Dinner Tonight: Healthy Harvest Turkey Lasagna (Leftovers)



The heat and humidity are even worse today. No break in it till Monday or Tuesday, hopefully. After
Breakfast I went to Costco. I buy my Vitamins and Supplements there I also picked up a package of 2 beautiful Walleye Fillets. Also bought 5 cases of canned goods to donate to our Church Kitchen which provides meals for the homeless and people needing help. Too humid to be outside so chilled on the inside! For dinner tonight, Leftovers! I reheated last night's dinner of Healthy Harvest Turkey Lasagna.




This Lasagna was too good not to have again! Sometimes it tastes even better the second time. Just got a serving and reheated it in the microwave. Just love this Lasagna, so good! I left the instructions and full recipe below.



I’m using Jennie – O Extra Lean Ground Turkey Breast, which I had in the freezer and sat it in the
fridge to thaw overnight. I use the recipe that’s on back of the Ronzoni Healthy Harvest Lasagna Box as a guide. Making changes to some of the ingredients to reduce calories and carbs. I used the following; 1lb Jennie – O Extra Lean Ground Turkey Breast, 3 cups (26 oz jar) Ragu Pasta Sauce, Sliced Mushrooms (optional), 1 1/2 cups Water, 1 3/4 cups (15 oz container) Kroger Part Skim Milk Ricotta Cheese, 2 cups (8 oz) Sargento Reduced Fat Shredded Mozzarella Cheese, divided, 1/2 cup grated Kraft Parmesan Cheese, 1/2 cup chopped fresh Parsley, 1/2 tsp Sea Salt, 1/4 tsp ground Black Pepper, and 9 pieces Ronzoni Healthy Harvest Lasagna, uncooked. Cutting calories and carbs by using Jennie – O Extra Lean Ground Turkey Breast and the Kroger Part Skim Milk Ricotta Cheese, Ronzoni Healthy Harvest Pasta, and Sargento Reduced Fat Shredded Cheese. The original recipe is at the end of the post. For dessert later tonight a Healthy Choice Frozen Dark Fudge Swirl Frozen Greek Yogurt.





Ronzoni Healthy Harvest Whole Grain Lasagna

Ingredients

1lb ground beef
3 cups (26 oz jar) spaghetti sauce
1 small container of baby bella mushrooms, sliced
1 1/2 cups water
1 3/4 cups (15 oz container) ricotta or small curd cottage cheese
2 cups (8 oz) shredded mozzarella or Monterey Jack cheese, divided
1/2 cup grated Parmesan cheese
2 eggs
1/4 cup chopped fresh parsley
1/2 tsp salt
1/4 tsp ground black pepper
9 pieces RONZONI HEALTHY HARVEST LASAGNA, uncooked

Directions

Heat oven to 350°F. In 3-quart saucepan over medium-high heat, brown meat; drain. Add spaghetti sauce, mushrooms, and water; simmer about 10 minutes. Meanwhile, in medium bowl, stir together ricotta cheese, one-half mozzarella cheese, Parmesan cheese, eggs, parsley, salt and pepper. 5. Pour about 1 cup sauce on bottom of 13×9-inch baking dish. Arrange 3 UNCOOKED pasta pieces lengthwise over sauce; cover with 1 cup sauce. Spread one-half cheese filling over sauce. Repeat layers of RONZONI HEALTHY HARVEST LASAGNA, sauce and cheese filling. Top with layer of RONZONI HEALTHY HARVEST LASAGNA and remaining sauce; sprinkle with mozzarella cheese. Cover with foil. Bake 45 minutes. Remove foil; bake additional 10 minutes or until hot and bubbly. Let stand 10 minutes before cutting.

Turkey Meatloaf w/ Mashed Potatoes and Cut Green Beans

We got our first snowfall of the New Year! We have about 1 1/2" or so, not a lot just enough
to make it messy on the roads this morning. We were right on the line of heavier snow. Just 4 or 5 miles just North of us they have around 4" or 5" with higher amounts as go more North. With the Snow and Cold outside, it's time for a Comfort Food Dinner on the inside! I prepared a Turkey Meatloaf w/ Mashed Potatoes and Cut Green Beans.
  



I love this Turkey Meatloaf, I need to make it a lot much more often. I always use Jennie – O Extra Lean Ground Turkey Breast when I make it. To prepare the Meatloaf I'll need the following; 2 Tablespoons Blue Bonnet Light Stick Butter, 3 Cloves Garlic (Minced), 1 lb Jennie O Extra Lean Ground Turkey Breast, 1/2 Cup Progesso Italian Style Breadcrumbs, 1/4 Cup Egg Substitute (Egg Beaters), 1 1/4 Cups Hunt’s Ketchup, 4 Tablespoons Worcestershire Sauce, 3 Tablespoons Heinz 57 Sauce, 2 Teaspoons Smoked Cumin, 2 Teaspoons Onion Powder, 2 Teaspoons Ground Thyme, 2 Teaspoons Parsley, and Sea Salt and Black Pepper (To taste). 



Preheat your oven on 350 degrees.To start I melted butter in a medium skillet. Add the
Garlic in the melted butter for 5 minutes, stirring occasionally. When done place mixture in a large bowl to cool for 5 minutes. In a large bowl combine the Turkey, Bread Crumbs, Egg Beater's, 1/4 cup of the Ketchup, 1 table spoon Worcestershire Sauce, Spices, and Garlic mixture. Mixing by hand is the best way to mix this, make sure all ingredients are well mixed. Next, press the meatloaf mixture into a loaf pan and form into a loaf, you can use any size loaf pan you want. Take the remaining Ketchup and add 3 Tablespoons Worcestershire Sauce and 3 Tablespoons Heinz 57 Sauce, and stir to well mixed. Add as a topping for the meatloaf. Baste the meatloaf with half of mixture and baste it again after 30 minutes of baking. Bake in a 350 degree oven for 50-55 minutes (Internal temperature should reach 165 degrees.) Remove from oven and let stand 5 minutes before serving. All the Ingredients come together to make one delicious Meatloaf. I really like the recipe for the Sauce! I also heated up some Bob Evans Mashed Potatoes and a small can of Del Monte Cut Green Beans. Not only is this a great dinner but with all the leftovers it's going to make some killer Meatloaf Sandwiches also! For dessert later a Jello Sugar Free Dark Chocolate Pudding.





Turkey Meatloaf

Ingredients

2 Tablespoons Blue Bonnet Light Stick Butter

1/2 Teaspoon Black Pepper

Directions

2. Add the Garlic in melted butter for 5 minutes, stirring occasionally.
3. Place mixture in a large bowl to cool for 5 minutes.
4. Combine turkey, bread crumbs, egg, 1/4 cup of the Ketchup, 1 table spoon Worcestershire sauce, spices, and garlic mixture.
5. Press meatloaf into a loaf pan. 
6. Take the remaining Ketchup and add 3 Tablespoons Worcestershire Sauce and
3 Tablespoons Heinz 57 Sauce, and stir to well mixed. Add as a topping for the meatloaf. Baste the meatloaf with half of mixture and baste it again after 30 minutes of baking.
7. Bake in a 350 degree oven for 50-55 minutes.
8. (Internal temperature should reach 165 degrees.) Remove from oven and let stand 5 minutes before serving.

* Amount of Ingredients can be varied depending on your taste

Cheddar Turkey Burger w/ Baked Fries

Dinner Tonight: Cheddar Turkey Burger w/ Baked Fries





The streak of beautiful days continue, another perfect day out. Went and saw a friend who recently had surgery, a hip replacement like I had a few years back. Then got up on some errands. For dinner tonight a Cheddar Turkey Burger w/ Baked Fries.





I used Jennie - O Extra Lean Ground Turkey Breast, 120 calories, 1.5 g of Fat, and 0 carbs. I shaped up 1 patty and seasoned it with Sea Salt and Ground Black Pepper and pan fried it in  Canola Oil about 4 1/2 minutes per side. Served it on a Healthy Life Hamburger Bun and topped it with a slice of Sargento Reduced Fat Sharp Cheddar Cheese.





For a side I baked some Ore Ida Sea Salt and Cracked Black Pepper Country Style Fries. Then for dessert later a Jello Sugarless Double Chocolate Pudding.

It's been another one of those beautiful Summer days out again! This morning it was around 47 degrees and then we had a high of about 80 degrees with a slight cool breeze. Spent as much time as I could outside in the sun, just too nice out. For dinner tonight I prepared a Turkey Bacon and Sharp Cheddar Cheese Turkey Burger w/ Baked Fries.





I used Jennie - O Extra Lean Ground Turkey Breast for my Burger, 120 calories and 0 carbs. I seasoned it with Sea Salt and Ground Black Pepper and pan fried it in Canola Oil, fried about 4 1/2 minutes per side. Came out moist and juicy! Served it on a Healthy Life Whole Grain Hamburger Bun and topped it with a slice of Jennie - O Turkey Bacon (30 calories and 0 carbs) and a slice of Sargento Ultra Thin Sharp Cheddar Cheese. To go with the burger I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, had a side of Hunt's Ketchup to dip the fries. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

I'm back up to par today! My voice is back and full of energy. Well we've been lucky avoiding the heat and humidity for the most part this Summer but our luck has run out. High 80's to low 90's and very humid most of this week, thank goodness for air - conditioning. For dinner I prepared Turkey and Black Bean Tacos w/ Refried Beans.





I love Tacos! So versatile, you can put about anything you want in them and so many varieties of Taco Shells. For my Tacos I used Jennie - O Extra Lean Ground Turkey Breast, 120 calories and 0 carbs. My favorite Ground Turkey there is. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As i added the Taco Seasoning Mix I also added 1 can of Bush's Low Sodium Black Beans, i drained and rinsed them before I added them. I've found Black Beans are a perfect pairing with Ground Turkey.





For my other toppings I used 1 can Green Giant Steam Crisp Super Sweet Yellow and White Whole Kernel Corn, 1 small can of Mario Sliced Black Olives, 1 small diced Tomato, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, a bag of Dole Shredded Lettuce, and all in a Ortega Whole Grain Corn Taco Shells. Add it all up and you have yourself some down right delicious Tacos! I also heated up a can of Old El Paso Fat Free Refried Beans. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.
