"Meatless Monday" Recipe of the Week - Polenta Lasagna with Spinach

"Meatless Monday" Recipe of the Week - Polenta Lasagna with Spinach   MONDAY

This week's "Meatless Monday" Recipe of the Week is a Polenta Lasagna with Spinach. Here's a different and healthier version of Lasagna. Made with Polenta, Spinach, Ricotta Cheese, Mozzarella Cheese, Parmesan Cheese, and more! You can find this recipe from one of my favorite recipe sites, the CooksRecipes website. The Cooks site has a huge selection of recipes to please all tastes, diets, and cuisines. Check it out today! Enjoy and Eat Healthy in 2018!  https://www.cooksrecipes.com/index.html

Polenta Lasagna with Spinach

Traditional lasagna noodles are replaced with slices of firm polenta layered with a spinach-ricotta cheese mixture and an Italian tomato sauce.

Recipe Ingredients:
Polenta:
1 tablespoon olive oil
1 small onion, very finely chopped
1 garlic clove, minced
1/2 teaspoon salt
7 cups vegetable stock
2 cups instant polenta (13.2 ounce box)
3 tablespoons freshly grated Parmesan cheese

Tomato Sauce:
2 tablespoons olive or vegetable oil
1 large onion, chopped
1 (15-ounce) can tomato sauce
1 (6-ounce) can tomato paste
1/2 cup dry red wine
1 teaspoon dry oregano leaves
1 teaspoon dry basil leaves
Salt to taste

Spinach-Ricotta Filling:
2 (10-ounce) packages frozen chopped spinach, thawed and squeezed dry
2 (15-ounce) containers low-fat ricotta cheese
2 large eggs
2 tablespoons freshly grated Parmesan cheese
Salt and freshly ground pepper
Pinch of nutmeg

4 tablespoons freshly grated Parmesan cheese - divided use
2 cups shredded mozzarella cheese - divided use

Cooking Directions:
1 - Lightly spray a 13x9x2-inch baking dish with non-stick cooking spray.
2 - For Polenta: In a large saucepan, warm the olive oil over medium heat. Add the onion and sauté for 3 to 5 minutes or until softened. Add the garlic and sauté 1 minute more, making sure it doesn't brown. Add salt and stock and bring to a rolling boil over medium heat.
3 - In a thin stream very slowly add the polenta stirring constantly with a wooden spoon. Reduce the heat to low and continue cooking for 3 to 5 minutes, stirring constantly to be sure it doesn't stick, until it's thick and creamy. Stir in 3 tablespoons of the Parmesan cheese.
4 - Pour polenta into the prepared baking dish, smoothing the top with a rubber spatula if necessary. Let polenta rest for at least 2 hours. (Can be made up to 3 days ahead however.)
5 - For Tomato Sauce: Heat oil in a wide frying pan over medium heat; add onion and cook, stirring often, until softened, about 5 minutes. Stir in tomato sauce, tomato paste, wine, oregano and basil. Bring to a simmer; then simmer, uncovered, for 10 minutes. Season to taste with salt. Makes about 4 cups sauce.
6 - For Spinach-Ricotta Filling: In a medium bowl combine spinach, ricotta, egg and Parmesan, mixing well. Season to taste with salt, pepper and nutmeg.
7 - Preheat oven to 375°F (190°C).
8 - Invert the polenta onto a cutting surface. Set the dish aside to use again. Cut the polenta rectangle in half to make 2 rectangles each measuring 9x6 1/2-inches. Slice each rectangle lengthwise in half again, using a long piece of dental floss or a serrated knife to make the job easiest, creating 4 layers (each 9x6 1/2-inches).
9 - Spoon prepared tomato sauce evenly on the bottom of the 13 x 9 x 2-inch baking dish. Place two of the polenta pieces in the dish to cover the bottom. Spoon half of the spinach ricotta mixture over the polenta, using the back of a spoon to spread it out, and then sprinkle with 1 cup mozzarella and 2 tablespoons Parmesan. Spoon 2 cups of sauce over cheese.
10 - Top with remaining polenta pieces and finish with remaining cheese.
11 - Place the lasagna dish on a baking sheet to catch any drips. Bake uncovered for 30 minutes. Remove from the oven and let sit for 10 minutes.
Makes 8 servings.

Tip: To prepare in advance the lasagna can be assembled and held up to 24 hours before baking. To cook, remove lasagna from refrigerator 1 hour before baking then cook as recipe directs.

Healthy Harvest Turkey Lasagna

Dinner Tonight: Healthy Harvest Turkey Lasagna

For Breakfast this Sunday morning I made a Breakfast Sandwich using; a toasted Healthy Life Whole
Grain English Muffin, lightly fried a al fresco Country Style Chicken Sausage Breakfast Patty, 1/2 a slice of Kraft Deli Deluxe Sharp Cheddar Cheese, and had a cup of Bigelow Decaf Green Tea. 88 degrees, humid, and rain showers out today. Not much going on today. Puttered around the shed and did a couple of things. Then did a few things around the house. For Dinner tonight I prepared Healthy Harvest Turkey Lasagna.

I had no clue what to prepare for Dinner tonight. Mom suggested Lasagna, so Lasagna it is! As usual when I make Lasagna I’ll be using Jennie – O Extra Lean Ground Turkey Breast, which I had in the
freezer so I sat it in the fridge to thaw overnight. I use the recipe that’s on back of the Ronzoni Healthy Harvest Lasagna Box as a guide. Making changes to some of the ingredients to reduce calories and carbs. I used the following; 1lb Jennie – O Extra Lean Ground Turkey Breast, 3 cups (26 oz jar) Ragu Pasta Sauce, Sliced Mushrooms (optional), 1/2 cup Water, 1 3/4 cups (15 oz container) Kroger Part Skim Milk Ricotta Cheese, 2 cups (8 oz) or more Sargento Reduced Fat Shredded Mozzarella Cheese (divided), 1/2 cup grated Kraft Parmesan Cheese, 1/2 cup chopped fresh Parsley, 1/2 tsp Sea Salt, 1/4 tsp ground Black Pepper, and 6 pieces Ronzoni Healthy Harvest Lasagna, uncooked. Cutting calories and carbs by using Jennie – O Extra Lean Ground Turkey Breast and the Kroger Part Skim Milk Ricotta Cheese, Ronzoni Healthy Harvest Pasta, and Sargento Reduced Fat Shredded Cheese.

Then to prepare it, Heat oven to 350°F. In a skillet, over medium-high heat, brown Turkey; season to
taste and drain of excess fat, very little fat to drain. Add the Pasta Sauce and Water; simmer about 10 minutes. Pour about 1 cup Sauce on bottom of a 13×9 foil pan. Arrange 3 UNCOOKED pasta pieces lengthwise over sauce; cover with 1 cup sauce. Spread one-half Ricotta Cheese and Mozzarella Cheese over Sauce. Repeat layers of RONZONI HEALTHY HARVEST LASAGNA, Sauce and Ricotta Cheese, Mozzarella. Top with layer of RONZONI HEALTHY HARVEST LASAGNA and remaining Sauce; sprinkle with Mozzarella Cheese. Cover with foil. Bake 45 minutes. Remove foil; bake additional 10 minutes or until hot and bubbly. Let stand 10 minutes before cutting.

The Lasagna came out perfect, love this recipe! Everything tasted so fresh and as usual the Jennie -O
Turkey was the star bringing everything together to make one delicious dish! Plenty of leftovers for another meal or to freeze for later use. I’ve frozen this several times and it always comes out great after reheating. I left the original recipe at the bottom of the post. With just a few changes I saved on calories, carbs, and fat grams. The original recipe is at the end of the post. For Dessert/Snack a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

1/4 cup chopped fresh parsley
1/2 tsp salt
1/4 tsp ground black pepper
9 pieces RONZONI HEALTHY HARVEST LASAGNA, uncooked

Healthy Harvest Turkey Lasagna

Dinner Tonight: Healthy Harvest Turkey Lasagna

For Breakfast on this Sunday morning I made a Breakfast Sandwich using; a toasted Healthy Life
Whole Grain English Muffin, lightly fried a al fresco Country Style Chicken Sausage Breakfast Patty, And had a cup of Bigelow Decaf Green Tea. After Breakfast I headed to Home Depot and to Walmart's Garden Center. Back home, after Lunch I got the Cart out of the shed and did some yard work and took a spin around the neighborhood. Sunny, humid and 88 degrees out this afternoon. Later on went to spend some time with Dad at the center. For Dinner tonight I prepared Healthy Harvest Turkey Lasagna.

As usual when I make Lasagna I’m using Jennie – O Extra Lean Ground Turkey Breast, which I had in the freezer so I sat it in the fridge to thaw overnight. I use the recipe that’s on back of the Ronzoni
Healthy Harvest Lasagna Box as a guide.

The Lasagna comes out perfect, love this recipe! Everything tasted so fresh and as usual the Jennie - O Turkey was the star bringing everything together to make one delicious dish! Plenty of leftovers for another meal or to freeze for later use. I’ve frozen this several times and it always comes out great after reheating. I left the original recipe at the bottom of the post. With just a few changes I saved on calories, carbs, and fat grams. The original recipe is at the end of the post. For Dessert/Snack a bowl of Skinny Pop - Pop Corn with a Coke Zero to drink.

Leftovers: Healthy Harvest Turkey Lasagna and Baked Garlic Loaf Bread

Dinner Tonight: Leftovers: Healthy Harvest Turkey Lasagna and Baked Garlic Loaf Bread

Well another long day as we had to go calm Dad down twice today. The Dementia has really kicked in now. But it's been a very long day so it was going to be something easy to prepare tonight for Dinner. So I dug through the freezer a bit and found a container with 3 servings of Lasagna in it! No more Dinner problems! I had made the Lasagna and froze the leftovers, which is sure coming in handy for Dinner tonight. I let thaw in the fridge until Dinner time. It heated up great and was delicious! For Dessert later Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free. I've the original Lasagna post below for ingredients and recipe directions. Take Care all!

As usual I’m using Jennie – O Extra Lean Ground Turkey Breast, which I had in the freezer so I sat it in the fridge to thaw overnight. "Meatless Monday" Recipe of the Week - Three Cheese Manicotti

This week's "Meatless Monday" Recipe of the Week is - Three Cheese Manicotti. You can find many versions of this at various websites, I'm using the one on the CooksRecipes website. The Cooks site has such a great selection of recipes to please all tastes, cuisines, or diets. Check it out today. Enjoy and Eat Healthy in 2018!  https://www.cooksrecipes.com/index.html

Three Cheese Manicotti
This recipe calls for purchased marinara sauce, but you can use about 1 3/4 cups homemade marinara or even leftover spaghetti sauce (should you conveniently happen to have some on hand). Whatever sauce is used, this pasta dish is easy enough to prepare for a weeknight supper, yet impressive enough to serve company.

Recipe Ingredients:
1 (12-ounce) package manicotti pasta shells (or 14 manicotti shells)
2 (15-ounce) cartons ricotta cheese
4 1/2 cups mozzarella cheese, grated - divided use
1 cup freshly grated Parmesan cheese - divided use
2 large eggs, lightly beaten
2 tablespoons chopped fresh flat-leaf parsley or 1 tablespoon dried parsley leaves
1 teaspoon kosher or sea salt
1/4 teaspoon freshly ground black pepper
1 (26-ounce) jar marinara sauce

Cooking Directions:
1 - Grease a 10 x 15-inch sided baking pan, such as a jelly roll pan; set aside.
2 - Cook manicotti pasta shells according to package directions; drain and set aside.
3 - In large bowl combine the ricotta cheese, 3 cups mozzarella cheese, 3/4 cup Parmesan cheese, beaten eggs, parsley, salt and pepper, mixing well. Divide mixture into 14 balls*.
4 - Carefully split a manicotti shell open. Shape a cheese ball to fit the shell; close shell and lay seam-side down into prepared baking pan (do not crowd the manicotti, allow some space between); repeat procedure with remaining shells and cheese balls.
5 - Pour marinara sauce evenly over shells, spreading as needed to completely cover the shells with sauce so they won't dry out while baking. Top with remaining 1 1/2 cups mozzarella and 1/4 cup Parmesan cheese.
Bake uncovered at 350°F (175°C) for 30 to 35 minutes or until bubbly and cheese filling is set.
6 - Makes 14 manicotti.

*An easy way to divide the ricotta cheese mixture evenly is to form a "log" using plastic wrap, then divide the log into 14 sections.

Variation: 3 Cheese & Spinach Manicotti - For filling, combine 1 (15-ounce) carton, 2 cups shredded mozzarella, 1/2 cup freshly grated Parmesan cheese, 1 large egg, 1/2 teaspoon salt and 1/4 teaspoon freshly ground black pepper and and 1 (10-ounce) package frozen chopped spinach that has been thawed and squeezed dry; proceed as instructed above for filling manicotti; topping with the marinara sauce, then 1 1/2 cups shredded mozzarella and 1/4 cup Parmesan.

Leftovers: Turkey Lasagna and Baked French Bread

Dinner Tonight: Leftovers – Turkey Lasagna and Baked French Bread

For Breakfast on this first day of 2018 I prepared Scrambled Eggs, Turkey Sausage Links, Toast, and a cup of Bigelow Decaf Green Tea. Scrambled 2 Eggs that I sprinkled with some Sargento Reduced
Fat Shredded Sharp Cheddar Cheese. Next I heated up 2 of the Johnsonville Turkey Sausage Links, toasted 2 slices of Aunt Millie's Light Whole Grain Bread (lightly buttered), and a cup of Bigelow Decaf Green Tea. And that's how I started 2018! This morning its a cold one, 1 degree and minus 3 wind chill. So another day of staying in and not a whole lot to get done. I ran the vacuum and dusted. The rest of the day just kicked back and watched some College Bowl Games and watched some shows I had recorded. For Dinner tonight its Leftovers. I reheat the Turkey Lasagna and Baked French Bread.

Below I've left the post from yesterday for the description and instruction of the Dish.

As usual I’m using Jennie – O Extra Lean Ground Turkey Breast, which I had in the freezer so I sat it in the fridge to thaw overnight. I use the recipe that’s on back of the Ronzoni Healthy Harvest

Healthy Harvest Turkey Lasagna and Baked French Bread

Dinner Tonight: Healthy Harvest Turkey Lasagna and Baked French Bread

Well why not make my favorite Breakfast for this last Breakfast of 2017! I prepared some Simply
Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled them with Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then placed the Sunnyside Up Egg on it it top of off. One of my favorite Breakfasts! Went out to get the Morning Papers and it is down right COLD! 1 degree and with the light wind it was below zero! Grabbed the Papers and got back inside as quick as I could. We seen a couple of rays of sunshine later in the day but only had a high of 17 degrees. So with nothing going on outside I stayed in and did a load of laundry. I then cleaned the Kitchen and cleaned the oven. For Dinner tonight Healthy Harvest Turkey Lasagna and Baked French Bread.

Enjoy and Eat Healthy!  http://wildideabuffalo.com/

Buffalo Rustic Pizza serves 8 to 12
This is an adaptation of a recipe from a gourmet magazine, from years ago.

Ingredients: Prep ingredients before making crust.

1 lb. Wild Idea Buffalo Italian Sausage
2 lbs. spinach leaves, washed
4 eggs
15 oz. ricotta cheese
2 garlic cloves, minced
5 red bell peppers, roasted, peeled, seeded and coarsely chopped
or  24 oz. jarred roasted red peppers, coarsely chopped
8.5 oz. jarred sun-dried tomatoes, flash processed
2 cups Parmesan cheese, grated
8oz. provolone cheese, sliced
salt and pepper

 Dough Ingredients:

4 cups flour
2 teaspoons sugar
1 cup cold salted butter, sliced
4 eggs, lightly beaten

Instructions:

1.)  Brown meat in heavy large skillet over medium high heat. Remove sausage from pan leaving a little fat in skillet. Cover sausage and set aside.

2.)  In same skillet, over medium heat, add half of the spinach, cover, but toss occasionally until all leaves are wilted. Place wilted spinach in colander and repeat same step with remaining half of spinach.

3.)  Press spinach with back of spoon in colander to push out water. Season spinach with a pinch of salt and pepper.

4.)  In bowl, mix eggs, then add ricotta and garlic. Season with a pinch of salt and pepper.

5.)  In mixing bowl, using a pastry hook, mix together dough ingredients in order listed. Mix until incorporated.

6.)  Form dough into a ball and removing 1/3 of dough. Roll 2/3 of dough out on floured parchment paper or plastic wrap, forming large 16” circle. Roll out remaining dough in the same fashion into a 10” circle.

7.)  Remove paper from top of dough and slide your hand under the bottom paper. Gently flip dough into a 9” spring-form pan. Press dough down lightly into pan and up pan sides.

8.)  In this order, layer your ingredients inside dough; half of spinach, half of ricotta mixture, all of the red bell peppers, half of parmesan, all Buffalo Italian Sausage, all provolone, all sun-dried tomatoes, remaining spinach, remaining ricotta and remaining parmesan.

9.)  Remove paper from top of remaining dough and slide your hand under the bottom paper. Gently flip the dough onto the top of the pie. Pinch dough seams together, using a little water if necessary.

10.) Place foil around pan to avoid any dripping from pan. Bake in 375* preheated oven, for 1½  hours. Remove and allow to rest for 10 minutes before cutting.
