One of America's Favorites - Lasagne

Baked meat lasagne
Lasagne are a type of wide, flat pasta, possibly one of the oldest types of pasta. Lasagne, or the singular lasagna, commonly refers to a culinary dish made with stacked layers of pasta alternated with sauces and ingredients such as meats, vegetables and cheese, and sometimes topped with melted grated cheese. Typically, the cooked pasta is assembled with the other ingredients and then baked in an oven. The resulting lasagne casserole is cut into single-serving square portions.

Lasagne originated in Italy during the Middle Ages and has traditionally been ascribed to the city of Naples. The first recorded recipe was set down in the early 14th-century Liber de Coquina (The Book of Cookery). It bore only a slight resemblance to the later traditional form of lasagne, featuring a fermented dough flattened into a thin sheet, boiled, sprinkled with cheese and spices, and then eaten with the use of a small pointed stick. Recipes written in the century following the Liber de Coquina recommended boiling the pasta in chicken broth and dressing it with cheese and chicken fat. In a recipe adapted for the Lenten fast, walnuts were recommended.

The traditional lasagne of Naples, lasagne di carnevale, is layered with local sausage, small fried meatballs, hard-boiled eggs, ricotta and mozzarella cheeses, and sauced with a Neapolitan ragù, a meat sauce. Lasagne al forno, layered with a thicker ragù and Béchamel sauce, and corresponding to the most common version of the dish outside Italy, is traditionally associated with the Emilia-Romagna region of Italy. In other regions, lasagne can be made with various combinations of ricotta or mozzarella cheese, tomato sauce, meats (e.g., ground beef, pork or chicken), and vegetables (e.g., spinach, zucchini, olives, mushrooms), and the dish is typically flavoured with wine, garlic, onion, and oregano. In all cases, the lasagne is oven-baked (al forno).

Traditionally, pasta dough prepared in Southern Italy used semolina and water; in the northern regions, where semolina was not available, flour and eggs were used. In modern Italy, since the only type of wheat allowed for commercially sold pasta is durum wheat, commercial lasagne are made of semolina from durum wheat.

Emilia-Romagna's intensive farming economy in the northern region of Italy results in plentiful dairy and meat products, and a commonality in regional cooking – more so than the olive oil found in southern regions of Italy. Pastas from Emilia-Romagna and its capital, Bologna, are almost always served with a ragù, a thick sauce made from ingredients such as onions, carrots, finely ground pork and beef, celery, butter, and tomatoes.

Slice of lasagne with green salad and red cherry tomatoes
In Ancient Rome, there was a dish similar to a traditional lasagne called lasana or lasanum (Latin for 'container' or 'pot') described in the book De re coquinaria by Marcus Gavius Apicius, but the word could have a more ancient origin. The first theory is that lasagne comes from Greek λάγανον (laganon), a flat sheet of pasta dough cut into strips. The word λαγάνα (lagana) is still used in Greek to mean a flat thin type of unleavened bread baked for the holiday Clean Monday.

Another theory is that the word lasagne comes from the Greek λάσανα (lasana) or λάσανον (lasanon) meaning 'trivet', 'stand for a pot' or 'chamber pot'. The Romans borrowed the word as lasanum, meaning 'cooking pot'. The Italians used the word to refer to the cookware in which lasagne is made. Later, the food took on the name of the serving dish.

Another proposed link, or reference, is the 14th-century English dish loseyn as described in The Forme of Cury, a cookbook prepared by "the chief Master Cooks of King Richard II", which included English recipes as well as dishes influenced by Spanish, French, Italian, and Arab cuisines. This dish has similarities to modern lasagne in both its recipe, which features a layering of ingredients between pasta sheets, and its name. An important difference is the lack of tomatoes, which did not arrive in Europe until after Columbus reached America in 1492. The earliest discussion of the tomato in European literature appeared in a herbal written in 1544 by Pietro Andrea Mattioli, while the earliest cookbook found with tomato recipes was published in Naples in 1692, but the author had apparently obtained these recipes from Spanish sources.

As with most other types of pasta, the Italian word is a plural form: lasagne meaning more than one sheet of lasagna, though in many other languages a derivative of the singular word lasagna is used for the popular baked pasta dish. Regional usage in Italy, when referring to the baked dish, favours the plural form lasagne in the north of the country and the singular lasagna in the south. The former, plural usage has influenced the usual spelling found in British English, while the southern Italian, singular usage has influenced the spelling often used in American English.

Leftovers: Buffalo Italian Sausage Lasagna w/ Baked French Bread

Dinner Tonight: Leftovers - Buffalo Italian Sausage Lasagna w/ Baked French Bread

For Breakfast this morning I just had a cup of Bigelow Decaf Green Tea and a toasted Healthy Life Whole Grain English that I lightly Buttered with I Can't Believe It's Not Butter. A chilly 33 degrees
this morning but it turned into a perfect Spring Day! Sunny and 71 degrees out! Got the Cart out of the shed and did a little yard work and then finished cleaning the outdoor furniture. Also still going through junk in the shed. Later went to see Dad for a bit. For Dinner tonight I reheated the Leftover Buffalo Italian Sausage Lasagna w/ Baked French Bread. I've left the original post from yesterday for the recipe and directions. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

I tried something a little different tonight, Buffalo Italian Sausage Lasagna. I used a 1 lb. package of Wild Idea Buffalo Italian Sausage and a box of Hamburger Helper Lasagna. Using the Buffalo Italian Sausage in place of the Hamburger. To prepare it I just followed the instructions on the Lasagna box to prepare it. The box contained the Sauce Mix and Pasta and I added 1 lb. of Wild Idea Buffalo Italian Sausage, 2 3/4 cups of hot Water, and 1/2 cup of 2% White Milk.

I just browned the Ground Sausage, drained and removed from heat. Then stirred in the Sauce Mix and hot water until dissolved. Stir in the Milk and Pasta. Returned to heat , and heated until boiling. Reduced the heat. Cover, and simmer about 12 minutes (Stirring occasionally). When the Pasta got tender removed from the heat and served! Came out really tasty! Good flavor and seasoning.

The Pasta came out tender and went perfect with the Ground Buffalo Italian Sausage substitute.I
topped it with a sprinkle of Kraft Reduced Fat Grated Cheese and Sargento Shredded Mozzarella Cheese. It makes 5 servings. I also baked a loaf of Pillsbury French Bread. It turned out to be a Comfort Food Dinner, can't wait to have it again.

Buffalo Italian Sausage Lasagna w/ Baked French Bread

Dinner Tonight: Buffalo Italian Sausage Lasagna w/ Baked French Bread

Anyway after Breakfast I went to Kroger for a couple of items then stopped by McDonald's to pick up Breakfast for Mom. Mom went on to Church after Breakfast. I did a couple of loads of laundry for her then cleaned the house, dusted and vacuumed. Later on got the leaf blower out and cleaned off the deck and driveway areas. Kitchen Hints of the Day!

Using Whole Wheat Pastas..........

* Whole-wheat pasta usually requires more cooking time than regular pasta, but don’t overcook it! Whole-wheat pasta quickly loses its texture if overcooked, so follow package directions carefully. Get your kitchen timer out and use it.
* Toss it with pesto or dark, leafy greens like Swiss chard for an earthy, herbal flavor that goes perfectly with whole wheat pasta.
* Make a cold pasta salad with plenty of olive oil and a splash of rice vinegar or squeeze of lemon juice to lighten it up.
* You may eat a little less pasta than you normally would. The whole-wheat and higher- fiber pastas seem to be more satisfying.

Banquet Homestyle Bakes – Baked Lasagna and Baked French Bread

:Dinner Tonight: Banquet Homestyle Bakes – Baked Lasagna and Baked French Bread

For Breakfast I didn't have anything. I had to fast over night for my Family Doctor checkup of my Sugar, Cholesterol, and such. I should have the results back later this week, hopefully all good. I made a cup of Bigelow Decaf Green Tea when I got back from the Doctor. Well Dad finally made it back home! Hopefully he can remain here. But Dad isn't in very good health, we'll just have to pray and hope he can remain here. Thunderstorms and a high of 81 degrees, and humid! Not a lot going on today I just helped Mom getting Dad settled in, he's been gone for a while. For Dinner tonight I prepared Banquet Homestyle Bakes – Baked Lasagna and Baked French Bread.

I’m having the Banquet Homestyle Bakes – Lasagna Complete Meal Kit. I love these Banquet Homestyle Bakes so easy to make and delicious! As it says, it’s a Complete Meal Kit. All I added was a 1/2 cup of Water, a little Sea Salt for taste, Sargento Shredded Mozzarella, and some Kraft Reduced Fat Grated Parmesan Cheese.

To prepare it you can bake it in the oven or cook it in a skillet on the stove top. I’m baking mine. Start by preheating the oven to 425 degrees F. Stir together both cans of sauce and 1/2 cup water in 8″ x 8″ baking dish. Stir in the pasta until well coated. Cover with foil and bake for 40 minutes, until pasta is tender. Carefully uncover. Stir until well blended. Let stand 5 minutes; sauce will thicken. Ready to serve!

Came out hot and delicious. Nothing fancy, just good and hearty Dinner. I topped it with some Kraft Reduced Fat Grated Parmesan Cheese. I also reheated the leftover Pillsbury French Bread, which is perfect with Pasta Dishes. For Dessert later a Weight Water’s Cookies and Cream Ice Cream Bar.

We love the smoky heat from the ground chipotle, but omit it if you prefer a mild chili. Serve with tortilla chips or cornbread and coleslaw........

Inside-Out Lasagna
Here we take basic lasagna ingredients—ricotta cheese, pasta and tomatoes—and skip the layering and long baking time to make a super-quick and satisfying meal for the whole family. To cut down on prep time, look for presliced mushrooms. For meat lovers, brown some crumbled turkey sausage along with the onions and garlic. Serve with: Steamed broccoli and whole-grain baguette.......

Sweet Potatoes with Warm Black Bean Salad
For a satisfying last-minute supper, it's hard to beat a sweet potato zapped in the microwave. The fragrant filling of beans and tomatoes adds protein. Be sure to eat the skin, which is full of fiber, as well......

Banquet Homestyle Bakes – Baked Lasagna and Baked French Bread

Dinner Tonight: Banquet Homestyle Bakes – Baked Lasagna and Baked French Bread

For Breakfast I fried a couple of al fresco Chicken Breakfast Sausage Patties and toasted 2 Slices of
Healthy Life Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. Mostly sunny out today with a of sunshine, had a high of 81 degrees. I went to the Kroger up the road to pick up a couple of items and stopped by McDonald's to pick up Breakfast for Mom and Dad. Got the cart out and trimmed a couple of bushes at the side of the house. I had planted a couple of Tomato Plants on side of the shed and they've really grown. I'm not a huge fan of raw tomatoes but Mom and Dad love them. Everything has really grown good this year, the herb plants, flowers, and a bush that I planted all this year. For Dinner tonight its Baked Lasagna and Baked French Bread.

Start
by preheating the oven to 425 degrees F.

I topped it with some Kraft
Reduced Fat Grated Parmesan Cheese. I also reheated the leftover Pillsbury French Bread, which is perfect with Pasta Dishes. For Dessert later a Weight Water’s Cookies and Cream Ice Cream Bar.

Dinner Tonight: Leftovers - Banquet Homestyle Bakes - Baked Lasagna and Baked French Bread

I had this for Breakfast yesterday and enjoyed it so much I'm having it again! I Scrambled 2 Eggs and

Cooler outside today, high of 41 and windy. It was house cleaning day today, inside and outside. After cleaning inside I went outside and trimmed the vines along the driveway. I'm reheating the leftover  Banquet Homestyle Bakes - Lasagna Complete Meal Kit. As it says, its a Complete Meal Kit.
