to be a sunny but
cool Spring day. Our grass cutter came around today and cut the grass for the first time this year. Back into the mid 60s Sunday. For dinner tonight a new comfort food; Baked Spaghetti w/ Baked Garlic Knot Bread. First time I tried this and everyone loved it! Plus I lowered the calories and carbs by using reduced and low fat ingredients.



Like most recipes it's amazing the calories you can cut just by using reduced, low fat, and fat free ingredients. Instead of Ground Beef I used Honeysuckle White Extra Lean Ground Turkey which is a 101 calorie difference, and that's just one item! I also used Ronzoni Healthy Harvest Whole Grain Spaghetti, Philly Cream Cheese 1/3 Less Fat, Daisy Reduced Sour Cream, and Daisy 2% Cottage Cheese. I also added a few shakes of Frank's Hot Sauce that I added to the Turkey as it was cooking. All simple replacements that can add up on reducing calories and carbs. The original, from Taste of home, recipe serves 12, I cut in half to serve 6.



 
 To prepare it in a large skillet, cook the Ground Turkey and Onions over medium heat until meat is no longer pink; drain. Add the tomato sauce, Frank's Red Hot Sauce, mushrooms, garlic powder and oregano. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes, stirring occasionally. Meanwhile, cook the spaghetti according to package directions; drain. In a small bowl, combine the cream cheese, cottage cheese, sour cream and chives; beat well. Place half of spaghetti in a greased 2-qt. baking dish. Spoon cream cheese mixture evenly over top. Layer with remaining spaghetti and all of the Turkey mixture. Toss bread crumbs and butter; sprinkle over the top. Cover and bake at 350° for 20 minutes. Uncover; bake 5-10 minutes longer until heated through. The bread crumbs provide a nice crunchy topping and the taste is delicious! Another keeper recipe! I left the website link original recipe from Taste of Home at the end of the post. I served with Walmart Bakery Garlic Knot Rolls that I baked. For dessert later a Weight Watchers Vanilla and Chocolate Swirl Ice Cream Cone.




Baked Spaghetti

Ingredients
2 pounds ground beef
2 medium onions, chopped
2 cans (one 15 ounces, one 8 ounces) tomato sauce
1 can (8 ounces) sliced mushrooms, drained
1 teaspoon garlic powder
1 teaspoon dried oregano
2 packages (7 ounces each) uncooked spaghetti
1 package (8 ounces) cream cheese, softened
2 cups (16 ounces) 4% cottage cheese
1/2 cup sour cream
2 tablespoons minced chives
1/4 cup dry bread crumbs
1-1/2 teaspoons butter, melted


Directions
*In a large skillet, cook beef and onions over medium heat until meat

It was a beautiful day out today, sunny and in the mid 50's. 60 tomorrow but rain and snow flurries possible Monday. So today I had somebody clean all our gutters out, which were full of leaves. Got the car washed and cleaned on the inside also. Long Spring cleaning list if it ever warms up! For dinner a Teriyaki Pineapple Turkey Burger w/ Baked Crinkle Fries.



To make the burger you’ll need; Kikkoman Less Sodium Teriyaki Marinade and Sauce, Dole Pineapple Panko Bread Crumbs. the original recipe made 4 burgers I broke the recipe down to make 2, 1 for lunch tomorrow. When frying the burger keep a close eye on it because it start to burn due to the Teriyaki Sauce.

To prepare it just stir together Kikkoman Teriyaki Base & Glaze and reserved pineapple juice in a small bowl. Remove 2 tablespoons sauce for burgers. Mix together turkey, ginger, Kikkoman Panko Bread Crumbs and 1 teaspoon Teriyaki mixture and shape into a pattie. I then pan fried it in Extra Virgin Olive Oil about 4 1/2 minutes per side brushing it with the remaining Teriyaki mixture. Placed the pineapple slice in the pan and cooked until lightly golden brown. Served the burger on a Aunt Millie's Light Whole Grain Bun with, Light Mayonnaise and Pineapple. This makes one fine and juicy burger! The Teriyaki Sauce is perfect with the Turkey and Pineapple and the Mayo just adds to the flavor. I left the original recipe at the bottom of the post, makes 4 Turkey Burgers.



For a side I baked some Ore Ida Crinkle Cut Fries, served with a side of Hunt's Ketchup. Then for dessert later a slice of Pillsbury Nut Quick Bread topped with a Pineapple slice (Leftover from dinner).





Teriyaki Pineapple Turkey Burgers


Ingredients (Makes 4 servings)

1/4 cup Kikkoman Teriyaki Baste & Glaze, divided
1 can (8oz.) pineapple slices, drained, reserve 1/4 cup juice
1 pound ground turkey or chicken
1 teaspoon grated fresh ginger
1/4 cup Kikkoman Panko Bread Crumbs
4 whole grain hamburger buns
4 slices Cheddar or Monterrey Jack cheese



Instructions

Stir together Kikkoman Teriyaki Base & Glaze and reserved pineapple juice in a small bowl. Remove 2 tablespoons sauce for burgers.

Mix together turkey, ginger, Kikkoman Panko Bread Crumbs and 2 tablespoons Teriyaki mixture. Shape into 4 patties.

Grill patties, brushing with remaining Teriyaki mixture until desired doneness. Place pineapple slices on grill and cook until lightly golden brown.

Serve burger on buns with cheese and pineapple.

Today's Menu: Teriyaki Pineapple Turkey Burgers and Roasted Red Pepper Mayonnaise w/ Potato Pancakes





I haven't had a Turkey Burger in quite some time. Yesterday while at the store I picked some ingredients I needed and tonight for dinner, Teriyaki Pineapple Turkey Burgers and Roasted Red Pepper Mayonnaise w/ Potato Pancakes.



It would have been nice to be able to fire up the outside grill for the burger but due to snow and cold I had to pan fry it. I used Canola Oil to fry it and fried it about 4 minutes per side. To make the burger you'll need; 1/2 Cup Kikkoman Less Sodium Teriyaki Marinade and Sauce, divided, 1 Dole Pineapple slice (drained reserve 1/4 cup juice), 1/4 lb Honeysuckle White Extra Lean Ground Turkey (99/1), 1/8 tsp fresh Ginger (grated), and 1/4 Cup Panko Bread Crumbs. the original recipe made 4 burgers i broke it down to make 2, 1 for lunch tomorrow. Mix together the turkey, ginger,Panko Bread Crumbs and 2 tablespoons Teriyaki mixture. Shape into patties. Fry or Grill pattie, brushing with remaining Teriyaki mixture until desired doneness. Place pineapple slices on grill and cook until lightly golden brown. Serve burger on buns with, Roasted Red Pepper Mayonnaise, Cheese and Pineapple. This makes one fine and juicy burger! The Teriyaki Sauce is perfect with the Turkey and Pineapple and the Roasted Red Pepper Mayonnaise gives it that bang of a taste.


To make the Roasted Red Pepper Mayonnaise you'll need; 1/3 cup Hellman's Light Mayonnaise, 2 tablespoons chopped Roasted Sweet Red Peppers, 1/2 teaspoon grated Lemon peel, and 1/8 teaspoon Sea Salt. Just make this ahead of time and refrigerate it. Mix all the ingredients until completely mixed and store. For a side with my burger I had some of those fantastic Potato Pancakes leftover. I just put them in skillet on medium low and warmed through.  I've left the recipes at the end of the post. For dessert/snack later some Triscut Reduced Fat Crackers with slices of Sargento Reduced Fat Sharp Cheddar Cheese.





Teriyaki Pineapple Turkey Burgers
Ingredients

1/2 Cup Kikkoman Less Sodium Teriyaki Marinade and Sauce, divided
1 Dole Pineapple slice (drained reserve 1/4 cup juice)
1/4 lb Honeysuckle White Extra Lean Ground Turkey (99/1)
1/8 tsp fresh Ginger (grated)
1/4 Cup Panko Bread Crumbs
1 Aunt Millie's Whole Grain Reduced Calorie Hamburger Buns
1 Slice Sargento Ultra Thin Cheddar/Jack Cheese

Directions

Stir together Kikkoman Teriyaki Marinade and reserved pineapple juice in a small bowl. Remove 2 tablespoons sauce for burgers.
Mix together turkey, ginger,Panko Bread Crumbs and 2 tablespoons Teriyaki mixture. Shape into pattie.
Fry or Grill pattie, brushing with remaining Teriyaki mixture until desired doneness. Place pineapple slices on grill and cook until lightly golden brown.
Serve burger on buns with cheese and pineapple.




ROASTED RED PEPPER MAYONNAISE


1/3 cup Hellman's Light Mayonnaise
2 tablespoons chopped Roasted Sweet Red Peppers
1/2 teaspoon grated Lemon peel
1/8 teaspoon Sea Salt

 You can make this early and refrigerate it. Just mix all ingredients until well mixed and store in the fridge until needed.

Progresso Kitchen Favorites Classic Lasagna w/ Italian Loaf Bread


Today's Menu: Progresso Kitchen Favorites Classic Lasagna w/ Baked Italian Loaf Bread





Being in a wheelchair in the rain is tough! But you have to go on and get what you have to do done. That was grocery shopping, errands, and visiting my Dad at the Rehab Center. So what better way to warm a cold and rainy day than Lasagna! I used Progresso Kitchen Favorites Classic Lasagna! It’s very easy to make as the dinner kit contains the Lasagna Pasta, Tomato Herb sauce, Ricotta Sauce Mix, and Grated Parmesan Cheese. I added 1 lb. Jennie – O Lean Ground Turkey, 1 Cup water, 2/3 Cup 2% Milk, 1 (8 oz.) Shredded Mozzarella Cheese (2 Cups), 1 cup Shredded Dutch Gouda, sliced Baby Bella Mushrooms (first time I added these) and I also added a bit more seasoning (McCormick Grinder Italian Herb). I combined the Mozzarella and Goda Cheese. Gouda is such a great tasting Cheese and is a perfect melting Cheese. Basically you just layer your ingredients in a 8″ square baking dish and cover and bake at 425 degrees for 30 minutes and bake an additional 10 minutes uncovered. Prepared by the instructions the Lasagna is 390 calories and 24 carbs but I cut the calorie and the carb count down by using Honeysuckle White Extra Lean Ground Turkey instead of Beef and Sargento Reduced Fat 2% Mozzarella Cheese. The Lasagna came out delicious as usual! Everyone really loves this. The flavor as always is excellent. The Sauce was thick and well seasoned and the same for the pasta, perfect. I prepared a side of Market Side Fresh Italian Bread that I buttered with I Can’t Believe It’s Not Butter and then baked it at 400 degrees for 12 minutes. For dessert later a Jello Sugar Free Dark Chocolate Pudding, 60 calories and 14 carbs.

Directions
Ready to bake in about 20 minutes. You Will Need: 1 lb lean ground beef; 1 cup water; 2/3 cup milk; 1 bag (8 oz) shredded mozzarella cheese (2 cups); nonstick cooking spray and foil. Sauce: Heat oven to 425 degrees F. Brown beef in 10-inch skillet, breaking up beef into small pieces; drain. Stir Tomato Herb Sauce and water into beef; heat to boiling. Reduce heat; simmer 3 to 5 minutes, stirring occasionally. Meanwhile, mix Ricotta Sauce Mix and milk in liquid measuring cup or small bowl, using whisk or fork. Layer: Spray 8-inch square glass baking dish with cooking spray. Layer lasagna: Spread about 2/3 cup beef sauce in dish. Layer with 2 uncooked Pasta sheets (side by side), 2/3 cup beef sauce (cover Pasta with sauce), 1/4 cup ricotta sauce and 1/2 cup mozzarella. Repeat layers twice, starting with Pasta. Add remaining Pasta, beef sauce and mozzarella. Sprinkle with Parmesan Cheese. Kitchen Tip: Substitute 1/4 cup dry red wine for 1/4 cup of the water.

Dinner Tonight: Turkey "Not So Sloppy" Joes w/ Sugar Snap Peas and Golden Sweet Corn





Another picture perfect Autumn Day out today. It is perfect, about 73 degrees, sunny, and a slight warm breeze! I heard though by Sunday the high will be 50. Ah Ohio weather. For dinner it was comfort food for dinner tonight, Turkey "Not So Sloppy" Joes w/ Sugar Snap Peas and Golden Sweet Corn. I used Honeysuckle White Extra Lean Ground Turkey (99/1 Blend). I fried it in Extra Virgin Olive Oil and seasoned it McCormick Grinder Sea Salt and Black Peppercorn. As the Turkey was finishing I drained it of excess fat and then I added a jar of Hormel Not So Sloppy Joe. Stirred and heated till it was warmed through. Served it on a Healthy Life Whole Grain Bun.

For sides I had a bag of the Walmart Marketside Sugar Snap Peas. Just microwave, in the bag, for 2 minutes and you have some of the best Sugar Snap Peas you've ever had. I also heated up a small can of Del Monte Summer Crisp Golden Sweet Corn. I love the picture of this plate! Look at the yellow Golden Corn, the beautiful Green of the Sugar Snap Peas, and the deep Red of the Sloppy Joes, you know this has to taste good! For dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with Del Monte No Sugar Added Sliced Peaches.

Turkey Tacos w/ Refried Beans


Today's Menu: Turkey Tacos w/ Refried Beans



Simple, easy, and delicious! It was Turkey tacos w/ Refried Beans for dinner tonight. It had been a while since I had Tacos. I used Honeysuckle White Extra Lean Ground Turkey, 99/1 and 140 calories and 0 carbs. I wanted to use Jennie - O Extra Lean which is 20 less calories but they were out of stock on it. I browned the Turkey until it was no longer pink, I fried it in Canola oil. As it it finished browning I added a packet of Old El Paso Original Taco Seasoning.






I prepared several items for the filling to give everyone a variety. I prepared a can of Bush's Reduced Sodium Black Beans, a small can of Del Monte Whole Kernel Corn, sliced Black Olives, a jar of Dunbar's Sweet Roasted Peppers, shredded Lettuce, Kraft Mexican Taco Cheese, and two types of Taco Sauce; Ortega Mild Taco Sauce and Taco Bell Bold and Creamy Chipotle Sauce. So as you can see everyone had plenty of choices for their Taco fillings. I loaded mine with a bit of everything! I used the Ortega Mild Taco sauce. I also warmed up a can of Old El Paso Reduced Sodium Refried Beans. Just a note about the Dunbar's Sweet Roasted Peppers, this was the first time I tried them. These were fantastic! Great flavor and went great with everything. For dessert/snack later tonight a 100 Calorie Mini Bag of Jolly Time Pop Corn.
